India produces 146 million tons of vegetables (NHB report, 2011) and the total area under vegetable cultivation is around 8.5 million ha. Potato, tomato, onion, cabbage and brinjal account for around 60 per cent of the total vegetable production in terms of quantity. India’s annual fruit production is 75 million tons (NHB report, 2011) and the total area under fruit cultivation is around 6.3 million ha. The major Indian fruits are mango, banana, citrus fruits, apple, guava, papaya, pineapple, and grapes. Fresh fruits and vegetables play a vital role in Indian context and their marketing works as an influencing force in the economy. Though retailing of fresh fruit and vegetables is a low margin business, the market potential is very large in a country like India. This factor has attracted many corporates into this sector. Marketing of agricultural produce is different and more challenging than many industrial products because of the perishability, seasonality, and bulkiness. The very nature of small size of land holdings by the farmers, varied climatic conditions, production spread over wide geographical area, mainly in remote villages, diversified consumption patterns/habits of the Indian consumers and poor Supply Chain (SC) infrastructure makes marketing for fruits and vegetables more complicated. At the same time, Indian consumers demand fresh fruits and vegetables. Thus, Management plays a crucial role in marketing fruits and vegetables. Supply Chain efficiency not only helps in increased production and per capita consumption, but also contributes to economic development of the country. As a result, Supply Chain Management (SCM) throws both challenges and opportunities in marketing of fruits and vegetables. Efficient SCM in marketing, not only increases the profitability and efficiency of retailers, but also adds value to different stakeholders like cultivators (farmers), consolidators and consumers. Traditional Retail Model of fruit and vegetables is predominantly followed in unorganized retail sector. Players involved in this model are commission agents, auctioneers, wholesalers, traditional retailer of all type of formats family run ‘mom and pop’ stores, roadside shops, pavement shops and cart vendors apart from farmers and customers.

Population growth and rising demand for processed food have increased pressure on food industries to improve safety while reducing energy, water, waste and environmental impacts. Green preservation technologies seek to deliver effective processing through cleaner operations, responsible resource use and reduced dependence on toxic substances. These approaches support sustainable industrial development by lowering processing time, conserving nutrients and improving the utilisation of raw materials. The chapter discusses energy-efficient preservation, water-saving techniques, waste valorisation and the conversion of by-products into useful materials. Life-cycle assessment is introduced as a method for evaluating environmental performance across the preservation system and identifying opportunities to reduce emissions, resource consumption and food-chain waste.

Abstract

Airflow drying persists as the main dehydration operation. Indeed, the high expense of freeze-drying in term of equipment cost and energy consumption considerably restricts its use and confines its applications to high added value products (pharmaceutical products, cosmetics, etc.). However, airflow drying undergoes fundamental problems such as low operation performance, poor product quality and short reliability of the equipment. The time of drying is long; particularly at the end of the operation, which implies crucial energy consumption. The poor quality of the end product is related to thermal degradation and in particular to the compactness of texture as a result of the phenomena of shrinkage and case hardening. Another main problem common to all drying operations, including freeze-drying, is the safety of the end products. Swell-drying is defined as an operation that combines optimized hot air drying with instant controlled pressure controlled texturing. The improvement of texture, the preservation of sensory and nutritional quality, the possibility of manufacturing expanded granule powders and the reduction of drying time and energy consumption allow considering swell-drying as the most relevant drying process.

Table cream: It is also called coffee cream, single cream or homogenized cream. It is used in coffee and tests about 20% butter fat.

Table oil expeller: It is a type of the machine that is used for extraction of the oil from the oil seeds (Plate 588).

Table ready meat: Cooked and smoked sausages are called table ready meat.

