Introduction

Recent advances in food technology have made our lives virtually easier and efficient. Changing lifestyle has led to the emergence of packaged food that provides convenience to the consumers. The authentic packaging of food implements consumers with the role of communication, containment, convenience, and protection. Any typical food package provides us with the information about the product and its nutritional fact, thus an efficient way of marketing/ branding. It protects the food product from the external environment and adulteration, thus keeps it safe. It allows the consumers to relish the food as per their convenience (reheating and direct consumption) and holds the product of any size, shape and restrains during handling and transportation (Robertson, 2006).

Food packages can be altered or modified according to one’s requirement with features like single-serving dishes and portability. However, traditional packaging is lacking adequacy to meet unending consumer demands and product intricacies. Therefore, a contemporary concept of packaging with higher proficiency is needed to meet various consumer requirements. For instance, a packaging that can - enhance product’s shelf-life with lesser or no preservatives, that maintains freshness, that meets permissible regulatory requisites and enables tracking throughout the product life-cycle. Emerging technologies like smart packaging have the expertise to invigilate a product and its milieu and pursue any modifications into these. Moreover, smart packaging helps in gaining global market recognition, and meets international food safety standards. In recent years, there has been rapid development in food packaging that includes active packaging, intelligent packaging, or smart packaging. These are the technologies that deal with the packaging of food, beverages, cosmetics, and pharmaceutical products. Moreover, these terminologies are apparently identical but, each has a different function to deal with and is as follows:

A. Novel Dehydration Technologies

Dehydration, the process of removing moisture from food products, is crucial for enhancing shelf life, reducing weight and volume for transportation, and preserving nutritional value. Traditional dehydration methods, such as sun drying, air drying, and freeze drying, have been widely used for centuries. However, advancements in food technology have led to the development of novel dehydration technologies that offer improved efficiency, quality retention, and sustainability.1. Vacuum Microwave Dehydration

Vacuum microwave dehydration is a cutting-edge dehydration technique that combines the advantages of removing moisture from food products while preserving their color, flavor, texture, and nutritional content (fig 1).

Food is a vital requirement for all living beings, as it provides the essential nutrients necessary for growth, development, and recovery. Humans depend on both plants and animals for nourishment, which we acquire through agricultural practices and animal farming. With the increasing global demand for food, crop yields have risen, which has led to a greater reliance on warehouses for grain storage. However, merely increasing food production is insufficient to combat hunger and malnutrition, as food security also heavily depends on ensuring that food is accessible to everyone. Crops, however, are exposed to various threats, such as pests, weeds, and diseases, which can drastically reduce yields if not managed adequately.
A significant issue is storage losses, which are driven by both biological elements (such as fungi, insects, and rodents) and environmental factors (such as unsuitable storage conditions or extreme temperatures). These losses result in various negative consequences, including:
• Reduced food quality
• Lower seed germination rates
• Loss of weight in crops
• Discolored produce
These problems can impede the marketing of harvested crops, leading to unsold goods and considerable losses for farmers and distributors.
To reduce these losses, it’s crucial to adopt proper measures like efficient treatments and continuous monitoring of storage conditions. Grains should be stored in environments that prevent deterioration. This can be achieved by ensuring thorough cleaning before storage, drying grains thoroughly (both under the sun and in the shade), and taking steps to control pests, including fumigation.

1.1. Introduction
The terms ‘counselling’ and ‘health promotion’ complement each other when it becomes a matter of an individual’s health. Health promotion is a part of behavioural social science that aims to change the systemic strategies adopted by the individual or group or by the mass community for the betterment of their health which can be achieved by talk therapy known as counselling. In the 21st century, from childhood to adulthood, all people are in a ‘rat race’ for their careers and necessities, which is one of the main reasons for stress generation. Not only that, chemical substances consumed by different food ingredients as food additives, preservatives, etc. but also induce oxidative stress and damage the functional activity of cells, tissues, organs, and systems. This ‘stress’ is a major culprit not only for the deterioration of physical health but also psychological health. Such stress imposition in daily life impairs normal physiological functions, skills, performance, and productivity. Unhealthy food, life, and work styles are also linked to the onset of pathophysiological complications that counselling and health promotion are required to overcome. Besides this, for sportsmen, pregnant women, lactating mothers, and growing children, nutritional counselling and health promotion are indisputable. For disease prevention and early recovery from disease, dietary counselling plays an immense role.
1.2. Counselling
Counselling is an intermittent, interpersonal interviewing process where the counsellor gives advice or suggestions to the client but never gives any direction. Counsellors assist the client in thinking, analysing, and acting to improve their insight power. The counsellor focuses on both the positive and negative sides of a particular event and allows the client to think and rethink its acceptability and unacceptability.

