Introduction

Setting up dairy farms and processing units requires substantial capital investment, making access to reliable sources of finance essential for success (Yilma et al., 2011). Dairy farming and milk processing are critical components of the agricultural sector, providing nutrition and livelihoods to millions, particularly in rural areas. Financing options are necessary to cover the costs of livestock, infrastructure, and equipment for milk production, storage, and distribution. Various sources of finance are available to entrepreneurs and farmers, including bank loans, government subsidies, and microfinance (Gashayie and Singh, 2015). Commercial banks offer long-term loans under agricultural finance schemes, providing funding for both purchasing assets and managing daily operations. Government programs often provide subsidies and grants to promote dairy farming, such as the Dairy Entrepreneurship Development Scheme (DEDS) in India, which supports small scale farmers (Naik and Patel, 2022). Microfinance institutions (MFIs) also play a vital role in offering credit to small and marginal farmers with fewer formalities. Additionally, cooperative societies and producer companies help pool resources, offering financial and technical support to dairy farmers (Kumar et al., 2021). For larger processing units, venture capital and private equity investments can provide growth capital. Non-governmental organizations (NGOs) and international funds also contribute to the dairy sector by offering low-interest loans and promoting sustainability. Understanding these diverse sources of finance is key for dairy entrepreneurs to plan effectively, ensuring long-term profitability and growth.

There has been a considerable progress in the overall production in the dairy sector. Without a proper marketing, the country would not attain the expected rate of growth in dairy farming. Marketing is a flow of goods and services from producer to consumer and users. In this process the activities include moving the goods from the point of production to the point of consumption. The activities like creation of time, place, form and utility are involved. According to Philip Kotler, marketing as a human activity directed at satisfying the needs and wants through exchange process. The performance of the trade activities involved in the f low of goods and services affect the marketing efficiency and producers share in the consumer rupee. A marketing system consists of different milk marketing channels. That marketing channel is considered good in which producer get the highest share in consumer rupee and consumer share is highest in producers rupee. The interest of the Producer is to get the highest possible returns from their milk. Between them, there are marketing intermediaries or middlemen who perform various marketing functions like transporting and retailing. All the intermediaries/ middlemen are also interested to make highest profit from the milk business. The present lesson provides information on the economic aspect of marketing of milk and milk products through a empirical study conducted in Rajasthan state.

India has cemented its position as the global leader in milk production for 2023-24, contributing a staggering 230.58 million tonnes, or 25% of the world’s total supply. This achievement reflects an annual growth rate of 4%, driven by a vast network of small-scale farmers who manage one or two milch animals each. Despite their limited productivity, these farmers collectively power the nation’s dairy industry. Before the transformative Operation Flood, the sector was fragmented, dominated by middlemen, and poorly linked to urban demand. The initiative revolutionized the industry, introducing cooperative, private, and state driven organizations that established a seamless system for milk procurement, processing, and marketing. Today, thousands of dairy factories across the country transform raw milk into value-added products to meet India’s immense demand, with rural households allocating 15.51% of their food budget to dairy and urban households spending an even higher 18.19%. Coordinating milk collection from millions of scattered producers and delivering it to processing facilities is a monumental task, yet this streamlined system ensures that India’s dairy sector continues to thrive and satisfy its growing consumer base. India’s dairy export performance in 2023-24 was nothing short of “legendairy,” shipping 63,738.47 metric tonnes of dairy delights worth $272.64 million to fans in the UAE, Saudi Arabia, USA, Singapore, and Bhutan. Butter, ghee, and dairy spreads took the spotlight with $43.65 million in exports (8,106.54 MT) to destinations like Saudi Arabia, Bahrain, and Qatar, spreading Indian flavor worldwide. Cheese exports were equally impressive, with 9,262.63 MT worth $46.84 million making their way to the UAE, USA, and Bhutan clearly, everyone loves a slice of India.

Though India is a highest producer of milk in the world, only 15 to 20 per cent of the milk is marketed through organized sector comprised of cooperative societies, public and private processing plants. Bulk marketing is limited to processing plants and cooperative societies. In contrast to Indian situation, most of the milk in developed world is consumed in different processed forms. It is something very general to India where overall food markets for processed foods are generally low and same is the case with milk. By all estimates about 75 per cent of the milk purchased by the consumer as liquid milk whether raw or processed. The share of pasteurized milk is only 10 per cent but the demand is increasing at the rate of 15 percent per annum. One fourth of the milk production is processed in the unorganized sector transforming into products like, sweets. Khoa, paneer, curd, lassi, etc. There are small scale milk product manufacturing units which fall in the category of semi-organized sector comprised of creameries, ice-cream units which are manufacturing the similar products as produced by the composite milk plants in the organized sector. They generally serve the local markets but have the important share in processing of milk as well as meeting the consumers specific demands. The organized sector comprised of mainly dairy plants, procures surplus milk through Milk Producers Cooperative Societies and generally follows the HACCP standards leading to quality of the products, whereas unorganized sector is composed of milk vendors, contractors, halwaies and creameries, collect milk from producers and sell either as raw milk or manufactured milk products or both.

