In previous Chapter, a list was furnished mentioning common names, botanical names, family and types of the all plants mentioned in the Ramayana. The purpose was to know the total number of plants and trees mentioned besides providing reference of the Shlokas as well. This information led to identification of the plants and trees but details about their morphological and floral characters were not mentioned. Therefore, in this Chapter details of the trees and other plants have been provided. This will help to know all about their botanical standing, conservation status, nativity, morphological and floral characters so that one can know the full details including present-day status, availability and importance (Cowen, 1950; Randhawa, 1983; Roy, 2015; 2024).

Morphological and Floral Characters: Red Bead Tree is a timber tree found wild in India. Leaves compound, bipinnate, green when young, turning yellow on maturity. Flowers small, yellowish, grows in a dense, drooping almost cat tail like flower-heads. Fruits curved pods, hanging, green that turn brown, coil up and split open on ripening, showing small bright red seeds which are attractive, used as beads in jewellery.

India is a unique country in the world with many religions and cultural diversity. Indian culture has been continuing through the ages because of its adjustability with others and openness. Unity in diversity is one of the major characteristics of Indian culture. It is a diverse nation where people of many religions live together peacefully. Religion in India is characterized by the diversity of religious beliefs and practices. In Indian history, religion has played an important role in the cultural set up of the country.

Hinduism is the main Indian religion and considered as a universal order, a way of life which is followed by the people. The origin for Hinduism is very old having no exact date of its inception. This is a belief and practices followed by people through the ages and considered as a process of humanity. The earliest known sacred text of Hinduism is ‘Vedas’ which dates back to at least 3000 BCE. However, it is believed that these texts are of divine origin and timeless. Hinduism was more philosophically and theoretically described in Upanishads, written roughly between 800 and 400 BCE. The Mahabharata and Bhagavad-Gita are other best-known book and widely cited on Hinduism. The Ramayana is the other most important epic book on Hinduism which teaches about life, principles, duty, justice etc. through the life-story of Rama.

Dasharatha was a great Hindu king of the Kosala kingdom and Ayodhya was the capital from where He ruled. He was the son of King Aja of Kosala and Queen Indumati of Vidarbha. Dasharatha had three primary queens namely - Kausalya, Sumitra, and Kaikeyi. Unfortunately, the King had no sons to continue his dynasty after him. Despaired Dasharatha summoned Rishyashringa, a forest rishi for a ritual to fulfill his desire of have sons. By that way, the King had four sons. Queen Kaushalya gave birth Rama and similarly, Kaikeyi gave birth Bharata and Sumitra gave birth two sons, namely - Lakshmana and Shatrughna. Lakshmana was very much attached and devoted to Rama while Shatrughna was devoted to Bharata.

Plant hormone ethylene is involved in a number of physiological activities within the plant system, ranging from seed germination to fruit development. Ethylene acts as a key player in accelerating fruit ripening by regulating the activities of different enzymes, and is responsible for shortening the shelf life and associated post-harvest losses during the storage of fruit crops. However, all fruit crops have different ethylene production capacities and vary in their response to ethylene. Hence, effective management of post-harvest ethylene is imperative for addressing the global challenge of reducing fruit losses after harvesting. In recent periods, numerous technologies and compounds have been developed for the suppression of ethylene and for enhancing in-situ oxidation of ethylene or inhibiting its production at a receptor level. Among these emerging techniques, the use of sachets, fumigating agents, catalysis and composite films embedded with nanoparticles has been found to be trending, but the use of some of compounds has been limited due to health risks or consumer unacceptance. However, most of these technologies are very costly and are not affordable for marginal farmers and developing nations. In order to address these issues, long term breeding approaches for shelf-life improvement, targeting the tfs, ERFs have been involved. This manuscript fills the knowledge gap by encompassing all the recent progress made in enhancing the shelf life of fruits by managing ethylene during storage.

Fruit ripening is a phenomena during which horticulture produce undergoes a series of complex physical and biochemical changes initiated through a series of hormones (Ethylene, auxin, abscisic acid (ABA), gibberellins, jasmonic acid, etc.) to attain maximum physiological maturity and favourable organoleptic properties. These changes lead to alterations in colour, texture, aroma, flavour and nutrient composition. In a nut shell, ripening involves increase in pulp to peel ratio, solubilisation of pectic substances, degradation of complex carbohydrates, organic acids and chlorophyll, accumulation sugars, flavour volatiles, polyphenolic compounds and pigments (carotenoids, xanthophylls and anthocynanins). The extent of these changes guide harvesting, readiness for processing and consumption decisions, with physic-chemical alterations serving as indicators of optimum ripeness. Respiration rate, ethylene and ABA are key regulators of fruit ripening in climacteric and non-climacteric fruits, respectively. In climacteric fruits, ABA interacts with ethylene, influencing the synthesis of ethylene itself. Although there is ample documentation on the involvement of hormones in fruit development and ripening, our understanding of the functions of various hormones throughout growth, maturation, and specific ripening processes remains incomplete.