Tropical fruit tree are important crops which supplement and improve the quality of diet. Many of the species have multi-purpose uses in that they produce non food products such as fuel, timber, fodder, medicines and industrial products for small holders. Harvesting from these trees enable rural people to provide nutrition for a balanced diet and generate income thus alleviate poverty. Tamarind (Tamarindus indica L) can be found throughout much of the tropics, it is grown unattended in backyards, roadsides or waste lands. Tamarind is ideally suited for avenue plantings as a roadsides tree, in and around villages as a multipurpose species for agro-forestry system or as protective firebreaks for forest margins. It is a valuable timber species widely used for making furniture, tool handles, charcoal, oil mills, rice pounders and fuel wood. The leaves are an important source of food and herbal medicine and the edible pulp of ripe fruits is used as a flavouring agent in cooking, soups, jams, chutneys, sauces, pickles etc. The fruit pulp of tamarind forms the “Tamarind of Commerce”. The name tamarind is derived from the Arabic word ‘Tamar-u’l-Hind’ because the dark brown pulp of the fruit was thought to resemble dried dates. It was therefore called the Tamere-hindi or ‘date of India. The production of Tamarind in India was estimated 201000 tonees for year 2017-18 (Horticulture statistics, 2018), India is the world’s largest producer of tamarind products. It is particularly abundant in the India states of Madhya Pradesh, Bihar, Andhra Pradesh, Karnataka, Tamil Nadu and West Bengal. The production in India is mainly concentrated in the drier southern states and the produce is collected by the villagers and sold in the market. In India, the average production of tamarind pods per tree is 175 kg and processed pulp is 70 kg/tree (Kulkarni et al., 1993).

Food Business Regulatory System in India

In India Food Businesses are regulated by only One authority i.e. Food Safety and Standards Authority of India (FSSAI). This comes under the control of Ministry of Health and Family Welfare of the Govt. of India.

FSSAI – Food Safety and Standards Authority of India

The FSSAI or Food Safety and Standards Authority of India was incorporated under the Food Safety and Standards Act (FSSA) of 2006. It consolidated various acts & orders that were previously applicable and used to handle food related issues in different Ministries and Departments. The basic objective of formulating FSSAI has been to lay down science-based standards for items of food and to regulate their manufacture, storage, sale, distribution, and import to ensure the availability of adulteration-free and wholesome food for human consumption.

One of the important aspects of dry flowers is the pleasure of gathering flowers and grasses to make wonderful dried arrangements. The only drawback is that the original colors fade and the floral arrangements can end up looking like a bunch of straw. To enhance the colors of dried flowers, dyeing is advocated. While coloring ferns or small leaves, it is better to work on an aluminum foil or waxed paper so it can collect extra paint, which can be used on another leaf. Leaves should be lightly brushed, and never saturated with paint. The painted specimens are placed on the waxed paper or on a computer paper to dry. Newsprint should not be used.

India is the largest producer of pulses and contributes around 25% of total global pulse production. In addition, it is also world’s biggest consumer (27% of world consumption) and importer (14%) of pulses in the world. Pulses account for around 20 per cent of the area under food grains and contribute around 7-10 per cent of the total food grains production in India. Though, pulses are grown in both Kharif and Rabi seasons, Rabi pulses contribute more than 60 per cent of the total production. Gram is the most dominant pulse having a share of around 40 per cent in the total production followed by tur/arhar at 15 to 20 per cent and urad and moong at around 8-10 per cent each. Madhya Pradesh, Maharashtra, Rajasthan, Uttar Pradesh and Karnataka are the top five pulses producing states in India. Considering the nutritional importance of pulses and its products in Indian diet, the production and availability are not sufficient. Since independence, grain production has grown dramatically but pulses production and its availability have declined. On the other hand, the per capita availability of cereal and millets has increased in spite of a four-fold increase in population. The consumption ratio of cereal-to-pulse has risen from 6:1 to 12:1.

Pulse processing is the major need of developing nations as it is the most acceptable and cheap source of protein and hence can help combating Protein Energy Malnutrition (PEM). In addition, the identification and recognition of various newer and improved processing methods can provide the basis for further development of legume processing industry. Traditionally, home cooking is applied for consumption of pulses since ages. Modernization has no doubt created a lot of ease and developed various techniques to make different edible forms of legumes/pulses. Many advancements have been happened in traditional processing methods (milling, fermentation, roasting, boiling, steaming etc). and resulted into new products. Improved techniques for efficient milling of legumes into dhal (dehusked splits) are an important area of investigation. A systematic method that eliminates wastes and losses has great significance in the Indian dietary pattern. New systems for processing legumes come under several main categories, namely, improved decortications and milling techniques; quick-cooking pulses; canned pulses; pulse flakes, expanded snack foods etc. Such new and innovative processing technologies presented in this chapter can be applied and used in developing nations. Present chapter will discuss both traditional and non-traditional means of pulse processing.

