Brassica is a genus of plants belonging to the mustard family (Brassicaceae) and includes some of the most widely cultivated and consumed vegetables globally. The Brassica group encompasses a diverse range of cool-season crops, including broccoli, cauliflower, cabbage, kale, and mustard, among others (Fig. 8.1). These vegetables are not only rich in nutrients, fiber, and antioxidants but also play a vital role in human health, food security, and sustainable agriculture.
• India is one of the largest producers of Brassica vegetables, with a  significant portion of the crop being cultivated in the Indo-Gangetic plains. According to the Indian Horticultural Database, Brassica vegetables are grown on approximately 2.5 million hectares of land, with a total production of over 30 million metric tons annually. The major Brassica-producing states in India include Maharashtra, Madhya Pradesh, Gujarat, Uttar Pradesh, and West Bengal.
• The importance of Brassica vegetables extends beyond their nutritional value and economic significance. They are also an integral part of Indian cuisine and culture, with various regional and traditional recipes featuring these vegetables as main ingredients. Furthermore, Brassica crops are a vital component of crop rotation and intercropping systems, helping to maintain soil health, reduce pests and diseases, and promote biodiversity.

Allium vegetables, which include onions, garlic, and shallots, are a fundamental part of Indian cuisine and play a vital role in the country’s agricultural sector (Fig. 7.1). Here’s an overview of their importance, area, and production in India:
• India is the second-largest producer of onions in the world, accounting for over 20% of global production. Onions are grown across various states, with Maharashtra, Madhya Pradesh, and Karnataka being the top producers. The country produces over 19 million tons of onions annually, with a significant portion being consumed domestically.
• Garlic is another essential Allium crop in India, with the country producing around 1.4 million tons annually. The major garlic-producing states in India are Madhya Pradesh, Gujarat, and Maharashtra.
• Shallots are also grown in India, particularly in the states of Maharashtra, Gujarat, and Tamil Nadu. The country produces around 0.7 million tons of shallots annually.
• The importance of Allium vegetables in India extends beyond their culinary uses. They are a significant source of income for millions of farmers across the country. The Allium crop industry also provides employment opportunities in rural areas, contributing to the country’s economic growth.

The natural habitat of rubber (Heavea brasiliensis) is rain forests of the Amazon basin, situated within 5° North and South at altitudes below 200m. The climate of this region is equatorial monsoon type characterized by mean
monthly temperature by 25 to 28°C, well distributed rainfall and no marked dry weather. Though it is originated in the Amazon basin, it is now predominantly grown in the tropics where an equatorial monsoon type climate prevails. Regions between 8°N and 10°S which includes Indonesian archipelago, Malaysia, southern part of Sri Lank  and some other Islands, are better suited to rubber cultivation. The production of natural rubber in the country was 8.65 lakh MT in 2008–09, registering a 4.74 per cent growth compared to the previous year. India is the fourth largest producer of natural rubber with a share of eight per cent in the World after Thailand, Indonesia and Malaysia and the fourth largest consumer of natural rubber after China, USA and Japan. Among the rubber growing countries in the World, India occupies a pride place with the top most position in productivity (Table 9.1). The productivity of natural rubber (NR) in India in 2009–10 was 1784 kg/ha. In 1950–51, it was 284 kg/ha. The growth achieved in terms of the productivity of natural rubber is 628 per cent. This achievement

Leafy greens, comprising a diverse array of crops such as spinach, lettuce, kale, collard greens, and mustard greens, among others, are a vital component of global vegetable production. With their high nutritional value, versatility in culinary uses, and ease of cultivation, leafy greens (Fig. 6.1) have become an integral part of diets worldwide.
• In India, leafy greens are grown across various agroclimatic zones, with major producing states including Maharashtra, Gujarat, Uttar Pradesh, and Tamil Nadu. The estimated area under leafy greens cultivation in India ranges from 0.7 to 0.8 million hectares, accounting for a significant share of the country’s total vegetable production. The annual production of leafy greens in India stands at approximately 5-6 million tonnes, with a considerable portion being consumed domestically.
• Beyond their culinary and nutritional significance, leafy greens also hold substantial economic importance, particularly for small and marginal farmers who constitute the backbone of India’s agricultural sector. The cultivation of leafy greens provides these farmers with a vital source of income, enabling them to support their livelihoods and contribute to local economic development.
 

Tea (Camellia sinensis) is one of the most important beverage crops in the World and the second most commonly drank liquid on earth after water. It has numerous medicinal benefits mainly due to its antibacterial and
antioxidant properties. The major tea growing regions of the world are South-East Asia (India and Sri Lanka), Eastern and South Africa consisting of Kenya, Malawi, Tanzania, Uganda and Mozambique. All these countries are producers of black tea. China and Japan are the major producers of green tea. These countries experience cool, tropical humid climate where this crop is being cultivated. However, at present, the crop is also being cultivated in wide range of climates from Mediterranean to warm, humid tropics to include countries such as Russia and Georgia in the northern latitudes and Argentina and Australia in the southern latitudes (Plate 8. 1). The region to which the crop is grown is closely linked with the climate. The crop is grown across wide altitudes up to 2200 m a.m.s.l. Sri Lanka, Kenya, China and Vietnam are the major competitors to India in tea exporting field. China is the major producer of green tea while Sri Lanka and Indonesia are producing mainly orthodox varieties of tea. Tea industry in India occupies an important place in the national economy since last 172 years. It is an essential item of domestic consumption. Tea is also considered as the cheapest beverage amongst the beverages available in India.

Root-type vegetables are a diverse group of underground plant structures that are edible and serve as a vital source of nutrition for humans. These vegetables can be further categorized into two main types: true roots, such as carrots, beets, turnips, and radishes, which are modified taproots that store food; and tuberous roots, such as Potatoes, sweet potatoes and yams, which are modified
stems that store food. A root is a compact, often enlarged storage organ with hairy stems that develops from root tissue. So a tuber is a root crop, but a plant can be a root and not a tuber. Carrots and cassava are root vegetable crops. Potatoes, sweet potatoes and yams, on the other hand, are edible tuber crops (Fig. 5.1).
The primary difference in propagation lies in the plant part used: tubers, like potatoes, are propagated from modified stems or roots with “eyes” (nodes) that sprout, while root crops, like carrots, are propagated from seeds or root cuttings, as their roots don’t have these propagation points. Another major difference is that tubers will have long shelf life compared to roots.
• Tubers
• Origin: Tubers are modified stems or roots that store nutrients.
• Propagation: They can be propagated vegetatively by using pieces of the tuber that contain “eyes” (nodes) which sprout and grow into new plants.
• Examples: Potatoes, sweet potatoes, and cassava.

Beans play a vital role in India’s agricultural sector and food security. They are an essential source of protein, fiber, and other essential nutrients, making them a crucial component of the Indian diet. Beans are also a significant source of income for many farmers in India, particularly small and marginal farmers. The country’s bean production also contributes significantly to the national
economy, with India being one of the largest producers of beans in the world. In addition to their nutritional and economic importance, beans also play a crucial role in maintaining soil fertility and promoting sustainable agriculture practices in India. Beans are legumes, which mean they have the ability to fix nitrogen in the soil, reducing the need for synthetic fertilizers and promoting
soil health. India is a significant producer of various types of beans, which are widely used as vegetables in the country. These beans are not only a good source of protein, fiber, and other essential nutrients but also play a crucial role in the country’s agricultural sector.
Overall, beans are a vital crop in India, and their production and consumption play a significant role in the country’s food security, agricultural sector, and national economy.
They are grown in various parts of the country, with major production areas including Punjab, Haryana, and Uttar Pradesh. According to the Indian Ministry of Agriculture and Farmers Welfare, the country produced over 1.4 million metric tons of kidney beans in 2020-21. Kidney beans are an essential ingredient in many popular Indian dishes, such as rajma masala, and are also used in salads, soups, and stews.

