The demand of day by day increasing population there is lacking of nutritious food to peoples all around world. Underutilized crops like small or minor millets are having more nutrition and providing calories up to 2000 to 3000 calories per person per day than our staple crops i.e wheat, rice, and maize etc. Small Millets are the most underutilized crop in the world possessing high nutrient-cereal qualities and potential for the improvement of food security, nation income and generate the employment for the rural peoples. Millets are rich in nutrients such as proteins, fibers, carbohydrates, fats, vitamin-B, and minerals like calcium, phosphorus, magnesium, iron, potassium, and zinc etc.They are highly nutritive crop, non-acid forming, glutan free and help in reducing blood sugar level, blood pressure, diabetes and cardiovascular diseases. They also help in preventing asthma and migraines sufferings and fighting malnutrition in children s and adults.S mall millets are considered the forgotten crop species because of lower yield compared to other millets i.e. Sorghum and Pearl millet and cereals i.e. rice, wheat, maize etc. Being a highly nutritive cereal crop, easy to digest, high fibers and low glycine-max content, environment friendly and prevent the human hazards small millets still remained neglected and underutilized crop. Out of 200 underutilized crops identified 29 are small millets species (NAS USA, ICUC). Considering the food demand of common peoples, emerging health consciousness and nutrient demand for food security emerged small millets to limelight because of ecologically sound to climate. Still, the harvest of crop demands combination of computational technologies to full-fill food needs of population. Recognizing the potential of small millets in improving the national income UN-FAO announced the year 2023 as International Year of Millets. This chapter focused on application of climate smart agricultural methods such as artificial intelligence for the improvement of small millets to achieve future food security.

These products were originally flavoured with the herb marshmallow but a modem marshmallow is a foam that has been stabilised by a gelling agent. The traditional material for marshmallows is egg albumen which acts both as a foaming and gelling agent - this gives light, soft gel. Gelatine is now more commonly used, and once again can act as both a whipping and gelling agent. A gelatine marshmallow is soft and rubbery but heavier than an egg albumen one. Further gelling agents, e.g., pectin, agar and starch all give a soft, short textured gel. These gelling agents have the advantage of being vegetable products but have the disadvantage of normally needing a whipping agent as well. Enzyme-modified soya products have also recently become available for this use.

Methods of Marshmallow Manufacturing:

Ageing of meat is also known as conditioning or tenderising or ripening or maturing and sometime resolution of rigor. It is a process of holding unprocessed meat above freezing point under controlled conditions. By this process we can make muscle soft and pliable thus meat becomes tender. When we keep the meat above freezing point at temperature between 0-3ºC then all those changes occurs which are normally occurs at higher temperature i.e. atmospheric oxidation and enzymatic action of fat, bacterial action etc. When this temperature range becomes below freezing point then it inhibits completely the enzymatic action in the muscles. Ageing is required for marked increase in flavour, juiciness and tenderness of meat. In this process action of enzymes in meat plays key role while bacterial action is not of any importance. Meat tenderness and taste are definitely improved if carcasses or vacuum packed cuts are conditioned after slaughter but paradoxically beef is quite tender just two hours after slaughter and several days of conditioning are required to recover this degree of tenderness.

During the contraction of muscles, thick and thin filaments sliding to each other and decreases the length of sarcomeres. In turn, this decreases the length of fibrils, fibres and the whole muscle. If these muscles remain in contracted length when rigor develops, it causes massive overlap of thick and thin filaments leading to severe meat toughness. It is also necessary to avoid the cooling of meat too rapidly after slaughter, otherwise it cold-shortens and gets tough. If we avoid cold-shortening of muscles during conditioning, it will increase meat tenderness. But with too much conditioning, weight loss, surface spoilage and the cost of refrigerated storage increases.