India’s rural economy has benefited greatly from the dairy sector. It has played a significant role in bringing about socioeconomic change. India’s dairy industry has undergone significant change as a result of the White Revolution. The “White Revolution” can be credited with increasing milk availability and providing rural India with a stable source of employment and income. The business has drastically changed to meet India’s increasing demand for milk and milk products. India is currently the world’s greatest producer of milk. The Operation Flood Program is credited with this title. The dairy market in India is projected to increase at a compound annual growth rate (CAGR) of 6.61% from 2024 to 2029, from an estimated US$26.11 billion in 2024 to US$35.96 billion by 2029 (Indus Food, 2024). With over 8 crore farmers employed and a 5% national GDP contribution, the dairy industry in India is vital to the country’s economy. With around 25% of the world’s milk supply and a massive livestock population of 536.76 million animals, it tops the world in milk production. With major markets in the United Arab Emirates, Saudi Arabia, the United States, Singapore, and Bhutan, India exports approximately 63,738.47 metric tonnes of dairy products in 2023–2024, generating US$ 272.64 million.

Different dairy development programmes are working in various parts of the country. But the dairy development programmes which are confined only to the production activities can not give the best results unless they are supported by the marketing facilities and other infrastructure.

Need for Estimation of Milk Production Potential

Estimation about the milk production potential of any region is required for establishing milk processing plant and helps in making the planning and policy for developing marketing infrastructure in that area. In fact the marketed surplus depends on the marketing facility available in the region. If there are marketing facilities in the area like good cooperative societies are operating in the region, and good prices are offered to the milk producers which covers their cost of production and margins, the marketed surplus is bound to be higher than that of the regions where marketing facilities are not existing.

Across India, small-scale farmers form the backbone of this sector, especially in rural regions where economic vulnerability is widespread. These farmers often face numerous challenges, including fluctuating milk prices, limited market access, and a lack of resources to improve productivity (Kamath et al., 2019; Sadashive et al., 2017). Businesses in the dairy sector can act as catalysts for change by creating fairer systems, empowering marginalized groups, and ensuring that ethical treatment of livestock becomes standard practice. Beyond its immediate economic impact, the industry has a profound role to play in addressing broader social issues, such as gender inequality and food security, while promoting sustainable development that benefits everyone involved (Jaiswal, 2018; Garai et al., 2019).

Indian Food Processing Industry (FPI) is one of the most untapped industries with abundant raw material to grow at a higher rate. FPI has been identified as a priority list in the “MAKE IN INDIA” program by the Government of India to boost its domestic manufacturing and export share. In the last few years, FPI has emerged as a high-growth and high-profit sector due to its immense potential for value addition while processing food products at various stages. The degree of processing of value addition to agricultural produce in India (20 %) is very low as compared to other countries, such as China (40 %), Brazil (70 %), and Malaysia (80 %). In India, the degree of processed food products ranges between 2 per cent (fruits and vegetables) and 35 per cent (milk) for various agriculture products. Hence there exist a huge potential for the growth of this sector in India. The export value of FPI was US$29.12 billion in 2016 and its share in world import was 2.18 per cent (Agarwal & Neogi, 2017).

India’s food processing sector covers fruit and vegetables; spices; meat and poultry; milk and milk products, alcoholic beverages, fisheries, plantation, grain processing, and other consumer product groups like confectionery, chocolates and cocoa products, soya-based products, mineral water, high protein foods, etc. The output of India’s food processing sector is expected to reach USD 535 Billion by 2025-26 (Invest India, 2020). Out of this, foreign investment is around Rs.10,000 crores (APEDA, 2020). Besides this, Government has also approved proposals for joint ventures; foreign collaboration, industrial licenses, and 100 per cent export-oriented units envisaging an investment.

Horticulture is increasingly recognized as a sunrise sector, owing to its potential to raise farm income, provide livelihood security and earn foreign exchange through export. The diverse agro-climatic conditions and rich diversity in crops and genetic resources enable India to produce a wide range of horticultural crops round the year. To cite an example, India produces tropical fruit like mango and sub-tropical fruit like an apple at the same season in a year (Jha et al., 2019). The horticulture sector encompasses a wide range of crops like fruits, vegetables, flowers, spices, plantation crops like coconut, beverages like tea and coffee, and some medicinal and aromatic plants. Statistics provided by National Horticulture Development Board showed that India is the second largest producer of the commodities, after China, accounting for 13 per cent of the global production of fruits and 21 per cent of vegetables. (DAC&FW, 2017).

Economic reforms and policies further increased the speed of diversification in favor of horticulture crops (Jha et al., 2019). This is on account of the increased domestic demand from high-value food commodities as well as for export markets. The diversification process that is seen within the agricultural sector also got transmitted to the horticultural sector. In line with the emerging demands, India has taken several technical and policy initiatives for promoting horticulture. The most important among is the newer technology packages spanning from production to postharvest (Jha et al., 2019).

