Introduction
The term canning refers to a process in which the food is heated in hermetically sealed containers at a specific temperature for a specific time to eliminate microbial pathogens that endanger public health; and microorganisms & enzymes that deteriorate food during storage. The credit for the invention of canning goes to a French confectioner Francois Nicholas Appert, who was awarded a prize in 1809 by the French government for developing a new method of heat preservation of food in a sealed container and after whose name the process of canning has also been named as Appertization. In 1810 Nicholas Appert published the first book on canning entitled “The Art of Preserving Animal and Vegetable Substances for Many Years.” which is the first known work on canning. The work of Appert consists of packing food in glass bottles, closing them with corks, and heating the container in boiling water for several minutes depending upon the type of the food. Although the developed technique was used to preserve different types of food, the actual reason for the prevention of spoilage was known only after the work of Louis Pasteur (1864) who discovered that food spoilage was caused by microorganisms that were destroyed at elevated temperatures and the technique was known as Pasteurization. This understanding helped to form a scientific basis for establishing and revolutionizing the canning industry. Canning of fruits on a commercial scale was introduced in the USA in 1817 by William Underwood. The old phrase ‘necessity is the mother of invention’ suits well for the development of the canning industry during wars. The Civil War in America and the Great European War of 1914 also gave impetus to the development of a canning industry to meet enormous requirements of food for the fighting forces.

Introduction
Fruit juice and beverages comprise naturally extracted juices, drinks, ready to serve (RTS) beverages, carbonated juice drinks, nectars, squashes, cordials and appetizers, etc. These products are highly refreshing, thirst-quenching, appetizing and nutritionally superior to many synthetic and aerated drinks. Fruit juice is the natural liquid expressed from the edible portion of the fruit. Fruit juices are generally extracted from fruits in several ways, depending on their structure and composition. Soft fruits such as berries or tomatoes can be pressed in a fruit press or pulped by using a juicer attachment to a food processor. Citrus fruits are usually reamed to extract the clear juice. Harder fruits, such as pineapple, are peeled, pulped and pressed to extract the juice. Apple and pear fruits are crushed in a fruit grater and pressed in a hydraulic/ basket press to extract a clear juice. Passion fruit juice is prepared by using a pulper-finisher that separates the skin and seeds from the pulp. The fruits like mango, guava, apricot, peach etc from which the clear juice extraction is difficult are passed through the pulper to make pulp and then the pulp is utilized for preparation of juice, fruit drinks and ready to serve beverages. The composition of juice is unaltered during preparation and preservation while for fruit beverages like drinks, squashes, cordial etc the fruit juice or pulp, sugar, acid, colour, flavour etc are mixed in appropriate proportions to a desirable taste. Apple juice, orange juice, mango squash, guava drink, pineapple juice and squash, mixed fruit drink, mango nectar etc are the commercial products available in the market.

Introduction
Drying is probably the oldest method of food preservation used for agricultural crops, including food grains, oilseeds, spices, as well as fruit and vegetables. Drying refers to the removal of moisture content from the food to a level at which the activities of food spoilage micro-organisms are inhibited. Therefore, the reduction in water activity of the food as a result of moisture removal is themain principle of preservation by drying. Two commonly used terms for dried foods include low-moisture foods and intermediate moisture foods (IMF). Dried foods or low-moisture foods generally do not contain more than 25% moisture and have a water activity (aw) in the range of 0 to 0.6. Intermediate moisture (IMF) foods on the other hand contain 15- 50% moisture with a water activity (aw) of 0.60 -0.85. Dried grapes (raisins and munacca), apricots, dates, Morchella (Guchhi), bael, chilli, figs, etc. are commercial products prepared by using drying. However, the temperature used for drying is usually insufficient to cause the killing of microorganisms and enzymes, therefore any increase in moisture content during storage due to faulty packaging can also spoil the product. Thus, greater care is required for the packaging and storage of dried products.

Abstract
Global food production needs to double by 50% by the middle of the 21st century to ensure food and nutritional security for 9 billion people. Climate change, particularly atmospheric CO2 and temperature, has a complex impact on sustainable food security. Climate change is a significant constraint on legume production globally, which is a crucial food, feed, and fodder source. Legumes fix atmospheric nitrogen through bacteria in root nodules, reducing greenhouse gas emissions and boosting soil C-sequestration. Climate change positively impacts grain legumes by allowing them to allocate above-ground
photosynthates into below-ground parts (nodules), improving rhizospheres’ activities, plant biomass and nutrient use efficacy. However, temperature can also negatively affect grain legumes, leading to flower abortion and abnormal pod filling. However, climate models predict more extreme events in the future, affecting legume growth and development. Heat stress, elevated CO2 concentration, drought, and rainfall variability impact legume crop production, requiring adaptation options. Results show that legumes with C3 fixation pathways show higher photosynthesis, reduced photorespiration, biomass production, and water use efficiency under atmospheric CO2. However, temperature increases lead to faster development, shorter life cycles, and lower yields. Legumes can cope with atmospheric CO2 up to
1000 ppm by storing sucrose and starch. Protein synthesis and water stress also help legumes adapt to changing climates. To achieve targeted yields in changing climatic conditions, agronomic and genetic interventions must be integrated. Targeted breeding programs should select high-yielding, biotic stress-resistant, and abiotic stress-tolerant genotypes adapted to atmospheric CO2 and temperature conditions. Integrating grain legumes with desirable traits can provide resilience against climate change.