Calcium, anti-oxidants and certain enzymes are reported to play vital role in extending the shelf-life of harvested produce of many horticultural crops especially fruits. They help in maintenance of cell wall structure. Being an important constituent of cell wall, in the form of calcium pectate, it helps in maintenance of cell wall structure. Antioxidants are highly beneficial in extending the shelf-life of fruits besides maintaining the quality. Similarly, some enzymes play a key role in preserving the fruit quality and prolonging its market life. As some fruits are catergorized under ‘Low volume high value fruits’, it is essential to extend their shel-flife for reducing the post-harvest losses of fruits and also to reap better remuneration. Thus, it becomes indispensable to review the role of Ca, anti-oxidants and enzymes which are beneficial in keeping the harvested produce afresh for a relatively longer period.

Fruits, the vivid and delightful offerings of the nature, undergo remarkable transformations as they travel from the orchard to our dining tables. These changes indicate the significance of post-harvest physiology, which is the scientific study that reveals the secrets of how fruits behave after they are picked, including the mechanisms that affect fruit quality and how long it may be stored. The next section provides definitions of the various stages and key players involved in the processes of fruit maturity, ripening, and post harvest physiology. These topics will be further explored in the subsequent sub-sections of this chapter.

Fruit developmental physiology

The life cycle of horticultural commodities (fruits and vegetables) can be effectively categorized into three primary physiological stages after fruit set or initiation, namely growth, maturation, and senescence. Still, a lack of obvious differentiation exists among the several stages. Growth encompasses the process of cell division followed by cell enlargement, which determines the ultimate size of the product. Maturation typically begins prior to the cessation of growth and involves various activities across different commodities. The stages of growth and maturity are commonly denoted as the developmental phase. Senescence can be described as the phase in which anabolic biochemical processes transition into catabolic processes, resulting in the ageing and eventual demise of the tissue. Ripening, a term specifically used for fruit, is typically regarded as the initial phase of senescence that occurs during the later phases of development. Defining the transition from growth to senescence is rather straightforward.

Fruits and vegetables are perishables and the post-harvest losses from the point of production at the farm gate till it reaches the consumers is estimated as 30-35 per cent which constitute a major economic drain of more than 33 billion USD equivalent to Rs 2,40,000 crores annually. In order to reduce the losses at various stages, nanotechnologies have come as potential strategies to minimize the losses while improving the marketability and profitability of perishables. One of the plants derived natural compounds “hexanal” which is known to extend the shelf-life of fruits when it is used as a pre-harvest spray or post-harvest dip as a nano-emulsion. Since, it is a highly volatile compound, efforts were undertaken to entrap the compound in the polymer-based nano f ibres (as nano stickers) or as a cyclodextrin inclusion complex (as nano pellets) in order to preserve the perishables. Further, hexanal vapour was also evaluated to preserve fruits. In this book chapter, various nanotechnologies tested, evaluated and technologies developed over the years are elucidated. Overall, the literature review suggests that use of any of the nanotechnologies delivered as pre-harvest spray, post-harvest dip, nano-stickers, nano-pellets and vapour singly or in combination found to reduce the infestation of post harvest diseases, minimize the losses and extended shelf-life by 2-3 weeks that help the farmers to get lucrative prices due to the late arrival in the market besides significantly improve the productivity and profitability of orchards.

Introduction

The cold chain is a meticulously managed series of actions using specialized equipment to ensure products remain within a specific low-temperature range from production to consumption (ASHRAE, 2024; IIR, 2024). This unbroken sequence encompasses refrigerated production, storage, and distribution activities, safeguarding the safety and quality of perishable and thermo-sensitive goods like agricultural commodities (such as fresh produce, meat, dairy, seafood, chemicals, pharmaceuticals, flowers, wine, etc.), processed foods and pharmaceuticals (Aung and Chang, 2014; Awan, 2023). For climacteric fruits like bananas, custard apples, apples, pears, tomatoes, mangoes, and avocados, cold storage facilitates controlled ripening, extending the time between harvest and consumption. Cold chain management, integral to the overall supply chain, requires expertise in maintaining temperature, air quality, and adherence to regulatory standards. Any disruption in this process can lead to product spoilage and financial implications (FAO, 2019). The management of the cold chain system is crucial for preserving the freshness, taste, and nutritional value of fruits from harvest to consumption (Kader, 2003).

