India ranks 23^rd among world exporters of floriculture products and its share in the world exports are at around 0.38 per cent. It is estimated that fresh cut flowers of worth Rs. 100 crores are being exported annually from India. On the other hand the post harvest losses are estimated to be more than 30-35 per cent. The loss of quality in ornamentals may result from wilting or abscission of leaves and petals, yellowing of leaves and geotropic or phototropic bending of scapes and stems. Several factors prevailing during pre harvest, harvest and post-harvest stage affect the post harvest quality and longevity of cut flowers. Each step in the life span of post-harvest flower is associated with a number of coordinated biochemical, physiological, hormonal and structural changes that are strongly modulated by the fluctuations of environmental factors and stresses of biotic and abiotic origin.

A ‘flower’ is an intricate organ composed of different morphological units including sepals, petals, androecium, gynoecium, stem and leaves. These units differ functionally with each other which ultimately decide the longevity of flowers. A cut flower may be defined as flower or an inflorescence containing more than one floral unit in the opened or unopened state which is harvested and marketed for ornamental purposes. Cut flowers in general are highly perishable commodities and highly vulnerable to huge post harvest losses. Once severed from the plant, they are deprived of their natural sources of water and nutrients and they wilt rapidly. It is claimed that 70% of the potential lasting quality of cut flowers is pre-determined at harvest. While post harvest factors influence 30% of the effects nearly 20-80% of the cut flowers are lost due to improper post harvest handling (Salunkhe et al., 1990).

Horticultural crops are highly perishable and the post-harvest loss is estimated to be 20-30% every year. There are various factors associated with post-harvest losses. It includes pre-harvest cultural operations, maturity index at which the produce is harvested, methods of harvest, pre and post-harvest treatments, packing materials and storage methods. Postharvest technology can be defined as the techniques which help to reduce the post-harvest losses.

Assessment of harvesting stage

Climate may be related to periodical events in plants life. The science dealing with this relationship is termed as phenology. The phenological data for horticultural crops include dates of planting, germination, flowering, fruit set, ripening and harvest. These dates are determined by the climatic factors prior to as well at the time of harvest. A useful phonological concept for the prediction of the harvest time is based on degree days. A “ Degree day” can be defined as a day when mean daily temperature is one degree above the minimum temperature for the growth of the plant. The minimum temperature for the growth of a particular plant is termed as “zero temperature”. Zero temperature vary according to crop. E.g. if zero temperature of a particular crop is 50°F, then a day with mean temperature of 68°F would provide 18° days. The degree days are also called as “heat units”. It can be determined by how many degree days are needed for the horticultural crop to reach harvesting stage.

Post-harvest deterioration primarily means the loss of commodity after harvest. It is one of the serious problems for producers, distributors and consumers. Post-harvest deterioration of perishables is the spoilage of fruits and vegetables after harvesting. Perishables are the feed commodities with moisture content between 50 and 90%. Fruits with the size of 5 g to 5 kg or more, high to very high rate of respiration, high generation of heat, soft texture, easily damageable nature and shorter shelf life are more prone to the microbial damage. The post-harvest losses are caused either by pathological, physiological and mechanical means or combination of all these. These perishables because of having minerals, vitamins, and photochemicals (essentially required for the human health) become victim to the several biotic and abiotic factors easily. Once these fruits are detached from the plant are deprived of essential ingredients as hormones, nutrients, water and other requisites. These biotic and abiotic factors apart from rendering the produce unfit for human consumption reduce the aesthetic value, substantial decrease in food value and also organoleptic quality of the vegetables. The fleshy produce are prone to the exogenous agencies such as fungi, bacteria, etc. as well as other endogenous factors such as respiration, senescence, etc. which may lead to poor quality of the produce and also affect market quality. These perishables continue to respire and may carry out various biochemical activities, leading to ripening subsequently to senescence and making them more susceptible to microbial damage. In addition, tropical conditions prevailing in India, which are characterized by high temperature conditions, are optimal for fungal and bacterial infections. In India, the post-harvest losses of fresh fruits and vegetables are estimated to be about 30%. The post-harvest losses have been recorded are 5-20% at farmer’s field due to pre-harvest infection and sorting, 15-20% due to faulty packaging, 30-40% during transportation and 30-40% during marketing.

Floriculture is a high value industry. It is increasingly regarded as a feasible diversification option from traditional field crops due to increased per unit returns and increasing habit of ‘Greeting with Flowers’ during all the occasions. With increasing awareness among consumers and pressure from the artificial floral products on the fresh flower industry, and continued competition even amongst the growers, whole salers and retailers, quality is becoming increasi ngly important. The aspects related to visual quality of the product are the main determining indices of consumer’s acceptability of flowers.

The important flower crops in the international market are rose, carnation, lisianthus, chrysanthemum, gerbera, hydrangea, gladiolus, gypsophila, bird of paradise, orchids, anthurium, tulip and lilies etc. Cut flowers have the highest economic value and are the most perishable. Their high respiration rates, rapid deterioration, and susceptibility to damage require the utmost care during postharvest handling for quality maintenance. The post-harvest losses can be both, quantitative as well as qualitative, which ultimately result in loss in terms of its monetary value.