Basic Elements of a Study Protocol
The study protocol includes different components including background Information available in literature for research plan, objectives or purpose of conducting the research, explanation of the study design, selection and exclusion of subjects, treatment of subjects, assessment of outcome safety and efficacy. The purpose of conducting research includes questions like why the study needs to be done and what will be its relevance to scientific society or environment. Incentives are a powerful stimulus to transfer of technology. They can encourage researchers to get their results to market, a new career path for many of them. They can create a culture that attracts and retains entrepreneurial staff, scientists, students and technology transfer professionals (TTPs) that view the university as a career path and a vehicle for making a contribution to society. Working in a pro-entrepreneurship team of colleagues can also lead to getting people to think in terms of making a connection between their work and its application. Incentives can be short-term or long-term in nature, and can be tailored to individual or collective requirements. As it is likely to be challenging for universities to design incentives that cater to every researcher’s or TTP’s desire, they can design incentive programs to cater to various aspects of human. Introduction

COVID-19, a worldwide pandemic, addresses a deflationary stun for the worldwide economy. The outbreak of coronavirus has had a significant impact on public health worldwide and all stages of various industries’ supply chain and value chain. The 2019 novel coronavirus (2019-nCoV) or the severe acute respiratory syndrome coronavirus 2 (SARS-CoV-2) is rapidly spreading from its origin in Wuhan City of Hubei Province of China to the rest of the world. The infection began in bats and was communicated to people by inhalation or contact with infected droplets, and its infection time frame goes from 2 to 14 days. Primary manifestations in hospitalized patients with COVID-19 include fever (98%), cough/hack (76%), and myalgia or weakness (44%). Severe complications include acute respiratory distress syndrome (ARDS), RNAemia, acute cardiac injury, and multiple organ failure. However, exaggerated immune responses may lead to Cytokine Storm. Cytokine storm syndrome includes ARDS, shock, and multi-organ failure (Zheng et al., 2020). Many people are asymptomatic also, and the severity of this disease varies from person to person. The fatality rate is estimated to range from 2 to 3%. Typical/low white cell checks can analyze it with raised C-responsive protein (CRP), periodic modernized tomographic chest examination. The infection spreads quicker than its two predecessors, the SARS-CoV and Middle East respiratory disorder Covid (MERS-CoV); however, it has lower casualty. The worldwide effect of this new scourge is yet questionable (Singhal, T. (2020).

Cleaning, drying, and aeration are essential processes in the management of stored agricultural products to maintain their quality and reduce the risk of spoilage. These practices are particularly important in preventing the growth of molds, the infestation of pests, and the deterioration of the product during storage.
Cleaning is the first step in the storage process. It involves removing any debris, dust, dirt, and residues from both the stored products and storage facilities. Proper cleaning eliminates potential sources of contamination, such as pests, molds, and bacteria, which can thrive in the presence of organic matter. It also ensures that the grain or other stored product is free from contaminants that could affect its quality and marketability.
Drying is equally crucial to prevent moisture-related issues. Excess moisture can lead to mold growth, fungal infections, and insect infestations. Drying reduces the moisture content of the grain or product to safe levels, typically below 14% for grains, which helps preserve their quality during storage.
The drying process can be carried out using natural sunlight or mechanical dryers, depending on the volume of the product and available resources. Properly dried products are less prone to spoilage and can be stored for longer periods. Aeration involves the circulation of air through stored products to maintain optimal temperature and humidity levels. By controlling the environment, aeration helps prevent the buildup of heat and moisture, both of which can lead to product deterioration.
It also reduces the risk of insect infestations by keeping the grain cool and dry. Aeration systems typically use fans or ventilation channels to ensure continuous airflow, especially in large-scale storage facilities. Together, these processes form a comprehensive approach to maintaining the quality and safety of stored agricultural products.

Biological conversion methods involve using microorganisms or biological systems to transform organic materials—like biomass and organic waste—into valuable products such as biofuels, biogas, compost, and chemicals. These ecofriendly and sustainable processes contribute significantly to the circular economy by turning waste into useful energy or raw materials. Unlike thermal or chemical methods, biological conversions occur under milder conditions (usually ambient temperature and pressure), which lowers energy consumption and environmental impact. They harness the natural metabolic processes of bacteria, fungi, and other microorganisms to break down the complex organic compounds in biomass
Physicochemical Conversion Of Biomass
Physicochemical methods modify biomass through combined physical and chemical processes. Key techniques include

1. Torrefaction
• Biomass is heated without oxygen at 200°C to 300°C.
• Removes moisture and volatiles, producing biochar or bio-coal.
• Used as fuel for power generation or co-firing with coal.
2. Hydrothermal Conversion
• Utilizes water, high temperature, and pressure to break down biomass.
• Hydrothermal Liquefaction (HTL): Converts biomass into bio-oil, water, and solid residue at 250°C–400°C; bio-oil can be refined into fuels and chemicals.
• Hydrothermal Gasification (HTG): Produces syngas (hydrogen and carbon monoxide) used for power generation or chemical synthesis.
3. Supercritical Fluid Extraction
• Biomass treated with supercritical fluids (e.g., CO?) that behave as both gas and liquid under specific conditions.
• Extracts valuable compounds like essential oils and bioactives.
• Environmentally friendly, with recyclable CO?.
4. Hydrothermal Carbonization (HTC)
• Biomass treated at 180°C to 250°C under high pressure with water, producing hydrochar.