Introduction

Perishable nature of horticultural produce is a major factor contributing in high post-harvest losses. The metabolic processes such as respiration, transpiration, and ethylene production remain active after the harvesting of produce, which drive ripening and senescence Fig. 1. Thus, an effective post-harvest handling is crucial to delay these changes. The rate of these processes depends on the produce’s physiological characteristics, composition, and storage conditions like temperature and humidity. Low-temperature storage is the simplest and most efficient method to slow down deterioration Escobedo-Avellaneda and Welti-Chanes, 2016. Combining low temperatures with methods that limit oxygen exposure, which fuels many enzymatic reactions, further extends shelf life and maintains food quality. Reduced oxygen levels decrease respiration and the activity of enzymes like polyphenol oxidase and peroxidase.

India is bestowed with varied agro-climatic conditions. Thus, horticultural crops have lot of potential in the country. India has witnessed voluminous increase in horticulture production over the last few years, which has undoubtedly doubled the income of farmers. As a result, the country has emerged as the 2nd largest producer of fruits (102.48 million tonnes) after China during 2020-21 (Anonymous, 2023). The abundance of fruits ranging from tropical delights like mango, banana, guava and papaya to temperate fruits such as apple, peach, plum, apricot and pear, have laid a robust foundation for the growth of the fruit processing industry. This chapter delves into the dynamics of fruit processed products in both local and international markets, exploring the challenges, opportunities and strategies for sustained success. Fruit processing plays a crucial role in adding value to horticultural produce, enhancing shelf-life and meeting the diverse demands of local and international markets. In India, a country blessed with abundant fruit varieties, the processed fruit industry has been witnessing significant growth, catering not only to the domestic market but also making strides in the global arena. The processing of these fruits into various products such as juices, pulps, concentrates, jams and dried fruits has emerged as a thriving industry. This chapter will provide insights into the current state of fruit processed products in India, their importance for both local consumption and export markets, challenges faced by the industry and potential avenues for the future growth.

Introduction

The horticulture sector is contributing over 30 per cent share in agricultural GDP of the country. Presently, India producing about 351.92 million tons of horticultural produce from 28.04 million hectare which has surpassed the food grain production for last five consecutive years (Anonymous, 2023). Horticulture sector has been identified by Government of India also identified horticulture as one of the vital sector for entrepreneurship development, employment generation, livelihood and nutritional security, doubling farmer’s income, achieving SDGs of the United Nations.

Fruits and vegetables have become part of a modern healthy lifestyle as they possess high amounts of minerals, especially electrolytes, dietary fiber, phytochemicals, especially antioxidants, and vitamins (Yahia et al., 2019; Krishnan Kesavan et al., 2023). In consumption, the qualities of products play a critical role in consumers’ choices, which are directly related to health problems (Tian, and Xu, 2022). Bioactive compounds are phytochemical substances present in small quantities in plant materials that can provide biological activity, being generally associated with health benefits, including hepatoprotective, anti-inflammatory, antioxidant, antithrombotic, anticarcinogenic, antidiabetic and prevention of cardiovascular and degenerative diseases (Campoli et al., 2018). Therefore, maintaining high-quality fruits and vegetables is very important for the fruit and vegetable industry. This requires some methods to evaluate the quality of fresh fruits and vegetables during their post-harvest manipulation and storage and before their industrial processing as well (Tian and Xu, 2022).

Waste is defined as anything that doesn’t add value to their operations. To the average person, waste is simply stuff that’s unwanted or useless. But from a scientific perspective, there’s really no such thing as waste. Nearly all the things we throw away can be transformed or processed in ways that make them useful again.

Waste comes in various forms, ranging from household trash to industrial byproducts. These include domestic waste, factory waste, e-waste, construction waste, agricultural waste, and more. We can categorize waste into different types:

Solid waste: This includes organic materials like vegetable and kitchen waste, as well as general household waste.

E-waste: Discarded electronic devices such as computers, TVs, and music systems fall into this category.

Liquid waste: This comprises water used in various industries, as well as waste from tanneries, distilleries, and thermal power plants.

