Abstract
Biotic stress in plants refers to the adverse impact of living organisms, such as pathogens, pests, and nematodes, on plant growth, development, and productivity. These biotic agents can infect, infest, or parasitize plants, triggering a range of physiological and biochemical responses that compromise plant health. Biotic stress can manifest in various forms, including fungal diseases, bacterial blights, viral infections, insect infestations, and nematode attacks, leading to reduced crop yields, lower quality produce, and significant economic losses. Understanding biotic stress is crucial for developing effective management strategies to protect plants and ensure food security, as it poses a significant threat to agricultural productivity and sustainability. To enhance the productivity of grain legumes, a critical food source for millions, mitigating biotic stress is essential. By adopting effective strategies to manage biotic stressors like diseases, pests, and nematodes, legume yields can be significantly increased.
This can be achieved through the development and deployment of resistant cultivars, integrated pest management (IPM) practices, cultural methods like crop rotation and sanitation, and biological control methods. Additionally, rhizobia and mycorrhizal inoculation can enhance plant defense and nutrient uptake, while precision agriculture techniques facilitate early detection and targeted management of biotic stress. By implementing these approaches, legume productivity can be boosted, ensuring food security, improving livelihoods, and meeting the growing demand for this vital crop.

Abstract
Understanding genetic diversity is essential for achieving genetic improvement and conservation of grain legumes. These crops serve as important pulses grown and consumed all over the world, especially in Africa, South East Asia and America. Legumes serve as a good source of carbohydrates, oil, fibre and proteins. Grain legumes are a major source of food and nutrition globally. However, it has not been possible to enhance gain legume production to the required level, primarily due to the narrow genetic base of most of the legume crops, coupled with changing climatic conditions. Most grain legumes are lacking in desired plant ideotypes and resistance sources for various biotic and abiotic stresses. The genetic diversity conserved in gene banks globally is a major resource for crop breeding programs, but it
is utilized only marginally. Therefore, in order to broaden the genetic base of grain legume crops and enhance the genetic gains made in improvement programs, conventional approaches and modern scientific tools should be integrated in a phased and carefully judged manner. The first phase should focus on the search for desired traits and the infusion of diversity into the cultivated gene pool through use of landraces and CWRs. The second phase should focus on the utilization of advanced selection tools, such as genomics, high-throughput precision phenotyping, and artificial intelligence, to exploit the hidden potential of the available genetic diversity; and the third phase should involve technologies such as mutational breeding, genome editing, and transgenic technologies to improve, modify any novel or alien traits that are not available in the entire crop gene pool. We presume that enrichment of the genetic diversity of cultivated grain legume gene pools, along with simultaneous improvements in their yield and plant type with the aid of advanced scientific tools, will enhance grain legume crop yields to the required level.