Ageing of carcasses with little or no fat cover is not recommended by meat specialists. Because these carcasses loose moisture rapidly, loose weight excessively and discolour the meat surface rapidly. In addition, lean meat is also susceptible to deterioration through microbial growth, slime formation by bacteria and mould growth etc. Ageing is important for beef and buffalo meat while pork and lamb do not require ageing because they are slaughtered in the age where they are young and inherently tender. Additionally, the unsaturated fats found in pork fat oxidize during ageing causes rancidity and off flavour. Veal has very little protective fat covering and is high in moisture; thus it does not lend itself to ageing.

Abstract

Indian is rich biodiversity and availability of a variety plants of enhances the interest of scientist for the possible use of plant products as natural herbicides. The emphasis should be to collect the information about such plants from the concerned people who have traditional knowledge about the use of these herbs and then to study scientifically to arrive at conclusions. The study of compounds produced by a plant which inhibit or stimulate the germination and the development of other plants is important for understanding the mechanisms of the ecologicalinteraction. Therefore, there is continuing need to develop and release new phytotoxic chemicals that preserve the environment and enable a more efficient control of weeds, improving crop yield and quality. Ageratum conyzoides a herb traditionally used for treatment of many diseases, releases some potential allelochemicals and other chemicals to the environment which inhibit the germination and growth of neighboring plants. A complete study of its potential allelochemicals may be useful in biological control for sustainable agriculture.

Introduction

Agriculture is an important sector of Indian economy and it contributes about 17.4% to the country’s Gross Value Added (GVA) for the year 2016-17 provides employment to over 54.6 % of the population. There has been a continuous decline in the share of agriculture and allied sector in GVA from 18.6% in 2013 14 to 17.4% in 2016-17. Falling share of agriculture and allied sector in GVA is an expected outcome in a fast growing and structurally changing economy. However since 54.6% of the population is still dependent on agriculture and engaged in improving the agricultural production and overall income. The agricultural production system required timely and adequate agriculture credit to fulfill farmers need. Agricultural Finance ensures provision of multiple types of services dedicated to support both on- and off-farm agricultural activities and businesses including input provision, production, and distribution, wholesale, processing and marketing.

Introduction

Agriculture sector is currently at the crossroads, which is evident in terms of higher nutritive food requirements juxtaposed with growing population. Food production faces multiple challenges due to frequent occurrence of natural calamities, sudden rise in temperature, increase in occurrence of disease and pests leading to both pre and postharvest crop loss. Alarming decrease in fertility status of high and medium land soils of Odisha due to formation of hard clay pan below 4-6” of soil depth has resulted in slowing down of nutrient mineralization by the soil microorganisms within the soil. Crop production stress is further aggravated due to steady decrease in availability of cultivable land with the advent of urbanization, which concurrently reduced the number of dedicated agricultural households. It has been estimated that production of all food grains and horticultural crops needs to be doubled at farmer’s level in order to feed the growing population of the world failing which there will be food crisis by2050.

Abstract

India ranks in the world’s five largest producers of over 80% of agricultural produce items. Processing of agricultural produce generates substantial amount of crop residues which can have tremendous value to farmers. However, a large portion of the residues is burned on farm primarily to clear the field from straw and stubble; which affects the environment, soil health and crop yield.The conversion of crop residues to eco-friendly and valuable product like biochar is need of the hour. Biochar is an organic amendment which slowly releases C in the soil, and is stable over the years. Various applications of biochar like reduction in greenhouse gases emission, sequestering C in the soil, increasing crop yield, used as combusting fuel and livestock feedmakes it a promising candidate for sustainable agriculture and environment.

SYNOPSIS

Until recently, agriculture was primarily valued for producing staple cereals. Today, there is increasing recognition that agriculture has an important role to play in improving nutrition, human health and environmental health. Helping agriculture successfully forge links with nutrition and health can enable the research, development and policy communities to more effectively address the looming challenges of hunger, malnutrition and agriculture-associated diseases. Already, there is growing momentum around the world to bring these sectors together to improve food and nutrition security of the world’s poorest people.