Nano-technology refers to technology on a nano- meter scale, specifically less than 100 nano-meters. The novel nano-particles are tiny spheres (fullerenes) or tubes (nanotubes) made from carbon atoms. It facilitates the development of future inventions transversely a vast array of fields. New nano-particles are being made of silicon, ceramic, polymers or even natural ingredients that break down in the body. The characteristics that make these particles functional in the food industry include optical properties, reactivity to temperature, and biodegradability. They can be used as probes or filled with flavorings or nutrients for delivery. Highlights on the categorisation of agriculture with nano- food technology and nutrition are given in Fig 1.

There are three key elements in nano-technology. They are: (1) substances at nano-scale exhibit novel physical and chemical phenomena with novel functions (2) allowing to measure, control and operate material at the nano-scale that transform them to functions. (3) allowing the union of nano scales of materials for exceptional properties.

Introduction

The farm to fork approach utilizes agricultural products as raw material for processing by industries to obtained value-added products (Mijinyawa et al., 2007). Processing that transforms animal, vegetable, or marine materials into value-added food products for consumers and forms an integral part of agriculture for storage or size reduction into fine particles. One of the major problems associated with processing is the unavailability of processing facilities including appropriate engineering materials for the transformation of agro-based produce into different forms (Ogwuagwu, 2007). This transformation process mainly includes operations like particle size reduction, milling or comminution, etc. utilizing different size reduction forces without making alterations in chemical properties (Enrique, 2012). This enhances the eating quality or appropriateness of foods for advance processing with a more varied range of available products.

Grains are dried small seeds with adhered or removed husks or outer layers processed for consumption (FAO, 2011). The two major types of commercial grain crops include cereals (such as millet, corn, sorghum, wheat, rye and so on) and legumes (such as beans, groundnuts and soya beans). These grain crops are subjected to a milling operation to break them into smaller pieces or more practically appropriate form. The grinding process involves the application of different mechanical forces to overcome the interior bonding forces bringing change in the state of solid grains to different desirable forms such as flour or meal (Kaul and Egbo, 1985). As a result, the physical state of these grains is modified due to a reduction in size and change of shape (Ryan and Spencer, 2008). Most of the actual milling processing that is used in various industries is based on simple operations. But now various technological progress has been initiated that involves the adoption of computer control for various milling operations to improve efficiency and quality while minimizing labor requirements. Hence, the present text highlights the various technological advancements and evaluation techniques employed in milling operations.

1. INTRODUCTION

Stone fruits belonging to family Rosaceae (sub family-Prunoideae) include several important fruit crops like peach, plum, apricot, cherries, nectarines etc. The World production of these stone fruits is approximately 45.49 million tones; out of which 39.61 million tones stone fruits are grown in Asia and India contributes 6.67 million tones of stone fruits annually. Among all the stone fruits Peach, Plum and Apricot production in world is 24.98, 12.05 and 4.11 million tones, respectively whereas India alone produces 287778, 261903 and 17862 metric tones of peach, plum and apricot, respectively (Table 1). These stone fruits are grown extensively in USA, Spain, France, Italy, Turkey, Morocco, Iran, Africa and Australia. In India, these are grown in J&K, Himachal Pradesh sub-mountainous tracts of Punjab, Uttarakhand, North East States and to the limited extent in the Nilgiris hills. Primarily, these stone fruits are used for table purposes or processed to prepare various types of value added products like jam, jelly, marmalades, preserves, baby foods, nectar, juices, squashes, concentrates, ready-to-serve beverages, wines and also processed into dried products.

1. INTRODUCTION

Vegetables occupy a prominent position in our diet especially to tone up our digestive system and provide nourishment. Regular use of vegetables, supply many essential health building and protective substances, such as vitamins and minerals. India ranks second in vegetable production in the world. The abundant production of vegetables during the season, results in a glut. Consequently, a large quantity of vegetables gets spoiled resulting in a considerable loss of natural resources. Therefore, preservation is the best way to save the wastage of vegetables and make them available even in the off-season (Plate 1).