3.1. General Introduction

Value addition refers to the conversion of a raw commodity or commodities into a processed product through the use of raw materials, labour, time and technology, all mixed in a way that ensures increased economic return. Even if the amount of processing in a product is much less, for example, any canned fruit can be considered as a processed product. Value added processing of horticultural food crops, mainly involves actions which changes fresh fruits and vegetables to create a greater value-added product for human consumption, which mostly includes canned products, juices, soups, sauces and dehydrated fruits and vegetables (Sharan, 2018). It results in diversification of agricultural activities, improves value addition opportunities and creates surplus for export of processed agro products. Processing often goes with perishable products like meat, milk, poultry, fruits and vegetables, often termed as High Value Products (HVPs), are in greater demand of processing (Sanal & Krishna, 2017). The demands for processed products are particularly strong in developing countries like China and India; mainly due to increasing industrialization and rapid urbanization, followed by elevated income levels, greater diversity in diets, and affinity towards premium-branded products (Sharan, 2018).

Trade in fruit and vegetable products has been among the most dynamic areas of national as well as international agricultural trade, stimulated by rising incomes and growing consumer interest in product variety, freshness, convenience, and year-round availability. Advances in production, postharvest handling, processing, and logistical technologies—along with increased levels of international investments have played a facilitating role.

4.1. Global Trade of Processed Fruits & Vegetables

4.1.1. Country Wise Trends of Export in Value-Added Fruits

Table 4.1 shows the processed fruits export of top 15 countries in the global market. The USA remained the largest exporter at global level with the exports valued at USD 15089573 thousand with a share of about 12 per cent. The Compound Annual Growth Rate (CAGR %) of the USA was noted 7.58 per cent. Spain is the second largest exporter of processed fruits and vegetables with the CAGR of 6.14 per cent and share of 8 per cent. Some other dominant exporting nations are namely, Mexico, Netherlands, China, and Chile, showing a CAGR nearly, 13 per cent, 11 per cent, 16 per cent and 9 per cent, respectively.

The Government of India has accorded ‘high priority’ status to the food processing industry. The Ministry of Food Processing Industries (MOFPI) has been set up as a nodal agency for formulation and implementation of the policies and plans for the food processing industries.

With an overall objective of positioning India as the ‘Food Basket’ to the world, several initiatives have been undertaken with the objective of promoting investments, innovation and bringing best practices. This vision is in line with the ‘Make in India’ initiative of the Government (CII, 2019).

5.1. Policy Interventions (MOFPI, 2019)

5.1.1. Infrastructure Development

Fragmented, inadequate, and inefficient infrastructure along the supply chain has been identified as one of major factor inhibiting growth of food processing sector. As adequate investment for infrastructure has not been forthcoming from private sector, government will continue to assist, participate and incentivize creation of supply chain infrastructure for food processing sector.

Like other sectors of the economy food processing sector also suffers from certain constraints. The challenges for the food conservation, distribution and processing sectors are diverse and demanding, which need to be addressed to leverage the growth of agriculture and food processing sector. Following are the major challenges and strategies are suggested to overcome the challenges (Sakina, 2019).

6.1. Domestic Constraints in the Development of Food Processing Industry in India

Despite the significant economic potential of the FPI in India, it still faces massive domestic challenges, which include low level of processing, fragmented structure of the industry, consumer perception and lack of skilled manpower. Firstly, low level of processing means that at industrial level, less food is processed, as compared to household level. Most of the traditional food items like jams, jellies, pickles etc. are prepared at small manufacturing units or by households (Agarwal & Neogi, 2017).

Secondly, consumer perception with regard to processed food in India is not very optimistic and they consider that packaged food is not fresh, thus, leading to low consumption of processed food. Thirdly, food processing sector is still highly fragmented and unorganised. This led to the inefficacies in the sector and has failed to achieve the economies of scale (Agarwal & Neogi, 2017).

1.1. Global Dairy Scenario

Global milk production is forecast at 852 million tonnes in 2019, an increase of 1.4 per cent from 2018 (DAHD, 2019) – a smaller rate of growth, reflecting downward revisions made for India and the European Union. Much of the anticipated output expansion will originate in India, Pakistan, China, the European Union, and Brazil, partially offset by declines in some countries including Australia, Colombia, and Argentina. In India and Pakistan, herd expansions drive output growth, while in China, farm efficiency improvements underpin higher growth. The output is increasing in the European Union, although slowly as dry weather limited the supply of milk during the summer, whilst rising dairy herds and stable milk prices are supporting higher production in Brazil. By contrast, the output may decline in Australia and Colombia due to dry weather, whereas in Argentina, rising feed costs and restrained consumer demand may dampen production. Elsewhere, in the United States, higher milk yields hold up the growth momentum, whereas, in New Zealand, favourable weather corroborates a positive production outlook (DAHD,19).