Plastic waste: Items like plastic bags, bottles, and containers make up this category.

Introduction

A wide range of agricultural pesticides is currently being used in India. In the financial year of 2015, the size of the crop protection market in India was of about $4.5 billion (FICCI, 2016). A large number of these pesticides are also being used in considerable quantity on horticultural crops, including fruit crops. In general, judicious application of a pesticide following Good Agricultural Practices (GAP) does not leave its residues in crop produces above unacceptable limit. But the GAP recommendations are not available for all crop-pesticide combinations. The usage pattern of pesticides also sometimes gets modified at farm level due to sudden climate changes, and under such situations, the indiscriminate use of pesticides to combat disease and insect complex might result in the contamination of pesticides in fruits.

Although after independence, the use of hybrid and composite seeds of various crops, especially of rice and wheat resulted in an increase in the Indian agricultural output leading to “Green Revolution”. This Green Revolution came to fore during the late “Nineteen Hundred and Sixty”. In fact, during the era of “Green Revolution”, introduction of high yielding varieties of rice and wheat crops were grown which responded to more use of fertilizers, pesticides as well as water.

There is no doubt that “Green Revolution” made the country-India, self- sufficient in food grains production, particularly of rice and wheat. As a matter of fact, the “Green Revolution” created a buffer stock at times exceeding to 60 million tonnes, which made the nation or the country very proud (Mahajan and Gupta, 2009). However, continuous use of chemical fertilizers as well as inorganic pesticides and totally neglect of organic manures and botanical pesticides prepared from various plant species like Neem (Azadirachta indica) and Drek (Melia azedarach) for controlling of insects came totally to stand still. So very soon, the deleterious or ill effects of the “Green Revolution” the so called the chemical-based farming or “Industrial agriculture,” came to fore, which briefly stand discussed below

History

The history of organic farming is largely based upon the history of organic movement which came to fore as a reaction against the large-scale use of chemical fertilizers and pesticides in agriculture. This movement can be traced back to England during 1920, when individuals started speaking against a variety of agricultural “innovation”.

One of the earlier pioneers of Organic Farming, Sir Albert Howard, is often referred to as the father of the modern “Organic Farming”. He began to work as a British botanist and served as an agriculture advisor in India, where he observed traditional Indian farming practices and came to respect them as superior to his conventional agriculture science. He documented and developed these organic farming practices/methods. His writings and notably the 1940 book, An Agricultural Testament, have influenced many scientists and farmers of the day.

In Germany Dr. Rudolf Steiner developed biodynamic agriculture which was probably the first comprehensive farming system. In America, the agronomist F.H. King had toured China, Korea and Japan in early 1990s, closely studied the fertilization, tillage and general farming practices being followed there. He published his findings in his book Farmers of Forty Centuries (1911). King probably did not impart any view himself as part of the movement, whether Organic Farming movement or by some other name. However, in the later years, some scientists within the organic farming movement thought, about what King had encountered in Asia as kindred approach.

Historical Perspective

Organic Farming was initiated in about 10,000 years back when ancient farmers started cultivation depending on natural sources only. There is a brief mention of several organic inputs in our ancient literature like Rigveda, Ramayana, Mahabharata, Kautilya Arthashastra etc. In fact, organic agriculture has its roots in traditional agricultural practices that evolved in countless villages and farming communities over the millennium.

Organic Movement

The organic movement began in the 1930s and 1940s as a reaction to agriculture’s growing reliance on synthetic fertilizers. Artificial fertilizers had been created during the 18th century, initially with superphosphates and then ammonia derived fertilizers mass-produced using the Haber-Bosch process developed during World War I. These early fertilizers were cheap, powerful, and easy to transport in bulk. The 1940s has been referred to as the ‘pesticide era’. Sir Albert Howard is widely considered to be the father of organic farming. Rudolf Steiner, an Austrian philosopher, made important strides in the earliest organic theory with his biodynamic agriculture. More work was done by J.I. Rodale in the United States, Lady Eve Balfour in the United Kingdom, and many others across the world. As a percentage of total agricultural output, organic farming has remained tiny since its beginning. As environmental awareness and concern increased, the originally supply-driven movement became demand driven. Standardized certification brought premium prices, and in some cases government subsidies attracted many farmers converting into organic farming. In the developing world, many farmers started organic farming according to traditional methods but are not certified. In other cases, farmers in the developing world have converted out of necessity. As a proportion of total global agricultural output, organic output remains small, but it has been growing rapidly in many countries, notably in Europe.