5.1 Technology readiness levels- Introduction
Technology readiness levels (TRLs) is measurement of the maturity level of a particular technology. These are based on a scale from 1 to 9, with 9 being the most mature technology. It is a map that shows whether a given technology is in a conceptual state or can be used in real-world applications and ensures innovations are thoroughly tested before being applied on a large scale. The TRL scale uses a set of questions designed to measure progress of a technology toward maturity. They help in reducing risks and improving efficiency. TRLs were initially designed in the 1970s for use by NASA to assess how prepared a technology was for space missions. Technology for space travel is always extremely sophisticated and with a high degree of risk. NASA required a system to assess systematically whether or not a new technology was ready to implement. By breaking down development into different levels, NASA was able to provide informed decisions on which innovations were ready to incorporate (figure 12). In due course, TRL proved to be so effective that other industries began to use it. Other entities like the European Space Agency (ESA), U.S. Department of Defense (DoD), BIRAC, DRDO and many other agencies have taken , to using TRL to guide R&D strategies. TRL helps in simplifying development, decreasing risks, and maximizing resource utilization.

1. INTRODUCTION

Indians are known to prepare preserves from the ancient times. They were also familiar with ther therapeutic values associated with the preserves. Besides, candies, reathers and toffees are the other food products prepared and consumed. In this chapter, the methods of their preparation are described.

2. PRESERVES

A preserve is made from properly mature fruit, by cooking it whole or in the form of large pieces in heavy sugar syrup, till it becomes tender and transparent. In its preparation not less than 45Kg of the fruit are used for every 55Kg of sugar, and cooking is continued till a concentration of at least 68 per cent of TSS (Total Soluble Solids) is reached.

Freshly made preserves are wholesome and have an attractive appearance. When they are stored for a long period, their natural colour and flavour deteriorates on account of oxidative changes. They should therefore, be made only during the season, unless there should be adequate facilities to keep the fruits so that they are available in the off-season also.

Introduction
Some species of rod shaped bacteria e.g. E.coli, Ps. fluorescence, Bacillus subtilis are known to be motile. Bacterial motility is generally associated with the presence of hair-like appendages called “Flagella”. There are several ways for determining the motility of a culture such as the wet mount method, hanging drop method and a culture method (on semisolid medium). Bacterial cells in suspension also exhibit a vibratory or oscillatory movement without changing their relative position. This is termed ’Brownian Movement’ and it should not be confused for true motility of bacteria. In motility the cells change their relative position and move across the microscopic field in different directions.
1. The Wet Mount Technique
This is the simplest and quickest way to determine the motility of bacteria.

1. Place a drop of organisms on clean glass slide and cover with a cover glass.
2. Examine the slide with phase contrast microscope or bright field microscope with reduced light under oil-immersion.

With increasing industrialization, water sources available for consumption as potable water are being adulterated with industrial, animal and human wastes. As a result water has become a formidable factor in disease transmission. Polluted water usually contains large amount of organic matter which forms nutritional base for growth and multiplication of microorganisms. Usually the water with non-pathogenic organisms, like autotrophs and saprophytic heterotrophs, are not of major concern, but presence of intestinal contaminants of fecal origin are of great concern. These pathogens are responsible for intestinal infection such as bacillary dysentery, typhoid fever, cholera and paratyphoid fever.

The detection of all the intestinal pathogens on a routine basis would be a tedious and difficult task, however, it would be easy to demonstrate the presence of some of the nonpathogenic intestinal organisms like Escherichia coli and Streptococcus faecalis. These are always found in intestine but their detection confirms the contamination of water with fecal material. Such organisms are also called pollution indicator.

    1.    In the UK, the date coding to be used is determined by the total life of the product: for microbiologically highly perishable foods, a ‘use by’ date is needed, while for other foods, including foods with more than 18 months’ shelf-life, a ‘best before’ or a ‘best before end’ date is needed.

In this chapter, we explore the science of permeability in food packaging, breaking down its core principles, the behavior of different gases and vapors in various packaging materials, and the factors influencing permeability. Additionally, we examine how permeability impacts shelf life and consumer satisfaction, offering insights into selecting materials for specific food types. By understanding and manipulating permeability, food manufacturers can develop packaging that optimally balances protection and breathability, extending product shelf life and ensuring quality

Introduction

Therapeutic foods are products, which are multiutility food products that may be used as nutrition as well as medicine. A nutraceutical may be defined as a substance, which has physiological benefit or provides protection against chronic disease. Nutraceuticals are used to improve health, delay the aging process, prevent chronic diseases, increase life expectancy, or support the structure and/or function of the body. Oflate nutraceuticals are receiving considerable interest due to potential nutritional, safety and therapeutic effects. The examples of therapeutic foods are the foods used for feeding of malnourished children on an emergency basis or to supplement the diets of persons with special nutrition requirements, such as the elderly. Therapeutic foods can also form a part of treatment/prevention/reduction of other health conditions such as diabetes, cardiovascular disease, obesity, anaemia and any other lifestyle disorders.