Abstract
Remote sensing and image analysis have emerged as essential tools in modern agriculture, particularly for plant protection in grain-based legume cropping systems. These technologies are increasingly valuable in addressing challenges such as climate change, pest infestations, and the demand for sustainable practices. Grain legumes, including peas, beans, lentils, and chickpeas, are vital for global food security and soil health due to their protein content and nitrogen-fixing capabilities. However, their productivity is often threatened by pests, diseases, and weeds. Remote sensing allows for early detection of crop stress through analysis of specific wavelengths of light, enabling farmers to identify issues before visible symptoms appear. Tools like the normalized difference vegetation index (NDVI) provide insights into crop health, allowing for timely and targeted interventions. Hyperspectral and multispectral imaging further enhance disease detection by identifying physiological changes in crops that are not visible to the naked eye. In addition to disease monitoring, remote sensing aids in pest management by detecting changes in plant temperature profiles and utilizing drone surveillance for real-time data collection. Image analysis complements these efforts by offering detailed insights into crop conditions, enabling precision agriculture practices that minimize environmental impact and reduce costs. By integrating remote sensing and image analysis with other technologies like GIS and IoT, farmers can achieve more efficient, sustainable farming practices, ultimately leading to higher yields and better protection for grain legume crops. ensuring the reliability, consistency, and integrity of laboratory data, particularly when the findings are used for regulatory decision-making. GLP ensures that laboratory studies are conducted in a scientific manner, maintaining high standards of ethical practice, precision, and reproducibility, with a primary focus on ensuring public and environmental safety. Introduced by the U.S. Food and Drug Administration (FDA) in 1978, GLP gained global recognition through the Organisation for Economic Cooperation and Development (OECD), which established guidelines for its implementation. GLP principles are now widely adopted in regulatory testing for pharmaceuticals, chemicals, food safety, and environmental testing. The OECD’s guidance on GLP has been instrumental in developing standards across the globe, ensuring that test results are scientifically valid and can be accepted internationally. In Asia, particularly in India and other developing countries, GLP compliance has gained increasing importance as pharmaceutical, environmental, and chemical industries expand. Regulatory bodies in these regions have gradually aligned their standards with international norms to ensure their competitiveness in global markets. This chapter discusses the key SOPs necessary for GLP compliance and provides a regional perspective, focusing on India and other Asian nations, where GLP frameworks are evolving to meet international standards.

The laboratory techniques are defined as the processes and practices that are recommended for equipment use in the laboratory, while laboratory methods are based on established scientific principles involving biology, chemistry, and physics, and encompass all aspects of the clinical laboratory from testing the amount of cholesterol in blood to analysing DNA to growing microscopic organisms that may be causing an infection. One of the most significant parts of laboratory techniques and laboratory methods is the proper validation of the equipments (old or new equipments) as well as all the testing procedures/ methods (established or newly developed methods). Analytical method validation is a critical process to ensure the quality and safety of products. The objective of the validation of an analytical method is to demonstrate that it is suitable for its intended purpose; the results are authentic and universally acceptable. An analytical method is suitably well considered when the results generated through different method are consistent, reproducible, and thus, reliable.

Canning is a food preservation method where selected raw materials are prepared, packed into containers such as tin, glass, or plastic jars, and sealed airtight. The contents are then heated to a sufficient temperature to destroy spoilage and pathogenic agents within the container, followed by rapid cooling to prevent overcooking. Canning extends the shelf life of foods, ranging typically from one to five years, with some products like freeze-dried lentils lasting up to 30 years.
Can Manufacturing Machinery and Equipment
• Can Body Reformer: Can bodies are often supplied collapsed to save space and ease transportation. The can body reformer shapes them into cylindrical forms, preparing them for further processing.
• Flanger: The cylindrical can bodies are flanged by the flanger, which has two flanging dyes. These dyes form grooves at the edges, preparing the cans for sealing.

These substances can influence root architecture, nutrient assimilation, hormonal balance, photosynthesis, stress tolerance and disease resistance. This chapter examines the effects of different bio-stimulants on onion seed germination, vegetative growth, bulb development, yield, quality and storage life. It discusses their modes of action, application methods and integration with nutrient-management programmes. Bio-stimulants are presented as promising components of environmentally responsible and resource-efficient onion production, while areas requiring further research are identified.

Substantial onion losses occur after harvest through sprouting, rotting, physiological weight reduction and quality deterioration. Proper harvest timing, careful handling and effective curing are therefore essential for maintaining marketability and extending storage life. This chapter explains maturity indices, including appropriate levels of top fall, and compares field curing with forced-air methods. It examines topping, grading, packaging, transportation, storage temperature, relative humidity, ventilation and disease management. Physiological and biochemical changes occurring during storage are also considered. Artificial intelligence and machine learning can analyse complex datasets to predict shelf life, recognise spoilage patterns and assess risks arising during processing, storage and distribution. Internet of Things devices connect sensors across the cold chain, while blockchain supports transparent and secure traceability. Smart pH, temperature, humidity, optical and biosensors provide real-time information about product conditions. The chapter examines these technologies alongside automation while considering data quality, model validation, infrastructure, cost and industrial implementation challenges.