Global onion research connects crop domestication, genetic diversity, nutrition, therapeutics, production, breeding and post-harvest technology. Onion contains organosulphur compounds, quercetin derivatives and other phytochemicals associated with antimicrobial, antioxidant, cardioprotective and anticancer effects. Despite high global production, productivity differs substantially among countries, and storage losses remain a major economic concern. This chapter reviews global production trends, germplasm resources, breeding strategies, phytochemistry, therapeutic potential and emerging storage technologies. Landraces, cultivars and wild relatives provide valuable traits for yield, storability and stress resilience. Advanced treatments such as ozonation, cold plasma and irradiation demonstrate promise, although wider commercial adoption, economic validation and regulatory development remain necessary.

INTRODUCTION

A food may have three attributes (1) Provide energy and nutrition (2) Give pleasure, i.e., enjoyable aroma, colour, and taste and (3) Health benefits. Functional food has physiological benefits and reduces the risk of chronic disease beyond basic nutrition.

Functional foods, also reported as ‘nutraceuticals’, ‘medical foods’ or ‘designer foods’ in the literature, were first described by Roberfroid (1999) as ‘Food similar in appearance to conventional food that is intended to be consumed as part of a normal diet, but has been modified to subserve physiological roles beyond the provision of simple nutrient requirements’. Examples are iodized salts, vitamin A and vitamin D fortified milk and yoghurt, folic acid enriched bread, soy products, wheat bran and oats products.

Abstract
 
Food products can have moisture content as high as 90% which needs to be lowered to acceptable limits to prevent microbial growth and deteriorative reactions. Drying is one of the most common and cost effective techniques for removal of excess moisture from the food by application of heat. In addition to its role of extending the product shelf life and providing stability, drying also helps to produce variety of products from agricultural, horticultural and industrial products. But to obtain the desired quality product, adequate drying is essential which depends on type of dryer and drying technique employed which further requires proper understanding of drying process. Despite being important unit operation in food processing industry, appropriate scientific knowledge of the drying process is still limited. So, the fundamental principles and associated terminologies with drying has been discussed in detail in this chapter to have thorough understanding of the drying process. In addition, different models and calculation procedures for drying of different types of commodities has also been reviewed.

Abstract

Recently, the reduction of post harvest food losses around the globe is a critical issue for ensuring future food security. Drying techniques is important option to prevent losses and preserve food for long time. The solar thermal energy required to remove moisture from the food during the drying process can be optimized by designing suitable solar dryers. Moreover, the application of solar energy in drying of agricultural products has tremendous potential, since it can easily provide the low temperature heating required for drying and helps in reduction of CO2 emissions. Hence, the present chapter deals with descriptions of different types of solar dryers used to dry various types of agricultural food products and design of solar dryers. Also, the heat and mass transfer parameters with respect to various process variables to estimate the performance of the food dryer system were analyzed. The advantages of solar dryers in terms of net CO2 emissions mitigation potential and the quality attributes of dried food products are also discussed. It is suggested that properly designed solar dryers having low operational cost compared to electrically heated dryers may prove to be an energy saving device for drying of agricultural products. However, the techno-economical and environmental aspects of various efficient solar dryers are needed to be further studied for applications in various irregular shaped food products.

As an efficient technology with high heat and mass transfer rates, impingement drying has been commonly used in various industrial drying such as tissue paper, textiles, photographic films, coated paper, nonwovens, carpets, lumber etc. In the past two decades, air impingement technology has got more and more attention in the field of food and agricultural products processing.

Medicinal herbs are economically and nutritionally important plants, which are rich in health-promoting compounds. Herbs are the backbone of both the traditional Chinese and Indian medicine, which has long history as part of their culture. Ensuring the quality of herbs is a crucial step for integrating the traditional medicine into science-based modern medicine. Drying is an essential technique in preservation of herbs as it affects directly the quality attributes of the dried products, whereas many producers lose much profit due to poor drying techniques. So, employing a suitable drying technology and selection of appropriate drying conditions are very important for producing high quality herb products. The aim of this article is to summarize the advances in drying technologies of medicinal plants, describe the current status and identify future research opportunities. The current work provides more data and information for selecting optimum technology for herb drying and would trigger innovative drying technologies to enhance drying kinetics and quality of herb drying.

Abstract

Food proteins are among the commonly used ingredients by food manufacturers to produce different products with desired characteristics. Due to several nutritional and functional properties, proteins have different functions in various food products in addition to their role in metabolic system of the human body. Dilute or concentrated solutions of pure proteins or unprocessed food products which are rich in protein are very sensitive to deterioration or degradation by microorganisms and thus have short shelf life at ambient temperatures due to their highly moist structure and high protein content. Drying is one of the best methods that can guarantee preservation, a longer shelf life, chemical or thermal stabilization and resistance against other stresses. A full understanding of stresses encountered during drying is needed to choose an appropriate drying process and to optimize this process for maximum product quality. A number of methods have been used by various researchers to dry protein-containing foods. Among these methods, freeze drying and spray drying are the most common techniques. Sun drying, convective hot air drying, vacuum drying, heat pump drying, radio frequency drying as well as combined or hybrid drying methods with two or more of the drying methods have also been developed.

Various systems were developed to take produce from field to consumer and selection of a particular method depends on several factors, including perishability and value of crop.  One method is to harvest the crop and take it to a packhouse for various unit operations like grading, cleaning, post-grading treatments, and packing for transport and marketing. When deciding upon where to locate a packinghouse, access to field and market point, adequate space for vehicles to enter and leave  packinghouse and ease of access to labor will all be considered.
 
In the simplest packinghouse, produce is delivered in picking containers, immediately after harvest, directly to packers.  Packers then sort, grade, size and pack the produce directly into appropriate transport containers. In this case, each worker must be aware of produce defects, grade and size requirements, and packing methods.