Agroclimatology plays a vital role in the cultivation and production of creeper vegetables in India. Creeper vegetables, such as cucumber, bitter gourd, and bottle gourd, are an essential part of Indian cuisine and are grown extensively throughout the country. With its diverse climate and geographical conditions, India offers a suitable environment for the growth of a wide range of creeper
vegetables.
In terms of area and production, creeper vegetables account for a significant share of the total vegetable production in India. According to the Ministry of Agriculture and Farmers Welfare, Government of India, the area under creeper vegetable cultivation has been increasing steadily over the years, with a corresponding rise in production. This trend is attributed to the growing
demand for these vegetables, both domestically and internationally.
Creeper vegetables are not only an important source of nutrition but also contribute significantly to the country’s economy. They are a vital source of income for many small and marginal farmers, who cultivate these crops on a large scale. Moreover, the export of creeper vegetables earns significant foreign exchange for the country.
The importance of creeper vegetables in India can be gauged from the fact that they are an integral part of various traditional and cultural festivals. For instance, bitter gourd is considered a auspicious vegetable in many Indian communities and is often prepared during special occasions.

India’s diverse climate and geography provide a favorable environment for growing a wide range of fruit-type vegetables, including eggplant, tomato, okra, and chillies. These crops are not only essential for food security but also contribute significantly to the country’s agricultural economy. To optimize the production and productivity of these crops, it is crucial to understand their agroclimatic requirements.
Fruit-type vegetables have specific temperature requirements for growth and development. For instance, eggplant and okra require warm temperatures between 20-30°C (68-86°F) for optimal growth, while tomatoes prefer a slightly cooler temperature range of 15-25°C (59-77°F). Chilli peppers, on the other hand, thrive in temperatures between 20-35°C (68-95°F). Adequate moisture is also essential for the growth and development of fruit-type vegetables. Eggplant, okra, and chilli peppers require consistent moisture, especially during the fruiting stage, while tomatoes require a slightly drier soil condition. The ideal annual rainfall for these crops ranges from 600-1,200 mm, with supplemental irrigation provided during periods of drought.
Weather conditions, such as sunlight, wind, and frost, also play a crucial role in the growth and development of fruit-type vegetables. Most fruit-type vegetables require full sun to produce well, while excessive wind can damage plants and reduce yields. Frost, on the other hand, can be detrimental to these crops, and frost-free periods are essential for optimal growth. India‘s diverse
climate and geography result in regional variations in agroclimatic conditions. For instance, the Indo-Gangetic Plains, which cover parts of Uttar Pradesh, Bihar, and West Bengal, have a subtropical climate with hot summers and cold winters. In contrast, the Deccan Plateau, which covers parts of Maharashtra, Karnataka, and Telangana, has a tropical climate with warm summers and mild winters. Understanding these regional variations is essential for optimizing the production and productivity of fruit-type vegetables. The agroclimatic conditions suitable for growing different fruit type vegetables are given in this chapter.

Black pepper (Piper nigrum L.), famous as “Black Gold” and also known the “King of Spices” is the most important agricultural commodities of commerce and trade in India. It is the most important, most popular and most widely used spice in the World. Of the total spices traded internationally, black pepper accounts for 34 per cent. South West India is the traditional home of this important spice, particularly the Malabar Coast. Black pepper is also grown in tropical zones such as the Asia Pacific Region, mainly India, Indonesia, Malaysia, Sri Lanka, Thailand, China, Vietnam and Cambodia. Outside the Asia Pacific region, the crop is distributed in Brazil, Mexico, Guatemala, etc., totaling about 26 countries. It is grown successfully between 20°N and 20°S latitude and from mean sea level to 1500 meters above sea level. World’s black pepper production varies in the range of 2.7 to 3.35 tonnes annually. The major production share is contributed by Vietnam with an annual production of 80,000 tonnes. About 85 per cent of the World trade of pepper is determined by the largest pepper producing countries in the International Pepper Community (IPC). World export fluctuates around 1.5–2.5 lakhs tonnes per annum. Global black pepper supply has shown a drastic increase over last ten years except in 2008–09. Vietnam’s sudden increase in production has resulted in the massive global out put of 3–3.5 lakhs metric tonnes from 1.9–2.0 lakhs metric tonnes in late nineties. 

Vegetable crops stand as pillars of global food security and human health, providing essential vitamins, minerals, and dietary fiber crucial for well-being. Their diverse forms, flavors, and nutritional profiles contribute significantly to balanced diets worldwide. However, the successful cultivation of these vital crops is intricately linked to the surrounding atmospheric environment. This
book, “Agroclimatology of Vegetable Crops: Classification and Cultivation” endeavors to explore and elucidate this critical relationship, providing a comprehensive understanding of how climate and weather influence the growth, development, yield, and quality of a wide array of vegetable crops. The interaction between vegetables and their climate is a dynamic and multifaceted one. From the moment a seed germinates to the final harvest, every stage of a vegetable plant’s lifecycle is profoundly impacted by factors such as temperature, precipitation, solar radiation, humidity, and wind. Understanding these influences is no longer merely academic; in an era marked by increasing climate variability and the urgent need for sustainable agricultural practices, it has become a fundamental necessity for ensuring consistent and reliable vegetable production (Fig. 1.1).
Within these pages, readers will find detailed analyses of
• Fundamental Climatic Parameters and Their Impact: A thorough examination of how temperature regimes, rainfall patterns, solar radiation intensity and duration, humidity levels, and wind patterns affect key physiological processes in vegetable plants, such as photosynthesis, respiration, transpiration, and nutrient uptake.

Arabica coffee is reported to have originated in the tropical rain forests in Ethiopian highlands while Robusta is a native of the humid tropical lowlands of Central Africa, probably, Uganda. The major coffee producing countries
across the World are distributed between 23°N and 23°S of the equator. Beyond these latitudinal limits, temperature becomes a major limiting factor as coffee plants are sensitive to extreme temperature regimes. Thus within
the latitudes, altitude becomes a major factor. In areas, nearer to the equator, coffee plants require higher altitudes when compared to farther north and south (6.1 plate). The world’s largest coffee producer is Brazil with around 30% of total world output of coffee. Columbia comes in second with around two thirds of Brazil’s production. India is the sixth largest (after Brazil, Columbia, Vietnam, Indonesia and Ethiopia) producer of coffee. Coffee is reportedly introduced into the Western Ghats regions of South India around 1600 AD. However, commercial cultivation of coffee was opened in South India with the British enterprise and investment during late 1820s. Coffee occupies an important position among the plantation crops in India. It is cultivated mainly in the traditional States of Karnataka, Kerala, Tamil Nadu and to some extent in non-traditional areas viz., Andhra Pradesh and Orissa as well as in North Eastern States viz., Assam, Manipur, Meghalaya, Mizoram, Tripura, Nagaland and Arunachal Pradesh. Coffee in India is unique. Almost all coffee plantation are grown under the shade of forest/planted trees, where as it is grown under open conditions in all the major producing countries viz., Brazil, Vietnam and Columbia.

