Advanced Valorization Technologies
The field is rapidly evolving beyond traditional methods such as composting and combustion to adopt biochemical and thermochemical processes. Technologies like:
• Anaerobic digestion for biogas,
• Fermentation for bioethanol and organic acids,
• Pyrolysis for bio-oil and biochar,
• Gasification for syngas production,
Are increasingly supplemented by next-generation approaches like hydrothermal carbonization, microwave-assisted pyrolysis, and supercritical fluid extraction. These are tailored for India’s diverse agri-residues—rice straw,
sugarcane bagasse, coconut husk, and more—making them scalable across regions.
Importantly, these technologies now aim for value maximization, producing bioplastics, nutraceuticals, soil enhancers, and even sustainable construction materials.

Introduction

Spices are botanical products of tropical and subtropical plants, mainly fruits, seeds, f lowers, roots, stems, leaves, bark, or whole plant (Golob & Nations, 1999). The dominant spices of trade including cardamom, cinnamon, cloves, ginger and pepper (A. Osman et al., 2019)including aroma, flavor, and color, to foods and beverages in an effort to enhance their palatability. Herbs and spices exhibit a plethora of medicinal properties including antimicrobial and antioxidant properties. Spices serve as natural preservatives to delay food spoilage and extend shelf life.

Introduction

Fermentation is playing an important role in the human life and is evident from the fact that food can be both spoiled and made by fermentation. A wide range of the fermented food products are consumed by the consumers in their daily routine. It is one for the oldest and ancient method of food preservation. It may have been a mere accident when people first experienced the taste of fermented food. Fermentation became popular with the dawn of civilization because it not only preserved food but also gave it a variety of tastes, forms, and other sensory sensations. Fermentation, along with salting, cooking, smoking, and sun drying, is one of the earliest ancient traditions developed by cultures all around the world to extend the possible storage time of foods. Slowly, people have realized the nutritional and therapeutic value of fermented foods and drinks, and this has made fermented foods even more popular. Bread, beer, wine, and cheese originated long before Christ. Although modern food technology has contributed to the present day high standard of quality and hygiene of fermented foods, the principles of the age-old processes have hardly changed. In industrialized societies, a variety of fermented foods are very popular with consumers because of their attractive flavor and their nutritional value. During food fermentations, the controlled action of selected micro-organisms is used to alter the texture of foods, preserve foods by production of acids or alcohol, or to produce subtle f lavours and aromas which increase the quality and value of raw materials. After drying, fermentation is the world’s oldest food preservation method.

Introduction

Packaging is one of the most important processes to maintain the quality of food products for storage, transportation and end-use. The basic functions of packaging are considered as protection, containment, information and convenience. Food packaging was initially considered to increase the marketable life of the food in a container by protecting it from the influence of the environmental factors. Then it was expected to be informative, easy-to handle and disposal-friendly with increased functionality. Current innovations of food packaging technology are geared to ensure one/ all of these properties along with better protection, more efficient quality preservation and enhanced safety of the packaged food. Innovative packaging technologiesalso prevent the rate of quality deterioration and facilitate easy handling of the produce during distribution and marketing. During distribution, the quality of the food product can deteriorate biologically and chemically as well as physically. Innovative packaging technologies are the most important and challenging technologies to overcome these limitations.These technologies require specific knowledge and appropriate training and understanding for rationally selecting the most suitable packaging for each product and intended use. Innovative packaging of foods includes active packaging, smart packaging, on-the-go packaging, intelligent packaging etc. which have been briefly discussed in this manuscript.

Introduction

The food processing industry ranks fifth in size in the country and employs 16 lakh workers which is 19% of the country’s industrial labour. It accounts for 14% of the total industrial output with 18% of industrial GDP and 6.3% of countries GDP. So, food processing plays a vital role in India’s prosperity. The Food Processing Industry sector in India is one of the largest sector in terms of production, consumption, export and growth prospects. Food processing industry broadly comprises primary processing category and the other categories embracing the secondary, tertiary and further stages of downstream processing. Primary food processing is a major industry with lakhs of rice-mills/ hullers, flour mills, pulse mills and oil-seed mills. There are several thousands of bakeries, traditional food units and fruit/vegetable/spice processing units in the unorganized sector. In the organized sector, there are over 820 flour mills, 418 fish processing units, 6600 fruit/vegetable processing units and 171 meat processing units. Indian processing industries has installed capacity of 21 lakh tones; however these industries actually processed 9.8 lakh tones of the produce. So the total capacity utilization of industries is <30%. There are 70% units in home/cottage/ small scale sector and 30% units in large scale sector with capacity of 250 tonnes per annum and 30 tonnes/hr, respectively. Large scale contributes 70% of the production. The principal crops and commodities which constitute the primary base for the food processing industry and considered important sub-sectors in food processing industries are illustrated in Fig. 1.

Developments in innovative food packaging technologies have evolved in response to the need for protection of the food product containing bioactive component from both external and internal environments and in response to consumer expectations for health claims, convenience and product safety. Consumers around the world are willing to pay extra for guaranteed product freshness delivered by the type of packaging. Many new packaging developments have focused on extending the shelf life of the product and on delivering a higher quality product to the consumer. These developments would not be possible without significant advances in the materials used in packaging and the incorporation of various types of sensors into food packaging. This chapter outlines the innovative packaing solutions in the production of functional food.