Storage is one of the most important aspects of post harvest handling of fruits and vegetables. The main objective of storage is to extend storage life of fruits and vegetables and increase their period of availability. A substantial quantity of fruits go waste in India due to lack of proper storage facilities. Storage of fruits and vegetables is practiced for various reasons. Proper post harvest handling of fresh horticultural produce helps in extending  period of availability of wide range of  fruits and vegetables round the year, prevention of seasonal market gluts, orderly marketing, better return to grower and  preservation of  nutritional qualities. The   long  term  storage  of  fruits  and  vegetables is expensive and requires high level of technical  knowledge of crop. However, an orderly marketing reduces storage period considerably. 

Minimally processed fruits and vegetables are products that have the attributes of convenience and fresh like quality. Their forms vary widely, depending on nature of unprocessed commodity and how it is normally consumed. In many cases, minimally processed product is raw and cells of tissues are alive, but these characteristics are  not regarded as essential. It is important that products have fresh-like character, regardless of   state of cells.  Minimally processed products for both retail and food service applications have increasingly appeared in market place recently.  In coming years, it is commonly perceived that this industry will have unprecedented growth.

Quality is an increasingly important factor in the production and marketing of biological products. Consumers are becoming more discerning as their affluence increases, and would be suppliers of products must meet these demands if they are to maintain or increase market share. The term ‘quality’ is one of the most defined terms in use in food industry today. Quality may be defined as ‘The totality of features and characteristics of a product that bear on its ability to satisfy a given need’. The first part, ‘The totality of features and characteristics of a product…..’ concerns objective factors related to the product.  The second part, ‘…… to satisfy a given need’, concerns subjective factors related to user or consumer of goods.

Dairy ingredients are of significant importance in the formulation of many food products. Additionally, the incorporation of dairy ingredients, comprehensively recognized by the consumer as “natural” intensifies the odds of success of packaged foods and adds functional properties of the dairy ingredients in the targeted product. Dairy ingredients can be extracted from fluid milk in the form of cream, butter, condensed milk, dry milk, cheese, and whey products [1]. They provide beneficial functionality to foods, such as delivery of key nutrients, water management, fat-holding capacity, emulsification capability, viscosity creation, gel formation, and foam generation apart from providing desirable attributes of texture and flavour. Various ingredients and claims associated with dairy foods are shown in Table 3.1.

Whilst food has long been used to improve health, our knowledge of the relationship between food components and health is now being used to improve food. Although most foods can be considered “functional”, in the context of this review, the term is reserved for foods and food components that have been demonstrated to provide specific health benefits beyond basic nutrition. Widespread interest in select foods that might promote health has resulted in the use of the term “functional foods”. Seaweeds are known for their richness in polysaccharides, minerals and certain vitamins [1], but they also contain bioactive substances like polysaccharides, proteins, lipids and polyphenols, with antibacterial, antiviral and antifungal, as well as many such other properties [2]. This gives seaweed great potential as a supplement in functional food or for the extraction of compounds. Physiologically active substances in marine algae are classified into two types based on the difference in the mechanisms viz. (i) non-absorbed high-molecular materials like dietary fibres, and (ii) low molecular materials, which are absorbed and which affect the maintenance of human homeostasis directly. Seaweeds are among the first marine organisms chemically analyzed, with more than 3,600 articles published describing 3,300 secondary metabolites from marine plants and algae, and they still remain an almost endless source of new bioactive compounds [3].

Spices and aromatic herbs have been used since antiquity as preservatives, colorants, and flavour enhancers. Spices, which have long been the basis of traditional medicine in many countries, have also been the subject of study, particularly by the chemical, pharmaceutical, and food industries, because of their potential use for improving health. Both in-vitro and in-vivo studies have demonstrated how these substances act as antioxidants, digestive stimulants, and hypolipidemics and show antibacterial, anti-inflammatory, antiviral, and anti-carcenogenic activities. These beneficial physiological effects may also have possible preventative applications in a variety of pathologies. The chapter presents an overview of the potential of spices and aromatic herbs as functional foods ingredients.

Introduction

Encapsulation may be defined as a process to entrap one substance (active agent) within another substance (wall material). The encapsulated substance, except active agent, can be called the core, fill, active, internal or payload phase. The substance that is encapsulating is often called the coating, membrane, shell, capsule, carrier material, external phase, or matrix. In the food industry, encapsulation process can be applied for a variety of reasons. Encapsulation is a useful tool to improve delivery of bioactive molecules (e.g. antioxidants, minerals, vitamins, phytosterols, lutein, fatty acids, lycopene) and living cells  (e.g. probiotics) into foods [1]. In most cases, encapsulation refers to a technology in which the bioactive components are completely enveloped, covered and protected by a physical barrier, without any protrusion of the bioactive components. Also, encapsulation has been defined as a technology of packaging solids, liquids, or gaseous materials in small capsules that release their contents at controlled rates over prolonged periods and under specific conditions. Produced particles usually have diameters of a few nm to a few mm.

The future of functional foods is bright and there are several reasons for the growing interest in “functional” foods, such as awareness of personal health deterioration, led by busy lifestyles with poor choices of convenience foods and insufficient exercise; increased incidence of self-medication; increased level of information from health authorities and media on nutrition and the link between diet and health; scientific developments in nutrition research; and a crowded and competitive food market, characterized by pressurized margins. Now, the consumer is well aware of the relationship between diet and health. Consumers understand that the risk for chronic diseases such as heart disease, stroke, colon cancer, and type II diabetes is possibly preventable by modification in their diet pattern. This scientific progress in understanding the relationship of diet to disease, along with increasing health care costs and the consumer’s desire to initiate healthy eating and lifestyle habits, makes this a potentially fertile ground for the development of food products that meet these demands.