1. INTRODUCTION

During the past fifty years, the world has made substantial progress in improving the food security of millions of people. Using science and technology, agricultural extension and appropriate policies and incentives complemented with infrastructure, farmers, researchers and policymakers have worked together to increase the global production of cereals, cutting the proportion of hungry people from approximately one-third to one-sixth of the world population (Spielman and Pandya- Lorch 2010). Yet more needs to be done. Nearly one billion people still suffer from hunger. Micronutrient deficiencies affect billions more today and potentially in the long-term. Malnourishment in children’s first two years of life, for example, causes largely irreversible damage, impeding their physical growth and intellectual development, increasing their susceptibility to diseases such as diabetes and cancer and even drastically reducing their incomes as adults. Undernourished women are more likely to give birth to smaller babies, thereby creating an inter- generational trap of under nutrition and poverty.

While agriculture has traditionally been put to work to raise the productivity and production of staple crops, there is increasing recognition that agriculture is also key to improving nutrition security, individual health and environmental health. This nuanced understanding has come just in time, considering the looming challenges of hunger, malnutrition, climate change and its link to energy and resource scarcity and urbanization. Placing agriculture in this larger context may enable the global community to better address and cope with these challenges, whilst meeting the food and nutrition security needs of the world’s most vulnerable people.

This paper will briefly review the evolving role of agriculture in meeting food and nutrition security. It will identify emerging challenges, describe promising developments and highlight opportunities for leveraging agriculture-nutrition-health links to overcome challenges.

Introduction
In India, the government policy regarding the import and export of processed fruits is primarily regulated by the Agricultural and Processed Food Products Export Development Authority (APEDA), which requires exporters to register with them to export notified processed food items, including processed fruits, and implement various export promotion schemes to facilitate this trade; the overall goal is to boost the export of agricultural and processed food products through the Agriculture Export Policy (AEP).

INTRODUCTION

In spite of technological developments for the last few decades, Indian agriculture is still rain dependent. Extreme weather events such as drought in 2002, cold wave during 2002-03, heat wave in the year 2003, increased temperatures during rabi 2003-04 and 2004-05, deficit rainfall in many parts of the country during 2004 and excess rains in 2005 (100cm in Mumbai, floods in MP, Gujarat, Orissa, AP, Tamilnadu and Karnataka) could affect the food grain production considerably. The spatial and temporal changes in important weather parameters such as rainfall, temperature, wind, cloud cover, humidity, etc. would influence crop yields by affecting farmers’ decision in selection of cultivar, use of inputs, crop management practices, etc. These decisions significantly influence the aggregate agricultural output, which , in succession has an impact on the economy of the country as a whole. Thus, the timely and accurate weather based agro -advisories is the need of the hour for sustainable agricultural production.

Further, the quality of utility of agro-advisories can be improved through value addition to the agromet information including forecast and demonstration of economic benefits accrued due to the following of the advisories. Thus making farmers to adapt weather-based advisories for (i) Increasing the quality and quantity of produce, (ii) Efficient utilization of resources, (iii) Minimizing losses due to adverse weather, (iv) Effective utilization of favourable weather events, and (v) Reducing cost of cultivation to enhance profits.

INTRODUCTION

Of an estimated 142 mha of net cultivated areas in India, about 67 % is rainfed and only 45 mha is irrigated. The NCA (1976) predicted that even when the full irrigation potential of the country is exploited by 2013 AD, over 50% of arable land would continue to remain rainfed in future. It is the rainfed belt where cultivation of 91 % coarse cereals (Sorghum, Pearl millet and Finger millet), 91% pulses (Chickpea and Pigeon pea), 80% oilseeds (Groundnut, Rapeseed, Mustard and Soybean) and 65% cotton have predominated. Even the crop that formed the backbone of green revolution such as rice and wheat, still have 50% and 19% area under rainfed condition, thus emphasing the importance of rainfed agriculture in India. Inadequate resource (soil and rain water) management coupled with traditional farming practices are responsible for subsistence farming. Monocropping, traditional crops and their varieties, low and imbalance nutrients and inadequate crop establishment, in past, had been the major cause for poor development of dryland agriculture in the eastern region.