In India, about 46 per cent of the milk produced is either consumed at the producer level or sold to non-producers in the rural area, the balance 54 per cent of the milk is available for sale to organized and unorganized players. The organized sector comprises of Government, Producers’ Owned Institutions (Milk Cooperatives & Producer Companies), and Private players which provides a fair and transparent system of milk collection round the year at the village level. The unorganized/informal sector involves local milkmen, dudhias, contractors, etc. and they are mostly found to be opportunistic, as there is no uniformity of milk price paid to producers and it varies depending upon the situation. The possibility of adulteration of milk is higher among these unorganized groups. In the areas where competition is high and the presence of the formal sector is strong, the unorganized sector generally gives higher prices and at the same time, the unorganized sector doesn’t offer remunerative prices to the producers where the organized sector is not present.

Cheese, butter, whole milk powder, and skimmed milk powder are a major part of the world’s dairy trade. The demand for worldwide dairy exports is highly concentrated. With a share of 12 per cent, New Zealand is the largest exporter of dairy products, followed by Germany, Netherlands, France and the US. Germany has been the world’s major dairy importer as well with a share of 10 per cent. Other large dairy product importers are China, Netherlands, France, Italy and Belgium.

Before 1999, India was a net importer of dairy products. The successful implementation of the ‘Operation Flood’ program and trade reforms caused the direction of India’s dairy trade to change marginally. India has been a net exporter of dairy products since 2000. Statistics show that India’s export share of dairy products over world dairy exports increased marginally from 0.1 per cent in 2001 to 0.5 per cent in 2019, while its import share of dairy products over world dairy imports increased marginally from 0.018 per cent in 2001 to 0.04 per cent in 2019. The Middle East, South Asia, South East Asia, and the USA are the major markets for India’s dairy products. Conversely, India is a favorable market for the European Union, New Zealand, Australia, UAE, and US dairy products.

In monetary terms, value-added’ per unit of the product is the margin between its selling price and cost of production. However, in the dairy and food industry, value addition refers to, extra, features of a product that are beyond the expectations of a consumer at little or no extra cost. In this context, the addition of value to milk can involve monetary value added to a liter of milk by turning it into milk products, enhancing the convenience of quality, shelf life, or health characteristics using processing and packaging interventions.

4.1. Conversion of Milk into Conventional Products

It is an age-old tradition to add value to milk by processing it into milk products. The primary aim was to increase the shelf life of milk that would otherwise be highly perishable. With inadequate facilities to preserve liquid milk fresh in the rural areas’ conversion of milk into a variety of milk products would be an ideal option to effectively preserve the huge quantities of milk procured during the flush season’ In the processing of milk products such as cream, butter, cheese and ghee, by-products such as skim milk, buttermilk, whey, and ghee residue are obtained’ Many of the dairy plants, particularly in India’ are usually confronted with the problem of by-products utilization, especially that of whey and ghee residue in an economical manner. Membrane separation processes have presented new possibilities for the production of newer intermediate products from dairy by-products that can be used for value addition in dairy and food industries.

Livestock is considered one of the essential variables in the revenue of a farmer. The sector (excluding fisheries) contributes 30 per cent to India’s agriculture gross domestic product, and it is valued at more than Rs. 9 lakh crores. India is also one of the largest producers of milk in the world; around 70 million rural households are engaged in professions linked to dairy. India is also the second largest exporter of bovine meat after Brazil. This sector provides a substantial income to farmers and supports the economy by generating enough demand in the rural and semi-urban regions. This animal husbandry sector comprising dairy and poultry is extremely valuable for farmer’s income security, and Covid-19 has the potential to disrupt this sector.

In developing countries such as India, where dairy farming is one of the most important sources of livelihood for 60 million rural households, 80 per cent of whom are landless, small and marginal farmers who depend on dairy for daily income, the crisis is extreme. Thus, even a small decline in the growth of the dairy sector significantly affects a large chunk of our population which are already vulnerable due to low income, poor savings, and lack of livelihood alternatives. Small production in multiple households leads to more reliance on efficient transportation for procurement. In addition to this, the Indian dairy sector is still dominated by the unorganized sector which handles more than 50 per cent of the marketable surplus. Milkman and vendors collect a small quantity of loose milk from different households and then supply it to urban consumers, roadside eateries, hotels, and sweetshops. Closure of shops and restrictions on transportation has ruthlessly disturbed this arrangement. Even in the formal sector out of the total milk processed 65 to 70 per cent is sold as liquid milk which is immediately vended after packing and only 30 per cent is processed into other dairy products like ghee, butter, cheese, curd, ice-cream, milk powder, etc. Thus, the formal sector also lacks sufficient infrastructure and storage facilities for processing and storing surplus milk after value addition.