INTRODUCTION

Meat is the flesh of animals that is used for food and consists of muscle, fat and bone. If the muscle which is commonly known as the lean meat, is examined under the microscope, it is seen to be made up of bundles of fibers held together by a thin membrane called connective tissue. Further study reveals that these fibers are in readily hollow tubes that vary in length in different animals and in different muscles in the same animals that are filled with a fluid, sometimes called muscle juice, which is known to contain protein, minerals and extractives. The forms of protein in the muscles are myosin (a globulin) and myogen (an albumen) and in addition, on red meats, hemoglobin.

1. Introduction

Processed foods have become a way of life in the modern world. Manipulation of chemical and physical properties facilitated by modern food technology and followed by addition of food additives has created a plethora of innovative food products that offer consumers greater convenience, variety, safety, satiety and quality.
Food additives have been in use for centuries for preservation, for providing improved appearance or desired texture and flavour. Preservation of foods started with salting and smoking. The Egyptians used colours and flavours, Romans used saltpeter and in India, turmeric is being used. Similarly additives such as baking powder as a raising agent, thickeners for sauces and gravies and colours- synthetic as well as from natural sources are being used.
Today more than 2500 food additives have been in use mainly due to the spurt in the research activities in food science and technology that are aimed at providing different characteristic functions to foods. Out of these, about 1300 are the flavouring additives.

Fermentation plays a major role in our diet and give the basic foods like bread, yoghurt, wine and cereal and legume based traditional fermented foods. The development of fermented food products can be considered as one of the greatest achievements of human civilization and goes back thousands of years. It arose from the necessity to conserve foods, to make them more digestible and also more enjoyable. During the centuries, man learned by trial and error to conduct the fermentation processes by changing physical and chemical parameters in the basic food ingredients. It took much longer, however, to discover the cause of fermentation processes: only towards the end of the 19th century it was demonstrated, that baker’s yeast is the cause of alcoholic fermentation. Through the development of the technique of "pure microbial culture", the basis for a controlled use of microbes in food industry was established.

The unique feature of fermented foods is the vital role of microorganisms that bring about essential bio-trasformations of the substrates during fermentation contributing number of desirable properties such as improved product shelf life, enriched diet with improved flavor and texture, increased safety, enriched nutritional supplement and probiotic functions. Fermentation is a chemical reaction carried out by many types of microorganisms to obtain energy. Fermentation is a process for production of a product by means of mass culture of microorganisms. In fermentation, microorganisms breakdown complex organic compounds into simpler substances. Although chemical changes and microbial growth usually mean food spoilage, in some cases fermentation is desirable and microorganisms are actually added to foods. For example, in the production of beer, wine, and other alcoholic beverages, yeasts convert sugar into ethyl alcohol and carbon dioxide. In the making of yogurt and cheese, lactic acid bacteria convert lactose, a sugar found in milk, to lactic acid. Alcohol, acids, and other compounds produced in fermentation act as preservatives, inhibiting further microbial growth. In addition to its use with alcoholic beverages, cheese, and yoghurt, fermentation is used to produce yeast bread, soy sauce, cucumber pickles, sauerkraut, and other traditional fermented food products. The variation in agroclimatic conditions prevailing in India and diverse form of dietary culture of various ethnical groups produced traditional fermented foods such as idli, dosa (rice-legume based), vada, papad, wari, balle (legume based), bhatura, jelabi, nan (wheat based), paneer, shrikhand (milk based).

2.1 Introduction

Each step in the food industry system e.g. food production, processing, transportation, storage, distribution and marketing, has some impact on the environment and there is much concern about environmental pollution. Due to the highly diversified nature of the food industry, various food processing, handling and packaging operations create wastes of different quality and quantity, which, if not treated, could lead to increasing disposal problems and severe pollution problems [24]. The preservation of the natural environment from industrial pollution is currently receiving much attention. In food industry, the most important problem is treatment and disposal of large quantities of waste water, a by-product of various processing operations. It is one of the largest industry groups comprising the manufacturing sector of the U.S. economy [47]. Likewise, India is the world’s second largest producer of food next to China, and has the potential of being the largest food processor. The total food production in India is likely to double in the next ten years [22]. Flour and grain; soft drinks and carbonated water; breweries; starch and miscellaneous food products; meat, poultry and fish; tea, coffee and other beverages; fruit juices; animal feed; sugar; distilleries and blending of spirits; cocoa, chocolates and sugar confectioneries; agricultural and food chemicals and industrial packaging are important sub-sectors of the food processing industry. Food processing projects involve the processing and packaging of meat products, fish and shell fish, dairy products, fruit and vegetables, grains and beverages production. It includes refinement, preservation, improvement of product, storage, handling, packaging and canning (Fig. 1). The processing may involve receiving and storing raw or partially processed plant, animal or other food materials, processing the raw materials into finished products, packaging and storing the finished products.

4.1 From Soil

Soil contains varied group of microorganisms such as fungi, bacteria, actinomycetes, algae and protozoa. The type of nutrients available, moisture, temperature and pH of the soil determine the nature of microbial population in soil. Different laboratory techniques for isolation of microorganisms have been detailed in chapter-III. These are used in particular for the isolation of specific type of microorganisms. All the techniques adopted are just to segregate the pathogens/ microorganisms from the mixture of microbial population present in nature.

(a) Isolation of Fungi

Soil contains large number of fungi and constitutes a major place of microbial population. They can be isolated in pure form by following the methods given below:

Generally microorganisms are so small and colourless in their natural state that it becomes difficult to observe them clearly under microscope. Stains and dyes, which are colouring agents, are used by biologist for better understanding of the morphological and anatomical structures of the organisms under study. Stains are prepared with great care and specification to get satisfactory result, while dyes are not as exacting in their characteristics.