Organic farming in India started receiving focused attention from the year 2004-2005 when National Project on Organic farming (NPOF) was launched during 2004, the area under organic farming was 42,000 hectares (Srimathi and Jency, 2014). By March, 2010, it was reached to 1.08 million hectares. In addition to these, 3.40 million hectares was wild forest harvest collection area. Thus, total area under organic certification process by March,2010 was 4.48 million hectares which was increased by 25 folds during last 6 years. In cultivated organic land 7.56 lakh hectares was certified while 3.2 lakh hectares was under conversion. In India, States such as Orissa, Jharkhand, Uttarakhand (Uttaranchal), Himachal Pradesh, Jammu and Kashmir Rajasthan, Gujarat, Madhya Pradesh and Chhattisgarh have been categorized as low or negligible fertilizers consuming states of the country.

India is the second largest producer of vegetables after China. The diverse agro climatic conditions of India offer an immense scope for production of organic vegetables throughout the year. The increase in area, production and productivity associated with nutrition and health security awareness demands lot of promotion of organic vegetables cultivation in the region since these products sell at the premium prices in the domestic and overseas market (Sandhu and Khera, 2008). It is because the major contribution of vegetables to human health is the large amount of Vitamin C and A as well as folic acid and good number of dietary fibres and minerals (Sanwal, 2008). Apart from this, the phytochemicals in vegetables protect the human body from cancers and cardiovascular diseases. Under organic mode of cultivation one can get an average yield of 25-30 tonnes of good quality potato vegetable crop per hectare (Sachan et al. 2008). It is worthwhile to mention that the potato is a key world food vegetable crop which is produced in 130 nations. It is grown from sea level to 3900 m elevation and its edible dry matter accounts for a higher volume of the food consumed in the world than fish and meat combined together (Sachan et al. 2008). More potatoes are consumed by the world’s population than any other vegetables.

Medicinal and aromatic plants constitute a precious resource for mankind. Since time immemorial these plants have been put to medicinal use by Hakims, Vaidas, Ayurvedic practioners and of course the common man (Gupta et al. 2016). It is because these plants possess a lot of qualities for curing the most common or dreaded diseases without any side effects (Gupta et al. 2016). Unfortunately, with the onslaught of human population explosion, industrialization, fertilization and deforestation, the rich medicinal plants wealth has suffered a massive damage. A large number of medicinal plants are now at the verge of extinction which requires their preservation.

India which stands blessed well vast medicinal plants diversity is estimated to have about 30,000 different plant species world over having accepted medicinal value in Ayurveda, Unani, Homeopathy, Allopathy, Tibetan etc. In fact, out of the 18 hot spots in the world with regard to occurrence of medicinal plants two are confined to India. These two hot spots are represented by the Eastern and the North western Himalayas, and the western Ghats with very high degree of endemism. These are indeed the treasure house of about 30,000 or around 45,000 medicinal and aromatic plant species pertaining to medicinal culture (Gupta et al. 2016). Out of these nearly 6000-7500 plant species have been very much exploited for the last 5,000 years traditional system to medicines and are likely to extinct.

In India, Mahatma Gandhi known as father of the Nation, deserves for imparting credit as pioneer for organic agriculture by way of promoting farmyard manure, compost and advocating use of night soil to enhance the soil fertility and thereby, crop productivity. Organic agriculture possesses lot of advantages over conventional agriculture, especially in areas having low rainfall and showing low soil fertility (Yadav, 2010). Although APEDA (Agricultural and Processed Food Products Export Development Authority) as an apex body which is working to promote the export of organic food commodities. However, lack of adequate certification facilities and the trainings organized, markets for organic foods inadequate, political and scientific will power are some of the hindrances for operating organic agriculture in India. As human and natural resources are readily available in our country, so there is good scope for organic agriculture farming including organic animal husbandry by adopting proper organic agriculture policies.

Agriculture is the main stay of Indian economy as more than 70 per cent of the people of India are dependent upon this avocation and allied disciplines for their livelihood. Even today, at the dawn of 21st century, the Indian agriculture has continued to be the backbone of our national economy, representing country’s one third of Gross Domestic Product (GDP). Thus, farming families consisting of men, women, boys and girls known as the pillars of our agriculture, constitute backbone of the nation. The support and contributions made by the rural women in agriculture, constituting 55-66 percent of farm work force (Singh et al., 2012) are, however, not less than those performed by the men, and therefore they become spine of the rural economy. In fact, women’s role in the economy has been underestimated and their work in agriculture has long been invisible and unappreciated, if we compare the women’s work participation rate of some of the selected countries like Indonesia, Bangladesh, China. Pakistan and Sri Lanka, we find that India ranks second in position (22.7 %) after Indonesia (33.4%).