INTRODUCTION

Research in agriculture and allied activities and the subsequent technological innovations are important requisites for enhanced productivity and generating income for the farmers. In India, farming is a way of livelihood to 65 per cent of nearly 1. 1 billion population. Our farm population is increasing annually by 1. 84 per cent. The average farm size is becoming smaller each year and the cost-riskreturn structure of farming is becoming adverse with the result that farmers are getting increasingly indebted. There is no option except to produce more food and other commodities under conditions of diminishing per capita arable land and irrigation water resource. Hence, we must harness the best in frontier technologies, thus integrate them with traditional wisdom and thereby launch an eco-technology movement.

The productivity in agricultural sectors is dependent on several bio physical and socio-economic factors. The significant biophysical factors are weather parameters, soil health, water resources, crops/ varieties and pest environments. In order to monitor the impact of weather parameters, we need to have weather forecasts and the accuracy of which to harvest the economic benefits should be given top priority. Only fifty years ago, weather forecasting was an art which was derived after interpretation of data received from land based observing stations, balloons and aircraft etc. Now, modern technology particularly computers / weather satellites / radars has resulted in enormous improvements in the accuracy of weather forecasting with the help of various coordinated meteorological observing networks.

INTRODUCTION

India is endowed with a vast and rich diversity of natural resources particularly soil, water, climate and agro-biodiversity. To realize the optimum potential of the agricultural production system on a sustainable basis, there is a need to bestow a paramount importance in the arena of efficient management of natural resources. India with a geographical area of 329 M ha presently supports 17% of the world’s population on merely 2. 5% of world’s land area and 4% of world’s freshwater resources. India’s economy is predominantly agrarian in nature with about 72. 2% of its 1028 million population (census 2001) living in villages and about 54. 4% people (cultivators) directly depending on agriculture.

INTRODUCTION

The agriculture in north eastern hill region of India is mainly rainfed in nature and shifting cultivation, known as jhuming, is the dominant farming system. The shifting cultivation is detrimental to both soil and vegetation as it is connected to heavy soil and nutrient losses when practised in steep slopes. The burning and slashing operations are responsible for reduced floral and faunal diversity in the region. It is a well known fact that climate is the main driving factor that governs the sustainability of other natural resources such as land, water and vegetation. So far the NE region gets abundant rainfall for survival of the crops at least during the kharif season. The rainfall starts early March and continues up to the late October. The jhum cultivators follow the rainfall trend and get their field ready for sowing of seeds by early March itself so that vegetative stage of crops gets plenty of rainwater for growth and development. Due to increased population pressure, the hills of NE region are over exploited and the jhum cycle has been reduced from 10-12 years to 4-5 years now-adays. Hence the soils do not get sufficient time to revitalize it and are subjected to more and more exploitation and get degraded permanently.

This chapter introduces artificial intelligence, machine learning, computer vision and spectroscopy for rapid, automated and non-destructive egg-quality assessment. It covers machine-vision fundamentals, image acquisition and preprocessing, feature extraction, machine-learning models, deep learning, convolutional neural networks, hyperspectral methods and defect detection. Applications include crack detection, freshness prediction and internal-quality assessment. The chapter also examines model validation, transfer learning, sensor integration, commercial grading-line requirements and the practical limitations of deploying AI systems at industrial scale.

Air pollution is the introduction of chemicals, particulate matter, or biological materials into the atmosphere that cause harm or discomfort to humans or other living organisms, or cause damage to the natural environment. The concern to determine the importance of the airflow as a possible source of contamination in dairy and food industry is growing, because the airborne dust particles can introduce foreign matter including microbial contaminants into the dairy products. Maintenance of air quality in a dairy factory plays an important role and is very much monitored by controlling the temperature, humidity and particle concentration. Air quality control is required for the comfort and safety of employees. To reduce the possibility of contamination in products it is necessary to impose additional controls on air quality. Airborne contamination can be controlled by air filtration.

Alcoholic Beverages

These are the beverages which are prepared after alcoholic fermentation of sugars by yeast, contain varying amounts of ethyl alcohol (5-42%), and are consumed directly or after dilution in water.