Floriculture industry is facing main problem due to highly perishable nature of its flowers which demand for appropriate post-harvest handling techniques to maintain the quality. With changing scenario in international floriculture trade, perfection in post-harvest technology is mandatory to offer quality plant products to the consumers round the year. The post-harvest life of cut flowers and flowering pot plants can be extended relatively by a range of treatments and technologies. Quality factors that influence the post- harvest keeping quality and flower longevity are environmental factors as well as the influence of the pathogenic organisms. Due to perishable nature of cut flowers, huge post-harvest loss is there which ranges from 30-50 per cent. Qualitative losses which include consumer acceptability of fresh produce are much more difficult to measure than quantitative losses. Quantitative losses can occur during the entire post-harvest and marketing chain due to lack of proper post harvest handling (Bhattacharjee, 2006). These losses could be on a higher side, which might be due to lack of knowledge on ‘post-harvest handling’ of cut flowers and proper infrastructure for post-harvest management and storage. However, all these losses can only be minimized by proper technique of harvesting, post-harvest handling, packaging, storage, marketing and value addition of flowers.

11.1 Introduction

Horticultural crops are grown by farmers with the aim of generating profit. For a business to prosper, it is crucial that its products are delivered to customers who are satisfied with their quality and value, and who will continue to purchase them. Therefore, growers must continually meet consumers’ demand for fresh greenhouse-grown items by utilizing all available technology and expertise in producing, harvesting, packaging, storing, transporting, and marketing their goods. The needs of the consumer should drive production.

Ornamental pot plants should be potted in small pots according to the size of the plants. Any kind of pot/container which can hold medium and provide aeration is suitable. The most common container is the plastic or clay pots. Plastic pots should be preferred because it retains moisture longer than mud pots. Plants should not be disturbed frequently and re-potting done only when absolutely necessary.

Potting media

Different types of growing media may be used for ornamental pot plant cultivation, but it is crucial that it must retain a certain amount of moisture and be well draining. Different plants require different substrate in which they would thrive. Conditions of the plant experiences in nature should think before choosing the media. Tropical plants require more water naturally compare to subtropical and temperate ones. For irrigating with sprinkling can or hose, it is better to use materials that drain well and decompose slowly while for drip irrigation heavy potting material should be used. The most important thing is to match watering habits to the potting material. Growing conditions play a most significant role in deciding on a medium. If there is no problem in providing a constantly humid environment due to climate or if growing in a greenhouse, the moisture retention on thepart of media is less of a concern. Ambient temperatures play a role here, as well, as warmer temperatures tend to increase the evaporation of water and along with the drying rate of the medium. The personal tendencies and how much time might be spending to water plants is another significant factor in choosing a medium. Abstract: Calendulas, popularly known as pot marigold, are admired for their ornamental value. The leaves, seeds and flowers are source of oil, pigments, dye, flavonoids, and ingredient in cosmetics, human, and animal medicines and dietary composition. Currently, there are intraspecific hybrids in the market. Traits of interest to flower breeders for crop transformation include plant architecture, flowering, flower colour and size, large and bold seed with high oil, pest and virus resistance.

The hot arid regions of India are spread over 32 million hectares in the states of Rajasthan (61%), Gujarat (20%), Punjab (5%), Haryana (4%), Karnataka (3%) and Andhra Pradesh (7%). The arid regions of western Rajasthan experience an annual rain fall between 100-500 mm with a coefficient of variations varying from 40-70 per cent. Low and erratic rainfall coupled with extreme temperature results in complete or partial crop failure, considerably affects the agricultural economy of the region. High wind velocity causes wind erosion and shifting of sand dunes covers the fertile agricultural land and canals (Rao and Singh,1998). The rise in temperature begins from March onward and attains its peak in May as high as 46°C. The transpiration is low during winters but during summer in months (May & June), it reaches up to 16 mm per day. The annual estimated potential evapotranspiration values ranges from 1600 mm in eastern part and 1800 mm in western part of the region.

In the arid regions of Rajasthan, Haryana, Punjab and eastern part of arid Gujarat the soils have developed from alluvial and aeolian parent materials. In context to the type of soils light brown sandy soils with dune dominance is 30.6 per cent and associated others 34 per cent area, light brown soils 1.7 per cent, Grey brown soils 13.6 per cent hard pan in 5.9 per cent and seirozems in 1.7 per cent area (Dhir, 1977). Kolarker et al. (1989) reported that in 12 district of Rajasthan sandy soils dominated in 14.3 million ha. These soils are poor in fertility very low organic carbon (0.03-0.1%), light in texture called desert soils (north western) in the order of aridisols. It has undulated topography with the dominance of sand dunes inter-dunal plains. About 80 per cent area falls under rain fed cropping and moth bean, cluster bean, pearl millet, and sesame are the main crops grown during kharif season after the onset of monsoon. Under the vagaries of monsoon and recurrent drought the rain fed cropping becomes a gamble, which creates severe food and fodder scarcity in the region.