Dyes are of two types, natural and synthetic. The natural dyes are used for histological purposes, whereas the synthetic dyes for bacterial stain. Usually dyes which are derivatives of cyclic compound benzene of benzole, are prepared from one or more substances found in coal-tar, and so are called coal-tar dyes. Chemically dyes are organic compounds containing both chromophore and auxochrome groups linked to benzene rings. Chromophore group provides the compounds the property of colour and thus benzene containing chromophores are called chromogens. It has no affinity to combine with fibres or tissue and as such not called dye. For being a dye, compound should contain an auxillary group which provides the compounds the properties of electrolytic dissociation.

The dyes may be acidic, basic or neutral. The acidic dyes are eosin, acid fuchsine and picric acid whereas the basic dyes are safranin, methylene blue, crystal violet etc. The acidic dyes ionize to give the dye portion of molecule a negative electrical charge. They are salts of sodium, potassium, calcium, magnesium etc. The basic dyes ionize to give the dye portion of molecule a positive electrical charge and are salts of chlorides, sulphates or acetates.

14.1 Introduction

Proteins are the substances formed from nitrogen containing amino acids and are principle structural components of body tissues and muscle. In addition, they are used to produce various hormones, enzymes and hemoglobin in human body. Due to the shift from agricultural to electronics and other fast paying industrial development, most of the countries around the world, ceased to be self-sufficient in their food production in particular protein, which is necessary to satisfy their optimum food demands. The biotechnology development and its usage to agriculture have brought hope to them. The need for food by modernization of agriculture has gained much attention throughout the world. However, the necessity for exploring unconventional and non-agricultural means of food production, especially of proteins rich food, cannot be over-emphasized due to the tremendous growth of human populations in several regions of the world. In addition to this, the importance of protein in food nutrient cannot be put aside because its shortage causes various malnutrition problems and the most lethal malnutrition problem is Protein-Energy-Malnutrition (PEM). The United Nations Food and Agriculture Organization estimates that nearly 870 million people of the 7.1 billion people in the world, or one in eight, were suffering from chronic undernourishment in 2010-2012. There are 925 million people undernourished in developed countries (FAO October, 2010). This situation has created a demand for the formulation of innovative and alternative proteinaceous food sources having high nutritional value. These sources have to be non-competitive with food for human consumption, economically feasible and locally available. This demands a search for new protein sources, with high nutritional value, economically feasible and locally available. Use of microbes as a food source is one of the biotechnological innovations that will certainly increase the availability of affordable protein in the world to solve the global food and feed problems.

In recent decades there has been an increased interest in the industrial production of microbiological protein for use in both human and animal nutrition. The main reason behind it is that there has been the shortage of low cost protein sources in view of the increasing human population and living standards, resulting in famine in some parts of the world and increased demand for animal protein in others.

Abstract

Multiflash drying (MFD) process is based on the application of multiple cycles of heatingvacuum pulse to a solid food. Heat can be provided by convection (from hot air), conduction (by contact with a hot surface), microwaves, or by a combination of these methods. Due to the moderate temperatures applied to the drying food, and the sudden decompression step (vacuum pulse), MFD processes allow obtaining crispyanddried foods with very good nutritional and sensory properties. Vacuum pulses cause food texturization, which depends on the pressure drop rate during decompression. In fact, the dried products are similar to freezedried foods, but with more open structures, which result in higher crispness. The dehydration can be performed in relatively short processing times, when compared with traditional drying processes (e.g. solar drying, airdrying, vacuum drying and freezedrying). The short process time indicates clearly that this class of drying process presents a huge potential to the production of driedandcrisp foods at industrial scale.

Abstracts

To ensure safe food and adequate sanitation programs, the equipment used for processing of food products must be designed, fabricated, constructed, and installed according to sound hygienic design principles. This ensures the equipment can be adequately cleaned and sanitized, and that surfaces are resistant to daily exposure to corrosive food products and cleaning/sanitizing chemicals. This chapter focuses primarily on fundamental principles of hygienic design, which protect the product from microbial, chemical, and foreign-body contamination. This is followed by a discussion of general aspects of hygienic construction and design of food equipments, the selection of materials of construction and specification of surface finishes, fabrication, installation and cleaning and sanitization. Quality of raw materials or foods ingredients, proper processing, packaging and storage of finished products decides the quality of the food products. Planning for plant and equipment layout, its design, services (water, air, refrigeration, steam), waste disposal etc. are some of the critical factors, which contributes to quality. In addition, the food processing equipment must comply with strict standards and regulations, which are necessary for securing the quality and safety of the food products to the consumers.

8.0. Introduction

Food additives are the substances not normally consumed as a food by itself and contain or not contain nutritive value but are added to food to improve freshness, sensory and keeping quality of food. So, a food additive is defined as a substance or a mixture of substances other than the food stuff incorporated in food either directly or indirectly as a result of any phase of production, processing, storage or packaging to improve or maintain the nutritional value, enhance quality, consumer acceptability and facilitate the preparation of materials e.g., acid, alkali, bleaching agents, emulsifying & sterilizing agents, flavours, colours, nutrient supplements, clarifying agents, humectants, chemical preservatives etc. Every food available in the market or at home contains food additives. So, now the question arises that whether additives are safe from consumption/toxicological point of view or not? What are the facts or fictions, if additives are to be used in the food preparation? These are the most important questions to be answered and discussed before their use in food industry.