Abstract

Design, operation and optimization of dryers demands the calculation of energy consumption, in most cases in the form of thermal energy, equipment sizing, temperature and moisture distribution of solids as well as temperature and humidity distribution of drying air. Energy calculations are very important as drying is a widespread process in a variety of industries and is highly energy demanding. In the energy analysis of the process the first step is the estimation of the minimum energy requirement followed by the estimation of energy rejection through solids stream and especially through drying air. Increase of thermal efficiency is always willing and the two most common ways for its achievement is the application of heat exchange between cold feeding air and relatively hot rejecting drying air and hot air recirculation. The later is also employed for the adjustment of air temperature and humidity gradient through the dryer. The combination of a heat pump with the dryer decreases considerably the thermal energy consumption but demands electricity and the method can be beneficial in cases of excess electricity production in the process plant, e.g. by cogeneration. Utilization of exhaust hot air from the main drying unit for the predrying of wet solids can also decrease the total energy requirement. The application of humidity adsorption from the feed air increases its drying potential, but regeneration of adsorbent is required. Grand composite curve of the process plant can reveal potential heat sources from different unit operations.

Introduction

Fermented foods are those foods which have been subjected to the action of microorganisms or enzymes that cause desirable biochemical changes and significant modification of the food (Campbell-Piatt, 1994). Fermented foods are usually produced using ingredients of plants or animals in combination with bacteria or fungi. The best way to combat malnutrition globally among women and children have changed over the last few years keeping pace with the advancement of technology. Information and communication technologies (ICT) have become very important for solving the contemporary nutrition related issues because they provide a vast array of new communication capabilities. In addition to meeting society’s actual needs for ongoing health and nutrition care, ICTs are crucial for facilitating interactive, personalized nutrition communication. People can interact or communicate with others in different countries in real-time through instant messaging, video conferencing or voice over IP (internet protocol). Through social networking platforms like Facebook, Instagram, and others, people from all over the world can regularly converse and stay in touch. In the context of health communication, ICT is referred to as Interactive Health Communication (IHC), which is the exchange of health information and advice and support regarding health-related matters between a consumer, patient, caregiver, or professional using an electronic device or communication technology. Nutrition treatments are less expensive when face-to-face interaction is facilitated by electronic means. These are complementary factors that encourage nutrition communication in an information-age healthcare system, especially when combined with consumers’ growing desire to take charge of their own health. Customers can advantageously use information technology in this system to connect with health professionals and support groups, obtain absolutely relevant information, and take charge of their own health. The “global village,” which has been made possible by modern information and communication technology, allows people to interact with each other virtually as if they were neighbours. Because of this, ICT is frequently examined in relation to the ways that contemporary communication technologies influence society.

Entrepreneurs serve as the catalysts for the introduction of innovative technologies and systems that ultimately lead to societal advancements. Health entrepreneurs like nutritionists, dietitians, physicians, and health counsellors run their practice and make it available for the client to listen to their problems and solve their problems through mental support, motivation, diet therapy, medication, and so on. As a result, the health burdens due to noncommunicable and communicable diseases are reduced.