The incidences of diet-related diseases are progressively increasing due to greater availability of calorie-rich foods and a sedentary lifestyle. Obesity, diabetes, atherosclerosis, and neurodegeneration are major diet-related diseases. Nutraceuticals and functional foods represent a novel therapeutic approach to prevent or attenuate diet-related diseases.

There is always a requirement for cheaper formulations using locally available ingredients that are processed in a safe, reliable, and financially sustainable methods. Some of the literature available on health foods for various diseases is summarized below. However, since the burden of diabetes in India is staggering. In 2017, 72 million cases of people suffering from diabetes were reported and the figures are expected to reach 134 million by 2025, this chapter more emphasis is given on the safe, natural treatment/reduction of diabetes by herbal means.

Abstract

Application of solar energy for drying of agricultural food products is one of the most attractive and cost-effective drying techniques. However, the intermittent nature of the solar energy is one of the major shortcomings of the solar drying system that can be alleviated by storing excess energy during the peak time and using it in off sun hours or when the direct availability of solar energy is inadequate. The use of sensible and latent heat storage systems in solar dryer is an effective way of storing thermal energy for drying purpose. This chapter will present information on different thermal energy storage (TES) materials, their advantages and disadvantages. The information available in the literature regarding the studies conducted on TES assisted solar drying systems is also covered in this chapter. In addition, some of the models that have been used by different researchers to test the performance of different TES materials are also reviewed.

Thermal preservation is among the most established methods for improving the safety and storage life of food. It uses controlled heating to destroy spoilage organisms and pathogens and to inactivate undesirable enzymes. Processing intensity varies according to the target microorganisms, food composition, packaging and required shelf life. Pasteurisation reduces pathogenic and spoilage microorganisms without achieving complete sterility, while sterilisation destroys more heat-resistant organisms and spores to produce commercially stable foods. Ultra-high-temperature processing combines very high temperatures with extremely short treatment periods. This chapter also discusses retort processing, thermal-death kinetics and microbial-inactivation models used to design safe processes while minimising nutritional and sensory damage.

INTRODUCTION

By the turn of the century, consumers have been more demanding, sophisticated and discretionary. They want much safer, higher quality, and more convenient to foods. The food processor need to get the best from their existing processing technology in addition to looking for newer ones. New and alternative food processing methods and/or novel combinations of existing methods are continually being investigated by the industry in pursuit of producing better quality foods more economically. Thermal processing is one of the most important food preservation techniques that was first introduced at the beginning of 1800 and has evolved itself in to one of the most scientific mature food processing techniques of recent times. Both science and technology have gone through tremendous transformation in the last two centuries and today it is the most reliable method to assure food safety and stability. Developments in thermal processing and evolution of non-thermal processing technologies like high pressure processing, pulsed electric field, pulsed light etc. have enhanced the utility of thermal processing principles and increased the awareness of possible alternative processing technologies.

1. INTRODUCTION

Thermal processing means preservation by application of heat. It involves heating of foods in hermetically sealed containers for a specific time at a specific temperature to eliminate the microbial pathogens that endanger public health and that micro-organisms that deteriorate food during storage. The credit for invention of thermal processing (Canning) goes to a French Confectioner, Nichola Appert. The application of heat is an important method of preserving foods and is also a means of developing texture, flavour and colour in some foods.

4.1 Introduction

The food preservation may be define as the state in which the food may retained over a period of time without being contaminated by pathogenic organism or chemicals and without losing its colour, texture, flavour and nutritional value. All the methods of food preservation must provide such an environment in and around the preserved food so that it produces one or more unfavourable conditions to the continued activity of the spoilage agents. Introduction The ever increasing demand for functional foods having numerous health benefits has been an active research ground for the food scientists around the globe. Till date, many food products have been formulated to deliver functionalities by value addition with bioactive compounds (Carvalho Barros et al., 2020). These products have been extensively studied and proved to be beneficial, especially for elder age group against various metabolic syndrome and health complications. Functional foods are edible products fortified with compounds having additional health and safety benefits such as vitamins, minerals, and bioactive compounds (Granato et al., 2020). One such example of a nutritionally dense food product with the potential of fortification to meet certain health benefits is fruit leather.