Small cardamom (Elettaria cardamomum Maton), popularly known as the “Queen of spices”, occupies an important position among the foreign exchange earning commodities. It is cultivated on a commercial scale in Sri
Lanka, Guatemala, Tanzania and Papua New Guinea. Guatemala is the largest producer of cardamom in the World. In India, it is confined to the States of Kerala, Karnataka and Tamil Nadu. Among these States, Kerala
accounts for the major portion of production (58.4 %), followed by Karnataka (35.2 %) and Tamil Nadu (6.4 %). In Kerala, Cardamom is mainly grown in the erstwhile Travancore area in Idukki district and it is known as the Cardamom Hill Reserve (CHR). Cardamom is a native of the moist evergreen rain forests of the Western Ghats and is grown extensively in the hilly regions at elevations of 700 to 1300 metres as an under crop in forest lands. Cardamom thrives well within certain maximum and minimum thermal regimes. It is believed that diurnal symmetries in temperature trends, if any, have close links with the changes in cloudiness, humidity, atmospheric circulation pattern, winds and soil moisture. The land use pattern of cardamom tracts has changed to a great extent in recent decades. Crops like coffee, black pepper and areca nut are being cultivated at many locations in place of cardamom. With denudation of forests in many cardamom areas, the ideal cool humid microclimate has been destabilized and adversely affected the productivity of the crop.

Cocoa is popularly known as cacao in many cocoa growing nations. Cocoa beans are the source of commercial cocoa. The cocoa products viz., cocoa liquor, cocoa butter, cocoa cake, cocoa powder and cocoa chocolate are widely consumed across the World. Cocoa powder is essentially used as flavour in biscuits, ice cream, dairy drinks and cakes. Apart its use as flavour it is also used in the manufacture of coatings for confectioners or frozen desserts. Cocoa powder is also consumed by the beverage industry for example for the preparation of chocolate milk. Besides the traditional uses in chocolate manufacture and confectionery, cocoa butter is also used in the manufacture of tobacco products, soap and cosmetics. It is also a folk remedy for burns, cough, dry lips, fever, malaria, rheumatism, snakebite and wounds. It is reported to be antiseptic and diuretic. Looking at the industry needs for various purposes, there is a heavy demand for cocoa. At present, the gap between supply and demand in cocoa appears to be more at the national level. To fill the gap, various agro-technologies and crop improvement strategies are to be chalked out, for which the response of the crop to various environmental factors are to be understood. Weather aberrations during the flowering and fruiting result in the final cocoa production. Therefore, it is important to understand the effect of weather on flowering and fruiting pattern of cocoa to minimize the crop losses against the weather abnormalities. Though it is known that cocoa yield is highly variable and sensitive to various weather factors, the studies on crop weather relationships in cocoa and its response to climate change/variability are relatively scant

Pollution emanating from industrial units has become a major problem globally and it is generally monitored by some government agencies. These agencies enforce various laws and regularly carry out checks at the industrial units. Same is true with regards to slaughterhouses or abattoirs. Pollution parameters are parameters against which the effluents coming out of the Effluent Treatment Plant (ETP) of slaughterhouse or any industrial entity is measured against. Effluent generated during various processes of the slaughterhouse is directed towards the ETP and it undergoes different processes to reduce the pollutants level in the effluent. Then, the effluent is tested against the pollution parameters and the effluent must have less than the maximum permissible level of the pollution parameters. The effluent must not have more than the permissible maximum level of the pollutants after coming out of ETP before being discharged into the municipal sewage system or some natural water bodies.

The Coconut palm, also known as the Cocos Nucifera L., is one of the most fascinating and beautiful palms in the world. The coconut is believed to have originated in southeast Asia (Indonesia, Malaysia, Philippines) or Micronesia. Coconut has been cultivated in India since ages and plays an important role in social, economic and cultural activities of the people. The palm is amenable to both plantation and homestead management and it can be either a major crop or a minor one in a homestead garden of mixed crops. While responding favourably to scientific management, the palm also tolerates negligent farming to a certain extent. Thus, it can adapt to the divergent farming situations and management practices that are prevalent in different agro-climatic regions. The coconut palm is usually found near the sea on sandy beaches where it can tolerate salt spray and brackish soils. It is also grown under different soil types such as loamy, laterite, coastal sandy, alluvial, clayey and reclaimed soils of the marshy low lands. The ideal soil conditions for better growth and performance of the
palm are proper drainage, good water holding capacity, and presence of water table within three metres and absence of rock or any hard substratum within two meters of the surface. The coconut palm can also grow well inland, within altitudinal limit of 600 m to 1000 m in the Tropics. It requires an equatorial climate with high humidity. A year-round warm and humid climate favours thegrowth of coconut. The palm does not withstand prolonged spells of extreme weather/climate variations under rain fed conditions. A welldistributed rainfall of 1300–2300 mm per annum is preferred. It is known as a coastal tree since it is grown along the Coasts and Islands and does not tolerate high diurnal temperature range, that is the difference between the maximum and minimum temperatures.

Introduction

‘Scotoma effect’ or ‘factory-blindness’
• Persons working in any factory or abattoir on routine basis slowly and slowly becomes unaware (mentally ‘blind’) about any sub-standard hygiene or cleanliness problem existing in the surrounding
• This effect is known as ‘scotoma’ or ‘factory-blindness’
• Effect can be powerful and the any visitors to that factory or abattoir will instantly notice that sub-standard hygiene or cleanliness problem neglected by the persons working there

Cashew (Anacardium occidentale L.) is a native of Brazil and was introduced in India by the Portuguese during the16th Century. It is grown in India, Brazil, Vietnam, Tanzania, Mozambique,
Indonesia, Sri Lanka and other tropical Asian and African countries. The crop is grown within the latitudinal belt of 27°N and 28°S of the equator experiencing the tropical climates for its growth and development. It is categorised under one of the plantations along the West and East Coasts. To a limited extent cashew is cultivated in Gujarat, Chattisgarh, Manipur, Meghalaya, Tripura, Andaman and Nicobar Islands. The crop is mostly grown in low and midlands along the West and East Coasts of India in sandy and laterite soils. Since it is mostly grown along the Coast across the Country it is also known as the Coastal Tree. Cashew grows along the West and East Coasts of India from South to North, lying between 09°N and 23oN latitudes. Though it grows beyond 23°N latitude, its production is relatively low as the reproductive phase coincides with cold injury/low temperature during
winter (December-February). Being a tropical coastal tree, it cannot thrive under low winter temperature. There is significant yield variation in cashew among the different agroclimatic zones of the country. Year-to-year yield variation is also significant as the crop is weather sensitive. This crop may come up even in waste lands with specific crop management practices along the West Coast and as a shelter belt and wind break along the East Coast.