9.1. Introduction
The three basic need for human survival are- food, clothing and shelter. The requirement of food comes first. Human are omnivorous. They eat mainly natural foods. Before 5000 years ago, cereals were the main food for all civilization and then the complexity of life began to make appearing with the advent of industrialization, flourishing of industry and commerce. Unpolished grains were utilised at first, but in contemporary civilisation, we have begun to prepare them, which results in the loss of essential nutrients. The intake of meats, processed meals, and sugary goods has grown while the general intake of cereals has decreased. People now lack vital nutrients as a result of the departure from natural diets. People began to realise a few years ago that health is a significant concern in addition to flavour, convenience, and quality value. They have thus begun taking nutritional vitamin supplements to make up for the nutrients lost from processed meals. People are increasingly opting for natural nutraceuticals in capsules and tablets, a trend known as medicalization in nutrition, instead of relying on natural food items. Hippocrates emphasized the connection between food and medicine, stating that healthy foods has a strong therapeutic advantages. The ancient Indian medical system known as Ayurveda places a strong focus on the functioning of diet and nutraceuticals in both health and illness.
9.2. What are Nutraceuticals
Stephen De Felice, the founder and chief executive of the Foundation for Innovation in Medicine (FIM), first used the term “nutraceuticals” in 1989 to refer to the broad category of medicines and nutrition. Nutraceuticals are foods or dietary components that not only offer nourishment and energy but also significantly contribute to regulating and preserving the regular physiological processes that keep people healthy. Nutraceuticals included processed meals such as cereal-grains, soups or stews, genetically engineered foodstuffs, herbal items, nutritional supplements, and extracted nutrients. People are increasingly concerned about their healthy wellbeing these days. However, these include a hectic, sedentary lifestyle, unhealthy eating patterns, body image issues, and being afflicted by a number of illnesses. These are the factors driving the global nutraceutical market’s expansion and generating a lot of interest. Numerous health issues of the century, including cancer, type 2 diabetes, heart disease, inflammation, oxidative stress, constipation, and more, can be fought off with the use of these nutraceuticals. Overall, nutraceuticals bring an entirely novel phase in medical science and assist the food companies to promote more creative research strategies. (Dudeja and Gupta, 2017)).

Valuable Genetic Resources

All these methods of utilization and the conversion to useful energies depend on the climate, population density of the area and the basic infrastructure. It is important to work out the market for the products which are produced.
 
Bio-waste management: It needs to take from small actions to the ambitious ones. European Commission proposes to use wastes which could make up to 25% of total energy consumption by 2020. They propose to have directives for the promotion of renewable electricity (Directive 2001/77/EC) and biofuels (Directive 2003/30/EC). The waste production in Europe has gone upto 2 kg per capita per day. Recycling rates are also rising (European Commission, 2017). The Member states must develop a national action plan and outline the national policies to develop existing biomass resources and mobilise new biomass resources for different uses. A European project has studied the amount of renewable energy to be used in 2020. According to them it will be around 195 million tons of oil equivalents (Mton) of biomass which is biodegradable part of MSW. This will be 20% of renewable energy target. It has also been estimated that the amount of bio-energy from the MSW will be 20 Mton, which would account for around 7% of all renewable energy in 2020. This may be available after composting and anaerobic digestion (Atanasiu, 2010).

1. Introduction

Food is processed for its preservation, hygienization or value addition. To date, the food preservation technologies such as canning, dehydration, freezing, pasteurization and controlled atmosphere and modified atmosphere packaging have been the main processes employed to preserve foods, with the use of antimicrobials and microwaves also being employed more recently. In future, however, technologies such as exposure to ionizing radiation, high pressure processing, ohmic heating and pulsed electric field processing, could potentially be the new alternatives to the above food preservation technologies.

Irradiation of food involves the exposing of food, either in prepacked form or as such to controlled doses of ionizing radiation being generated either by electrically driven machines such as electron beam accelerators, x-rays or gamma rays produced by radioactive isotopes such as CS-137,CO-60, to achieve certain desirable objectives. The process of exposing a range of food stuffs to specific doses of ionizing radiation is being used to extend the shelf life of food stuffs, to improve their overall safety and quality by eliminating pathogenic bacteria, by reducing number of food spoilage organisms, to reduce the bacterial load on herbs and spices and thereby making them safe to incorporate into food stuffs, to inhibit sprouting in stored tuber and bulb crops such as potatoes, onions and garlic, to disinfest grains, grain products and tropical fruits to prevent damage to the commodity and to meet the quarantine regulations(Arun Sharma, 2004, Farkas, 2006).