The inspection of storage facilities and the food products they contain is crucial for preserving grain intended for human consumption. Stored grain is not simply a passive substance; it is a living, breathing organic entity that undergoes deterioration during storage. This deterioration can occur in terms of quantity, through dry matter loss (DML), or quality, with issues such as discoloration, mold contamination, sprouting, and caking caused by microorganisms, invertebrate pests (insects and arachnids), and vertebrate pests (rodents and birds). Additional weight loss happens during the handling, transportation, and processing of stored grains.
To gather accurate data on all forms of loss, regular and thorough inspection and sampling are essential. These inspections are crucial for making informed management decisions regarding remedial actions against biological deterioration agents or the disposal of grain, taking into account the condition of both the commodity and the storage environment. Regular inspections help maintain a storage environment that supports grain quality by keeping track of any significant pest population increases, grain temperature, moisture migration, spillage, and grain residues.
Such inspections also encourage the general upkeep of the storage structure and its surroundings, which helps to minimize pest access. By addressing cracks and crevices in the storage fabric and removing old, often infested, bags and equipment, the risk of pest infestation is significantly reduced.
The inspection should address several factors:
• The presence of pests, if any
• Identification of species, population densities, and locations
• Damage inflicted prior to inspection
• The growth potential of pest populations or whether they will die out if conditions remain the same

Onion production is constrained by insect pests and diseases that damage seedlings, foliage, roots and bulbs and reduce both yield and market quality. Important pests include onion thrips, leaf miners, cutworms, armyworms and onion maggots. Major diseases include damping-off, basal rot, downy mildew, purple blotch, white rot and pink-root rot. Some insects also transmit damaging viral diseases. This chapter presents integrated cultural, biological, botanical, behavioural and chemical strategies for managing these threats. Crop rotation, sanitation, healthy planting material, proper spacing, resistant varieties, traps, barrier crops, beneficial microorganisms, natural enemies and need-based pesticides are discussed as components of sustainable crop protection and resistance management.

At present, food and nutrition security are the prime aspects which need to be addressed in an efficient way. It has been projected that by 2050 the global population will reach 9.2 billion which in turn enhances annual demand for agricultural products by 1.1 per cent from 2005 to 2050 (McKenzie and Williams 2015).

1. Introduction

Each day, millions of people take a small bag, drop it into a cup, pour in boiling water, and add a dash of milk plus a spoonful of sugar. People start the day with it, end the day with it, and also serve it socially or in times of distress (Herath and De Silva, 2011). The reason behind its popularity is based on the fact that the combination of theanine amino acid contained in tea and melatonin and B-complex vitamins contained in milk offers superior relaxing effects. Furthermore, the harmony of tea’s sweet aroma and milk’s natural sweetness will create a healthy low calorie drink.

Tea is one of the most pleasant drinks consumed by two third of the world’s population. It is not only the most popular and one of the oldest known beverages in the world but also an antioxidative agent available in everyday life which may help to prevent a wide variety of diseases such as cancers and heart diseases (Yang and Landau, 2000; Luczaj and Skrzydlewska, 2005). Tea provides a significant source of phenolic compounds in the diet. While polyphenols have long been of interest for their contribution to the astringenttaste of teas (Ding et al., 1992), research into the health benefits of tea has been actively pursued only in more recent times (Dufresne and Farnworth, 2001; Yamamoto et al., 1997). Even though the results are mixed for the relationship between tea and health in epidemiological and clinical studies, in vitro studies point to a range of mechanisms by which tea phenolics may help to offset chronic diseases such as cancer and cardiovascular diseases (Kris-Etherton and Keen, 2002).

    1.    Chromatography is defined as an analytical technique where by a mixture of chemicals may be separated by virtue of their differential affinities for two immiscible phases. One of these, the stationary phase, consists of a fixed bed of small particles with a large surface area, while the other, the mobile phase or “eluant”, is a fluid that moves constantly through, or over the surface of, the fixed phase.

    2.    The chromatogram evaluated qualitatively by determining the Rf or retention factor, for each of the eluted substances.

    3.    The Rf is a measure of that fraction of its total elution time that any compound spends in the mobile phase.

    4.    If the liquid phase is a polar substance (e.g. polyethylene glycol) and the mobile phase is non polar, the process is termed normal-phase chromatography

    5.    When the stationary phase is non polar (e.g. octadecylsilane) and the mobile phase is polar, the process is reversed-phase chromatography

    6.    The chromatographic separation of mixtures of large molecules such as proteins may be accomplished by a mechanism called size exclusion chromatography or gel permeation chromatography.

Abstract

Sustainable agriculture or farming is one that contributes to the overall objective ofsustainable developmenti.e. to meetthe present needs withoutcompromising the ability of the future generations to fulfill their own food needs and related demands from the land. A farming system is a complex, interrelated matrix of soils, plants, animals, power, implements, labour, capital and other inputs controlled by farming families and influenced to varying degrees by political, economical, institutional and social forces that operate at any levels. Research witha farmingsystems perspective has variousobjectivesranging fromincreasing the body of knowledge about farming system. The whole farming rather than the individual crops/enterprises need to be considered in the decision making under the farming systems approach. This is a multidisciplinary whole-farm approach and very effective in solving the problems of small and marginal farmers. Farming systems approach in analyzing the problems of agriculture is gaining lot of importance in recent years. Such a study would throw light on the problems associatedwith different farmingsystems and enable theacademicians and policy makers to formulate and implement appropriate policies for a balanced and integrated agricultural development.

