Food packaging’s essential functions is to protect the food from hazardous compounds, and contaminant. In order to improve the shelf life of food commodity, smart packaging like active and intelligent packaging has been developed which can monitor freshness, display information of quality, and improve food safety. More precisely, smart packaging was defined by Smart Packaging Journal as “the use of features of high added value that enhance the functionality of a product, notably mechanical, electronic and chemical features that improve safety and efficiency”. The major concerns with traditional packaging are not only shelf life of packaged food, but also the inability of packaging material to convey the important information about quality changes to both customer and manufacturer. 

The success of a TTO relies on a systematic approach encircling factors like assessment, valuation, marketing, negotiation, and post-transfer management (fi gure 8). This chapter covers the activities that are essential for the effective functioning of a TTO. 3.1 Technology assessment - A pillar of innovation commercialization
The process of transitioning an innovative technology to commercial reality requires a stringent and formal process known as technology assessment. This early stage is crucial as it determines the viability of an invention by analysing practicability of the invention as well as its uniqueness and the likelihood of it being adopted in the target markets. In the absence of this preliminary examination, the chance of technology’s potential being mismatched to the market can arise.
a) Scientific merit and technical feasibility
A key benchmark in assessing technologies involves the identification of
scientific validity and technical performance. An innovation’s viability depends on the fact that it complies with good scientific practice or the innovative application of a new paradigm that has empirically confirmable validity. It is important to determine whether the invention’s underlying mechanism can be reliably proven through established scientific practice. A working prototype allows for empirical testing in different conditions and serves as proof of practical application. In addition to that, scalability has to be tested critically. It often happens that innovations perform well in a controlled laboratory setting but lose efficiency or cost-effectiveness in the case of mass production. The viability of the implementation on a grand scale becomes a core concern in this phase of the evaluation.

1. Introduction

Food is an essential requirement for survival. We work hard to earn money so that we can feed ourselves. However, at the end of the day, many of us are unsure about the quality of food we consume. The allure of money, along with a general disregard for humanity, has resulted in the addition of adulterants to food ranging from simple stones in rice to the more harmful chemicals in food of daily use. Surprisingly, food fraud is not a modern issue. There are several references to fraudulent food behaviour as early as the Romans, but it is usually considered to be the Victorian who places food fraud on the map.

Abstract

Adulteration refers to a process by which the quality or the nature of the given substance is reduced by the addition of foreign or an inferior substance, removal of vital component, packing and storage under harmful conditions, insect infestation, poisonous material, undesirable chemicals and unintentional contaminants. All these change in food whether intentional or unintentional are covered under food adulteration. In cereal grains adulteration results by incidental contamination during the period of growth, harvesting, processing, transport, and distribution and results in various health hazard, sand, marble chips, earth and filth are also adulterants in grains. Pest and pesticides residues are also hazardous.

Introduction

Fruits and vegetables are an important part of healthy human diet. Consumption of vegetables is widely promoted by Governmental health agencies since it provide consumers essential nutrients such as vitamins, minerals, dietary fiber and phytochemical compounds, at a relatively low calorie density. Furthermore, the consumption of vegetables has been strongly associated with reduced chronic and degenerative diseases such as cancer and heart related ailments. The United States Department of Agriculture recommends five to nine servings of fruits and vegetables daily (Berger et al 2010). In recent years, fresh-cut produce has become more popular due to their convenience, freshness, taste and assumed “Healthiness”.

In recent years dietary supplements have gained attractiveness within fitness and wellness circles. The other commonly used terms areNutraceuticals, dietary supplements or wellness-focussed foods. Being highly nutritious they are associated with a number of potential therapeutic effects. Nutrient-rich ingredients like fruits, vegetables, nuts, seeds, and grains are often considered dietary supplements as well. Oats fibre called, beta glucan, which has been shown to reduce inflammation, enhance immune function, and perk up heart health.

1. Conventional and Non-conventional Dietary Supplements

Nutrient-rich foods like fruits, vegetables, and legumes are often considered dietary supplements. Meanwhile, modified foods have been fortified with micro and macro nutrients to boost health benefits of foods.