The GOI is pushing to strengthen infrastructure for the production of quality milk, as well as for procurement, processing, and marketing of milk and milk products through the following Dairy Development Schemes:

6.1. Dairy Entrepreneurship Development Scheme (DEDS)

Dairy Entrepreneurship Development Scheme (DEDS) was started in September 2010. This scheme is being implemented through NABARD which provides financial assistance to commercially bankable projects with loans from Commercial, Cooperative, Urban and Rural banks.

To generate self-employment and provide infrastructure for the dairy sector, to set up modern dairy farms and infrastructure for the production of clean milk, to encourage heifer calf rearing for conservation and development of good breeding stock, to bring structural changes in the unorganized sector so that initial processing of milk can be taken up at the village level, to upgrade traditional technology to handle milk on a commercial scale, to provide value addition to milk through processing and production of milk products.

7.1. Challenges in Milk Quality

Demand for milk and milk products in India is growing very rapidly, owing to urbanization, customer convenience, and the change from loose to packaged milk products. At present, the dairy sector is rising at about 10-12 per cent annually. Based on population growth projections and an increase in urbanization over the next four decades, India is projected to need approximately 600 million tonnes of milk per year to meet the demand for milk and milk products. This means that India’s milk production needs to grow at around 3.2 per cent CAGR for the next 40 years (FICCI, 2020).

Main reason of poor quantity of milk is due to unhygienic and poor condition of animal farms and dairies. Even due to high demand in foreign country we cannot export such poor quality of milk product. Many times, Indian milk products get rejected in foreign nations due to unhygienic milking milk contains high number of microbial counts. Reasons behind the quality affected in India are due to poor health of animal, polluted water and food and Unclean surrounding in farm. So, it is necessary to consider all this challenges in improving milk production. Currently most of the milking animals are not screened on regular interval of time. So, there is lots of chances that some diseases can transmitted to human beings. Farmers use antibiotics and chemical drugs to increase the production of milk this will also affect the quality of milk. These issues can be avoided by regular screening of animals in animal husbandry and also maintaining history records of health, feed etc. Quality of feed should be checked regularly. There must be pollution control in the feed and water used in cattle farms (Bhagyalaxmi, 2020).

a) A Key GDP Contributor: Dairy and Livestock sector form the backbone of agriculture with 28 per cent contribution in GDP and the progress in this sector is dependent on innovative measures to increase the value for farmers as well as customers.

b) Doubling Farmer’s Income : Doubling Farmer’s Income by 2022 can be achieved by improving crop and livestock productivity, efficiency to utilize resources, increased intensity of cultivation and diversification in high value cash crops, processing and value addition of food and animal products. This price realization can be assured through market reforms and efficient market linkages.

c) Unorganised sector – a challenge : The Indian dairy sector is still characterized by strong presence of unorganized sector. Apart from the Cooperative dairy sector, in the last few years there has been a considerable growth in Private Dairy sector and Milk Producers Organization like Maahi in Gujarat. If small dairy farmers are provided with sufficient ‘value addition’ training and support, they can increase their income considerably.

d) Value addition : Further, the milk processing plants can also go for value addition and innovation and in turn pay remunerative prices to milk producers.

Primary processing of fruits and vegetables refers to the first steps in transforming raw agricultural products into forms more suitable for consumption, storage or further processing. This step generally includes cleaning, sorting, grading, cutting, peeling and packaging of the products. The aim of primary processing is to preserve the nutritional quality, taste and appearance of the products by extending their shelf life and making them more suitable for consumers or ready for secondary processing. For example, fruits may be peeled, cut or peeled, and vegetables may be washed, chopped, or blanched. This step is essential in the agribusiness industry because it has a direct impact on the quality and safety of the final product, ensuring that it meets market requirements, food safety standards and consumer preferences. The efficiency and methods used in primary processing significantly affect overall profitability, product quality and market competitiveness.
Primary processing refers to the initial stages of preparing fruits and vegetables for consumption while preserving their nutritional value, freshness and flavour. This essential step involves various techniques for cleaning, sorting and packaging the produce, ensuring that it reaches consumers in the best possible condition.

In small-scale operations, this is usually done in basins with recirculating water or with still water that is regularly replaced. The goal of washing is to remove dirt and contaminants from the produce before it enters the processing line, preventing potential contamination of the raw materials.
The washing should be done with clean water, as pure as possible, and if needed, the water can be made potable by adding 10 ml of a 10% sodium hypochlorite solution for every 100 liters of water. It’s also important to use tools that ensure thorough cleaning of the produce, leaving no dirt behind for the next stages of processing.

VEGETABLES
Proper collection, handling, storage, and distribution of fruits and vegetables are crucial to ensuring they reach consumers in the best possible condition. Refrigeration plays a key role in maintaining freshness and extending the shelf life of these products. Companies involved in production, processing, and marketing that implement efficient commercial and industrial refrigeration systems benefit in several ways:
• Slowing down the ripening and aging of tissue cells.
• Preventing microbial growth.
• Reducing overall quantitative and qualitative losses.