Most of the fruit, vegetables, and their products contain acid or a mixture of acids. These acids are mainly responsible for the tartness or sour taste. The level of acidity is estimated to measure the degree of tartness/sourness in the product.
Principle
Acidity in the sample is measured by titrating a known volume of sample against a standard alkali solution of known concentration using phenolphthalein as an indicator. The appearance of a light pink color indicates the endpoint of titration. However, for highly colored products like tomato sauce/ketchup, jamun juice, Rhododendron juice, mixed fruit jam, etc., accurate determination of endpoint may be difficult by using an indicator. Therefore, for such samples, acidity is measured by using electrometric methods i.e. titration to a predetermined pH value, or the sample is further diluted with distilled water to mask the interfering color. The level of titratable acidity is expressed in terms of the predominant acid. Different fruits, vegetables, and their products have different predominant acids. This test also helps to determine the extent the material stretches before breaking known as elongation at break. Percentage elongation is defined as the amount of linear deformation of the sample before breakage. It is measured as strain value at the break point.

Yield Point: It is the point at which an increase in strain occurs on stress-strain curve without the increase in stress. (point C)

Yield Strength: The stress at which a specified limiting deviation from the proportionality of stress-strain curve is observed for a material is known as Yeild strength.

Introduction

Bursting strength is defined as the measure of resistance to rupture in various materials. A test specimen is held between two circular clamps and subjected to an increasing pressure from a rubber diaphragm. The rubber diaphragm keeps on expanding with the help of a controlled pneumatic pressure until the test specimen ruptures. The pressure required to rupture the specimen at the time of reading is known as bursting strength.

Principle

The bursting strength of paper, paper board, including linerboard and corrugated board, is a combined measure of properties of the sheet, like tensile strength and elongation. In general, bursting strength is dependent on the type, proportion, preparation and amount of fibres present in the sheet and their formation, internal sizing, and to some degree, the surface treatment. Since bursting strength is an empirical property, this test serves to define “standard grades” in commercial activity in combination with basis weight.

This procedure offers a means of comparing printed materials' resistance to scuffs in a lab setting. The relative scuff resistance of printed inks, coatings, laminates, and substrates can also be assessed using this technique. This procedure can be changed to assess how a product—food, drink, powdered detergent, etc.—affects scuff resistance, which might happen when something spills or leaks while being transported. Labels, folding cartons, corrugated boxes, circulars, inserts, and other packaging materials with applied graphics on a flat substrate can all use this technique.

Introduction

Sink float is the simplest and cheapest method among all the wet sorting techniques in which polymers are separated based on their density. This technique is extremely fast, environment friendly and cost effective process for sorting of plastics. Since, the separations are done based on density, so any factor which may change the density of the pure polymer like blending, composite formation of multilayer structures etc. will not be separated well using this method. Moreover, if any two polymers are very close in density, they cannot be separated easily. That is why PVC and PET which are very close in their density can not be separated using sink floatation method.

Initially the plastic waste is added to the container containing water and the system is gently stirred to evenly wet the surface of plastic and remove any air trapped on the surface. Since the density of polyolefins is near/close to each other but lighter than water, they all float in water whereas the heavier plastics sink. This technique is primarily used to separate polyolefins from other plastics. Now to further segregate the polyolefinic fraction, this method is extended by adding the polyolefin mixture to another container containing water and alcohol. As dropwise more and more alcohol are added to the water, the density of the medium will decrease and the polyolefins start separating. For separating the heavier fraction of the polymer, the mixture of polymers is added to water. To this water, dropwise salt water is added and stirred. Salt water increases the density of the medium slowly and at one point, the polymers which were sinking in water, will start floating depending on their density.

The GSM of paper may be defined as the thickness of a paper that is measured in a roundabout way. GSM stands for Gms per Square Metre - and is used to check the quality of the paper to be measured.