Grain legumes face significant biotic stresses fromvarious pests and pathogens, leading to substantial yield losses worldwide. This chapter synthesizes recent advances in molecular approaches and biotechnological tools for developing resistant varieties and managing diseases in legumebased cropping systems. Novel genomic technologies, including CRISPRCas9 gene editing, marker-assisted selection (MAS), and next-generation sequencing (NGS), have revolutionized our understanding of host-pathogen interactions and accelerated the development of resistant cultivars. RNA interference (RNAi) technology has emerged as a promising tool for targeted pest control, while transcriptomics and proteomics approaches have helped identify key resistance genes and defense-related proteins. Integration of these molecular tools with traditional breeding programs has resulted in improved varieties with enhanced resistance to major pests like pod borers and diseases such as fusarium wilt and ascochyta blight. Additionally, biotechnological applications including biopesticides and disease-forecasting systems have strengthened integrated pest management strategies. This review highlights the potential of combining multiple molecular approaches for sustainable pest and disease management in legume cultivation while identifying future research directions and challenges in their widespread adoption.

Food packaging protects products from physical, chemical, biological and environmental influences while helping to maintain safety, freshness and quality. Advanced packaging systems perform functions beyond simple containment by regulating gases, moisture, temperature and microbial activity. The chapter examines modified-atmosphere, controlled-atmosphere and vacuum packaging, together with active and intelligent systems. Time-temperature indicators, freshness indicators and biosensors enable real-time monitoring of product condition. Edible and biodegradable materials provide more sustainable alternatives to conventional packaging, while nanotechnology can improve mechanical, barrier and antimicrobial performance. Shelf-life modelling and hurdle technology are also considered as tools for designing integrated packaging systems suited to specific foods and storage conditions.

Agriculture is the major sector for the livelihood of the billions of people worldwide. Increasing population and decreasing arable lands are the major concern for the fulfillment of the desired food production. After green revolution more production in the crop is obtained by worldwide. Several insects and pests are responsible for the inhibition of desired production in agriculture. Therefore, pesticides play a major role in the control of destructive insects and pests. After ban of organochlorine pesticides, organophosphorus pesticides has been used vigorously. Beside the effective pest management in agriculture, residual organophosphorus pesticides are more lethal for human and other living creature. Monitoring of these compounds is very much essential in the food and agricultural samples. Chromatographic techniques are well adopted techniques for the hundreds of residual pesticides. Introduction of various analyzers in chromatographic techniques improve the monitoring of the residual pesticides from different samples. Therefore, recent advancement in residual pesticides isolation and chromatographic techniques has been discussed in this book chapter.

Drying of the Spices

Drying is an important mode of preservation and it ensures microbial safety of the spices.The main purpose of drying is to increase the shelf storage and make the seasonal spices available round the year with minute losses of nutrients, flavor, taste and color (Maroulis, 2003). During drying, there is a continuous transfer of heat and mass due to the heat application which eventually leads to moisture removal from the product (Akpinar, 2006) (Hashim, 2014). Since, the sensory, nutritional and functional attributes of spices are partially or totally affected by the drying process, the adequate choice of drying technique becomes requisite. There exists a number of conventional drying methods including solar drying (El-sebaii, 2012), freeze drying (Ciurzy nska 2011), vacuum drying (Nadi, 2012), osmotic dehydration,hot air drying and fluidized bed drying (Onwude, 2016). However, these drying techniques lead to poor quality of the spices because of the longer duration of treatment and high amount of energy. To combat with the issues of poor quality, there has been a significant development of the novel techniques, which includes- microwave, ohmic, infrared, pulse electric field, radio- frequency, ultraviolet, ultrasound, supercritical and heat pump heating, in the drying of the agricultural crops. These novel techniques are found to produce higher quality products as compared to the conventional drying techniques (Moses J. N., 2014). The microwave and radio frequency heating technologies are developed in such a manner that they are capable of partial or complete removal of the conventional methods of heating/ drying (Onwude, 2016). The use of these novel techniques has gained a keen attention for the drying purpose of spices. Some of the researchers have also proved that combination of conventional and novel drying techniques leads to better product output.

Abstract

It is well known that drying is an important unit operation in food processing industries, essentially used to extend the shelf life but also in making innovative processed products such as snacks with desired functionalities. Although drying of food products is carried out traditionally using several methods, the quality and energy aspects have been major focus of food drying research in the last decade or two. This is achieved by modifying and/or optimizing the existing drying systems, improving pre and post processing of the product, combination of more than one dryer type or developing altogether a new drying technique. There several dryer types which can give extremely good product quality, however, cost-effectiveness can be a major issue. It is necessary to balance both good product quality and minimum energy usage in order to sustain highly competitive market. This lecture will provide an overview of conventional drying methods used for foods, followed by some advances in these conventional methods and a discussion on some new drying techniques developed in recent years that are either commercialized or have potential of industrial use.