Physicochemical parameters of meat
1. Moisture, ash and fat content
• Meat samples are dried at 105 °C for 24 h for determining the moisture content and for ash content analysis, samples are burned at 525 °C
• Fat determination is done by acidic hydrolysis of the sample
• Sample is boiled initially and then cooled and later, it is filtered, washed and dried
• Thereafter, petroleum ether is used to extract the fat
• Ether is evaporated and the remnant is dried and weighed
2. Protein content
• Often, protein in meat sample is estimated using Kjeldahl method
• The protein content is determined by multiplying the nitrogen content in the meat sample by an appropriate conversion factor
• Strong acid is used to digest the meat sample and the released nitrogen is measured by proper titration technique
• Then, the protein quantity of the sample is determined from the nitrogen concentration of the meat
• Kjeldahl method does not determine the protein content in straightway manner; a conversion factor (F) is required to convert the nitrogen content to protein content
• Usually, a conversion factor of 6.25 (corresponding to 0.16 g nitrogen/g of protein) is used for several food samples

Coconut, cocoa (cacao), coffee, cashew, cardamom, black pepper, tea, rubber, oil palm and areca nut are the major plantation crops that are perennially grown along the coastal belt in southern States of the Country and to some extent in high rainfall zones of the northeastern States of India. These crops are also known as perennial crops. The life span of these crops varies from fifteen to sixty years or more depending upon the crop and its management. Coconut and cashew are also popularly known as the coastal trees. Cardamom and black pepper are also known as the spice crops. Once these plantation crops are well established, they mature for fruiting in three to eight years depending upon the nature of plantation crops and the crop management. The reproductive phase is seen round-the-year in case of coconut and cocoa. Cashew is one of the plantation crops with seasonality in fruiting from September to June. Cocoa is mostly grown as an intercrop in coconut gardens and in some pockets as a pure crop. Black pepper is trained to coconut and areca nut in many locations and seen as mono crop as well. All these crops are grown in laterite, sandy and alike in well drained soils. The hill slopes with terrace cultivation are also suitable for all the plantation crops. Tea, coffee and cardamom are seen on hillocks extending up to the base. Some of the plantation crops are seen in multitier cropping system as well as mixed/intercrops/homestead gardens. They are grown mostly under the rain fed and summer irrigation is beneficial for better harvest. The plantation crop distribution, production and productivity are influenced by air temperature, rainfall and the other meteorological variables viz. sunshine, cloud cover, solar radiation, vapour pressure, evapotranspiration, humidity and wind. Interestingly, coffee spread in Wayanad District while cardamom in Idukki District. Coffee experiences unimodel rainfall while bimodal in the case of cardamom.

• In the initial 24–36 h after the slaughter, glycolysis is the prevailing reaction going on during post-mortem
• The organization of the contractile proteins can only be conserved by the constant supply of ATP (energy source)
• But ATP supply becomes scarce with the passage of time after death and denaturation of the proteins starts
• Denaturation is a physical or intramolecular reorganization without involving hydrolysis of the bonds occurring between the various amino acids of the polypeptide proteins chains
• Denaturation is characterized by heightened reactivity of different chemical groups, a modification in molecules shape or size, reduced solubility and lost biological reactivity in cases of enzymes or hormones
• In the course of post-mortem conditioning, proteins are prone for denaturation due to lower pH than in-vivo, temperatures more than 25 °C or less than 0 °C, dehydration and higher non- hysiological salt levels
• Connective tissue proteins such as collagen and elastin do not undergo denaturation during conditioning

Post-mortem glycolysis (anaerobic glycolysis)
• Post-mortem glycolysis is the basic function of muscle
• Irreversible anaerobic glycolysis starts after the animal has died and oxygen supply to the muscles is cut
• The various biochemical steps that occur in living animals for the conversion of glycogen into lactic acid when the oxygen supply is insufficient, are basically similar in slaughtered animal also
• After slaughter, during anaerobic glycolysis in normal animals (not in the animals that are exhausted, excited or excessively exercised just prior to slaughter), the glycogen reserve of the muscle decreases appreciably resulting in the lactic acid production which will proceed to a pH level at which the enzymes involved in glycolysis become inactivated
• In classic mammalian muscles this pH will be near to 5.4–5.5 (called Ultimate pH)
• Muscle having almost 600 mg glycogen/100 g muscle at the time of slaughter will reach this pH

to understanding how DNA, the hereditary material, dictates the production of proteins,
which are essential molecules that carry out various functions in the body, from structural
support to catalyzing biochemical reactions.
Genetic Code
The genetic code consists of rules that guide the translation of information stored in
DNA or RNA sequences into proteins within living cells. It is nearly universal across
all organisms, underscoring the shared evolutionary origins of life. The genetic code is
composed of codons, which are sequences of three nucleotides in mRNA (messenger
RNA) that correspond to specific amino acids or stop signals during protein synthesis.
Each of the 20 amino acids used in protein synthesis is encoded by one or more codons.
For instance, the codon AUG not only codes for the amino acid methionine but also serves
as the start signal for translation, marking the beginning of a protein-coding sequence. The
redundancy of the genetic code, where multiple codons can specify the same amino acid,
provides a protective mechanism against mutations, as some changes in the nucleotide
sequence do not alter the resulting protein.
Protein Synthesis
Protein synthesis is the process by which cells construct proteins based on the instructions
encoded in mRNA. This process takes place in two primary stages: transcription and
translation.
Transcription: Transcription is the first step of gene expression, where a particular segment
of DNA is copied into RNA by the enzyme RNA polymerase. During transcription, one
of the two DNA strands serves as a template for the formation of a complementary RNA
strand, This newly synthesized RNA strand, known as pre-mRNA, undergoes further
processing, including splicing, capping, and addition of a poly-A tail, to become mature
mRNA, which is then exported from the nucleus to the cytoplasm in eukaryotic cells. In
contrast, in prokaryotes, both transcription and translation occur within the cytoplasm.

tissues, organs, and entire systems respond to stimuli, experimental physiology enables the exploration of the relationship between structure and function in biological organisms. The practical experience gained in the lab is critical for medical and veterinary education, as theoretical knowledge alone is insufficient. In fields like physics and chemistry, materials can often be stored for future use. However, in biology, especially physiology, fresh
live tissue is often needed for fundamental experiments. For example, muscle and nerve tissues require careful handling and immediate use after isolation to study their responses to electrical stimuli. In in vivo experiments, live organisms are studied in their natural context, while in vitro studies use isolated cells, tissues, or organs to understand their behavior in a controlled environment.