Pre-cooling is an essential process in the post-harvest stage of perishable produce. It involves swiftly removing heat from freshly harvested fruits and vegetables, reducing quality loss and extending shelf life. The advantages of precooling are evident not only in the enhanced quality of the produce but also in the increased profitability for growers.
In addition to improving quality and shelf life, pre-cooling helps curb the growth of microorganisms. Lower temperatures effectively prevent the growth of both existing and potential microbes, aiding in the preservation of the produce.
Field heat, which refers to the temperature difference between the freshly harvested produce and its optimal storage temperature, highlights the importance of precooling. The method of precooling selected depends on the perishability of the produce and the refrigeration equipment available, emphasizing the need for a customized approach.
Many studies stress the importance of precooling for storing and transporting produce over long distances. In this context, the focus is not on whether to precool, but on how to choose and implement the most effective method. This underlines the critical role of precooling in maintaining the quality, shelf life, and marketability of harvested produce.
Precooling fruits and vegetables is a vital post-harvest procedure aimed at rapidly reducing the produce’s temperature to slow down metabolic processes and prolong freshness. The ideal precooling temperature varies based on the type and maturity of the produce but is typically lower than the surrounding temperature. Various methods such as hydro-cooling, vacuum cooling, and forced-air cooling can be used for precooling. Properly understanding and applying these techniques is key to preserving the quality and freshness of fruits and vegetables from the farm to the consumer.

Cold storage is a widely used method for handling perishable goods in bulk between production and marketing stages. It is essential for preserving the freshness and quality of perishable commodities by controlling temperature and humidity within the storage environment. Ensuring the temperature remains sufficiently low is crucial, as failing to do so can lead to chilling damage to the produce. Additionally, maintaining a relative humidity of 85-90 percent in the storage area is vital for most perishables, as lower humidity can negatively affect their quality.
Fruits and vegetables, if stored at ambient harvest temperatures, have a very short shelf life. Post-harvest cooling helps to quickly remove field heat, thus extending the storage duration. Proper cooling after harvest can:
• Reduce respiration and enzymatic degradation;
• Minimize water loss and prevent wilting;
• Slow or stop the growth of microorganisms that cause decay;
• Lower the production of ethylene, the natural ripening agent.

Environmental factors play a crucial role in determining the quality and shelf-life of fruit during storage. Storage facilities are designed to hold fruit after harvest and before it reaches retail locations, while ripening rooms, often part of these facilities, focus on ripening unripe fruit. Although their processes differ, both storage and ripening facilities aim to control environmental conditions that influence fruit ripening and longevity.
Key factors affecting fruit ripening include temperature, relative humidity, ethylene (C2H4), carbon dioxide (CO2), and oxygen (O2). These levels vary based on the type of fruit and whether the goal is to store or ripen it. Fruit continues to respire and transpire after being harvested, altering its environment through its physiological changes.
The three primary ways fruit affects its surroundings are:
• Respiration: Fruit consumes oxygen to break down sugars and produce heat, water, and carbon dioxide. Lowering the temperature during storage reduces respiration, ripening, and aging. CO2 and O2 levels also impact the rate of respiration.
• Transpiration: When there is a difference in water vapor pressure between the fruit and the surrounding air, the fruit loses water. This can lead to shriveling, spoilage of quality and flavor, and weight loss. Keeping relative humidity high during storage helps retain moisture and maintain fruit weight, which is important for maintaining its market value.

Cold chain logistics refers to the technology and processes that ensure the safe transportation of temperature-sensitive goods throughout the supply chain. It is deeply rooted in scientific principles, assessing the relationship between temperature and perishability to maintain product integrity.
Any item categorized as “perishable” typically requires cold chain management. This includes food products such as meat, seafood, and fresh produce, as well as medical supplies and pharmaceuticals.
Although, modern transportation is a relatively recent development, the  practice of moving temperature-sensitive products dates back to the late 1700s when the British used ice to preserve fish. By the late 1800s, ice was widely used to transport perishables. Dairy products were shipped from rural areas to urban markets. Cold chain technology has long been a crucial component of global trade and will continue to play a vital role in the future.
COLD CHAIN LOGISTICS
A cold chain is a specialized supply chain designed for handling perishable and temperature-sensitive goods, commonly referred to as cool cargo. These include fresh produce, meat, dairy, seafood, chemicals, pharmaceuticals, flowers, wine, and other delicate products. To preserve the quality and integrity of these perishable items, specific lowtemperature conditions must be maintained throughout the supply chain. Certain products require refrigeration; others must be kept frozen, while some demand extreme conditions—often referred to as an ultralow chain or deep freeze. Any failure to maintain the appropriate temperature can result in product spoilage, compromising safety and quality, and ultimately leading to significant financial losses.