The safety of the food supply suitably remains a high main concern for industry stakeholders, regulatory agencies and patrons. With the surfacing of new safety challenges and issues, companies are establishing and upgrading programs to reduce risk factors. These programs are constantly monitored for reliability, repeatability, reproducibility and effectiveness. Due to the health and safety risks posed by chemical, microbiological and environmental contaminants, analytical methods are progressively more becoming a pride and joy of food safety programs. Innovative analytical approaches are being developed in response to budding food safety issues. To monitor for known issues only the established and officially approved methods are used often. Oftentimes, new analytical methods are developed, improved or modified quickly in response to issues, such as melamine contamination, which are unforeseen. In such instances, accurate data derived from sound, validated analytical methods are required to facilitate industry stakeholders and regulators to make sound methodical decisions.

Through research, industry has improved a host of analytical methods in recent years, resulting in higher sensitivity and accuracy for difficult-to-detect contaminants, detection of contaminants in new matrix classes for grades. These advances have been made in the face of changing set of laws, more painstaking method-validation standards and end user demands for safe, quality products. Further to this, this spirit of innovation will continue to be fundamental in industry’s efforts to ensure the safety of the comprehensive food chain.

Introduction

Food is any substance or a product obtained from nature, which contains nutritive and non-nutritive components that help to maintain or improve the health of an individual if consumed in optimal amount (Sukhneet and Malhotra, 2014). Globalization of food production and procurement makes food chains longer and more complex and increases the risk of food safety incidents. Infections and diseases arising from contaminated/adulterated food remain threats to global public health (Havelaar et al., 2015; Luo et al., 2019). The WHO reports shows that every year foodborne diseases cause the death of 33 million people including many children (WHO, 2019). Food safety is linked to the presence of foodborne hazards in food at the point of consumption. Since food safety hazards can occur at any stage in the food chain it is essential that adequate control be in place. Therefore, a combined effort of all parties in the food chain is required to deliver safe food products to the final consumer. Effective and harmonized food safety systems shall manage and ensure the safety and suitability of food in each link of the supply chain.

Although the food industry has the prime responsibility of ensuring safe foods in most societies, the maintenance of a safe food supply is regarded as a responsibility of the government of that country. This responsibility has, over many years, led governments to adopt legislation, standards and regulations for food processing and to impose penalties when a business fails to meet the expectation. As with any legislation, an effective system for detecting failures to comply with the legal requirements increases compliance and hence, in this case, promotes food safety. Governments have an obligation to protect consumer health and this includes protection against food borne diseases. Food standards are therefore necessary to aid governments in protecting public health. However, the standards can only be effective when they are enforced through an efficient food control system. This therefore requires comprehensive legislation inspection, food monitoring and food borne surveillance. An efficient food control system must be supported by competent staff with good laboratory services. Political and institutional support and stability are also important elements.

Introduction

Food is a resource of vital importance and its safety in the whole chain, from producer to consumer, is a worldwide concern. In fact, as food trade expands throughout the world, food safety has become a shared concern among all consumers. This issue began to be taken seriously at a period where there is a significant increase of illness caused by infected food in both developed and developing countries. Unsafe food contains hazardous agents or contaminants that can make people sick, immediately or by increasing their risk of chronic disease. Contaminants can enter food at many different points in the food production process, and can occur naturally or as the result of poor or inadequate production practices. International competitiveness depends more on quality and safety concerns than on prices. Governments and local authorities intervene in the market place in setting technical regulations; and sanitary and phytosanitary measures. This encouraged food processing companies around the world to implement food safety management systems which guarantees the production and distribution of safe foods. Prerequisite Programs (PRPs) are considered as the integral part of food safety standards and audit schemes all over the world. It is essential to implement food safety programmes in every company to check the chances of illness or injury due to unsafe food.

Introduction

The conventional thermal processing technologies are dependent on high temperature to control the growth of pathogenic and spoilage causing microorganisms. However, the exposure to high temperature for prolonged time results in several biological, chemical and physical modifications leading to their sensory, nutritional and textural changes. Currently, consumers are more interested in minimally processed food products with improved safety and shelf life. In order to fulfill the market demand, innovative non-thermal food processing techniques to inactivate the microorganisms have been developed. These techniques retain freshness, nutritional value and sensory characteristics of food items without any significant thermal degradation.

Non-thermal technologies are used in interdisciplinary sciences, and in many other applied areas. The three main pillars related to the use of novel food technologies are food safety, quality and environmental impacts. Besides the food safety and quality dimensions, these non-thermal processing technologies have the possibility to shorten treatment time, lower energy consumption, and lower carbon footprint. Depending on the source of energy transfer, non-thermal technologies have different types of action. It includes inactivation of microorganisms in radical formation (plasma, ultrasound, ozonation, UV light, etc.); mechanical action through hydrodynamic effects, shock waves (ultrasound and plasma), electric and magnetic fields; or extremely high pressures that are causing disruption of the cell organelle.

The novel non-thermal technologies destroy the pathogens at room temperature as well as utilize less energy compared to conventional ones and have the potential of developing new food products having distinctive functionality. For optimizing the product quality, time for processing and also to inactivate the enzymes and bacteria, each of these techniques can be used either alone or in combination. The adverse effect of some technologies on the sensory, texture, and nutritional values of food could be overcome by using hurdle technology. Combination strategies are more efficient for improving the food quality and have the potential to ensure the microbial safety of foods. An overview of the effect of novel process technologies on the quality and safety of food is elaborated in this chapter.