Population growth and rising demand for processed food have increased pressure on food industries to improve safety while reducing energy, water, waste and environmental impacts. Green preservation technologies seek to deliver effective processing through cleaner operations, responsible resource use and reduced dependence on toxic substances. These approaches support sustainable industrial development by lowering processing time, conserving nutrients and improving the utilisation of raw materials. The chapter discusses energy-efficient preservation, water-saving techniques, waste valorisation and the conversion of by-products into useful materials. Life-cycle assessment is introduced as a method for evaluating environmental performance across the preservation system and identifying opportunities to reduce emissions, resource consumption and food-chain waste.

Ginger is used extensively as a spice in cuisines throughout the world. Ginger belongs to Zingiberaceae family and an English botanist William Roscoe (1753-1831) gave this plant the name Zingiber officinale in the year 1807. The name of the genus Zingiber derives from a Sanskrit word denoting “horn shaped” in reference to the protusions on the rhizomes (Ghosh et al., 2011). It is an oldest rhizome widely domesticated as a spice where the edible part is the swollen underground stem or rhizome. The Zingiberaceous plants have strong aromatic and medicinal properties and are characterized by their tuberous or non-tuberous rhizomes (Chen et al., 2008). Ginger is a medicinal plant that has been widely used all over the world, since antiquity, for a wide array of unrelated ailments including arthritis, cramps, rheumatism, sprains, sore throats, muscular aches, pains, constipation, vomiting, hypertension, indigestion, dementia, fever and infectious diseases (Ali et al., 2008). Ginger has direct anti-microbial activity and thus can be used in treatment of bacterial infections (Tan and Vanitha, 2004).

The fruits and vegetables are highly perishable in nature. The losses in harvested fruits and vegetables start immediately after harvesting and the resulting spoilage caused by biochemical changes (enzymatic) and activity of microorganisms such as bacteria, moulds and yeast. The losses caused by the microorganism in fruits and vegetables products can be prevented by controlling or destroying these organisms in order to preserve fruits and vegetables by processing and preservation means. The processing and preservation is one of the most important activities among various types of activities of Horticultural Science.

Processing: The processing can be defined as an activity, which is performed to maintain or improve the quality or to change the form or characteristics of the product. Processing operations are undertaken to add value to horticultural produce after their production. The main purpose of processing is to minimize the qualitative and quantitative deterioration of produce after harvest.

Preservation: Preservation can be defined as the science which deals with the methods of prevention of decay or spoilage of produce and allow it to be stored in a fit condition for future use.

Fruits and vegetables can be preserved for short and long term. For short term preservation can be achieved by proper handling of produce and low temperature storage. Long term preservation can be achieved by canning, drying and dehydration, fermentation and by using chemical preservatives.

Introduction
Many chemical substances are added to the food for functional purposes and in many cases, these are found to occur naturally in some foods. When these substances are added to the foods, they are known as food additives. An additive is defined as a substance or mixture of substances other than basic food ingredients that are present in a food as a result of any aspect of production, processing or packaging. Additives may be intentional as well as unintentional. Intentional additives are substances deliberately added to perform a specific function and to increase the shelf life of the products while unintentional additives have no intended function in the finished product but become part of that particular product. The food additives having significance in fruit and vegetable preservation and their mode of action are discussed as under:
Objectives of adding an additive
1. To reduce wastage and improve keeping quality e.g., the addition of potassium meta-bisulphite in squashes, benzoate in sauces, sodium propionate in bread and sorbic acids in cheese etc.,
2. To improve and maintain nutritive elements e.g., addition of vitamins for enrichment, addition of vitamin D to milk, addition of iodine to salt etc.
3. To enhance the quality and consumer acceptability of the product e.g., the addition of colouring agents, emulsifiers, thickeners etc.
4. To facilitate the preparation of foods e.g., the addition of acid to beverages, sugar in jams, jellies etc.