Rose (Rosa centifolia Linn) belongs to the family Rosaceae is known as flower of love which is cultivated throughout the world. The traditionally grown rose f lowers are fragile wild, bloom only for a limited period. They are found in a few colours of red, pink, deep crimson vis-a-vis white colour. However, with the development of the clonal technology, tissue culture and hybridization, a wide variety of roses can be grown having different colours, fragrances, blooms and shapes. It is point to mention that from the 200 species of roses originally found there are more than 30,000 varieties available these days.

The cultivation of rose is believed to have started about 5.000 years ago in China. Initially, Romans started to cultivate the rose flower using organic manures for medicinal purposes and then tor aesthetic values. Briefly their medicinal values have been mentioned separately as reported by Gupta et al 2016. It is not until late 8th century that cultivation of roses was introduced into Europe. Unlike Europe and America where rosses have limited flowering period during the summer.

Pulses are an important source of proteins. One hundred grams of pulses contain about 25-32 grams of proteins and several amino acids which are not made by the human body (Sidhu, 2015). These are the staple food both for vegetarians and non-vegetarians of the country. India is not only the largest consumer of the pulses in the world but it is also the largest producer and importer. The global production of pulses is about 70 million tonnes, of which India’s share is around 25 percent.

The consumption of pulses is historically part and parcel of Indian culture. However, over a period of time, the availability of pulses has declined from69 gram per capita per day in 1961 to 51 gram in 1971 and 38grams in 1981. Marginally it arose to 42 gram in 1991 which already declined to 30 gram in 2001. The National Food Security Mission (NFSM) was started by the union Government for pulses during 2007. It did not result in a significant increase in the output because pulses are grown only in 16 per cent area which is irrigated. The area under cultivation for pulses varied from 23 million hectare in 2009- 2010 and 26 million hectares 2021-2022 and production was14.6 mt. to 28.9 mt. At present the availability of pulses is about 42 g per capita per day.

The Indian literature viz; Vedas and other related books show that ancient Indians used to impart great significance to the gardens and parks. Indian rulers especially, the kings, the princess vis-a-vis affluent people took special interest in making vegetable gardens in the houses and fruit tree gardens in open areas. In those days, it was considered to be the foremost duty of a king to maintain the beautiful gardens in the city and around his palace. It is even said that only he should be revered as an ideal king whose abode is provided with spacious gardens having full of fruit bearing trees (Krishna murthy 2012). As a matter of fact, the gardens also contained pools and tanks adorned with beautiful lotus blossoms, having a number of plants and bushes laden with large number of fragrant flowers etc. Kautilya has included gardens and fields under the term of “Vastu”. So Vastu Sastra or the science of habitation may be taken to stand for laying out of gardens etc; including both horticulture and agriculture.

Introduction

Since 2001, India’s human beings population has crossed 1000 million, which is presently 1361 million and will became more than 1462 million during 2025. Such a large population of human beings can be fed and clothed only if we make the best use of the country’s land and water resources. While water is replenishable natural resource. Contrary to this, the land is a non-renewable and irreplaceable resource. It, therefore, becomes an imperative to think of about the main problems of protecting/preserving and managing the land resources f irst of all and thereafter managing the water resources. Such an approach will, infant, prove a solution of both of these resources. It is because if the land of the country is looked after properly, the problem of water management would be automatically tackled (Singh, 2007)

Out of the total land area of India, about 329 million hectares (m ha) as many as175 m ha suffer from degradation, caused for the most part by the soil erosion, water logging, soil salinity and sodicity as well as acidity. This denotes that on an average at least two out of every 3 acres (1.2 ha) of land is in poor condition. It is also known that at least half of the sick land i.e., one third of the total is almost completely unproductive. Another one third is partially productive and it is only the remaining one third is in good health.

A number of experts have recognised three different stages in the march of man on the earth. These consist of: (i) When the civilization is dominated by the forests, (ii) When the civilization is overcoming the forest and (iii) When the civilization is dominating obstacles caused by forests. Now a days, Indian Himalayas including that of Jammu and Kashmir is passing through the third stage i.e., to the point of destroying itself in the process.