Wine : Product made by alcoholic fermentation of grapes or grape juice unless otherwise specified, by yeast (Saccharomyces cerevisiae and a subsequent ageing process. Alcohol content is 11-14 %, but may be as low as 7%.

Abstract

Health benefits of aloe vera include its application in wound healing, treating burns, protection against skin damage, lung cancer, intestinal problems, increasing high density lipoprotein (HDL), reducing low density lipoprotein (LDL), reducing blood sugar in diabetics, fighting acquired immune deficiency syndrome (AIDS), allergies and improving immune system. Phytochemistry of aloe vera gel has revealed the presence of more than 200 bioactive compounds. Aloe vera gel is extracted from its leaves and appropriate processing techniques are needed for stabilization and preparation of the food products. Aloe vera gel products have become available in our country for internal consumption as a tonic and diversification in its products is on progress. The use of aloe vera has gained popularity because of herbal movement initiated by naturopaths, yog gurus, alternative medicine promoters and holistic healers. A recent market analysis report indicates that Americans have spent almost 40 billion dollars on functional foods, drinks and supplements for the improvement of their appearance as well as to provide energy and added nutrition to handle health issues such as hypercholesterolemia and diabetes.

Abattoir : An establishment where animals are butchered is known as abattoir. It is also known as slaughterhouse. 
Abiotic : Abiotic means any factor which is not biological / abiological and especially there is no involvement of the organisms in synthesis of certain compounds.

Abnormal milk: It is milk that is not smooth and homogenous but is flaky, ropy, stringy, slimy, watery, discoloured or bad flavoured.
 
Abrassive peeler: It is equipment comprising a rotating drum lined with carborandum (an abrasive material) in which certain vegetables like potato and ginger are tumbled and exposed to the abrasive action of the carborandum lining, thereby facilitating separation of peel from the vegetables (Plate 1).

Absinthe: It is green liquor which is flavored with wormwood, anise, and other aromatic herbs. Its commercial production is banned in many countries for health concerns.

B cell : It is one of the lymphocytes that have antigen-binding antibody molecules on the surface, that comprise the antibody-secreting plasma cells when mature, and that in mammals differentiate in the bone marrow. It is also called B lymphocyte.

B.T.U. : It stands for British thermal unit. The heat required to raise the temperature of one pond of the water through 1oF is called BTU.

Dairy : It is a farm building often a single room in which milk is cooled and temporarily stored prior to collection for transportation to the commercial diary. Here the milk is treated and made into cream, butter and cheese. Or

It ensures safety of the food. HACCP presents a good opportunity for the food industry for upgrading quality and bringing uniformity and consistency in their supplies to international market. or It is a systematic preventive approach to food safety that addresses physical, chemical and biological hazards as a mean of prevention rather than finished product inspection. It involves identification, evaluation and control of hazards which are significant for food safety.

Ice Bank Cooler : Air forced cooler leads to desiccation of the produce. So use forced air high humidity cooler are known as Ice Bank Cooler. Ice bank Coolers are useful for strawberry.

Ice bank cooling : Storing of fruit and vegetable in storage chamber with positive ventilation and a system countries where ice formation is allowed during night time (as electricity cost of night is less as compared to the day time). Melting of ice occurs during day time and with proper air circulation by means of ventilation process, approximately 0.5-1^ºC temperature with 90% RH in the chamber is maintained.

L - Ascorbic acid : It is a white crystalline compound with a slightly acidic taste. It is readily soluble in water, alcohol, glycerin, propylene glycol and is insoluble in oils, fats, ether, benzene, chloroform.