1. Introduction

Mushrooms represent a highly specialized group of fungi, mostly basidiomycetes, with production of fruiting bodies bearing the spores for continued propogation. The fruiting bodies vary greatly in shape, size, color, texture, structure and aroma (Rajarathnam et al., 1998). They are endowed with the unique ability to biodegrade cellulosic wastes, including lignin, and biotransform into edible fruiting bodies (Rajarathnam et al., 1992, 1998, Rajarathnam and Zakia Bano, 1990). Their chemistry is also varied comprising characteristic polysaccharides, phenolics, proteins, amino acids, peptides, lectins, fatty acids, minerals, and so on (Rajarathnam et al., 1998). The wide spectrum of compounds have endowed the mushroom species with a spectrum of biofunctional activities of medicinal importance and accordingly their role in human health are implicated through studies on chemical, cell culture and animal feeding experiments. Vast literature available on this subject is condensed for presentation here.
Fifty nine medicinal species are reported from Diaoluoshan Nature Reserve in Hainan Province, China (Li et al., 2003). A health food made from luminescent mushrooms (Mycena chlorophos) is described. The luminescent parts that emit light in the carpophore of the mushrooms are dried without thermal decomposition and pulverized (Sugimoto, 2006). Consideration is given to the health promoting properties of 3 types of Asian fungi, namely, shiitake (Lentinus edodes), reishi (Ganoderma lucidum) and maitake (Grifola frondosa). Properties considered include beneficial components (e.g polysaccharides, vitamins, amino acids) and effects on the immune system (Anon, 1997). Auricularia auricula (kikurage or tree-ear) and Tremella fuciformis (shirokikurage or white jelly-leaf) are widely used in Chinese cuisine. Chemical structures of some of the polysaccharides from A. auricula and T. fuciformis, in relation to their medicinal and nutritional effects are described (Misaki and Kakuta, 1995).

12.0. Introduction

The benefits of food laws to the consumers and the processing industries depend upon the efficacy with which the laws are implemented. The implementation of laws requires not only a well organized national infrastructure for inspection and quality control, but also requires reliable methods of analysis, that can be used to check the quality standards for improvement of the food product w.r.t. nutrition, safety and sensory attributes. Early and accurate analysis of food product prior to preservation, during preservation or post preservation is a crucial component for quality evaluation and their quality control. Quality control in food industries depends upon three principles viz. i) raw material control, ii) process control and iii) finished product inspection. Once a product has gone through the manufacturing process, little can be done to alter its quality or to overcome the faults. Examination of the finished product at the most represents analysis with respect to standards – to accept or reject. Effective control over the raw material and process minimizes the rejection of the products. The food spoilage can be managed most effectively, if control measures are introduced at an early stage of food preparation/contamination. Reliance on symptom is often not adequate because spoilage may occur before symptom appears. The spoilage of the food may affect sensory, physical, chemical or microbiological attributes. Therefore, now a day, food processors want to analyze their food samples quickly without any delay in shipment for which they have to depend on the different methods for their quality evaluation. The analysis and quality control of food products involve physical, chemical, microbiological and sensory methods. So, widely used standard procedures / methods for evaluation of quality of food prior to preservation, during preservation or post preservation has been given in this chapter for easy implementation.

With increasing food production, availability and accessibility the global agro-industrial food system has improved.However, malnutrition, biodiversity loss and climate change are newer challenges. The best solution to this is the utilization of indigenous and traditional crops which will bring a transformative change in the food system. There is a need to look into the development of smallholder producers. The agro-industrial food system has improved the food supply and has made way for significant trade-offs with agro-biodiversity, dietary diversity, environmental sustainability and socio-economic stability mainly amongst the rural poor. Now is the time to mainstream the underutilized indigenous and traditional crops into the food system. This will provide opportunities to develop a sustainable and healthy food system.It will also help towards the societal goals which include employment creation, wellbeing and environmental sustainability.

Introduction

Milk is regarded as the “ideal food” as it contains nutrients necessary for both newborns and adults (Azad & Ahmed, 2016). It is high in protein, fat, carbohydrates, vitamins, and minerals. Unfortunately, milk is easily adulterated all over the world for several reasons, including a gap between supply and demand, the inherent nature of milk which can imbibe many adulterants that are difficult to identify, the low purchasing power of consumers, an insufficient share of the organized sector in the dairy business, and, most importantly, a lack of efficient and rapid methods for detecting adulterants (Ellis et al., 2012; Moore et al., 2012).