Potting and repotting is an essential practice to be done in a nursery to maintain the expected vigour of the plant. When a seedling from a seedbed or plant from a flat bed or raised bed is planted in a pot, it is called potting. The same term is utilized when the bulbs of bulbous plants are planted in a pot. When a plant is transferred from one pot to another pot, it is called repotting. At the time of repotting the plants may be planted in a large pot or in the same sized pot. Repotting is necessary when

1. Plant is grown for a season or a year in the same pot and becomes pot bound resulting in extensive growth of roots in rooting media and there is very little scope for further fresh growth.
2. When a plant is overgrown and requires separation or division.
3. When soil gets depleted of its nutrients.
4. Repotting affords an opportunity to the roots to form a new root growth, as repotted soil contains sufficient amounts of nutrients and good aeration.

Flower is symbol of beauty and by nature attracts every human being. It is a gift of nature to humanity. Flowers symbolize the quintessence of human spirit. In India, losses are estimated to be more than 30-35%. It is due to the lack of knowledge of postharvest management of cut flowers. Several factors at pre harvest stage including genetic or inherent, climatic or environmental and management harvest factors like stage, method, time of harvesting and postharvest factors such as watering, rehydration, precooling, storage environment, packaging techniques and microorganisms influence the postharvest quality and longevity of cut flowers.

Preharvest factors

1. Genetic or inherent makeup: Postharvest lasting quality of flower species and cultivars vary considerably due to differences in their genetic make up. It is therefore desirable to grow cultivars, which possess long vaselife.

Popular definition of Precision Agriculture (PA), Satellite Farming or Site Specific Crop Management (SSCM) describe the term as ‘a technology enabled approach to farming management that observes, measures, and analyzes the needs of individual fields and crops’.

Precision irrigation and fertilizer management in floriculture are revolutionizing the way flowers are cultivated, bringing together the latest advancements in technology to optimize resource use and enhance crop quality. In an industry where the aesthetics and health of flowers are paramount, precision agriculture techniques offer a tailored approach that meets the specific needs of each plant. Utilizing state-of-the-art tools such as soil moisture sensors remote sensing technologies and GPS-guided systems, precision irrigation ensures that water is delivered efficiently, reducing wastage and ensuring plants receive the exact amount of moisture required for optimal growth. 1. Introduction

Phytochemicals are compounds present in fruits that are not required for normal functioning of the body, but have a beneficial effect on health or play an active role in amelioration of diseases. Phytonutrients have various health benefits like antimicrobial, anti-inflammatory, cancer preventive, antidiabetic and antihypertensive. The pigments of the fruits have many therapeutic benefits including vasoprotective and anti-inflammatory properties, antiproliferative, chemo protective and anti-neoplastic properties, reversing age related deficits (Joseph et al.,1999) and useful in controlling oxidative stress during pregnancies complicated by intrauterine growth retardation (Pawlowicz et al.,2000). Cocculus hirsutus Linn. is a climber and widely distributed in tropical and subtropical climates. This plant is commonly called as kattu kodi in Tamil. It belongs to the family Menispermaceae. The fruit is a drupe which is size of small pea with red purple endocarp (Fig.1a and Fig.1b). The plant is used in treatment of gonorrhea, spermatonorrhea, Urinary troubles, diarrhea and hyperglycemia (Kirtikar and Basu, 2002). The leaves of the plant have been evaluated for anti hyperglycemic (Badole et al., 2006); antibacterial (Panda et al., 2007); diuretic and laxative (Ganapaty et al., 2002). Several isoquinoline alkaloids are present in leaves and roots; the important ones cohirsine, cohirsinine, cohirsitinine, hirsutine and jamtine (Viqaruddin et al., 1987; 1991; 1992; 1993). Since no detail scientific approach has been made to study phytochemicals of cocculus hirsutus fruit. So in the present investigation preliminary

Jam: Jam is a product made by boiling fruit pulp with sufficient sugar to a reasonably thick consistency. Jam is mainly prepared by apple, pear, sapota, apricot, peach, papaya, karonda etc. It can be prepared from one kind of fruits or from two or more kind of fruits. In general jam contains 0.5-0.6% acid and invert sugar should not be more than 40%.

36.1. Aim

To prepare cordial from lemon and lime.

36.2. Theory

Cordial is a sparkling, clear, sweetened fruit beverage from which pulp has been removed completely. It contains at least 25% fruit juice, 30% total soluble solids (TSS), 1.5% acid and 350 ppm sulphur dioxide. Lemon and lime juice cordials are the commercial products.