Deforestation’s relentless march is stripping the Jammu and Kashmir Himalayas bare of its forest cover. From the majestic coniferous forests of Pir Panjal Himalayas to the deciduous and mixed canopy of subtropical forests the story is tragically the same i.e.. the indiscriminate destruction of forests that could turn the state into vast and inhospitable waste land. Hence to sustain and prosper the civilization, the forests must be saved from being further destroyed.

To reduce or to minimize the deforestation, the Social Forestry Project and Agroforestry System came to fore. The primary objective of Social Forestry is to increase supplies of fuel wood and fodder in rural area through plantation on community waste lands, degraded forest lands and on private lands through farm forestry (Patnaik, 1995-96). The latter i.e., Agroforestry is now much more widely used subject than the mere production of wood and food. In the changing scenario of the environmental degradation and ecological imbalance as a result of degradation of the forest resources of the country, agroforestry consists of inviting the prime attention of forests for upliftment of both environment and ecology vis-a-vis to enhance agricultural/horticultural and livestock production. In fact, agroforestry came as a new’ name during the year 1978. Since then, the Indian Council of Agricultural Research (ICAR), New Delhi, has developed a vast network of agroforestry in all 36 centres of Agroclimatic Zones (Tejwani, 2008). However, Dr Tejwani started working with agroforestry during 1957 on fodder fuel plantations and trees on farm boundaries. Hence, agroforestry must be included in the agriculture.

Fruits are an important supplement to the human diet, as they provide minerals, vitamins and fiber required for maintaining good health. Fruits are also rich in phytochemicals (7, xanthophylls, polyphenols, flavonoids, phenolic acids, organic acids etc.) which possess good antioxidant properties. India’s diverse climatic conditions ensure availability of almost all the varieties of fresh fruits and vegetables. According to FAO (2021), the country ranks first in the production of bananas (26.45%), mangoes (including mangosteens and guavas) (43.80%) and papayas (39.30%). The scenario of horticulture crops in India has become very encouraging. The percentage share of horticulture output in agriculture has become 33 per cent (Anonymous 2021). India has witnessed increase in horticulture production over the last few years. Significant progress has been made in area expansion resulting in higher production. Over the last decade, the area under horticulture grew by 2.1 per cent per annum and annual production increased by 3.9 per cent. During 2020-21, the production of horticulture crops was 334.60 million tonnes from an area of 27.74 million hectares. The production of fruits has increased from 76.42 million tonnes in 2011-12 to 108.34 million tonnes in 2022-23 (Agricultural Statistics at a Glance 2022). The area under cultivation of fruits stood at 7.05 million hectares. The total production of fruits in the year 2020-21 was highest in case of Andhra Pradesh (17.70 million tonnes) followed by Maharashtra (11.73 million tonnes) and Uttar Pradesh (11.23 million tonnes) (Anonymous 2021). India now is the second largest producer of vegetables and fruits in the world. The country ranks at first position in the production of banana, mango, lime and lemon, papaya and okra. The area and production of fruits in India is presented in Table 1. The fruits namely banana, mango, citrus, papaya, guava, grapes, apple, pineapple and sapota account for more than 85 per cent of the total production of fruits. The other fruits which are produced in India are almond, walnut, jackfruit, bael, ber, custard apple, kiwi, passion fruit, peach, pear, plum, strawberry etc.

Horticulture crops contribute significantly for the total agricultural production and productivity. World production of fruits accounted for the total volume of 933 million tonnes (FAO, 2023). India being second largest producer for majority of fruit commodities had a production total reaching 108.34 million tonnes in 2022-2023 from an area of 7.15 million hectares. It accounts for 33 per cent to the agriculture GVA (Gross Value Added) and plays an important role in the Indian economy. India is second largest producer of majority of fruits and vegetables. Diverse agro-climatic zones in the country make it possible to grow almost all varieties of fruits in India. Produced fruits are used for domestic consumption, processing and export purposes. During 2022 23, fresh fruits exports was valued at 6219.46 crores (APEDA, 2023). The fruits grown in India includes domestic fruits and nuts along with the exotic fruits contributing for the food and nutritional security. The growth of these economically important fruits provides scope for maintaining rich germplasm, enhance bio-diversity and maintain ecological balance.