A wide variety of fungal and bacterial pathogens cause postharvest disease in fruits and vegetables. Some of these infect produce before harvest and then remain quiescent until conditions are more favourable for disease development after harvest. Other pathogens infect produce during and after harvest through surface injuries. In the development of strategies for postharvest disease control, it is imperative to take a step back and consider the production and postharvest handling systems in their entirety. Traditionally fungicides have played a central role in postharvest disease control. However, trends towards reduced chemical usage in horticulture are forcing the development of new strategies. Controlling or reducing disease relies on integrated crop and postharvest management, with attention to fungicide application, crop hygiene and nutrition, and the management of ripening, to optimise advantages conferred by the plant’s natural resistance factors that prevent and delay disease development. Agricultural production and food distribution systems have evolved over many years to a complex system which allows for nearly year-round supply of most fresh commodities through longterm storage and long distance shipments to consumers. The expectation of year round supplies has resulted in increased challenges for postharvest handling systems. The availability of fungicides for disease management likely played a major role in the evolution of our current system of food distribution (Mitcham, 1999). With the recent loss of registration of many postharvestfungicides and more expected under the Food Quality Protection Act (FQPA), as well as consumer pressure to reduce the amount of chemicals used on food, the challenge to maintain our current system of food distribution increases.

Storage plays a crucial role between harvesting and the processing or direct consumption of food grains. In developing countries, its significance is amplified, especially since small and medium landholding farmers heavily rely on on-farm storage. In India, however, an annual storage loss of 14 million tons, worth approximately 7,000 crores, occurs due to post-harvest pest damage. The economic loss from storage pests is not only a result of consumption but also due to contamination and spoilage caused by the pests’ body parts, excreta, and hoarding. The lack of awareness about storage pests, their damage, and the use of improper storage techniques contribute to these massive losses.
The solution lies in constructing suitable storage structures, which are wellequipped and properly managed, and implementing strict hygiene standards in storage areas, along with efficient pest control measures. These combined efforts are essential to minimize storage losses. This section focuses on identifying major pests in storage and their management strategies.

Introduction

Since long time fermentation process is in use for the production of functional food products for human welfare. SSF is a cost effective industrially important method that could be used by food industries to improve the nutritional profile of natural substrates (Salar and Purewal, 2016; Postemsky et al., 2017). The process is being carried out by trained microbiologists in the presence of aseptic conditions using suitable starter culture on steam sterilized substrates. Steam sterilized substrates possess minimal amount of moisture so as to support the microbial growth during the fermentation period. Growth of microbial strains on specific substrates during the fermentation time results in formation of koji (antioxidant rich fermented product). Selection of substrates and starter microbial strains is an important step in the fermentation process which will determine the nutritional properties of fermented product. One of the major advantages of SSF at industrial level is its potential to be utilized on cereal grains, fruits, vegetables and even agricultural wastes (Salar et al., 2012; Postemsky and Curvetto, 2015; Bhanja et al., 2009). Most common substrates that are being used as solid platform for the growth of microbial strains are cereal grains.

Biological conversion methods involve using microorganisms or biological systems to transform organic materials—like biomass and organic waste—into valuable products such as biofuels, biogas, compost, and chemicals. These ecofriendly and sustainable processes contribute significantly to the circular economy by turning waste into useful energy or raw materials. Unlike thermal or chemical methods, biological conversions occur under milder conditions (usually ambient temperature and pressure), which lowers energy consumption and environmental impact. They harness the natural metabolic processes of bacteria, fungi, and other microorganisms to break down the complex organic compounds in biomass
Physicochemical Conversion Of Biomass
Physicochemical methods modify biomass through combined physical and chemical processes. Key techniques include

1. Torrefaction
• Biomass is heated without oxygen at 200°C to 300°C.
• Removes moisture and volatiles, producing biochar or bio-coal.
• Used as fuel for power generation or co-firing with coal.
2. Hydrothermal Conversion
• Utilizes water, high temperature, and pressure to break down biomass.
• Hydrothermal Liquefaction (HTL): Converts biomass into bio-oil, water, and solid residue at 250°C–400°C; bio-oil can be refined into fuels and chemicals.
• Hydrothermal Gasification (HTG): Produces syngas (hydrogen and carbon monoxide) used for power generation or chemical synthesis.
3. Supercritical Fluid Extraction
• Biomass treated with supercritical fluids (e.g., CO?) that behave as both gas and liquid under specific conditions.
• Extracts valuable compounds like essential oils and bioactives.
• Environmentally friendly, with recyclable CO?.
4. Hydrothermal Carbonization (HTC)
• Biomass treated at 180°C to 250°C under high pressure with water, producing hydrochar.