The design and structure of a warehouse should facilitate proper ventilation, temperature control, and protection from pests. Onion is an economically significant bulb crop cultivated across diverse agroecological environments. Its cultivars vary considerably in bulb size, shape, colour, pungency, maturity, storage behaviour and photoperiod response. Understanding its vegetative and reproductive morphology, growth habit, physiology and taxonomic relationships is fundamental to crop improvement and germplasm conservation. This chapter examines the botanical features and taxonomic position of onion within the genus Allium. It explains relationships among cultivated types, landraces and allied species and discusses varietal classification according to climatic adaptation and consumer preference. Classical characterization and molecular taxonomy are considered important tools for developing productive, resilient and market-preferred onion cultivars.

Conventional fertilizers often exhibit low nutrient-use efficiency, resulting in nutrient losses, soil degradation, water contamination and unnecessary production costs. Nano-fertilizers offer controlled and targeted nutrient delivery through formulations engineered at the nanoscale. Their high surface-area-to-volume ratio can improve nutrient availability, plant uptake, growth, bulb quality and storage performance while reducing conventional fertilizer requirements. This chapter explains the nature, modes of action and potential benefits of nano-fertilizers in onion production. Low-temperature preservation is one of the most widely used physical approaches for extending food shelf life without seriously affecting quality. Reducing storage temperature slows microbial multiplication, enzyme activity and chemical deterioration, with inhibition increasing as temperature declines. Refrigeration maintains food above its freezing point, while freezing reduces temperature below zero and converts available water into ice. The chapter examines conventional refrigeration, advanced chilling, freezing, cryopreservation, superchilling and the influence of ice crystallisation on food quality. It explains how temperature, cooling rate and crystal size affect texture, nutritional retention and storage stability, while also addressing the limitations and quality changes associated with prolonged low-temperature storage.

Thermal preservation is among the most established methods for improving the safety and storage life of food. It uses controlled heating to destroy spoilage organisms and pathogens and to inactivate undesirable enzymes. Processing intensity varies according to the target microorganisms, food composition, packaging and required shelf life. Pasteurisation reduces pathogenic and spoilage microorganisms without achieving complete sterility, while sterilisation destroys more heat-resistant organisms and spores to produce commercially stable foods. Ultra-high-temperature processing combines very high temperatures with extremely short treatment periods. This chapter also discusses retort processing, thermal-death kinetics and microbial-inactivation models used to design safe processes while minimising nutritional and sensory damage.

Introduction

Bread wheat (Triticum aestivum L.) is one of the most widely cultivated and consumed crops in the world. Wheat is perhaps best known for its different end-use baking properties as determined by grain texture, protein content and quality. Wheat is generally traded by and classified into “hard” and “soft” market classes on the basis of grain hardness or texture of the wheat kernel (caryopsis). Soft wheats have softer endosperm texture that fractures easily, therefore requiring less energy to mill, yields smaller particles, and has less starch damage after milling when compared to hard wheats. Hard and soft are used with slightly different connotations in different parts of the world. In Western Europe, hard is applied primarily to durum wheats and the soft applied to bread wheat. Elsewhere the term is applied to different cultivars within the species Triticum aestivum. In general, hard wheats are used for bread baking, while soft wheats are used for cookies and cake making. Hard wheat requires more force to crack the kernel, maintains a larger particle size, passes through sieves more easily and has more damaged starch MacRitchie (1980). Higher starch damage is required for good bread making quality Tipples et al. (1994) but is detrimental to the biscuit making quality.

HACCP presents a good opportunity for the food industry for upgrading quality and bringing uniformity and consistency in their supplies to international market, or It is a systematic preventive approach to food safety that addresses physical, chemical and biological hazards as a mean of prevention rather than finished product inspection. It involves identification, evaluation and control of hazards which are significant for food safety.

HACCP plan: A document prepared in accordance with the principles of HACCP to ensure control of hazards which are significant for food safety throughout the food chain under consideration.