A food safety system revolves around different aspects, beginning right from the farm, where the food is created and transported to where the customers purchase, eat and dispose. This includes production, processing, distribution, preparation, marketing, access, consumption, and disposal. These processes need to have numerous resources like people, business, farms, communities, interventions, policies, and politics. All steps ought to be coordinated for an organisation to make progress. In today’s world of processed foods and industrial farming practices, ingredients and preparation procedures are typically uncertain. In order to reduce the confusion of consumers and to provide quick, straightforward identification of the commodities they’re searching for, many items are now “certified” by revered organizations.

Food safety certification is a third-party verification, to ensure that commodities, processes or systems in the food supply chain meet accepted food safety standards. It is distinct from different systems like supplier declarations, laboratory test reports or inspection body reports. Food certification is predicated on the results of tests, inspections and audits and provides confidence to the buyer as a result of an organization’s commodities or system are being completely evaluated against accepted national and international business standards by a competent third body.

Cereals and cereal products comprise a long history of consumption by humans. Cereals are the important source of nutrients and non nutritive health beneficial components and for that reason cereal based food products are consumed as staple food in human diet in developed as well as developing countries. The cereal grains mainly cultivated and consumed as food include rice, maize, wheat, sorghum rye, barley, oats, and millet. Products obtained from cereal grains are flours, grits, semolina, breakfast cereals, extruded product like pasta, puffs and flakes, and bakery products such as bread, biscuits, cakes and tortillas. Moreover, cereals or their components are used as ingredients in the preparation of various food products such as beverages infant foods coatings and processed meats. Initially cereals are consumed as whole or with minimal processing like boiling, grinding and roasting. However, processing like salting, drying, steeping and fermentation of cereals for preparation of cereals based beverages and foods has been practiced since the initiation of cereals consumption as food by human. Increasing consumer awareness and commercialization of cereal products have created interest of food manufacturers in utilization of novel and more efficient technologies with optimized conditions, development of convenient and more health beneficial foods with satisfactory sensory properties and wide variety of foods to ease the choice of consumers. Market full of diverse range of snack foods, breakfast cereals, ready to eat and ready to cook foods, and novel functional foods with variation in appearance, texture and flavor is an indication of evolution of food industry from basic to complicated form focused on efficient and automated operations. In ancient times, fermentation of food was done with the aim of enhancement of shelf life and palatability without clearly knowing the role of microorganisms. Modern fermentation technology uses various operations and specific strains of microorganisms for conversion of bulky and perishable materials into novel foods with more pleasing flavour, enhanced functional properties and extended shelf life. In addition to basic bread, new varieties of bread developed with improved functionality like sourdough bread, gluten free breads and high fibre breads is an example of innovation in cereal fermented foods indicating modification in ingredients, microbial culture and processing technologies as compare to traditional fermentation process. The word “extrudate” is derived from the Latin word “ex” meaning ‘out’ and “trudere” meaning ‘to thrust’. Extrusion technology is turning out to be very popular in food industry due to its versatility, usefulness and cost efficiency. It is well-organized state-of-art technology and plays important role in various food industrial processes such as cooking, mixing, conveying, shearing and shaping of end products. Extrusion cooking is high temperature short time (HTST) with high pressure process, is especially used for preparation of cereal based snacks, fat replacers, breakfast cereals, infant formula, gluten free foods, starch and protein rich cereals food products. A wider range of ready to eat food products with different texture, size and shape is produced by fast and easy extrusion cooking. In epidemiological studies it is stated that whole grain consumption is more health beneficial than refined grains and the reason behind it is that dietary fibre and phytochemicals located in germ and seed coat are generally removed during milling or polishing. Various technologies are developed by food scientists and technologists to preserves the bioactive compounds during processing and or to supplement processed food products with the bioactive compounds during food preparation to maintain the bioactivity and functionality of final products. Utilisation of whole grain flours, composite flours, supplementation of cereal foods with ingredients from fruits, vegetables, plant extracts and legumes, bio-fortification of crops, implementation of genetic engineering to produce crops rich in bioactive compounds are some technologies which are being used in modern food industry to develop value added cereal food products.

Introduction

The farm to fork approach utilizes agricultural products as raw material for processing by industries to obtained value-added products (Mijinyawa et al., 2007). Processing that transforms animal, vegetable, or marine materials into value-added food products for consumers and forms an integral part of agriculture for storage or size reduction into fine particles. One of the major problems associated with processing is the unavailability of processing facilities including appropriate engineering materials for the transformation of agro-based produce into different forms (Ogwuagwu, 2007). This transformation process mainly includes operations like particle size reduction, milling or comminution, etc. utilizing different size reduction forces without making alterations in chemical properties (Enrique, 2012). This enhances the eating quality or appropriateness of foods for advance processing with a more varied range of available products.

Grains are dried small seeds with adhered or removed husks or outer layers processed for consumption (FAO, 2011). The two major types of commercial grain crops include cereals (such as millet, corn, sorghum, wheat, rye and so on) and legumes (such as beans, groundnuts and soya beans). These grain crops are subjected to a milling operation to break them into smaller pieces or more practically appropriate form. The grinding process involves the application of different mechanical forces to overcome the interior bonding forces bringing change in the state of solid grains to different desirable forms such as flour or meal (Kaul and Egbo, 1985). As a result, the physical state of these grains is modified due to a reduction in size and change of shape (Ryan and Spencer, 2008). Most of the actual milling processing that is used in various industries is based on simple operations. But now various technological progress has been initiated that involves the adoption of computer control for various milling operations to improve efficiency and quality while minimizing labor requirements. Hence, the present text highlights the various technological advancements and evaluation techniques employed in milling operations.