Introduction

For agricultural applications as well as for research work, often we need to prepare solutions of different agrochemicals of varying strength, as per the requirements. Agrochemicals are used to help crop plants grow, produce, and protect them from biotic/abiotic stresses. Many of the agrochemicals (insecticides, herbicides, fungicides, rodenticides, molluscicides, nematicides, etc.) are used to protect the crop from insect pests and diseases. However, some of them (fertilizers and soil conditioners) are used to augment crop yield. While in the previous chapter (Chapter 8) we discussed about preparation of laboratory solutions, in this chapter we will briefly discuss about the preparation of different agrochemicals.

Agrochemical/agrichemical is a generalized term used for the chemicals applied in agriculture. In general, it also includes the feed-supplements used in f isheries and animal husbandry.

Agrochemicals

Fertilizers

Fertilizers are used to augment growth of crop plants and to mitigate nutrient deficiency in the soil. Fertilisers can be organic (containing natural substances, prepared through natural processes) and inorganic fertilisers (synthetic fertilizers, manufactured artificially using chemical processes using natural deposits, by chemical alterations).

Soil Conditioners

Soil conditioners include manure, livestock and leaf compost, peat that help making the soil in good condition. They are laid on the top soil and then mixed properly. They not only increase nutrient contents in the soil but also improve aeration and water holding capacity.

42.1. Aim

To conduct practical on preparation of chutney from different fruits.

42.2. Theory

Fruit chutney is made in the same way as jam except that the spices, salt and vinegar or acetic acid is also added. In comparison to jam, chutney contains less total soluble solids. The product shall be of good quality with palatable and appetizing taste. As per FSSAI specifications, the chutney shall contain minimum of 40% fruit (w/w) in the final product with total soluble solids not less than 50%. The acidity in the final product shall not be more than 2 percent with ash content not exceeding 5 percent. Mixed fruit chutney is commercially made by using different fruits in appropriate combinations.

42.3. Raw material, ingredients, equipments and utensils required

2. Utensils for cooking and mixing, ladle, glass jars, sterilization tank, diesel or LPG stove/bhatti etc

38.1. Aim

To prepare nectar from different fruit pulp/juice.

38.2. Theory

Fruit nectar is also a RTS drink but it contains not less than 150Brix TSS and not less than 20% fruit juice or pulp. It is preserved only by heat processing as such no preservative is allowed in fruit nectars. Mango nectar, guava nectar etc. are the commercial products in this category.

38.3. Raw material, ingredients and utensils required

1. Mango, guava, and pineapple nectars are commercially available in the market. However the nectar can also be prepared from a number of other fruits like jamun, aonla, apricot, papaya, plum and bael etc.

39.1. Aim

To prepare Jam from different fruits.

39.2. Theory

Jam is prepared by boiling the fruit pulp with a sufficient quantity of sugar to a thick consistency, firm enough to hold fruit tissues in position. For preparation of jam not less than 45 parts of fruits are used for every 55 parts of sugar. According to FSSAI specifications, minimum quantity of soluble solids in the prepared jam shall not be less than 65% (w/w). The jam prepared by using two or more fruit pulps, is called as mixed fruit jam. Approved fruit colour and flavour can also be added into the jam when declared on the label.

39.3. Raw material, ingredients and utensils required

1. Fruits like Apple, apricot, mango, plum, peach, guava, pineapple, pear and kiwifruit etc either singly or in combination (mixed jam).

40.1. Aim

To prepare jelly from guava fruits.

40.2. Theory

Jelly is prepared by boiling the fruit with or without addition of water, straining the extract and cooking the clear extract with sugar to a stage at which it will set to a clear gel. The jelly should be transparent, well set, but not too stiff and having original flavour of the fruit. It should be attractive in colour and should keep its shape. In the preparation of jellies, pectin is the most essential constituent. As per FSSAI specifications, the quantity of fruit and soluble solids in the final product shall not be less than 45 and 65 percent (w/w) respectively. Guava jelly is the commercial product available in the market however jelly can be prepared from sour apple, karonda, jamun, loquat etc.

41.1. Aim

To prepare marmalade from citrus fruits.

41.2. Theory

Marmalade is a fruit jelly in which the slices/shreds of peel are suspended. The marmalades are prepared generally from citrus fruits like orange and lemon. The pectin and acid contents of the marmalades are kept slightly higher than that for jellies. They shall contain minimum of 45% fruit and 65% total soluble solids.

41.3. Raw material, ingredients, machinery required

1. Orange and lemon like citrus fruits are used for making marmalade.

2. Stainless steel knives, utensils for cooking and mixing, muslin cloth, glass jars, sterilization tank, gas bhatti etc.

Introduction

Different types of culture media are used for culturing microbes and plant tissues. Preparing as well as sterilizing them properly following appropriate method with safety for the desired purpose are important parts of research work. In this chapter, we will discuss briefly about different types of media, their composition, preparation and sterilization in laboratory for microbial or plant tissue culture.

Culture Medium

Ingredients mixed to prepare solid, liquid or semi-solid substance to support the growth of microorganism or plant tissue in vitro (outside the body) is called culture medium. Frequently, it becomes important to grow microorganism or plant/animal tissue in vitro for any or all of the following purposes:

• To study characteristic features or properties of microorganisms.