Introduction
The characteristics of bacteria used in the study and identification of bacteria depend upon the behavior of populations or cultures rather than of individual organisms. Nutrient materials provided in a form, suitable for growth, are known as culture media. A Growth Media or culture medium is a liquid or gel designed to support the growth of microorganisms or cells.
I. Types of Culture Media
Different types of culture media may be used for cultivation of microorganisms such as liquid, solid and semi-solid.
i) Liquid Culture Media: Includes nutrient broth, Glucose broth, litmus milk etc. these media are used for the preparation of large number of microorganisms, fermentation studies and various other tests.
ii) Solid Media: A little agar, gelatin or silica gel; is added to a liquid medium to impart a degree of firmness to it. Nutrient agar, Blood agar, etc. are examples of solid media that are used for developing surface colony growth of bacteria and mold.
iii) Agar Slant Media: Test tubes or small bottles containing about 5ml. of solid medium, e.g. nutrient agar, dissolved and allowed to cool in a sloping position.
iv) Stab Media: Tubes or bottles containing agar medium are allowed to solidify in the upright position.
v) Semi solid Media: These are more jelly like due to lower percentage of the solidifiers. These media are particularly used for determining motility of bacteria.

1. Sample: One or more units selected from a population of units, or a portion of material selected from a larger quantity of material
2. The Standard Operating Procedures (SOPs) should contain full working instructions as well as information on applicability, expected performance, internal quality control (performance verification) requirements and calculation of results. It should also contain information on any hazards arising from the method, from standards or from reagents.
3. Analytical Samples: The quantity of the analytical sample to be used is usually indicated in tests and assays. Unless otherwise specified, the quantity used may deviate by 10% from that stated. All quantitative determinations should be conducted on triplicate test portions and in these cases, the amount actually taken should be accurately weighed or measured and the result of the analysis calculated on this exact quantity. When substances are to be “accurately weighed” in a test or assay, the weighing is to be performed in such manner as to limit the error to ± 0.1% or less. Quantities smaller than 100 mg should be weighed to the nearest 0.1 mg.

The rapid expansion of food distribution networks and increasing consumer demand for quality, convenience, and safety have transformed packaging into a sophisticated, multi functional system. Food packaging now serves critical roles in preservation, safety, marketing, and sustainability, aligning with both global and regional standards that cater to a wide array of consumer needs. This chapter provides an overview of the importance of food packaging, discusses the current landscape in both global and Indian markets, identifies key trends and challenges, and explores packaging’s role in the modern food supply chain. Each section aims to illustrate how food packaging impacts food quality, longevity, and overall consumer satisfaction, highlighting the industry’s ongoing innovations and adaptations to regulatory and environmental concerns. 1.1 Definition and Significance of Food Packaging Definit

Food preservation involves treating and safely handling food to prevent or delay spoilage while retaining colour, texture, flavour and nutritional value. Food deterioration may result from microbial growth, indigenous enzymes, oxidation, physical damage, insects, moisture, temperature and other environmental conditions. Bacteria, fungi and other microorganisms contaminate food through soil, water, air and biological sources. The effectiveness of preservation therefore depends on controlling intrinsic factors such as pH, water activity, nutrients and redox potential, together with extrinsic factors such as temperature, humidity and storage atmosphere. Understanding these mechanisms provides the scientific foundation for selecting safe and effective preservation methods.

Food safety and hygiene has been an age-old concern. However, today it has become an important aspect due to the rise in foodborne illnesses for the past few decades globally. It is estimated by WHO that annually 600 million suffer from foodborne diseases as a result of unsafe food consumption while 4,20,000 deaths are recorded globally.

Food Science is one of the ancient sciences and the genesis originates to the very beginning of human civilization. The advent of food science was associated with practice and observation by humans before establishment of scientific concepts. The ancient man knew that roasting or smoking of meat improves the edible quality and digestibility. As a consequence, he started practicing the same much before the reasons for the same could be established. Many of the modern preservation concepts had their origin in prehistoric period itself as humans could use techniques such as dehydration, fermentation and pickling to their advantage to improve the sensory attributes of the products and also to enhance their shelf life. Humans during the Pre-Neolithic period about 2,50,000 years before used fire for cooking meat. During the Paleolithic period humans not only roasted food but also developed grinding, pounding and drying. During the Mesolithic era, humans were desperate for food and got involved in extensive hunting and fishing. During the same time domestication of animals took place and animal husbandry became a reality (Stewart and Amerine 1982). The Neolithic period made qualitative changes in the food habits of humans and they changed from a food gathering and hunting society to one of food production (Heizer and Elsasser 1980).

Good Laboratory Practices (GLP) are a quality system concerned with the organizational process and the conditions under which non-clinical health and environmental safety studies are planned, performed, monitored, recorded, archived, and reported. GLP ensures the quality and integrity of the study process rather than the scientific validity of the study itself. It provides a framework for ensuring that data generated in non-clinical safety studies are reliable and reproducible, thereby facilitating the mutual acceptance of data by regulatory authorities worldwide (OECD, 1998; US EPA, 2016). GLP represents a structured quality system designed to ensure the consistency and reliability of non-clinical safety studies. It establishes a framework encompassing organizational processes and laboratory conditions, with a focus on:
1. Systematic Study Conduct: GLP mandates a methodical approach to the planning, execution, supervision, recording, reporting, and archiving of studies.
2. Data Integrity Assurance: The primary objective is to guarantee the dependability of data generated, thereby fostering confidence in safety assessments.
3. Regulatory Compliance Support: GLP facilitates adherence to regulatory standards, enabling the acceptance of study findings by authorities worldwide.
4. Non-Clinical Safety Focus: It specifically applies to studies that precede human clinical trials, particularly those evaluating the potential hazards of chemical substances (OECD, 1998).
In veterinary and allied fields, GLP extends beyond general scientific rigor to address the unique challenges of animal health, food safety, and environmental protection related to animal populations. It ensures the reliability and traceability of data generated in studies related to veterinary pharmaceuticals, feed additives, diagnostics, and environmental toxicology involving animals. The focus is on maintaining the integrity of studies that directly impact animal welfare, public health, and agricultural sustainability (World Organization for Animal Health, 2018; FDA, 2010). In the context of veterinary medicine or treatment aspects, GLP in veterinary refers to a a well organised quality system that governs the organization and conditions under which non-clinical studies related to animal health and safety are planned, performed, monitored, recorded, reported, and archived. This includes:

1.1 Importance

Perfumes, essential oils and aroma are some of the products which indicate religious values, living standards, personality development for personal use and adornment from years back. The Vedic literatures also indicate the presence of perfumes and aromatics and were used for religious purposes as well as medicinal purposes. The word perfume has been used today to describe scented mixtures and is derived from the Latin word, “per fumum”, meaning through smoke. Perfumery has been one of the Indian arts and was a famous centre for perfume and perfume products. The essential oil means a class of volatile odoriferous oils, obtained from raw material of botanical source that impart the plant odour and other characteristic properties derived through distillation (usually with water or steam) or expression and obtained in the form of an oily liquid. The oils extracted through expression are some time called “Expression oils”. The aromatic substances being used from the Vedic period are defined as those plants which possess odoriferous steam volatile constituent’s (essential oil) in them.

Brazil, China, Egypt, India, Indonesia and USA are the major producers of aromatic materials. China is becoming increasingly important as a primary source and a very large quantity of aromatics and flowers as raw material is available. European Union and Switzerland are the main world markets for aromatics and also has established as a largest consumer of essential oils. The world’s largest importer of aromatic materials is the USA followed by Japan. The latter accounts for about 10% of world demand especially for lemon, clove, orange, peppermint and cedar wood oil.

India exports essential oils of lemongrass, mint, sandalwood, palmarosa, cardamom, ginger and eucalyptus in adequate quantity under AGMARK certification. But, for a better export quality there is a need to study the customer requirements, quality assurance and standards to keep pace with International market, Total Quality Management (TQM) through adulteration detection and modern analysis techniques with economic marketing channels.

India possesses a number of resources as plant parts, ample land and varied climatic conditions with low production costs but the essential oil producers need to study the customer needs for a regular supply of best quality products at a competitive rates. Today, second important factor for successful competition is the quality assurance. The consumers, these days, are very much aware about the quality and safety of using perfumes, essential oils and other pharmaceutical products. The third most important point is the packaging which attracts the consumers most of the times. Proper packaging along with an attractive label is always a plus point for the marketing of any product. Hazard Analysis Critical Control Point (HACCP) and Good Manfacturing Practices (GMP’s) are the quality assurance systems which continuously controls and regulate the quality production of commodities, needs strict enforcement. ISO 9000, TQM and ISO 14000 series are the some of quality management organizations, working for the development of quality standards.

In today’s times, a lot of innovation has come into agriculture. This very hard occupation requires an amalgation of farmers with the scientists. From the rural areas after education the technocrats are moving to the cities and this is creating a great loss to the agriculturists. As the population is growing so is the demand for food. Due to shortage in the storage systems the amount of wastage has increased a lot. It is an important aspect to be looked into. A lot of waste material is seen in the vegetable markets, city markets and near the slums. This causes a lot of pollution and spoils the environment. It is important to know why is it increasing and why the facilities for wastes do not exist.

Flowers attract both young and old alike. They are associated with mankind from the dawn of civilization. These have become an integral part of human life in the modern era.
 
The Indian floriculture industry has been shifting from traditional flowers to cut flowers and dry flowers for export purposes. The liberalized economy has given an impetus to the Indian entrepreneurs for establishing export oriented floriculture units under controlled climatic conditions. About 60,000 hectares, area is under floriculture at present. During nineties, increasing demands for flowers in world market was coupled with production technology available abroad for high quality flowers.

Fruits and vegetables are very important food commodities. India has become the largest producer of fruits and the second largest producer of vegetables. Though the production of fruits and vegetables make us believe in our strength for self-sufficiency, a significant qualitative and quantitative loss occur in the produce from harvest till consumption.  For self sufficiency and also for processing, export and to meet additional requirements, a lot of emphasis need to be given to reduce post harvest losses, besides increasing  production and productivity of horticultural produces. Processing plays an important role in  conservation and effective utilisation of these perishable commodities. However, only less than 2% of total production of fruits and vegetables are processed.  The new industrial policy has placed this sector in the list of high priority areas.

1.1 Importance of Food Process Engineering

Food occupies the first position among the hierarchal needs of human beings. It is more important than shelter and clothing. After production and be forec on sumpti on, food commodities are subjected to nume rous unfavourable physical, chemical, microbial or parasitic factors which may cause their spoilage or disease when consumed. To prevent such spoilage, a process engineer has to understand these and provide remedial measures. The two primary goals of processing operation are first to minimize post harvest losses and second value addition of raw food commodities through preservation and processing.

Present level of production of different types of food commodities and their estimated post-harvest losses along with monetary values are given in Table 1.1. It shows that various food items get lost, to the tune of 65 million tonnes, worth Rs. 76,000 crores per annum, during post-harvest phase. A substantial amount of these losses could be prevented if appropriate agro processing centers, having backward linkage with farmers to ensure constant supply of quality raw food materials, are established and operated. Profit generated through value addition must also be shared with farmers, who are only people in the world to create wealth every year, in the form of food, fiber and other commodities necessary for human survival. It can bring sea change in rural areas, where 65-70% population live, in respect of economy, health and happiness.