Abstract

Seed technology deals with the various aspects of seed- right from production to make it readily and timely available to the end users. The advancement in seedtechnology was realizedlong back and itwas considered equally important to the development of new technology (varieties). Considering the importance of seed as well as variability among seed of different crop species or even in same crop species, the researchers initiated work and focused their direction of research accordingly which resultedinto worthy achievements. Brief overviews of the advancements made in seed technology are being discussed in this chapter. However, efforts are still on to get rid of problems of seed technology in order to strengthen the seed industry, which makes the highest contribution to rural development, probably among all industries.

1. Introduction:- Understanding Good Laboratory Practices (GLP)
1.1 Definition and Core Principles of GLP
The Organisation for Economic Co-operation and Development (OECD) defines Good Laboratory Practice as “a managerial quality control system that governs the organizational process and the conditions under which non-clinical health and thus, environmental safety studies are well planned, executed/ performed, vigilantly monitored, properly recorded, reported, and finally archived”. This definition highlights that Good Laboratory Practices (GLP) is a comprehensive framework focused on ensuring the quality and integrity of the entire study lifecycle, rather than dictating the scientific validity of the research itself. The primary goal of GLP is to ensure process integrity and data traceability, which are essential for the regulatory acceptance of safety data for a variety of products. These products include pharmaceuticals, pesticides, cosmetics, veterinary drugs, food additives, feed additives, and industrial chemicals, all of which undergo non-clinical testing to assess their potential health and environmental risks. It is important to note that GLP principles specifically apply to these non-clinical studies and exclude research involving human subjects. The OECD Principles of GLP are internationally recognized and serve as the basis for GLP regulations in numerous countries worldwide. These principles outline the responsibilities of key personnel involved in non-clinical studies, including test facility management, the study director, study personnel, and quality assurance personnel. Furthermore, they establish minimum standards concerning the suitability of facilities and equipment to perform studies, as well as the necessity for comprehensive Standard Operating Procedures (SOPs) to guide all aspects of laboratory operations. The core principles of GLP encompass a wide range of elements critical to ensuring the quality and integrity of laboratory studies. Indian is rich biodiversity and availability of a variety plants of enhances the interest of scientist for the possible use of plant products as natural herbicides. The emphasis should be to collect the information about such plants from the concerned people who have traditional knowledge about the use of these herbs and then to study scientifically to arrive at conclusions. The study of compounds produced by a plant which inhibit or stimulate the germination and the development of other plants is important for understanding the mechanisms of the ecologicalinteraction. Therefore, there is continuing need to develop and release new phytotoxic chemicals that preserve the environment and enable a more efficient control of weeds, improving crop yield and quality. Ageratum conyzoides a herb traditionally used for treatment of many diseases, releases some potential allelochemicals and other chemicals to the environment which inhibit the germination and growth of neighboring plants. A complete study of its potential allelochemicals may be useful in biological control for sustainable agriculture.

Agriculture is an important sector of Indian economy and it contributes about 17.4% to the country’s Gross Value Added (GVA) for the year 2016-17 provides employment to over 54.6 % of the population. There has been a continuous decline in the share of agriculture and allied sector in GVA from 18.6% in 2013 14 to 17.4% in 2016-17. Falling share of agriculture and allied sector in GVA is an expected outcome in a fast growing and structurally changing economy. However since 54.6% of the population is still dependent on agriculture and engaged in improving the agricultural production and overall income. The agricultural production system required timely and adequate agriculture credit to fulfill farmers need. Agricultural Finance ensures provision of multiple types of services dedicated to support both on- and off-farm agricultural activities and businesses including input provision, production, and distribution, wholesale, processing and marketing.

Introduction

Agriculture sector is currently at the crossroads, which is evident in terms of higher nutritive food requirements juxtaposed with growing population. Food production faces multiple challenges due to frequent occurrence of natural calamities, sudden rise in temperature, increase in occurrence of disease and pests leading to both pre and postharvest crop loss. Alarming decrease in fertility status of high and medium land soils of Odisha due to formation of hard clay pan below 4-6” of soil depth has resulted in slowing down of nutrient mineralization by the soil microorganisms within the soil. Crop production stress is further aggravated due to steady decrease in availability of cultivable land with the advent of urbanization, which concurrently reduced the number of dedicated agricultural households. It has been estimated that production of all food grains and horticultural crops needs to be doubled at farmer’s level in order to feed the growing population of the world failing which there will be food crisis by2050.