• To identify the causal organism(s) of infection in a clinical sample, so that appropriate remedy can be determined.

• To culture/multiply microorganism or plant/animal tissues in vitro for research or commercial purposes.

• To prepare/produce biological molecules, vaccines, antigens, proteins, metabolites, etc. in vitro for research or industrial purposes.

46.1. Aim: To prepare pickle from different fruits.

46.2. Theory

The preservation of food in common salt (NaCl) or in vinegar or edible oil with the addition of spices and condiments is known as pickling. It is one of the most ancient /oldest methods for preservation of fruits and vegetables. Salt, vinegar, edible oil or lactic acid act as preservative in pickle making. Several kinds of pickles are sold in the Indian market. Mango pickle ranks first followed by lime, lemon, mushroom, galgal, aonla, jackfruit and karonda pickles.

Brining: For pickling, unripe fruits (like mango) after preparation (peeling, slicing) are mixed with salt or brine for its later use in pickle preparation

43.1. Aim

To conduct practical on preparation of preserve and candies from fruits.

43.2. Theory

Preserves (murraba) are made by cooking the entire fruit or its slices/pieces in sugar syrup of higher concentration (65-70°Brix). Usually for 1 kg fruit around 1.75 kg sugar is used and the cooking is continued till the TSS reaches 68%. Fruits like aonla, bael, apple, pear, karonda, pineapple and papaya etc can be used for making preserves. Aonla, bael and apple preserves are commercially available in the market.

Candies are also prepared in similar way as preserve, but the TSS maintained is slightly higher (75-80%). In preserve, the fruit is kept immersed in syrup and packed while in case of candies, the syrup is drained off and fruit pieces are further dried and packed. For candy preparation, the fruit pieces are dipped initially in 55-60% sugar solution and the TSS of the syrup is increased by 5% everyday up to 4-5 days till a TSS of 70oBrix is reached. The fruit pieces are then separated from syrup, rolled in powdered sugar, dried and packed. Karonda, apple, peels of orange, lemon, grapefruit, petha (Ash gourd) and ginger etc are used for candy preparation. Petha, ginger, papaya, aonla etc candies are commercially available in the market.

45.1. Aim

To conduct practical on preparation of sauce from different fruits.

45.2. Theory

Sauces are of thinner consistency as compared to ketchups and contain TSS not less than 15oBrix. Pumpkin, tomato, apple, papaya and plum pulps etc are used successfully for preparation of sauces. Mixed vegetable sauce using pumpkin, tomato, chillies, carrots are sold as continental sauces.

35.1. Aim

To prepare squash from fruits or fruit pulp.

35.2. Theory

Squash is a type of fruit beverage containing at least 25% fruit juice or pulp and 40% total soluble solids (TSS). Squash is diluted before serving (1:3). According to FSSAI specifications, class II preservative in fruit squash shall not exceed 350 ppm sulphur dioxide/700 ppm KMS or 600 ppm sodium benzoate. Artificial colour and flavours can also be added when declared on the label.

To conduct practical on preparation of pickle from different vegetables.

47.2. Theory

Pickles are good appetizers and add to the palatability of a meal. Pickles may be unfermented (mostly Indian pickles) and fermented (western pickles). Salt, vinegar, edible oil or acetic acid acts as preservative in pickle making. Mixed vegetable pickle from cauliflower, carrot and turnip is most common. Cucumber and olive pickles are examples of fermented pickles. The process of steeping vegetables/fruits in salt solution is also a common method used for preservation of mango and vegetable slices for longer duration storage for its later use in pickling.

7.1. Introduction

Preservation of fruit and vegetables by application of heat is one of the important methods of food preservation as it not only imparts desirable effect in the eating quality of the food but also exerts a preservative effect on the foods by destruction of micro-organisms, enzymes, insects and parasites. Other advantages of heat processing include destruction of anti nutritional factors (e.g. trypsin inhibitor in some legumes), improvement in availability of some nutrients (eg improved digestibility of proteins, gelatinization of starches, and release of bound niacin), production of shelf-stable foods that do not require refrigeration and above all it offers a relatively simple control of processing conditions. The disadvantages of heat processing include alteration or destruction of sensory quality of foods like flavor, colour, taste and texture as a result the heat processed foods are perceived to have different quality as compared to fresh produce.

6.1. Introduction

Chemical preservatives are those substances which minute organoleptic and physico-chemical properties . Preservation of food products with chemical preservatives is usually based on the combined or synergistic activity of several additives, intrinsic product parameters (e.g. composition, acidity, water activity) and extrinsic factors (e.g. processing and storage temperature).

Many chemical substances are added to the food for functional purposes and are called as additives and in many cases these are found to occur naturally in some foods. An additive is defined as a substance or mixture of substances other than basic food ingredient present in a food as a result of any aspect of production, processing or packaging.