Muscle structure

Fat
• Utmost significant slaughterhouse byproduct is fat obtained from intestines, kidneys, channel and other offals
• Edible ox fat is rendered and the obtained product is called premier jus (higher grade fat) which is differentiated into oleo oil and oleo stearin
• If all edible ox fat is rendered, it is called dripping and it used for human consumption
• Inedible fat is used for soap manufacturing
• The highest value fat from pig is recovered from peritoneal lining (leaf fat), and the subsequent highest value recovered from back fat, mesentery and omentum
• Sheep fat is separated into oleo oil and oleo stearin because of its strong flavour
• Mutton fat is harder and its stearin content is more than ox or pig and therefore, it is applied on the top of meat paste glass jar as a protective layer
Rendering of edible fat

Introduction
The renal system is primarily responsible for the filtration of waste products from blood plasma through urine production. The kidneys, along with the ureters, bladder, and urethra, are part of the urinary system responsible for removing waste products from blood and eliminating them in urine. They filter around 120 ml of blood plasma per minute and perform homeostatic roles such as regulating blood volume and pressure, pH and electrolyte
composition, stimulating erythropoiesis, and supporting vitamin D biosynthesis. Nephrons, with around 1-1.3 million per adult kidney, are primarily cortical, with 80-85% of them located in the renal cortex. The remaining 15-20% are called juxtamedullary nephrons. The kidneys remove nitrogenous compounds like urea, uric acid, and creatinine, as well as metabolic waste products, toxins, excess hormones, water, and electrolytes. Urine formation involves three main stages: glomerular filtration, tubular reabsorption, and secretion. The kidneys produce renal filtrate, which contains blood components that can be filtered out, and the body recovers 99% of the water and electrolytes from the filtrate. The renal corpuscle, comprising the Bowman’s capsule and glomerular capillaries, is responsible for filtration of blood plasma and producing renal filtrate. Its structural elements allow
for efficient filtration, with glomerular capillaries having a 100-fold greater permeability to water, small ions, and solutes. The glomerular capillaries also have increased pressure due to the smaller diameter of the efferent arteriole. The filtration membrane consists of endothelium, basement membrane, and podocytes. The proximal convoluted tubule in the kidneys plays a crucial role in reabsorption of water and electrolytes, including sodium,
chloride, potassium, calcium, and bicarbonate. It reabsorbs approximately 80% of filtered bicarbonate, with further reabsorption from the loop of Henle and distal convoluted tubule. This reabsorption regulates the body’s acid-base balance, contributing to the acidic nature of urine. The proximal convoluted tubule is the only region able to reabsorb glucose. The loop of Henle is a crucial region in the kidney, responsible for concentrating urine and facilitating water and electrolyte reabsorption. It regulates fluid volume, blood pressure, and acid-base balance through bicarbonate reabsorption. The loop consists of two main regions: the descending limb and the ascending limb.

• Slaughtering method followed should inflict least stress and suffering to the animals
• There are acceptable and the unacceptable slaughtering methods and there is no ‘nice’ method to slaughter the food animals
• In advanced countries, common slaughtering method consists of two steps, stunning and bleeding
• Stunning is done to make animal unconscious and not to feel the pain during actual bleeding process which is followed next

The skin, also known as the integumentary system, is the largest organ of the human body and protects animals from external factors. It consists of different tissues (epidermis, dermis, hypodermis, glands, hair and nails) and plays an important role in maintaining homeostasis, especially in regulating body temperature, protecting the body from damage and sensing the outside world. The skin consists of three main layers: epidermis, dermis and subcutaneous tissue; each has its own specific function. The epidermis is the outermost layer of keratinocytes that produce keratin as a protective layer. The dermis, beneath the epidermis, is rich in collagen and elastin, which give the skin strength and elasticity. The subcutaneous tissue beneath the dermis consists of fatty tissue and acts as an insulator for the body. Dermal fibroblasts are the primary cells that synthesize and maintain the skin’s extracellular matrix, contributing to its structural integrity and function. The integumentary system also plays an important role in regulating temperature, providing sensation, synthesizing biochemicals, absorbing nutrients, and protecting the body from various types of damage. In general, the integumentary system plays an important role in the body’s overall health and function by regulating body temperature, providing a sense of well-being, producing important biochemicals, absorbing nutrients, and protecting the body from external factors.

Post-mortem (PM) examination
The core objective of post-mortem examination is to identify and eradicate defects and contaminations and thus, confirming that only meat suitable for ingestion are allowed to be passed
Facilities for post-mortem inspection
• Normal infrastructure amenities which delivers comfortable working environment and assist in presenting the carcases and its offals for PM examination
• Every inspection place on the dressing over-head line must have lights of -- 540 lux (50 foot-candle) intensity light which does not alter the normal colours
• Adequate facility for sanitising the hands, equipments and aprons should be provided
• To sterilise the knives, cleavers and saws–a water bath operating at 82 ºC
• Head, viscera and carcase are the three major inspection parts
• On moving rails, viscera from a particular animal should move little ahead of its carcase so that any abnormality in viscera could be conveyed to the carcase examiner well in time
• For precise recognition of carcases and its correlated viscera from an animal, the lines conveying the carcases and viscera should move in synchronized way
• When a carcase is declared unfit for human consumption, all its the related parts such as head, viscera, blood and hide must be collected and disposed off

Introduction
• Meat inspection involves proper veterinary examination of live food animals prior to slaughter (called ante-mortem examination), inspection of carcases and offals and pathological examinations where deemed fit
• Full ante-mortem inspection represents 50% of meat inspection
• Ante-mortem inspection is particularly useful for detecting scheduled or infectious diseases which are communicable to man e.g. anthrax, rabies and glanders
• Diseases where animals show nervous symptoms like tetanus, tuberculous meningitis, sturdy in sheep, lysteriosis, rabies, cysticosis etc. and where skin lesions are manifested such as food and mouth disease, swine fever etc. are easily detected during ante-mortem inspection which are difficult to be detected in post-mortem inspection
• Animals must undergo veterinary ante-mortem inspection on the day of their arrival at the slaughterhouse or before the beginning of daily slaughtering
The inspection must determine
1. Whether the animals are suffering from a disease which is communicableto man and to animals or whether they show symptoms
2. Whether they show symptoms of disease or of a disorder of their general condition which is likely to make their meat unfit for human consumption-- any medicine/substances
3. Whether they are tired, agitated or injured
4. Whether they are sufficiently clean to enter the normal slaughter protocol
• For public health purposes, the veterinarian must separate normal animals from those which may be suffering from a potentially zoonotic disease or present a hygiene risk to the slaughter hall environment owing to the soiled condition of their hide/fleece

Introduction
Respiratory diseases are a common clinical issue in dogs, particularly in those housed in environments like pet shops, shelters, breeding and boarding kennels. Puppies and senior dogs are at a higher risk of developing respiratory infections compared to adult dogs. The respiratory system is one of the body’s four major systems, comprising the upper airways (pharynx, larynx, and trachea and the lower airways (bronchi, bronchioles, and
alveoli). The pharynx, which serves as a common passageway for both the respiratory and gastrointestinal systems, explains the relatively high incidence of aspiration pneumonia. The luminal diameter of the pharynx is the widest, followed by the larynx and trachea.
The ratio of tracheal diameter to thoracic inlet height (TD:TI) remains relatively constant, regardless of the animal’s size or respiratory phase. The respiratory tract is typically protected from harmful pathogens by physical, chemical, and immunologicbarriers, including mucus, mucociliary clearance, innate antimicrobial factors, alveolar macrophages, and the pulmonary immune response. The entire respiratory tree is lined with ciliated epithelial cells, except for the bronchioles, which are lined by non-ciliated granular secretory cells known as club cells. The respiratory system’s primary function is achieved through four major processes: pulmonary ventilation; diffusion of oxygen and carbon dioxide between the alveoli and the blood; transport of these gases in the blood and body fluids to and from the body’s tissue cells; and regulation of ventilation and other respiratory factors. The pulmonary alveoli, the main sites for gas exchange between air and blood, are highly vulnerable to injury if the body’s defense mechanisms are compromised, underscoring the importance of prompt emergency treatment for respiratory diseases