Abstract

India ranks in the world’s five largest producers of over 80% of agricultural produce items. Processing of agricultural produce generates substantial amount of crop residues which can have tremendous value to farmers. However, a large portion of the residues is burned on farm primarily to clear the field from straw and stubble; which affects the environment, soil health and crop yield.The conversion of crop residues to eco-friendly and valuable product like biochar is need of the hour. Biochar is an organic amendment which slowly releases C in the soil, and is stable over the years. Various applications of biochar like reduction in greenhouse gases emission, sequestering C in the soil, increasing crop yield, used as combusting fuel and livestock feedmakes it a promising candidate for sustainable agriculture and environment.

Alcoholic Beverages

These are the beverages which are prepared after alcoholic fermentation of sugars by yeast, contain varying amounts of ethyl alcohol (5-42%), and are consumed directly or after dilution in water.

Wine : Product made by alcoholic fermentation of grapes or grape juice unless otherwise specified, by yeast (Saccharomyces cerevisiae and a subsequent ageing process. Alcohol content is 11-14 %, but may be as low as 7%.

Abstract

Health benefits of aloe vera include its application in wound healing, treating burns, protection against skin damage, lung cancer, intestinal problems, increasing high density lipoprotein (HDL), reducing low density lipoprotein (LDL), reducing blood sugar in diabetics, fighting acquired immune deficiency syndrome (AIDS), allergies and improving immune system. Phytochemistry of aloe vera gel has revealed the presence of more than 200 bioactive compounds. Aloe vera gel is extracted from its leaves and appropriate processing techniques are needed for stabilization and preparation of the food products. Aloe vera gel products have become available in our country for internal consumption as a tonic and diversification in its products is on progress. The use of aloe vera has gained popularity because of herbal movement initiated by naturopaths, yog gurus, alternative medicine promoters and holistic healers. A recent market analysis report indicates that Americans have spent almost 40 billion dollars on functional foods, drinks and supplements for the improvement of their appearance as well as to provide energy and added nutrition to handle health issues such as hypercholesterolemia and diabetes.

Abattoir : An establishment where animals are butchered is known as abattoir. It is also known as slaughterhouse. 
Abiotic : Abiotic means any factor which is not biological / abiological and especially there is no involvement of the organisms in synthesis of certain compounds.

Abnormal milk: It is milk that is not smooth and homogenous but is flaky, ropy, stringy, slimy, watery, discoloured or bad flavoured.
 
Abrassive peeler: It is equipment comprising a rotating drum lined with carborandum (an abrasive material) in which certain vegetables like potato and ginger are tumbled and exposed to the abrasive action of the carborandum lining, thereby facilitating separation of peel from the vegetables (Plate 1).

Absinthe: It is green liquor which is flavored with wormwood, anise, and other aromatic herbs. Its commercial production is banned in many countries for health concerns.

B cell : It is one of the lymphocytes that have antigen-binding antibody molecules on the surface, that comprise the antibody-secreting plasma cells when mature, and that in mammals differentiate in the bone marrow. It is also called B lymphocyte.

B.T.U. : It stands for British thermal unit. The heat required to raise the temperature of one pond of the water through 1oF is called BTU.

Nanotechnology is an anticipated manufacturing technology that allows through and inexpensive control of the structure of matter by working with atom. It will allow many things to be manufactured at low cost and with no pollution. The concept of nanotechnology was first given by Nobel Laureate physicist Richard P. Feynman in Southern California in 1959. Nanotechnology is sometimes termed as Molecular Manufacturing based nanotechnology “MNT”.

Obesity : A condition characterized by the excessive accumulation and storage of fat in the body. It is a physiological disorder having high body mass index (BMI), which can be expressed as a mathematical formula in which a person’s body weight in kilogram is divided by the square of his or her height in meters.

Q fever : Q fever is caused by a rickettsia like organism (RLO), a parasitic organism falling between bacteria and viruses. It is a disease that is characterized by high fever, chills, muscular pains, headache, and sometimes pneumonia, that is caused by a rickettsia (Coxiella burnetii) of which domestic animals serve as reservoirs, and that is transmitted to humans especially by inhalation of infective airborne bacteria as in contaminated dust.