It sounds simple, but the above process is fairly complex and requires lot of coordination in order to succeed. The major challenge is to minimize the losses during the various post harvest operations and keep the food as fresh as possible. In order to do so, one must first try to understand the various causes of post harvest losses of food commodities and the various factors that influence theses causes. Secondly, we must use those food processing operations that will not only extend the shelf life of the produce but also convert the raw food commodities to more acceptable product to the consumer.

Human beings have been concerned about the concept of food safety since time immorial. Around the globe there has been major improvement in food safety management in the last twenty years. Looking into the progress made on the ways to make food safe and how to make them free from pathogens, this book, will explain food hygiene, the journey of research been taken in food safety till date and the challenges that we are going to face in future to ensure food safety and its wholesomeness. It also includes the role and responsibilities of the various sectors of society, namely governments, food industry, consumers and academia.

In the beginning of the twentieth century many modern food safety policies have been established. In the packing of meat and in food processing industries a lot of work has been done (Sinclair 1906). Another second generation policy includes the outbreak in the United States in early 1990s’ of pathogen E. coli O157:H7 and the BSE scandal of the late 1990s in the UK Lopman et al., (2003) have discussed on viral outbreak in europe. Currently, the crisis has come due to the economic and technological transformations which have taken place in food and the food supply system. As these changes have many health risks the public is very concerned. Therefore, the control forms of safety regulation and food safety laws have come into the picture. These policies include continuous line inspection, visual product inspection and detailed specification of approved hygiene practices. There is a need of a public health-focused policy which works towards the preventive integrated management of foodborne hazards from farm to table. This includes the use of modern science based risk management tools which will increase the efficiency accurately towards public health. A lot needs to be worked out for better implications. Current efforts to modernize food safety policy around the world are being worked out by the use of risk analysis and cost-benefit analysis in public administration and also the quality management in industry. The role of public economics plays an important role in food safety policies. For the social benefits the policy makers need to take decision on the costs and strengthening of the risk assessment. Today there are globalized markets and this can influence the health globally. Emerging economies like China are industrializing and urbanizing rapidly like that of Europe and North America.

The human body consists of trillions of cells and to be healthy it needs variety of foods and nutrients. The food around the globe includes a variety of spices which have many health benefits. It has been found that spices and vegetables in the diet are very important for living healthy. The traditional foods, nuts, seeds, wild fruits and vegetables which are used in the diet are grown in specific areas. Traditional food system plays a significant role towards maintaining the well-being and the health of people in any specific region.

Agriculture has been the base of human livelihood since ancient time when the man started planting of seeds of some edible plants now called Agricultural crops. Domestication of food plants and animals was started with the development of human civilization. Thus agriculture can be explained as science and technology of growing food crops and rearing of animals. Still in several countries of the world, most of population is based on agriculture for their livelihood particularly in rural areas of that country. According to Williams and Haq (2002) there are over 7000 species of plants that can be used for food. The edible plants species grown for food are called agricultural crops. The crops grown in garden are known as garden cops or Horticulture crops. Horticulture is a branch of agriculture, which deals with intensive cultivation of garden crops such as fruits, vegetables, f lowers, ornamental plants, plantation crops, spices, medicinal and aromatic plants, and mushroom. It also deals with post-harvest technology of horticultural crops. Processing and Preservation of fruits and vegetables is a part of Post-harvest Technology of horticultural crops which deals with methods of processing and preservation of these crops to extend the shelf life of fruits and vegetables after harvesting.

All horticultural crops have their own importance in our society. Fruits, vegetables and spices are major ingredients of our meal. Spices add taste and flavor to our food and also have high medicinal values. Flowers and ornamental plants are used for decoration of environment and landscape. Aromatic and plantation crops have become industrial crops. Mushroom growing is a great enterprise. Among these crops fruits and vegetables are major crops and have been considered presently as highly economical and important food crops. There are 1200 crop species are used for vegetable purpose in the world (Hazra and Som, 2006). Fruits and vegetables are richest and cheapest source of all essential nutrients (carbohydrates, fat, protein, vitamins and minerals) required by our body for proper functioning of body organs and maintaining good health. Besides these nutrients they also supply water and fibers to our body which play vital roles in our body. Fruits and vegetables have important place in our daily diet and based on survey made by experts FAO WHO (2003) has recommended 400 g/capita/day of fruit and vegetables (fruits -100 g/capita/day and vegetables -300 g/capita/day) to be consumed for good health and prevent chronic diseases. Therefore, the demand of these food commodities has increased in the modern society due to increased awareness of the nutritional importance of fruits and vegetables. So that people must be aware that what part of fruit and vegetable is to be consumed?