Haemagglutinins: A group of proteins of plants that are not antibodies and do not originate in an immune system but bind specifically to carbohydrate containing receptors on cell surfaces (red blood cells). It is also known as Phytoagglutins/lectins.

Classification of the hundreds of possible dryers is essential to the logical selection of appropriate dryer for a given application. Diverse criteria for classification as well as selection of dryers are presented and discussed briefly. The advantages and limitations of different dryer types must be taken into consideration. Initial capital cost is often the key deciding criterion in industrial dryer selection. This is not a good strategy as the user must pay for the operating costs over a long period of life of the dryer. In general several different dryer types are suitable for a given product. Careful selection is essential for cost-effective operation of the dryer.

Hot air circulation is the most common industrial method of drying foods which has its own inherited disadvantages. Microwave drying can be an alternative method for removing moisture from foods and there has been a surge of interest in the application of microwave to process the foods, in past few years. The reason being that there is worldwide energy crisis and the growing acceptance and familiarity with domestic microwave ovens. It is well known that conventional means of heat processing irreversibly alter the flavor, colour, and texture of many foods. From the point of flavor alone, it is desirable to improve our present methods of processing foods. Some improvements have been made in this direction with a number of food products by use of high-temperature short- time processing.

The primary commercial energy sources such as coal, oil and natural gas poses an enormous challenge to our development goals including environmental degradation, as India is not well endowed with these exhaustible natural resources. Further, these conventional sources are also not available in right quantity and producing environmental pollution manifold in land, air and water. There are number of unit operations in food processing and value addition consuming bulk of conventional energy sources where renewable energy sources can easily be integrated for energy conservation and environment protection. There is significant potential for application of Renewable Energy Sources in different unit operation of food processing including drying of food products for energy conservation and for reducing hydrocarbon emissions.

An anti-nutritional factor is a substance which, when present in human or animal foods, reduces growth. Examples are phytate, protease inhibitors (notably soybean trypsin inhibitor) and excessive dietary fiber.

Anti-Nutritional Factors

    ·    Protease inhibitors inhibit the activity of trypsin, chemotropism and other proteases. They are found in legumes such as beans and peas, but also in cereals, potatoes, and other products. Their presence results in impaired growth and poor food utilization.

Structure

Structural unit of edible portion of most fruits and vegetables is the parenchyma cells and makes up bulk of cells. A parenchyma cell is rather thin walled and may be polygonal or cubical in shape.  Walls of parenchyma cells in young plants are composed almost entirely of fibrils of cellulose. In parenchyma cells of plants actively metabolising protoplast portion represents only about 5% of total cell volume. The emerging functional foods market presents a considerable challenge to all manufacturers to keep abreast of the use of adequate packaging materials for their products. The interest in functional foods is intrinsically linked to the potential health benefits of their bioactive components. Preserving these bioactive components is, therefore, a crucial factor to providing the anticipated health benefits of functional foods. However, recurring failure in maintaining the quality of functional foods has been reported. Functional foods include a wide variety of products such as prebiotics and probiotics, dried foods (fibers, tea, herbs, etc.), fermented products (yogurts, kefirs, vegetables), and fresh fruits and vegetables. Their bioactive components (minerals, vitamins, fibers, peptides, proteins, w–3 polyunsaturated fats, antioxidants, enzymes, and symbiotics) range from very simple molecules to complex living organisms such as bacteria.

Introduction

The search for weight controlling foods began in the mid 19^th century when industrialization led to widespread obesity. Over the years, people have tried to lose weight by avoiding particular food groups like carbohydrates, eating specific foods such as cabbage soup, or adding a certain ingredient, like vinegar or grapefruit to each meal. Recently scientists have demonstrated that green tea, dairy products, and cinnamon have the potential to improve weight control by altering fat and/or carbohydrate metabolism at the sub-cellular level. Considerable research is needed, however, before these food items can be used to develop effective weight management products.