10.1. Introduction

Sugar acts as a preservative by osmosis and sugar is not a true poison fo micro organisms. It absorbs most of the available water and restricts the availability of water/moisture required for growth of micro-organism. The concentration of 68 70% sugar is used for preparation of jam and jellies. Sugar adds value to these products as it imparts sweetness as well as body to these products. When sugar is boiled with acid and fruits it is hydrolyzed into dextrose and fructose, the degree of inversion depending on the pH and duration of boiling. Because of inversion of sucrose, a mixture of sucrose, glucose and fructose are found in jams and jellies.

Jams, jellies and marmalades constitute an important class of preserved fruit products. Apple jam, pineapple jam, strawberry jam and mixed fruit jam prepared by using pulp of two or more fruits are quite common. Similarly, guava jelly and orange marmalade are also examples of such products.

11.1. Introduction

A fruit preserve is a product made from properly matured fruit by cooking it whole or in the form of large pieces in heavy sugar syrup, till it becomes tender and transparent. A fruit impregnated with cane sugar and glucose, followed by subsequent draining and drying is called a candied fruit e.g. petha candy, ginger candy. Further, candied fruit covered or coated with a thin transparent coating of sugar, which imparts a glossy appearance is referred to as a glaced fruit. When candied fruit is coated with sugar crystals either by rolling it in powdered sugar or by allowing the sugar crystals from glucose syrup to deposit on it, it becomes a crystallized fruit. The use of high concentration of sugar in these products acts as the preservative. The products like Petha candy, aonla preserve, apple rings; candied citrus peels, ginger candy, ginger in syrup; bael, pineapple and carrot preserve are the commercial products in this category.

13.1. Introduction

The preservation by using common salt, spices and vinegar is a common method for preparation of pickles, sauce and chutneys. Salt is mostly used as preservative in pickles in combination with acid. Minimum concentration of salt to act as preservative is about 12%. It inhibits enzymatic browning/discoloration by acting as an anti-oxidant. It exerts its preservative action by:

• Causing high osmotic pressure and thus suppress the microbial cells.

• Dehydrating food by tying up the moisture thus making it unavailable for the growth of microorganisms.

• Salt in the food affects the solubility of oxygen and thus growth of aerobic microorganisms is inhibited

• Chlorine in sodium chloride being good oxidizing agent is toxic to microorganisms

• Salt increases the permeability of the cell wall and thus cause changes in the permeability. Only the haloduric microorganisms can tolerate these effects while others are unable to survive.

• Similarly addition of acid to the food lowers the pH of the food which inhibits the growth of spoilage causing microorganisms.

• Addition of spices and edible oil in these products besides improving flavour and taste also help in preservation.

4.1 Overview of Concept and Science

Preserving flowers and plant parts has been a form of artistic expression that was very popular in Victorian ages. Now, this process is moving from an art to a highly interdisciplinary science and has become a major economic activity on a global scale. Because, dry decorative products have been globally accepted as natural, eco-friendly, long lasting and inexpensive as compare to fresh flowers and plant parts, which are perishable and delicate in nature. These perishables cannot retain their fresh like appearance and beauty for several months and it becomes prodigious job to maintain these qualities. Even with preservatives, the vase life of fresh cut flowers has been prolonged to an extent of 40 per cent only. Hence, for those who want the beauty of nature around them in the form of flowers but on a more permanent basis dried flowers are a solution.

Domain of Dried Flowers

Anything from botanicals such as stems, twigs, branches, bark, leaves/ foliage, flowers, thorns/ spines, fruits, cones, seeds, roots; and minor forest products like lichens, fleshy fungi, mosses, selleginnela ferns etc. in a dried form come under the domain of dry flowers. Until a few years ago dried flowers were popular in the West with very few homes in India opting for them. But, today Indian homes have taken to dried flowers in their many forms and shapes like duck to water. There are different segments which are covered under dried flowers (Table 1).

Pressing Flowers

One of the most popular methods for drying flowers is to put them under pressure, to remove the moisture out while leaving the color of the flowers and structure intact. There are several ways to apply pressure to flowers. The easiest method is placing them in heavy books and allow for drying. Flower presses can also be used. Some guidelines for pressing flowers in the traditional way are explained below:

Primrose family is represented by about 58 genera and 2,600 species which are cosmopolitan but chiefly distributed in northern hemisphere. Some of the
larger genera with their approximately reported species include Primula (500), Lysimachia (200), Dodecatheon (50), Dionysia (41), Anagallis (30), Cyclamen (15), Salomus and Soldanella (11).

Economic Importance
The family is of no specific economic importance except that of some well known decorative plants it contains. Some species of Primula may cause contact dermatitis. Anagallis arvensis is used for curing snakebite, leprosy, gout and even hydrophobia. Cyclamen purpurascence contains glucoside cyclamen which is poisonous. Some of the commonly cultivated ornamental plants of Primulaceae are the species of Primula (primrose), Androsace (rock jasmine), Cyclamen (Fig. 46.1), Dodecatheon (shooting star), Douglasia, Lysimachia (Loosestrile) and Omphalogramma.