Cooling systems play a vital role in cold chain logistics, serving as essential components that regulate temperature for storage, processing, and transportation. An efficient cooling system ensures that food and other perishable products remain fresh for extended periods, even before they begin their journey. Various cold chain products require specific temperature settings to maintain their quality and integrity until they reach their final destination.
For instance, tropical fruits such as bananas and pineapples must be stored at a consistent temperature between 12°C and 14°C. If the temperature exceeds this range, the fruits may ripen prematurely, compromising their quality. Likewise, food items like milk, vegetables, and other perishable fruits should be cooled within the range of 2°C to 4°C. This temperature effectively eliminates harmful pathogens and prevents bacterial growth, preserving the freshness of the produce.
For businesses dealing with frozen food, seafood, or ice cream, a more advanced cooling system is necessary—one that can maintain temperatures as low as -30°C. Such systems are essential to prevent thawing and spoilage, ensuring that frozen goods remain in optimal condition throughout their transportation and storage.

Supply chain management (SCM) is essential for the food industry because it involves the coordination and management of various activities from food procurement to consumption. The food supply chain is complex and involves many stages, from the production of raw materials to packaging, distribution and sales. Therefore, effective food supply chain management is essential to ensure that food products are delivered to consumers efficiently, cost-effectively and with maximum food safety.
One of the biggest challenges in food chain management is food safety. Foodborne illness is a major concern and food manufacturers must implement strict quality control measures at every stage of the food supply chain. This includes testing and monitoring for pathogens, maintaining proper storage and transportation conditions, and ensuring that all equipment is cleaned and  disinfected to prevent contamination.

Supply chain logistics involves overseeing the flow of goods and services across the entire supply chain, from start to finish. It encompasses the sourcing, transportation, storage, and distribution of raw materials, manufacturing processes, and final products.
The scope of logistics covers the planning and execution of storing and moving goods between different points in the supply chain. It involves coordinating facilities, personnel, equipment, and other resources to ensure that products are transported as planned and have sufficient space at each point in the supply chain.
Key processes such as demand planning, transportation (including fleet management), inventory control, material handling, and order fulfillment all fall Munder the logistics umbrella. Supply chain logistics is the backbone of global trade, encompassing a wide-reaching network that includes transportation, warehousing, and inventory management systems. This vital aspect of business operations guarantees the efficient movement of products and services from manufacturers to end consumers, passing through various intermediaries along the way.
In today’s fast-paced and constantly changing business environment, understanding and optimizing supply chain logistics has become even more critical. Companies are under greater pressure to deliver products faster, more affordably, and with increased transparency.

1. Blast
Diagnostic Symptoms
• Pathogen attacks the crop at all stages of crop growth.
• Symptoms appear on leaves, nodes, rachis, and glumes. On the leaves, the lesions appear as small bluish green flecks, which enlarge under moist weather to form the characteristic spindle shaped spots with grey centre and dark brown margin (Leaf blast).
• Spots coalesce as the disease progresses and large areas of the leaves dry up and wither. Severely infected nursery and field appear as burnt.• Black lesions appear on nodes girdling them. The affected nodes may break up and all the plant parts above the infected nodes may die (nodal blast).
• During flower emergence, the fungus attacks the peduncle and the lesion turns to brownish-black which is referred to as rotten neck / neck rot / panicle blast (neck blast).
• In early neck infection, grain filling does not occur while in late infection, partial grainfilling occurs (Fig.1).

Rust
The rust of wheat has been studied more than any other disease in the world. K.C. Mehta and colleagues conducted exceptional research on the disease in India. There are three recognized wheat rusts. These include Puccinia graminis tritici, which causes black stem rust; Puccinia recondita, which causes brown rust (leaf rust); and P. striiformis, which causes yellow rust. Considering their later seasonal arrival, brown and yellow rusts inflict more damages than black rust.
1. Black or Stem Rust
Diagnostic Symptoms
• Symptoms are produced on almost all aerial parts of the wheat plant but are most common on stem, leaf sheaths.
• Brown pustules of uredina appear on lower surface of the leaves, leaf sheaths and the stems, and on the spikes. which give them a rusty appearance.
• Uredina form urediniospores , which are the repeating spores.
• Uredina gradually start producing teliospores and finally transform into telia.

Banded Leaf and Sheath Blight
Diagnostic Symptoms
• From the crop’s seedling stage until crop maturity, this pathogen can infect the plant at any point in its growth.
• The disease initially appears on the first and second leaf sheaths above the ground, and it eventually spreads to the ears, where it results in ear rot.
• The hallmark symptoms of ear rot include the presence of light brown, cottony mycelium on the plant’s ear, small, rounded black sclerotia, early ear drying, and caking of the ear sheath.
• When there is humidity, the infection that first appears on the lower sheath extends to the upper sheaths, causing leaf sheath rot and complete leaf drying.
• When the condition worsens, the majority of the plant’s leaves become blighted, and easily detachable sclerotia form on the lesions.
• The disease manifests as a straw-colored, wet, irregular to roundish patch on both leaf surfaces on the basal sheath.