Nano technology : It is the art of manipulating materials on an atomic or molecular scale to build microscopic devices. The word “nano’ meaning ‘dwarf” in Greek language refers to dimension / magnitude of the material / particle in the order of 10^-9. Nanotechnology is nothing but manipulating of particles into very small particles called nano-particles. These particles have dimensions in the scale of nano-meter and used to design / build materials and devices. Nanotechnology has been provisionally defined as relating to materials, systems and processes which operate at a scale of 100 nanometers (nm) or less. Nanotechnology is an anticipated manufacturing technology that allows through and inexpensive control of the structure of matter by working with atom. It will allow many things to be manufactured at low cost and with no pollution. The concept of nanotechnology was first given by Nobel Laureate physicist Richard P. Feynman in Southern California in 1959. Nanotechnology is sometimes termed as Molecular Manufacturing based nanotechnology “MNT”.

Obesity : A condition characterized by the excessive accumulation and storage of fat in the body. It is a physiological disorder having high body mass index (BMI), which can be expressed as a mathematical formula in which a person’s body weight in kilogram is divided by the square of his or her height in meters.

Pack inspection : It is similar to continuous inspection except that here inspector(s) may make in-process checks during different processing operations under contract but not required to be present all the times in the plant during operation.

Package : The package means a pre packed box, tin, barrel, pouch or can etc in which food article is packed.

Package store : A store that sells bottled or canned alcoholic beverages for consumption off the premises.

Q fever : Q fever is caused by a rickettsia like organism (RLO), a parasitic organism falling between bacteria and viruses. It is a disease that is characterized by high fever, chills, muscular pains, headache, and sometimes pneumonia, that is caused by a rickettsia (Coxiella burnetii) of which domestic animals serve as reservoirs, and that is transmitted to humans especially by inhalation of infective airborne bacteria as in contaminated dust.

R - enamel can : The acid resistant, gold coloured enamel treated can are called R enamel cans. It is used for canning of acidic food which have soluble colouring pigments.
R factor : It is a group of genes present in some bacteria that provide a basis for resistance to antibiotics and can be transferred from cell to cell by conjugation.
R value : R value is a measure of resistance to the flow of heat through a given thickness of a material (insulation) with higher numbers indicating better insulating properties.

Saccharides : A monosaccharide sugar or combination of sugars is called saccharides.

Saccharification : The process of breaking a complex carbohydrate (starch or cellulose) into its monosaccharide components is called saccharification.

Saccharimeter : A device (polarimeter) used for measuring the amount of sugar in a solution is called saccharimeter. It is also known as saccharometer. It is a hydrometer with a special scale.

T A Spoilage : The spoilage of low and medium acid canned foods by Clostridium thermosacharolyticum which breaks sugars and form acid and gas (moisture of H₂ and CO₂) resulted in swelling and in severe cases even bursting of can may occur and the spoiled food usually has a sour odour.

U value : U value is a measure of the heat transmission through a building part (wall or window) or through a given thickness of a material (insulation). U values with lower numbers indicate better insulating properties.
 
Ubiquinone : It is one of the groups of lipid soluble quinones that are found especially in mitochondria and have a long isoprenoid side chain, and function in oxidative phosphorylation as electron carrying coenzymes in electron transport.

Vacreation : The pasteurization of the milk or cream under reduced pressure by direct steam is called vacreation.

Vacuum : The state of negative pressure. It is equal to atmospheric pressure minus absolute pressure.

Vacuum cooling : A technique of cooling vegetable (leafy vegetables, asparagus Brussels sprouts) having a high surface to volume ratio rapidly and uniformly by boiling off some of their water at 10C and at low pressure (5 mm of Hg) into a sealed container. The produce is cooled by evaporation of water from the tissue surface and is more rapid than hydro cooling.

Wafer : A thin crisp cake, candy, cracker or chips is known as wafer.
 
Waffle : A crisp cake of batter baked in a waffle iron is called waffle

Warner-Bartzler Shear : It is one of the oldest but commonly used devices used to measure the tenderness of meat. It is used to test the quality in the cooked meat.

Xanthan / Xanthan gum : It is a polysaccharide that is produced by fermentation of carbohydrates by a gram-negative bacterium (Xanthomonas campestris) and is a thickening and suspending agent used in pharmaceuticals and prepared foods. It is also called xanthan. Xanthan is a stabilizer produced by Xanthomonas compestris. Xanthan is not hydrolysed or degraded by humans.