A garden is a place where ornamental plants are grown to put on display various forms of plant life which are purposely intended for ornamental or practical use or both. Now days we often use the term landscape gardening, Landscape architecture and Landscape design. Landscape gardening can be defined as arrangements of trees, shrubs, climbers and variety of other plants in concert with the building, walks, drives, artificial and natural features for the use of humanity while Landscape architecture is the art of arranging land and landscape for human use convenience and enjoyment. A good landscape design determines the characters of objectsto serve a certain purpose known in advance.

The subject garden planning is diverse and complex and very difficult to symbolize all ideas of wholeness. In modern living consciousness of interior decoration including furniture,woodwork,wall furnishing, carpets painting also needs careful setting and the services of specialist are considered necessary for this purpose. In order to achieve a rewarding result a garden should be designed carefully as it is semi-permanent feature and frequent change in design is not possible.

Principles of design steer designers to organize elements for a visually pleasant landscape. A melodious composition can be achieved through the principles of proportion, repetition, order and unity which are alllinked and application of one principle assists to achieve the others. By using these principles, two important concepts in garden design i.e. physical and psychological comfort can be achieved. Landscape that has order and repetition creates more psychologically comfortable feeling. Psychological comfort is also affected by the sense of satisfaction that a spectator perceives from a harmonious landscape. Users feel more physically comfortable and secure in a landscape with proportions compatible to human scale. Garden design combines the aesthetic beauty, artistic knowledge and at least the principles of gardening. In order to layout good garden some fundamental principles to be followed

5.1. Introduction

Food processing units range from home-based businesses to large-scale processing plants. The food processing sector is a highly fragmented industry which includes fruit, vegetables, dried, preserved, canned, pulps, pickles, chutneys, milk, dairy products, ready-to-serve products, frozen desserts, meat, poultry, marine products, grain processing, beer and alcoholic beverages, consumer, convenience and packaged food, soft drinks etc.

The main objective of fruit and vegetable processing is to supply wholesome, safe, nutritious and acceptable food to consumer throughout the year. Fruit and vegetable processing also aim to replace import of products such as squashes, jams, tomato sauces, pickles, etc., besides earning foreign exchange by exporting finished or semi-processed products. The fruit and vegetable processing industries are also established in the developing countries due to following reasons:

• Reduction in fruits and vegetables post harvest losses

• Industrialization policy of the government

• Generate both rural and urban employment

• Improve farmer s nutrition by self consumption of processed fruits and vegetables during off season

Introduction

Floral arrangement is the art of selecting and organizing flowers and foliage according to the elements and principles of design in order to attain a pleasing and interesting design. Arranging flowers is an artistic activity and a way to express oneself creatively.

21.1 Flowers and Foliage

Successful floral arrangement begins with plant materials that have been properly handled and prepared. Beauty and good composition of an arrangement is not determined by the cost or rarity of plant materials used, but by the way they are selected, cared for and arranged. The plant material has to be handled carefully, handling only the stems. Properly dried, bleached and dyed flowers, foliage and accessories can be arranged following the principles for dry flower arrangement.

Food irradiation involves exposure of food to short wave energy to achieve specific purposes like extension in shelf life, insect disinfestations and elimination of food-borne pathogens and parasites. Compared to heat or chemical treatment, irradiation is more effective and an appropriate technology to destroy food-borne pathogens without much loss to the quality of food. It offers a number of advantages to producers, processors, retailers and consumers. Irradiation is a cold process and can be used to pasteurize and sterilize foods without affecting freshness and texture of food. Unlike chemical fumigants, irradiation does not leave any harmful toxic residues in food and is more effective. It is efficient and can be used to treat prepacked commodities. The FAO estimates that about 25% of world’s total food production is lost due to insects, bacteria and rodents after harvesting. Use of radiation can play an important role in cutting these losses and reducing dependence on chemical pesticides. The food borne diseases claim millions of lives all over the world every year. Irradiation of food can reduce these incidences by destroying harmful microorganisms.

Garden designing has also got certain principles like other subjects. These help proper designing by selecting right garden features, plant species besides their placement, allocation of space, colour scheme etc. Moreover, style, elevation, harmonization, type of the garden etc. are also to be taken into account while designing gardens. The main purpose is to achieve an aesthetic effect in totality.

Keeping these in mind, the main principles are categorized into following two groups.

Principles to create effects

Balance

It is a visual equilibrium of different garden elements.

Formal Garden : Balance is achieved by positioning plants, other landscape objects at equal distance from a real (or) imaginary plane (or) axis.

Informal Garden : Balancing is mainly a neutralizing effect. (eg.) Opposite colours in the colour wheel, contrasting texture, different numbers, shapes, forms, line and pattern are cleverly employed to neutralize one another.