3.1. Introduction
Sports nutrition is one of the areas of nutrition that closely coordinates with human anatomy research and the science of sports. The application of nutrition science to a practical daily eating plan intended to optimise the performance of athletes in competitive events, speed up the healing and reconstruction process following intense physical activity, and supply the energy for physical activity is known as sports nutrition. It also seeks to promote wellness and general health. Nutrition is strongly connected to fitness, specifically whilst sports activities are involved. It is necessary to recognize the physiology of the workout on the way to recognizing the specific metabolic pathways that coexist in the course of sports activities practice (O’Donoghue, 2014). Three things are necessary for athletic success: genetic endowments, level of training, and nutrition. It is impossible to change one’s genetic makeup. The most efficient method for enhancing athletic performance is specialized exercise training, and any kind of workout regimen must include adequate nutrition. The dietary requirements of athletes and workout aficionados are different from those of physically inactive people due to variations in their calorie needs as well as macro- and micro- nutrient needs. To achieve peak athletic performance, it is crucial to investigate and evaluate the dietary requirements of athletes prior to, during, and following the contest (Cotugnae et al., 2005). Exercises that improve one’s heart health involve swimming, jogging, and climbing. Other exercises that improve one’s flexibility, power, and endurance of muscles involve stretching and hard training with resistance. For example, if someone decides to choose to lose excess fat and to do so, they would design a regular exercise routine that incorporates all of the above-mentioned elements, as well as choosing more nutritious foods in the diet to meet the higher demands to endeavors. Athletic performance requires sports-related abilities. These neuromotor skills, such as balancing, pace, power, durability, stamina, agility, and execution, are particular to sports.

The packaging requirements for food products are as varied as the foods themselves, with each category necessitating unique materials and design considerations to ensure product quality, safety, and consumer satisfaction. Packaging serves as the first line of defense against environmental factors like moisture, light, oxygen, and microbial contamination, which can significantly impact food stability and shelf life. The role of packaging extends beyond mere protection; it also contributes to preserving texture, flavor, and nutritional value, making it a crucial factor in the overall success of a food product. Chapter 10 delves into the specialized needs of different food types—such as bread and bakery items, snacks, dairy products, coffee, and carbonated beverages—analyzing the packaging materials, structural designs, and technologies required to maintain product integrity. Microscope

A microscope can be defined as an optical instrument consisting of a lens or a combination of lenses for getting magnified images of minute objects. A simple microscope is essentially an ordinary magnifying lens held on an adjustable stand. It can give magnification up to 20 times the size of the object.

A compound microscope consists of two separate lens system, the objective and eye piece (ocular) mounted on a holder known as body tube and with adjustment for illuminating the objects. It gives much greater magnification (100 to 1500 times) when compared to a simple microscope.

Importance of Foods

The word “instant” has been used in widely different types of premixes to specify the products either as ready-to-eat food or semi processed foods. The instant premixes available in Indian market were classified as Indian products and Westernized or sophisticated products. The instant mixes included under Indian market products are spice mixes, snack mixes and desert and sweet meat mixes. The Westernized products (instant mixes) contained soup mixes, beverage mixes, desert mixes and soft drink mixes.

Convenience foods are gaining popularity in recent years as they are very easy to handle, require minimum storage space and are attractive. Convenience foods have emerged as a new set of products in the international market. Most of the traditional foods that are commercially available in our country are being prepared / processed by cottage industries and by some of the multinational companies. The various types of convenience foods/ instant mixes that are presently being processed, marketed and consumed all over the country. Supplementation with protein-rich sources and preparation of acceptable ready-to-eat snack foods would not only correct its nutritional inadequacies, but would also provide a variety.

Instant mixes were high in nutritive value especially needed for armed forces, light in weight, easy to carry and prepare. Rapid industrialization and urbanization and changes in eating habits of Indian people led to very high demand for ready-to-use snack foods. The convenience instant foods are meeting the urgent and exigency situations of offering hospitality to unexpected guests.

Changing life styles and values are at the root of considerable changes in eating habits over the last few years. Hand-in-hand with a strong demand for fast and take away foods, there has been a marked upturn in popularity for convenience foods in India. The major reasons for this trend are: the decline of the family meal time, growth in disposal incomes (only in cases of city dwellers), the desire for more leisure time and demand for “foreign” or “sophisticated” dishes inspired by the media and increased travel.

Nevertheless, the waste is a precious source of several useful materials as such or after fermentation [1,31,46,86]. Thus, development and environment are two sides of the same coin.