1. FOOD AND ITS SIGNIFICANCE

Food is the basic necessity of all the living world and the man is no exception to this. The basic purpose of food is to provide energy for the routine body functions and protect the body from various diseases. Life cannot be sustained without adequate nourishment for a healthy and active life, diets should therefore, be planned and consumed on sound nutritional principles (Fig. 1). For want of nutritious foods, consequence is the prevalence of malnutrition. There are several diseases that are related with deficiency of nutrition food, if not consumed. Such diseases include Kwashiorkor that can develop in children consuming insufficient protein even if total calories are sufficient. Marasmus is often due to the cessation of breast feeding and the attempt to replace it with foods, inadequate in protein such as rice broth. Other nutritional diseases still found particularly in the developing world are childhood blindness (vitamin A deficiency), rickets (vitamin D deficiency), beri-beri and infantile beri-beri (inadequate thiamin intake), pellagra (inadequate niacin intake), anemia (iron deficiency), goiter (iodine deficiency), etc. To cope up with this, the diet needs to be supplemented with nutritious food components including fruits and vegetables to make it more suitable for the growth and development of body.

Out of different types of foods, the fruits and vegetables constitute an important component of the food. Horticultural crops occupy a prominent position both in the importance and production in the world. The temperate fruits and vegetables are an important part of the horticultural crops, in terms of production and role in human health. These crops assume all the more importance due to their antioxidant activity, and presence of minerals and vitamins. Both fresh and processed fruits and vegetable, their different products are consumed. They are also called as protective foods. Fruits and vegetables are major sources of important vitamins like B and C and minerals such as Ca, Fe, P and K.

There are many bacteria and fungi which produce biofilms. These are made up of living, reproducing microorganisms. These microbes form communities and adhere tightly to the surfaces and are resistant to many antibiotics. Many pathogenic microorganisms form biofilms which are difficult to be removed and are harmful.Such microbial colonies produce an extracellular polymeric substance (EPS) to protect them. The dental plaque was the first documented evidence of microbial biofilms. When such microorganisms get a moist environment they attach themselves to any object and reproduce forming an attachment by secreting a slimy, glue-like substance. It is possible with metals, plastics, natural materials, medical implants, kitchen counters, contact lenses, walls of a hot tub or swimming pool. Initially it was the investigation of many scientists to show the presence of biofilms

Beneficial effects of biofilms have also been shown (Rosche et al., 2009) especially in agriculture (Bogino et al., 2013; Berlanga and Guerrero, 2016) where it can be utilized as a biological control agents. They are used as biofertilizers to enhance crop production (Timmusk et al., 2017), hazardous pollutants can be removed (Irankhah et al., 2019). 

Indian Food Processing Industry (FPI) is one of the most untapped industries with abundant raw material to grow at a higher rate. FPI has been identified as a priority list in the “MAKE IN INDIA” program by the Government of India to boost its domestic manufacturing and export share. In the last few years, FPI has emerged as a high-growth and high-profit sector due to its immense potential for value addition while processing food products at various stages. The degree of processing of value addition to agricultural produce in India (20 %) is very low as compared to other countries, such as China (40 %), Brazil (70 %), and Malaysia (80 %). In India, the degree of processed food products ranges between 2 per cent (fruits and vegetables) and 35 per cent (milk) for various agriculture products. Hence there exist a huge potential for the growth of this sector in India. The export value of FPI was US$29.12 billion in 2016 and its share in world import was 2.18 per cent (Agarwal & Neogi, 2017).

India’s food processing sector covers fruit and vegetables; spices; meat and poultry; milk and milk products, alcoholic beverages, fisheries, plantation, grain processing, and other consumer product groups like confectionery, chocolates and cocoa products, soya-based products, mineral water, high protein foods, etc. The output of India’s food processing sector is expected to reach USD 535 Billion by 2025-26 (Invest India, 2020). Out of this, foreign investment is around Rs.10,000 crores (APEDA, 2020). Besides this, Government has also approved proposals for joint ventures; foreign collaboration, industrial licenses, and 100 per cent export-oriented units envisaging an investment.

In today’s innovation driven economies, turning a great idea or new technology into something investors want to fund takes careful planning. This process is called investor readiness. which means making sure the idea works, has a market, and is presented in a way that makes investors feel confident. Therefore, Investor readiness means the preparedness of an innovation to attract and secure investment from potential investors. It has all the essential parameters in place that an investor would evaluate before deciding to invest. For inventors, this means showcasing innovation’s business potential, potential for growth, and the capability to provide a return on investment. Understanding investor readiness is important because it directly influences scalability and growth of invention. Even the most innovative ideas can struggle to find the financial benefits without showcasing business potential.
Why it is important to discuss investor readiness
Investor readiness is the state in which a technology, its value proposition, and its founding team are significantly prepared to engage with securing funding from potential investors. Without investor readiness, even high-potential innovations may fail to reach the market due to gaps in business clarity, legal assurance, or team maturity. TTOs play an important role in this process by acting as intermediaries between inventor and investors. Modern day TTOs are more inclined to prepare technologies and associated teams to attract investment. This expanded mandate of TTOs and brought in investor readiness. It requires a wellstructured approach focused on aligning academic innovations with investor expectations. TTOs help in creating this readiness by guiding researchers through commercial pathways, derisking technologies, and translating technical advancements into investment suitable.

Abstract

Majority of basic research in our country has foundations in Universities and various Institutions linked to them. This paves way for discovering wilder varieties of the present known cereals and other food crops. Such findings help in bioprospecting the required gene/genetic material for the improvement of the existing crops. As per the Biodiversity Act of 2002, it is the responsibility of these institutions to document the same. But, as research scientists are geared to meet the challenges? Being used to socialistic system from the days of Independence where knowledge generated was open to everyone or closed and kept under the mountains of files, the TRIPS agreement has come as a shock. But the true impact of it was realized in 1999-2000, when the patent amendments were taken up. The private institution/ companies went into the act immediately.  We in the University neither were slow to react nor were we prepared to take the shock.  In this paper some of the problems pertaining to IPR and scenario of Indian Universities and Institutions in this regard were highlighted.