Introduction: Relation between transportation and meat quality
One of the fundamental aims of animal production system is to ensure better quality meat. Apart from various animal husbandry practices that affect the meat quality, the transportation of meat animals from farm to slaughterhouse and their handling at lairage, affect the meat quality greatly. For better meat quality, the pH of the meat should fall from normal pH 7.0 - 7.2 in live animal to pH 5.5 (ultimate pH) after slaughter at the onset of rigor-mortis. The low muscle pH is required to inhibit the microbial growth and meat tenderization (cathepsins system is activated at low pH). The ultimate muscle pH is achieved through the accumulation of lactic acid which is produced as a result of anaerobic glycolysis of glycogen. After slaughter, as the oxygen supply to muscle ceases, ATP is generated through anaerobic glycolysis of glycogen and in this process lactic acid is produced. ATP is required to keep the muscle in relaxed stage. This anaerobic glycolysis carries on till the glycogen reserve is exhausted. So, higher the glycogen reserve at the time of slaughter, longer the length of time duration of anaerobic glycolysis and higher the quantity of lactic acid production and greater the reduction of muscle pH. Hence, livestock should be transported and handled before slaughter carefully because stress during transit and in lairage could severely deplete the glycogen reserve of livestock.

reactions—also referred to as sex drive or mating instincts—and the provision of a means of transportation for spermatozoa, as well as the regulation of ejaculate—either its release into the aquatic medium surrounding the egg in the case of lower vertebrates or its introduction into female passages through an organ of intromission—are the two concrete necessities involved. The animal loses its ability to reproduce as long as either the production of germ cells or the propensity to mate is impaired, even though the two processes undoubtedly work in tandem to achieve the end result.

Blood is a unique connective tissue that performs several critical functions, including transporting oxygen, nutrients, and hormones to cells and removing metabolic wastes. It also plays a pivotal role in immune response, haemostasis, and the regulation of body temperature and pH. This
section provides an in-depth overview of the clinical physiology of the haematological system, covering the composition of blood, haematopoiesis, haemostasis, and common haematological disorders. Blood is composed of two main elements: plasma and blood cells. Plasma, the liquid component, constitutes approximately 55% of blood volume and consists predominantly of water, electrolytes, proteins, waste products, and dissolved gases. Plasma is the medium for transporting nutrients, gases, hormones, and waste products throughout the body. It contains important proteins such as albumin, which maintains osmotic pressure; globulins, which are involved in immune responses; and fibrinogen, which is crucial for blood clotting. The blood cells include erythrocytes (red blood cells), leukocytes (white blood cells), and platelets. Erythrocytes are the most abundant cells in the blood, with the primary function of transporting oxygen from the lungs to tissues and carbon dioxide from tissues back to the lungs. This is facilitated by haemoglobin, an iron-containing protein within erythrocytes that binds to oxygen. The lifespan of an erythrocyte is approximately 120 days, after which it is phagocytosed by macrophages, which are a type of myeloid phagocytic cells in the spleen and liver. Leukocytes are integral to the immune system, protecting the body against infections and foreign pathogens. They are categorized into granulocytes (neutrophils, eosinophils, and basophils) and agranulocytes (lymphocytes and monocytes).

• Filiform papillae found on the tongue are pointing backward and horny and thus, helps in food prehension
• Actinobacillosis erodes the prominent posterior part of the tongue dorsum
• 10–14 circumvallate papillae are spread in the region of prominent dorsum around the either side of the tongue midline
• Black pigmentation of the tongue surface is fairly normal and not associated with any disease condition
Sheep and goat tongue
• Similar to cattle tongue
• However, papillae are not horny but the centre of the tip is slightly grooved
• Black pigmentation of the surface of the tongue is common in blackskinned sheep.

Bleeding disorders can be either congenital, present from birth, or acquired, developing later in life. Defects in blood clotting proteins typically result in delayed bleeding and deep tissue bruising, whereas platelet defects often lead to superficial bruises, nosebleeds, black stools, and prolonged bleeding at injection sites or during surgery. Blood clotting tests can identify animals with defective clotting proteins, but they are not very sensitive.
Congenital Clotting Protein Disorders
Congenital clotting protein disorders are present from birth, and severe deficiencies or defects in these proteins typically manifest early in life. Such severe defects can be fatal, with affected animals often being stillborn or dying shortly after birth. Additionally, a lack of clotting proteins or vitamin K in a newborn can exacerbate clotting issues. If the level of a specific clotting protein is only 5 to 10% of normal, the newborn might survive but is likely to show signs of illness before reaching 6 months of age.
Hypofibrinogenemia, characterized by an abnormal shortage of fibrinogen in the blood and severe bleeding, has been observed in Saint Bernards. Dysfibrinogenemia, which involves abnormally functioning fibrinogen, has been reported in an inbred family of Russian Wolfhounds. Affected dogs experience mild bleeding problems, such as nosebleeds, but may suffer life-threatening bleeding from injuries or surgeries. The best treatment for this condition is intravenous transfusion with fresh or fresh-frozen plasma.
Factor II (prothrombin) disorders are rare. Prothrombin is a key protein in blood clotting. In Boxer dogs, prothrombin is present in normal amounts but does not function properly. Affected puppies may experience nosebleeds and bleeding gums, which tend to improve with age. In adult dogs, easy bruising and inflamed skin are common. Treatment involves transfusions of whole blood or plasma Factor VII deficiency has been reported in several breeds, including Beagles, English Bulldogs, Alaskan Malamutes, Miniature Schnauzers, Boxers, and mixed-breed dogs. This condition can lead to prolonged bleeding after giving birth and is often diagnosed incidentally during clotting tests.

Normal reproduction in the female depends on hormones, which specific chemical substances produced by specialized glands are called endocrine glands. These secretions pass into the blood and lymph fluids and are transported to various parts of the body, where they exert several specific effects. Reproductive hormones may originate in the hypothalamus, pituitary, gonads, uterus, or placenta. Hypothalamic hormones are produced
in the hypothalamus, a portion of the brain that is the neural control center for reproductive hormones. The role of hypothalamic hormones is to regulate the release of other hormones from the pituitary gland, and many hypothalamic hormones are therefore called releasing hormones. The primary releasing hormone of reproduction is gonadotropin-releasing hormone (GnRH). GnRH controls the release of follicle-stimulating hormone (FSH)
and luteinizing hormone (LH) from the pituitary gland, located at the base of the brain. These pituitary hormones regulate the production of estrogen and progesterone from the ovary. FSH stimulates the follicle’s growth, development, and function, while LH causes\= the follicle to rupture and the corpus luteum to develop. The female hormone estrogen is produced by the Graafian follicle on the ovary. Another hormone originating from the
ovary is progesterone, which is produced by the corpus luteum. Each has an important role in the female reproductive process.
A relatively new discovery in reproductive physiology is that follicular growth is not continuous in the bovine, but occurs in waves (2 to 4 waves per cycle). Each wave begins when the dominant follicle in the previous wave gains maximal size, at which time numerous small follicles begin a period of rapid growth. From this group of follicles, one follicle is allowed to grow to a much larger size than the others. This large follicle is called the dominant follicle, because it has the ability to regulate and restrict the growth of the smaller follicles. A few days after reaching maximum size, the dominant follicle begins to degenerate and die.