Proportion

It refers to the share of the different parts (or) components to the whole. It refers to all ingredients being mixed in right measure, not essentially in equal measure.

The planning of a garden is an art. It is said that a poet is born, and in that sense a garden architect is also born. But that does not mean that a garden architect has nothing to learn. On the contrary he should learn enough of geology, geography, garden history, styles of gardening, and above all should have a profound knowledge about plants. It is imperative to know at the outset what is meant by landscape gardening. A landscape may be defined as any area, either big or small, on which it is possible or desirable to mould view or a design, whereas landscape gardening may be described as the application of garden forms, methods, and materials with a view to improving the landscape. The art of designing is known as “landscape architecture,” although the older term landscape gardening” is also popular.

Before discussing the principles of gardening in detail, it will be worthwhile to make some useful suggestions. The first and the foremost thing are not to imitate another garden which has secured a prize in a competition. One has to develop one’s own design giving due consideration to the local conditions. One more mistake which is commonly made is to plant many more specimens than a garden can accommodate causing overcrowding. In a landscape garden any difference in levels has to be taken advantage of, but in a perfectly flat land it will be costly to create artificial undulations. In each garden the care should be at least one feature or there be a second these two should harmonize with each other. Before planning a design are must be sure for what purpose the garden is utility or beauty or both.

Growth of horticulture is the cornerstone for augmenting employment opportunities in agriculture sector both directly and indirectly. Of late, there is a marked shift in the cropping pattern towards diversification into high value commercial crops in the country. To make horticulture viable and profitable, the thrust should be on improving the resource use efficiency, so that the relative profitability could be enhanced. Success in horticulture is more technology driven compared to other crops. The time bound removal of quantitative curbs on imports and other barriers to access domestic market under WTO, of which India is a signatory, will require Indian Horticultural produce / products to become competitive both in the domestic and international markets. This would call for use of Hi-tech horticulture technologies. The term Hi-Tech Horticulture was coined in recent years. There are no standard definitions for this. The Department of Agriculture and Co-operation,GOI in 1999 defined Hi-tech Horticulture as “any technology which is modern, less environment dependent, capital intensive and has the capacity to improve the productivity and quality of horticultural crops”.

Landscaping is an art of beautifying a piece of land or a landscape with planting material, non-living material in order to create a picturesque effect or to imitate nature. Landscaping makes a place more peaceful, beautiful, appealing or pleasing, where people can rest and enjoy with their family, friends, etc.

Landscape gardening is landscaping of a garden. More or less landscape gardening and painting on a canvas or paper sheet is similar. In both cases colours are used to form a picture, only difference is that painting is non-living 2D image and garden is collection of living plants with non living things in 3D form.

When going for landscaping, one can put anything or collection of different articles of interest in a place. It requires proper planning and for planning landscape, there are principles or facts that should be followed. It is not necessary and also possible to follow all the principles at a time in a landscape plan but there are 8 basic principles one should follow during landscape planning, which are discussed below.

6.1 Introduction

Garden design encompasses the aesthetic beauty, artistry, knowledge of plant growth and development with basic maintenance of plants and other elements as required. Principles are the basic rules of designing a landscape. The basic principles of garden design are very simple; however, each is often referred to by more than one name. Principles of landscape garden keeps the garden lively and beautiful. The principles of gardening should be kept in mind always while designing a garden.

6.2 Axis

It is an imaginary line in landscape designs around which the garden is created striking a balance. In a formal garden the central line is the axis.

Horticultural crops are ideal and valuable assets of nature to mankind. They are popular among masses since time immemorial but their importance was realized only in the recent past due to their high nutritive value, good taste and pleasing quality. They provide essential nutrients and minerals for proper functioning of human body and aesthetic surroundings for peaceful living. India is an important centre of diversity and several horticultural crops  originated here.  The horticultural crops constitute 13.08% of total crop area and contribute about 28% to GDP. The sub-continent extends from 8° 04’ - 37° 06’ North latitude and 68° 07’- 97° 25’ East longitude and it has tropical, sub-tropical and temperate climates which favour successful growing of a large number of horticultural crops.  India has a wide variety of climate and soil on which a large number of horticultural crops like fruits, vegetables, potato and other tropical tuber crops, ornamentals, medicinal and aromatic plants, plantation crops, spices, cashew and cocoa are grown. Of late, major emphasis was laid on development of high yielding varieties and high production technologies and their adoption in areas of assured irrigation paved the way towards food security.

India produces 9.2% of world’s vegetables and fruits, nearly 109 million tons of vegetables and 57.69 million tons of fruits. The production of horticultural commodities is expected to grow to 300 million tons in near future (Kaur, 2008). India accounts for 18.2% of global trade in vegetables and 0.5% in fruits. The overall food wastages are very high amounting to around Rs. 10.4 lakh million. India wastes more fruits and vegetables than what U.K consumes. It is estimated that cumulative wastage of fruits and vegetables, on the farm, during procurement, storage and at the retail outlets, is worth about Rs.422250 million.