Loose Smut
Sphacelotheca cruenta
Diagnostic Symptoms
• Affected plants can be detected before the ears come out.
• Shorter than the healthy plants with thinner stalks and marked tillering.
• Ears come out much earlier than the healthy.
• Glumes are hypertrophied and the ear head gives a loose appearance than healthy.
• Sorus is covered by a thin membrane which ruptures very early, exposing the spores even as the head emerges from the sheath(Fig-1).

1. Downy Mildew (Green Ear)
Sclerospora graminicola
Diagnostic Symptoms
• Characteristic symptoms of the disease are pale, chlorotic, broad streaks extending from base to tip of leaves.
• At the advancement of disease, the leaf streaks turn brown and the leaves become shredded longitudinally.
• In severe infection, the downy fungal growth can be seen on the upper as well as lower surface of the leaves.
• Infected plants fail to form ear but if formed, they are malformed to green leafy structures.
• Complete ear can be transformed into leafy structure.
• Pathogen transformed all floral parts such as glumes, palea, stamens and pistils into green linear leafy structures of variable lengths and no grains are produced.
• Partial infection of ear head is observed in which some grains are produced and rest of the ear head is converted in to a green ear(Fig-1).

1. Blast
Pyricularia grisea
Diagnostic Symptoms
• Crop is susceptible to the disease during all stages of its growth, from seedling to grain formation stage.
• In young seedlings, lesions are generally of spindle shaped, however lesions of different sizes may also be observed.
• In the beginning the spots have yellowish margin and grayish centre. Later, the centres become whitish grey and disintegrate.
• Lesions are isolated in the beginning and afterwards they may soon coalesce. The distal portion of the leaves beyond the lesions may hang and drop off.
• In older plants, the disease appears on leaf blades with typical spindle shaped spots.
• Under congenial conditions, such spots enlarge, coalesce and form bigger lesions.
• Lesions are like those on the seedlings and are about 0.3-0.5 cm in breadth and 1-2 cm in length. Apices of the infected leaves beyond the lesions hang down and sometimes break.
• Stem infection causes blackening of the nodal region, penetrating into the tissues.

Tikka or Leaf Spot
Cercospora arachidicola/ Phaeoisariopsis personatum
Diagnostic Symptoms
• Disease is caused by two different pathogens, namely, Cercospora arachidicola and Phaeoisariopsis personatum.
• The two pathogens mostly occur on the same leaves.
• The Cercospora arachidicola appears about a month earlier than the Phaeoisariopsis personatum.
• The two pathogens cause symptoms differing each other. Early leaf spot
• Sub-circular dark brown spots having 1 to over 10 mm diameter are produced on the upper leaflet surface.
• Spots are of lighter shade of brown on the lower side of the leaflets.
• Yellow halo is seen around the brown spots.
• Dark brown in colour on the upper leaflet surface where most sporulation occurs and a lighter shade of brown on the lower leaflet surface.

1. Rhizoctonia aerial blight / Web blight
Symptoms
• The soybean Rhizoctonia aerial blight is a damaging foliar disease that quickly defoliates plants in warm, humid climates.
• Rhizoctonia solani causes soybean aerial blight, which manifests as leaf and pod spots, leaf blight, defoliation, lesions on the stem and petiole, a mycelium that resembles a cobweb, and sclerotia that form on diseased leaves.
• The plant’s lower or central sections are where infection starts, and it progressively spreads upward.
• The leaves first have wet patches that eventually become green to reddish brown in color before turning tan, brown, or black.
• Small spots at first eventually combine to cover a significant portion of the leaf.
• Affected leaves droop and stick to the pods and stem underneath them during the aerial blight phase, infecting the pods and seeds in the process.

Ascochyta Blight
Diagnostic Symptoms
• All above ground parts of the plant are infected.
• Round or elongated lesions, bearing irregularly depressed brown spot and surrounded by a brownish red margin on leaf.
• Similar spots may appear on the stem and pods.
• Spots on the stem and pods have pycnidia arranged in concentric circles as minute black dots.
• When the lesions girdle the stem, the portion above the point of attack rapidly dies.
• If the main stem is girdles at the collar region, the whole plant dies (Fig.1).

• Seedlings get blighted due to infection soon after seed germination.
• Infected pods have discolored seeds (Fig.3).

Red Rot
Diagnostic Symptoms
• Practically all above ground parts are affected, but stalks are the main targets of stack.
• Spindle leaves (third or fourth)starts drying.
• Further stalks becomes discolored and hollow.
• Diagnostic symptom is th formation of red streaks, interrupted by white patches , inside the stalk.This can be seen by splitting the stalks longitudinally.
• White patches are characteristics of disease, not found in other stalk rots.
• After splitting opened the diseased stalk, a sour smell due to conversion of glucose to alcohol.
• Red longitudinal lesions are also seen on the mid ribs of the leaves on which black color fruiting body (Acervuli) are formed (Fig.1).