The eyes are the sensory organs that are extension of the brain; they receive visual information from the environment and transmit them to the visual sensory area of the brain for interpretation.
The pineal and para-pineal glands are photoreceptive in non-mammalian vertebrates. Birds have photoactive cerebrospinal fluid (CSF)-contacting neurons within the paraventricular organ that respond to light in the absence of input from the eyes or neurotransmitters.
Accessory Structure of the Eye
Eyelids - (Palpebrae) The free margins of the eyelids form the palpebral fissure. The edges where the upper and lower eyelids meet are called the lateral and medial canthus. The palpebral margins are lined by eyelashes. The eyelids are supported internally by sheets of connective tissue that form the tarsal plate.
Glands associated with the eyelids
Glands of Zeis - These are sebaceous glands associated with the eyelashes.
Tarsal glands - (Meibomian glands) - These glands line the inner margin of the lid and
produce a lipid-rich product that prevents the lids from sticking together.
Lacrimal caruncle - This is a mound of tissue in the medial canthus that produces thick secretions.
Conjunctiva It is the epithelium that lines the inner surface of the eyelids and continueson to the outer surface of the eye.
Palpebral conjunctiva lines the inner surface of the eyelid.
Bulbar conjunctiva lines the anterior surface of the eye.
Lacrimal Apparatus It produces, distributes and removes tears. Tears reduce friction, remove debris, prevent bacterial infection and provide nutrients and oxygen for the conjunctiva. Lacrimal glands are located near the lateral canthus of the eye. Tears flow over the cornea and are drained into the nose by the nasolacrimal duct.

Neurons with neurosecretory functions in the supraoptic and paraventricular nuclei of the hypothalamus
generate peptides and amines. Endocrine disorders refer to a broad range of conditions that affect the endocrine system, a complex network of glands responsible for producing and regulating hormones in the body.
Hormones play a crucial role in controlling various bodily functions, including growth and development, metabolism, electrolyte balance, and reproductive processes. When the endocrine system fails to function properly, it can lead to a wide range of disorders that can significantly impact an individual's quality of life. The endocrine system comprises several glands located throughout the body, each producing specific hormones that regulate various physiological processes. The main endocrine glands include:
1. Pituitary gland: Often referred to as the "master gland," the pituitary gland regulates the function of other endocrine glands and produces hormones that control growth and development.
2. Thyroid gland: Located in the neck, the thyroid gland produces hormones that regulate metabolism, energy production, and growth.
3. Adrenal glands: Situated on top of the kidneys, the adrenal glands produce hormones that control electrolyte balance, blood pressure, and stress response.

Introduction
In cattle, the digestive system consists of four primary compartments: the rumen, reticulum, omasum, and abomasum, followed by the small and large intestines. The rumen plays a crucial role as a fermentation chamber, maintaining anaerobic conditions and ensuring thorough mixing, as well as regulating temperature and pH levels. Food, which is frequently re-chewed, enters the rumen through the esophagus, where fermentation occurs.
The byproducts of fermentation are either absorbed within the rumen or moved on for further digestion and absorption in other parts of the digestive system. Simple indigestion in ruminants is a temporary disruption in gastrointestinal function, usually caused by a sudden change in the quality or quantity of their diet. Consuming large amounts of indigestible feed can impair rumen function for 24 to 48 hours after ingestion, as the accumulation of this feed can physically disrupt ruminal activity. Additionally, the breakdown of proteins in the rumen can produce toxic substances such as amides and amines, including histamine. This condition can lead to a significant drop in milk production due to a marked reduction in the production of volatile fatty acids in a hypotonic reticulorumen. Ruminal impaction is a condition seen in ruminants like cows, sheep,and goats, where the  rumen’s contents become compacted, obstructing their movement through the digestive tract. This condition can arise from various causes, including the ingestion of plastic waste, grazing habits, mineral deficiencies, negative energy balance, urbanization, inadequate water intake, low-fiber or high-grain diets, changes in feed or grazing patterns, and stress. The accumulation of foreign material can block fermentation, interfere with the mixing of rumen contents, and disrupt the rumen’s microflora, leading to indigestion. Acute ruminal acidosis is often caused by the sudden intake of large amounts of carbohydrate-rich feed, particularly grains. Subacute ruminal acidosis (SARA) occurs in dairy cattle and is characterized by disrupted ruminal fermentation. It typically results from feeding large amounts of concentrates with insufficient fiber, a practice often used to boost milk production during early lactation. This imbalance in diet can disturb rumen pH and microbial populations, leading to various metabolic and digestive problems. Chronic ruminal acidosis can lead to complications such as rumenitis, which is inflammation of the rumen, and laminitis, a painful condition affecting the hooves. Alkaline indigestion, also known as ruminal alkalosis, occurs when the pH of ruminal fluid rises above 7.5.

species. This introduction provides an overview of the fundamental aspects of digestive physiology in monogastric animals, outlines common digestive disorders, and highlights the importance of this knowledge in clinical practice.
The digestive tract of monogastric animals consists of several organs that work together to break down food, absorb nutrients, and expel waste. The primary components include the mouth, esophagus, stomach, small intestine, large intestine, and associated glands such as the salivary glands, liver, and pancreas.
The digestive process begins in the mouth, where food is mechanically broken down by chewing and mixed with saliva, which contains enzymes like amylase to initiate the breakdown of carbohydrates. The bolus of food is then transported through the esophagus to the stomach via coordinated muscular contractions known as peristalsis. In the stomach, food is mixed with gastric secretions, including hydrochloric acid (HCl) and digestive enzymes like pepsin, which help break down proteins. The stomach’s acidic environment also plays a critical role in killing pathogens and aiding the digestion of certain nutrients, such as vitamin B12. The stomach of monogastric animals differs from that of ruminants, as it does not possess multiple compartments for fermentation but rather relies on enzymatic digestion.
The chyme (partially digested food) passes into the small intestine, where most digestion and nutrient absorption occur. The small intestine is composed of three segments-the duodenum, jejunum, and ileum-each with specialized functions. Enzymes secreted by the pancreas and bile from the liver facilitate the digestion of carbohydrates, proteins, and fats. The intestinal lining, with its villi and microvilli, maximizes the surface area for nutrient absorption.

Cardiac disease is a significant global health concern, impacting both humans and domestic animals, particularly dogs. In the animal kingdom, the cardiovascular system consists of essential components, including the heart, veins, arteries, and capillary beds. Its proper function depends on complex mechanisms, such
as the atrioventricular valves (mitral and tricuspid) and the semilunar valves (aortic and pulmonic), which ensure that blood flows in only one direction through the heart. The activity of the cardiovascular system, including heart contraction rates and strengths, as well as blood vessel diameter adjustments, is regulated by the autonomic nervous system (both sympathetic and parasympathetic branches) and various hormones.
The strength of ventricular contractions is influenced by several factors, primarily enddiastolic volume (preload) and myocardial contractility (inotropy). Preload is the amount of blood in the ventricles just before they contract, while contractility refers to the ability of the heart muscle fibers to contract. Preload is determined by the difference between the end-diastolic pressure in the ventricle and the pressure in the pleural space, adjusted for the
stiffness of the ventricular myocardium. This pressure is influenced by the ratio of blood volume to the heart muscle’s compliance. Low-pressure volume receptors in the heart and large veins primarily regulate preload. When these receptors detect increased blood volume or vein distension, they trigger responses such as increased urine production and vein dilation, which help reduce blood volume and lower venous pressures. Increased enddiastolic volume (preload) stretches the ventricular wall, enhancing contraction strength through the Frank-Starling mechanism, or Starling’s law of the heart. This stretching activates receptors in the atria and ventricles, leading to the release of natriuretic peptides like brain natriuretic peptide (BNP) from the ventricles and atrial natriuretic peptide (ANP) from the atria) These peptides promote natriuresis, relax smooth muscle, and counteract
vasopressin and angiotensin II. In dogs, levels of BNP and NT-proBNP are directly related to cardiac stretch.