Abstract

Four bread wheat varieties (PBW-138, PBW-299, PBW-343 and PBW-373), two of durum wheat (PDW-215 and PDW-233) and two of triticale (TL-419 and TL-1210) were milled to obtain 70 percent extraction flour.  The grains and the flour samples of all the varieties were evaluated for proximate composition, rheological properties and pretzel making. Physical properties of durum wheat were better followed by bread wheat and triticale. Durum wheat were harder, had higher grain weight than bread wheat and triticale.  Protein, ash, fat, total sugars and enzyme activity were higher in triticale flour than bread and durum wheat flours while durum flour had higher pigments (ppm, b-carotene). Bread wheat flour was intermediate between durum and triticale flours with respect to fineness. Rheological studies revealed triticale flour to be the weakest flour. Pretzels prepared by using optimized recipe and method revealed PBW-343 and PBW-373 best for pretzel making.

The demand for the food for ever increasing population is always continuous, but the production is limited to specific seasons. Therefore the food grains have to be stored for sometimes. Grain is a living biological material and therefore storage structures should be suitably designed to protect them from the ravages of pests, rodents and micro-organisms. However, the storage losses account for a major portion which can be reduced to considerable extent if proper care is done. The faulty design, poor maintenance and limited knowledge of the farmers concerning storage technology have greatly added to the spoilage of the food grains during storage. Sometimes the foods if not properly stored may be edible but it may lose the essential vitamins and minerals, thus their nutritive value has been lost. There is a major requirement of a good storage structure. Various food grain storage structures (small and large scale) are described.

At times, seeds of certain oilseeds like soybean are also referred to in the discussion of food grains. Grains have been cultivated for thousands of years. We have Grain Standards as established by the International Organization for Standardization (ISO), which are considered as International Standards. Another source is Codex Alimentarius Commission (Codex) under the aegis of FAO (UN), which operates a Committee to formulate standards that are referred to as Codex Standards. Many countries have a National Standards Institution, which develops National Standards for their main grain crops and other commodities and issues specifications along with methods of testing and analysis. Several countries, which are in developing status, adopt or modify international standards into their national system. The Grain Standards have been evolved and established for a variety of purposes but primarily to grade produce in agricultural marketing largely to facilitate the movement of grain, provide both sellers and buyers with guidelines to support financial transactions, and ensure that the produce will meet up with end-use requirements, or, increasingly to protect the consumers.

Introduction

Canning is the general term applied to the process of packaging a food in a container and subjecting it to a thermal process for the purpose of extending its useful life. An optimal thermal process will destroy pathogenic (disease-causing) Bacteria, kill or control spoilage organism present and have mineral impact on the nutritional and physical quality of the food. Although we thing of canning in term of steel or possible aluminium cans, the principle apply equally well to a variety of food containers such as glass jar, plastic and foil laminated pouches, semi rigid plastic tray or bowls, as well as metal cans of any one of several shapes, including cylindrical, oval, oblong or rectangular. The concept of aseptic packaging (sterilizing the food and the container prior to filling and sealing) also follows the same principles.

1. Introduction

Rasogolla is a sweetened dairy product which is made from milk mainly from casein protein. Generally rasogolla is made by heating the raw milk around 80-850C ,then slowly cool the milk around 650C and acid coagulation of the milk is done. Then separate the channa (mainly casein) and whey, and drained the whey followed by the pressing of the channa to remove the excess water. Then channa is thoroughly kneaded and are rolled to balls and cooked in sugar syrup and get the rasogulla. Total value of 1000 billion for Indian dairy output in 2001, the output of traditional dairy products is estimated at over 400 billion. The share of the organized sector in the indigenous products is at present only 50 billion only (Patil, 2005).

Modern agriculture largely depends on use of high cost inputs and energy intensive farm machinery. Worlds increasing population and continuously deteriorating soil fertility has alarmed agriculture system to look for some safe alternatives.