Introduction

Agriculture as a primary sector in India is mostly production oriented. Global agriculture is experiencing significant changes in terms of technological and digital revolution, rapid urbanization, faster growth in middle income groups, changing food habits, market oscillations, and above all, climate change. During the last 50 years, India has recorded 4 to 10-fold increase in agriculture and food production(food grains-290 MT, horticultural produce -315 MT, milk production nearly 180 MT, and fish production approaching 12 MT), rendering the country as the second largest agrarian economy in the world (Singh, 2019). Despite the excellent progress, the country is home to over one third of the world’s small and marginal farm holders, with scattered land holding. Eighty f ive percent of the farmers are small and marginal. On the other hand, world’s population is growing and to meet the growing food demand there is a need to increase agricultural output by at least 60 percent globally, and 100 percent in developing countries (FAO, 2014a)

Viruses are smaller than bacteria and require living cell for their growth. They can be detected through the bacteria to which they parasitise. Viruses are associated with both eukaryotes as well as prokaryotes and contain either DNA or RNA; only few have both DNA and RNA.

Viruses that infect bacteria are called bacteriophage. They consist of head or capsid and a tail. The head may be round, oval, polyhedral and is made up of proteins while tail is hollow and provides an exit for nucleic acid to enter in bacterial cell. The tail also helps in attachment to the cell wall surface of bacteria. After injection of the nucleic acid into bacteria they multiply and form large number of bacteriophage particles which cause lysis of the bacterial cell wall releasing many bacteriophages. Phages that cause lysis are known as lytic phages and that do not cause lysis are called temperate phage. The most common lytic phage is E.coli – a coliphage.

4.1 From Soil

Soil contains varied group of microorganisms such as fungi, bacteria, actinomycetes, algae and protozoa. The type of nutrients available, moisture, temperature and pH of the soil determine the nature of microbial population in soil. Different laboratory techniques for isolation of microorganisms have been detailed in chapter-III. These are used in particular for the isolation of specific type of microorganisms. All the techniques adopted are just to segregate the pathogens/ microorganisms from the mixture of microbial population present in nature.

(a) Isolation of Fungi

Soil contains large number of fungi and constitutes a major place of microbial population. They can be isolated in pure form by following the methods given below:

Under natural habitats microorganisms usually grow in mixed populations containing several species. This is really a problem for microbiologists because a single type of microorganism can not be studied adequately in a mixed culture. In laboratories these populations can be separated into pure cultures. The pure cultures contain only one type of organism and are thus suitable for studying the cultural, morphological and biochemical characters of an individual species. In the present days there are several ways of developing pure cultures in laboratories. Some of which are as follows:

Introduction
In order to study the cultural, morphological and physiological characteristics of an individual species, a pure culture of the microorganisms is required. Several different methods of separating the microorganisms from a mixed culture are available. The two most frequently used methods involve making a pour plate and/or streak plate. Isolated colonies are obtained from individual organisms after incubation.
Streak Plate Method
Plating is generally applied to the inoculation of a medium in petridish. Streak plate method is best for the separation of organisms from a mixed culture. In this method, agar medium is allowed to solidify as a thin layer in a petri dish and culture is streaked on the surface of agar medium and allowed to incubate to get isolated colonies.

Jaggery: Raw brown / unrefined brown sugar in lump made from palm sap (Plate 365).

Jam: A preserved product prepared on boiling pectin contained in fruit pulp with required amount of sugar, water and acid to a reasonably thick consistency, firm enough to hold the fruit tissues in position (Plate 366).

Jam pack: The packing of the commodity tightly or in excess is called Jam pack.

Jamaica rum: Heavy bodied rum made by slow fermentation and marked by a pungent bouquet.

Jamboline: A type of glucose found in the jamun fruit help in cure of the diabetes in the patients.

Jelly: A product prepared by boiling clear extract of fruits with sugar. It should be transparent, well set, and tender enough to quiver but not flower and when cut; it should retain its shape and show a clean cut surface (Plate 367).

Jam is prepared by boiling the fruit pulp with required quantity of sugar to thick consistency, firm enough to hold fruit tissues in position. It should contain not less than 68.5 per cent soluble solids. Jam may be made from a single fruit (apple, strawberry, banana, pineapple etc.) or from combination of two or more fruits. Jam contains 0.5-0.6% acid and invert sugar should not be more than 40%.

Jam : It is a product prepared by boiling to a suitable consistency, fruit pulp with sufficient quantity of sugar, acid and pectin so as to set and become firm enough to hold the tissues in position. About 45 parts of pulp are used with every 55 parts of sugar. The finished product should not contain less than 68 per cent total soluble solids.

Jelly : Jelly is prepared by boiling the fruit pectin extract with sugar in the presence of appropriate amounts of acid so as to set into a clear gel. A perfect jelly is transparent, devoid of haziness or any suspended material well set, but not too stiff and should have original flavour of the fruit. When cut it should retain its shape and show a smooth cut surface.

Marmalade : It is a fruit jelly like product in which slices of fruit or peel are suspended in the set gel. Mostly they are prepared from citrus fruits like oranges, lemons etc.