With the increasing health consciousness of consumers, there has been an increasing concern over the use of thermal processing methods like blanching, pasteurization, sterilization etc. for enhancing the shelf life of foods as these methods fail to preserve the fresh like nutritional, therapeutical and sensory qualities of the food. With the increased consumer demand for fresh and fresh-like foods, interest in minimal processing of foods is increasing. The trend is also shifting from the traditional heat processing to those technologies that employ no or minimum heat application, thereby retaining the quality to a maximum level. One of the ways to accomplish this is via use of non-thermal processes. Over the past few years a number of non-thermal processes or cold preservation methods have been invented and developed. These methods are being evaluated in pasteurization and sterilization of various foods or in the extension of shelf life of various packaged foods. Some of such novel technologies and the products prepared, have been discussed here under.

1. Extrusion

Extrusion is a size enlargement process wherein small granular food or powdered particles are re-formed into larger pieces with different shapes, textures, colours and flavours from the basic ingredients. In extrusion food is compressed and forced to pass through a fine opening (die). As soon as it comes out of the opening, the outside pressure is very less as compared to the pressure inside the screw of extruder and the food expands instantaneously. If the food is heated the process is called as extrusion cooking. It is a process which combines several unit operations including cooking, mixing, kneading, shearing, compressing, shaping and forming. Extrusion adds a variety to the products by changing shape, size, texture and even some of the minor ingredients of the food and at a reduced cost than most of the other processing methods. Extrusion cooking (not extrusion) is a high temperature short time (HTST) process that reduces microbial contamination and inactivates enzymes.

Introduction of Food Industry

India is one of the major food producers in the world. The food sector contributes to about 28% of India's GDP. India stands at 1st position in the world for production of cereals, milk, livestock, banana and Mango, 2nd in producing fruits and vegetables and ranks amongst top 5 in producing rice, wheat, groundnut, tea, coffee, tobacco, spices, sugar and oilseeds. India's share in global production of fruits is 10% and vegetables are 13.7%. Status of Food Processing Industry

The food processing industry in India is still in a sorry state. The rural population comprising 70% including small cities, consume less than 10% of the processed foods and vegetables, whereas 60% of the processed food is consumed in four major metropolitan cities and 30% in the state capitals and big cities. Another fact is that 40% of the processed food and vegetables produced in the country in terms of value are bought by institutional buyers like Hotels, Restaurants and Defense etc. The highest growth in domestic market has been in fruit drinks, tomato ketch up and Jams.

There is another fact that India is the largest milk producer in the world, however, organized industry accounts for less than 15% of the milk produce in India. It is estimated that there may be a total production of 1100 million tons of production of food products mainly food grains, oilseeds, sugarcane and fruits/vegetables during 2011-12 and leaving marketable surplus of 870 million tons.

The use of plant breeding technique depends on mode of pollination and reproduction of plant species e.g. selection and hybridization are used in sexually reproduced species, while clonal selection in asexually propagated plant species. The plant species/ varieties are usually derived through conventional techniques (vi z. introduction, selection, hybridization etc.), which are commonly used in various breeding programmes, while some modern techniques viz. transgenic breeding and marker assisted selection etc. are also available which are equally effective for improvement of all crop species. Various techniques applied for development of new varieties and hybrids are briefly described in this section.

Plant breeding is an art, science and technology of improving genetic make-up of crop plants in relation to their economic usefulness for mankind. Various techniques/methods of breeding used for genetic improvement of crop plants are: introduction, selection, hybridization, mutation, transgenic breeding etc.

Food laws and regulations are the legal standards of quality that regulate the manufacture, storage, distribution, sale, and marketing of food products. The major objectives of enacting the food laws and regulations are i) to maintain the quality of food produced ii) to safeguard the health of the consumers iii) to prevent exploitation of the consumer by the sellers and iv) to establish a standard of quality for different food products. In 2006 the government of India enacted the Food Safety and Standards Act, 2006 (FSSA) to consolidate all laws relating to food and to establish the Food Safety and Standards Authority of India (FSSAI) for laying down science-based standards for different articles of food and to regulate their manufacture, storage, distribution, sale and import to ensure availability of safe and wholesome food for human consumption. Various food laws enacted in our country before 2006 for different categoriesof food were:

Natural fruit and vegetable powders are gaining lot of popularity in recent years as they are very easy to handle after production, require minimum storage space and they are attractive. Tamarind powder is developed from tamarind fruit (Tamarindus indica) (Manjunath et al. 1991) and recently cashew apple and guava residues from fruit juice industry were successfully converted into fruit powders and used at different levels of wheat flour substitution for cookies formulation (Ana Maria et al.2009) and fruit puree like papaya can be mixed with cereal flour to prepare slurry and after gelatinization, the slurry can be useful for preparing drum dried flakes and powder (Sunita and Chauhan 2008). Tropical fruits are exotic in flavor but their juices and purees are seldom available in dehydrated powder (James, 1971). Citrus juice concentrates were produced during world war II in powdered form by using spray, drum, vacuum-puff, and freeze drying (USDA, 1962). The preservation of fruits and vegetables by dehydration offers a unique method, which may be considered as an alternative low cost preservation technique. A shift from fresh to more and more processed foods with significant value addition is bound to occur sooner or later considering the socio-economic changes taking place in the country and the rapid integration of Indian economy with global system. Most popular brands are found in the “ready to consume” food sector.

The fermentation can be broadly defined as the process in which the carbohydrate or like compounds are broken down, under anaerobic or aerobic conditions [171]. The basic role of micro-organisms is to breakdown the organic compounds to get energy for their metabolic activities. From ancient times, people all over the world have developed traditional processes for production of alcoholic beverages (wine) either from natural sugar such as in wine or by degrading the starchy materials (beer). Fruit wines referred to as ‘Soma’ in our ancient scriptures have been part of food of man and were used as medicine, might have originated accidentally (transformation of fruit juice beverages having exhilarating or stimulating properties). Wines are made principally from fruits like grape or extract of other fruits of various types (table wine, sparkling wine, dessert, aperitif or vermouth and pop wines) while the beers are prepared from grains like barley, rice and corn. The principal carbohydrate in grain is starch which can not be fermented directly. This process is brought about by starch splitting enzymes by germinating the grains followed by drying and storage until needed. Distillation of beer produces a variety of liquors (whisky, rum, gin, vodka), while that of wine produces the brandy. Food packaging science is a discipline which applies principles from four major areas of science (materials science, food science, information science and socioeconomics) to understand the properties of packaging materials, packaging requirements of foods and the packaging system. Both material science and food science have been two major contributors for food packaging development. Material science is important to understand the mechanical strength, barrier properties, appearance and physical and chemical properties of paper, glass, metal, polymer and composite. Food science is important to understand the deterioration kinetics of foods (such as microbial growth, lipid oxidation, moisture loss or gain) governs the food shelf life. Food packaging technology is a science based solutions to address specific food packaging needs; examples are tamper evident packaging, microwavable packaging, modified atmospheric packaging, and controlled atmospheric packaging which are aimed at enhancing safety, quality and convenience for the consumer.

Mycotoxins are naturally occurring toxins produced by certain molds and can be found in food. The molds grow on a variety of different crops and foodstuffs including cereals, nuts, spices, dried fruits, apples and coffee beans, often under warm and humid conditions. Mycotoxins can cause a variety of adverse health effects and pose a serious health threat to both humans and livestock. The adverse health effects of mycotoxins range from acute poisoning to long-term effects such as immune deficiency and cancer. A scientific expert committee jointly convened by WHO and the Food and Agriculture Organization of the United Nations (FAO), called JECFA, is the international body responsible for evaluating the health risk from natural toxins including mycotoxins. International standards and codes of practice to limit exposure to mycotoxins from certain foods are established by the Codex Alimentarius Commission based on JECFA assessments.

Mycotoxins are toxic compounds that are naturally produced by certain types of molds (fungi). Molds that can produce mycotoxins grow on numerous foodstuffs such as cereals, dried fruits, nuts and spices. Microorganisms form part of the epiphytic flora of fruits and vegetables and many will be present at the time of consumption. Production practices, growth conditions and the location of the edible part during growth (soil, soil surface, aerial part) will in combination with intrinsic, extrinsic, harvesting and processing factors affect their microbial status at the time of consumption. Man-made sources may be directly from farm laborers and from the equipment used for harvesting or storage. The types of microorganisms on fruits and vegetables would also vary with the orchards, vineyards or growing fields. The resident microflora normally subsists on the slight traces of carbohydrates, proteins and inorganic salts that dissolve in the water exuding from or condensing on the epidermis of the host. The numbers of bacteria present will vary depending on seasonal and climatic variation and may range from 104 to 108 per gram.