India has a well-established fisheries and aquaculture industry that significantly impacts Gross Domestic Product (GDP), foreign exchange, and nutrition. The fisheries sector plays a crucial role in India’s economy, contributing approximately 1.07% to the national GDP and 6.72% to agricultural GDP in 2021-22 (Economic Survey, 2022). India is second-largest producer of fish in the world (after China), with an annual production of around 16.24 million metric tonnes (MMT) in 2022–23, comprising 12.2 MMT from Inland fisheries and 4.04 MMT from marine fisheries. The fisheries sector has experienced remarkable growth over the decades. Fish production surged from 0.75 MMT in 1950-51 to 12.59 MMT in 2018-19, marking a seventeen-fold increase. This growth has been accompanied by a rise in the sector’s contribution to agricultural GDP, which impressively increased from 0.84% in 1950 to 5.7% in 2017. India is one of the largest seafood exporters, with exports reaching INR 63,969 crores ($8.09 billion) in 2022-23 (Marine Products Export Development Authority - MPEDA). Frozen shrimp is the leading export commodity, followed by frozen fish and cephalopods. The USA, China, the EU, and Southeast Asian nations are key export markets. This robust performance underscores the sector’s role in bolstering India’s foreign exchange reserves. The sector supports direct employment to over 28 million people, mainly in coastal and rural communities (National Fisheries Development Board, 2023) and indirect employment, including processing, transportation, and allied workers.
Fish is an important source of protein, essential fatty acids, vitamins and minerals. The harvest, handling, processing and distribution of fish
provide livelihood for millions of people and also provide valuable foreign exchange earnings. In both the industrialized and developing countries, fish is an important and cheaper source of animal protein to local communities (Adewolu and Adeoti, 2010). Fish is also used as source of other nutrients such as micro nutrients, minerals, and essential fatty acids mainly in the Low Income Food Deficit Countries. However, the disadvantage with the fish is that it is highly perishable though it is an inexpensive protein source. Due to these characteristics, the fish suffers 50-60% higher post harvest losses compared to agricultural commodities.

The nervous system in animals is a complex group of highly specialized cells capable of collecting and transmitting information in response to external stimuli via receptors and highly specialized sensory organs. It aids in the regulation of muscle coordination, the release of hormones, neurotransmitters, and other chemical mediators, all of which facilitate numerous bodily activities.
The nervous system is divided into two systems: the central nervous system (CNS), which includes the brain and spinal cord, and the peripheral nervous system. Within these systems, there is another autonomic nervous system (ANS), which is distinguished by higher centers of the hypothalamus, midbrain, pons, and medulla, as well as tracts and nuclei in the spinal cord. The ANS is further divided into sympathetic and parasympathetic
systems, which help maintain homeostasis and activate emergency mechanisms in response to external stimuli. The brain is normally covered by three meninges: piameter, arachnoid, and durameter. These meninges create three spaces: the subarachnoid space (between pia mater and arachnoid), the subdural space (between arachnoid and dura mater), and the epidural space (between dura mater and the ligamentum flavum in the spinal canal). The subarachnoid space includes cerebrospinal fluid, which is isolated from cerebral blood by the morphological and enzymatic activity of cells with tight junctions that regulate intercellular diffusion and solute exchange inside the cells. These cells form a barrier known as the “blood-brain barrier”.
The blood-brain barrier works as a selective permeable membrane, allowing only certain chemicals and medications to pass through while excreting essential components from the central nervous system via energy-dependent efflux pumps like p-glycoprotein. These proteins are encoded by genes such as ABCB1, and mutations in them can result in severe effects such as Ivermectin poisoning in the Colie breed of dogs. Similarly, it aids in the relative isolation of the neurological system from the immune system by establishing an immune-suppressive parenchymal milieu. However, various infections, trauma, and developmental defects can result in underdevelopment or damage to different cerebellar structures. As a result, depending on the portion implicated, it might cause changed behavioral changes in animals such as muscle incoordination, depression, and paralysis. These clinical symptoms may be excitatory.

Introduction
The conceptual foundation of environmental DNA (eDNA) can be traced back to French criminologist Edmond Locard’s principle that “every contact leaves a trace.” eDNA, often referred to as the “blueprint of life,” represents the genetic material shed by organisms into their environment. This innovative approach allows scientists to obtain biological information without directly interacting with or disturbing the organisms. eDNA technology is particularly advantageous in studying megadiverse ecosystems, as it enables the isolation and analysis of genetic material from various environmental samples, such as soil, water, and air. The approach of environmental DNA (eDNA) has its roots in metagenomics, which has long been used to study microbial communities
in soil, water, and sediment. The concept of eDNA was first applied in microbiological research on marine environments (Orgam et al., 1987; Handelsman, 2004). Early breakthroughs in biodiversity monitoring included the detection of invasive species, such as Rana catesbeiana (American bullfrog), in French swamps, demonstrating the potential of eDNA in ecological studies
(Díaz-Ferguson and Moyer, 2014). The persistence of eDNA also depends on the species and habitat: in freshwater, it may last between 15 and 30 days for fish and amphibians, while in marine environments, it typically persists for shorter durations, ranging from 0.9 to 7 days for marine mammals. These variations underscore the importance of understanding environmental and biological factors when applying eDNA methods for monitoring biodiversity and ecosystem health. The transport of eDNA in rivers is particularly rapid, with genetic material potentially traveling tens of kilometers from its source. This dynamic propagation must be accounted for when designing experiments and interpreting results.

Pesticides play a crucial role in agriculture. During the period of the Green Revolution, the use of pesticides increased dramatically (Matson et al., 1997). According to the Environmental Protection Agency (EPA), pesticides can be defined as compounds that are used for the destruction, repulsion, or prevention of organisms that can be harmful to cultured crops (pests) as well as affect the regulation of plant growth. They are categorized based on several factors, such as their chemical composition (organophosphates, pyrethroids, neonicotinoids, etc.), based on the types of pests they eradicate (herbicides, insecticides, fungicides, etc.), and application methods. Although each pesticide has a distinct purpose, they all have comparable advantages. Some of the primary benefits of pesticide usage are the prevention of disease andan increase in yield, whereas secondary benefits include economic efficiency, an increase in food quality, facilitation of sustainable agriculture, improving public health, etc. However, the extensive use of pesticides has its consequences. These pesticides are meant to control or eliminate pests, but their toxicity could end up in unexpected areas. Its utilization poses significant harm to the environment, particularly to aquatic ecosystems. While they are essential in agriculture, their unregulated application leads to environmental degradation. The level of toxicity is influenced by factors such as pesticide concentration, mode of action, chemical composition, and persistence in the environment. Pesticides can cause both acute as well as chronic health effects. Through runoff or leaching, they indirectly enter water bodies, harming aquatic flora and fauna. A 2001 study revealed that over 90 percent of fish and water samples collected from various streams contained traces of one or more pesticides (Kole et al., 2001).