It is a very simple to perform test but tells a lot about the basic properties of the material which are very important to decide the quality of the material. Also, the quality of the material is measured with its GSM value. The heavier a paperboard is, the better the quality.

Principle

Packaging materials are chosen by estimating the GSM of the sample material. High Grammage defines the strength of the paper. In certain applications high Grammage is desired, where the paper will be subjected to load and harsh working conditions.

Introduction

Dart impact test is performed on plastic films and laminates to determine the effect of free falling dart on plastic films. The energy created by the falling dart causes the film to fail under some specified conditions. The test is widely performed by the manufacturers in plastic industries and paper & packaging industries to assess the durability and strength of the plastic films and other related products.

Dart impact strength is dependent on film thickness as the test is sensitive to orientation of the chains in the film. The tackiness of the film (slip additives) and the condition of the dart surface also influence the values determined by this test. As dart impact is not tested in any specific film direction, it is sensitive to chain orientation in both directions. Best impact strength are usually obtained when the orientation is balanced in the Machine Direction and Cross Direction.

In most of such applications plastics films are used as the first preference of the manufacturers. In applications like, protective LCD screens and other scratch-prone surfaces very low peel force films are used. The force required to remove the protective films or the label is very important for both the consumer and the manufacturer. For example, for protective film application, the film must be easy to remove, yet the bond must be strong enough to remain intact for product security. Whereas, in a typical adhesive application, like laminated cups, the bond between the surfaces should be strong enough to withstand various environmental impact.

The speed at which a tear resistance test is conducted can affect the test significantly. Tear transmission resistance is common for acceptance testing with materials such as paper and rubber. Tear resistance in textiles involves the load required to spread a single "rip-tongue" type of tear or the type of tear where the material is initially cut.

Thermal shock occurs when different parts of an object expand at different rates due to a thermal gradient. This differential expansion creates stress or strain within the material. Thermal shock is quantified by the temperature difference between the heated temperature T1 and the cold water bath temperature T2 to which the object is subsequently exposed, which can reveal any cracks or damage.

Since the validity of any later test result depends on the quality of the sampling and the information given with the sample, the sampler is essential to the process of selecting lots for testing and/or grading.

Every PM in the population being sampled has an equal chance of being selected, according to the random sampling principle. Usually, the sample size that is tested is very small in relation to the size of the lot that it represents. The sample must be taken carefully and in a way that gives assurance that it is genuinely representative of the lot. Similarly, in order to reduce the composite sample, all necessary.

Introduction

Vacuum packaging is a food preservation technique that removes air from the package before sealing. This method involves manually or automatically placing items in a plastic film package, extracting the air, and sealing the package. The primary goal of vacuum packaging is to remove oxygen from the container to extend the shelf life of foods and, in the case of flexible packages, to reduce the volume of the contents and package. Shrink films are sometimes used to create a tight fit around the contents. Vacuum packaging is commonly used to store dry foods like cereals, nuts, cured meats, cheese, and coffee for extended periods. For short-term storage, vacuum packaging can also be used for fresh foods, such as vegetables and liquids, as it inhibits bacterial growth.

Materials Required

Cut flowers, 1000 ml conical flasks, scissor, tape, distilled water, chemicals, weighing balance, volumetric flasks, labels, thermometer (max. & min. type) and hygrometer. 

Procedure

    1.    Collect fresh spikes of flowers
    2.    Cut at the base keeping about 25-60 cm of the cut flowers stick (uniformly for each flower).
    3.    Prepare Pulsing/ Vase solutions.
    4.    Put the prepared flower spikes in labeled conical flasks containing different Pulsing/ Vase solutions (for a known period of time).
    5.    Record the weight of the spikes and other observations daily.
    6.    Record the temperature and relative humidity of the storage chamber daily.
    7.    Analyse the recorded data and draw conclusion about the best vase solutions for the selected cut flower.

Materials Required

Fruits/ vegetables, weighing balance, plastic crates, CFB boxes or other packaging material fruit pressure tester, hand refractometer, markers etc.

Procedure

    1.    Harvest the fruits
    2.    Subject them to various pre-treatments (as discussed in previous exercise).
    3.    Record their initial parameters i.e. weight, firmness, surface colour, TSS, rotting etc. 
    4.    Place properly packed commodity in storage alongwith a check under ambient conditions
    5.    Record the observations regarding changes in quality during storage