Fruits represent a vital component of global agriculture, serving as not only a significant source of essential nutrients but also a lucrative sector of the economy. However, from the moment of their inception on the tree to their arrival on consumers’ tables, fruits undergo a complex journey influenced by a myriad of factors. Among these, pre-harvest practices wield a profound impact on fruit quality, enzymatic activities, texture, ripening, and ultimately, post-harvest transportation losses. Each pre-harvest practice, from mineral nutrition to harvesting methods, plays a distinct role in shaping the biochemical composition and physical attributes of fruits, ultimately affecting their marketability and shelf life. Mineral nutrition stands as one of the foundational pillars of fruit production, with essential minerals serving as building blocks for various biochemical processes. Irrigation practices represent another critical aspect of pre-harvest management, as water availability profoundly impacts fruit development and composition. Different irrigation regimes can influence enzymatic activities, fruit texture, and the timing of ripening, necessitating strategic water management to achieve desired fruit quality while minimizing post-harvest losses. Canopy regulation, achieved through training and pruning techniques, offers growers a means to manipulate light penetration and airflow within the orchard. Moreover, the application of plant growth regulators (PGRs) emerges as a tool for fine-tuning fruit development and ripening processes. By modulating hormonal signals, PGRs can alter enzymatic activities, influence fruit texture, and mitigate transportation losses. However, judicious application is paramount to avoid adverse effects on fruit quality and safety. Harvesting decisions, including the determination of optimal maturity and the timing and method of harvest, profoundly impact fruit quality and post-harvest losses.

Horticulture sector, comprising fruits, vegetables, floriculture, medicinal and aromatic crops, mushroom, spices and plantation crops, had witnessed phenomenal growth in production and productivity during the last two decades. Resultantly, horticulture in India is recognised as one of the fastest growing sectors in the world. The production has reached to 351.92 million tonnes in 2022-23 as compared to 231 million tonnnes in 2010. Progressive urbanization, increased spendable income and awareness for balanced and nutritious food have contributed towards increasing demand of horticulture produce. The increasing demand coupled with higher income returns per unit area has triggered this growth pattern, which has been largely possible due to policy environment to support horticulture both for research and development.

Fresh fruit journey from the farm to the consumer’s table is an intricate process which needs a lot of attention. The way that the produce is harvested and handled is of supreme importance in relation to its quality shelf life and general market attractiveness. Improper handling practices during these critical stages can bring both quantitative and qualitative loses hence the perishable produce will lose its commercial value and appeal to the consumers (Kader, 2005). No doubt the significance of successful harvesting and post-harvest handling practices is crucial and has an impact on quality features and safety in case of fresh fruits. Poor management can cause physical assault ripening speed and more susceptibility to the growth of micro-organisms which makes the produce unsuitable for consumption or processing.

The production of fruit crops is largely dependent on the environmental conditions and nutritional status of the plants. Any alteration in the environmental conditions and nutritional status may results in different physiological disorders which affect the growth of the plants and also the quantity as well as quality of the fruits. The precise and early recognition of physiological disorders is important for the timely adaptation of remedial strategies to reduce the crop loss. Physiological disorders in fruits crops may be due to single factors or multiple factors may be involved in the appearance of physiological disorders. A sound knowledge about the cause of physiological disorder is useful to adopt suitable remedy for the disorder.

Introduction

The abnormal growth behavior or unusual external and/or internal conditions of fruits which results due to adverse environmental conditions and nutritional imbalances are considered as physiological disorders. Physiological disorder is best defined as external or internal malfunctioning resulting from improper environmental or cultural conditions before and/or after harvest. Variation from normal temperature, light, moisture, nutrient, harmful gases, insufficient supply of growth regulators, deficiencies or excesses of nutrient etc. are some of the important environmental and cultural factors of physiological disorders (Fig. 1). Physiological disorders affect the quality as well as quantity of the fruit crops. Detection of precise physiological disorders is not easy and requires a strong knowledge regarding them.

India is the second largest producer of fruits However, the export potential of fruits and vegetables is very negligible. This is because of improper knowledge to the farmer about proper post-harvest infrastructure facilities. Fruits have a high-water content ranging from 70-95 per cent. They dry quickly under any normal atmospheric condition. These causes loss of rigidity and shrinkage of the cells cause wilting and shrivelling. Appropriate packaging ensures prolonged the shelf life of fruits and vegetables by preventing moisture loss and thereby wilting. Transportation is a critical phase in the fruit supply chain that can significantly affect the quality of fruits. Several factors during transportation can lead to quality degradation such as temperature/humidity fluctuations, mechanical damage, transit time etc. To mitigate the adverse effects of transportation on fruit quality, best practices ie, real-time monitoring, temperature and humidity control, loading/unloading techniques can be employed. Quality evaluation is a critical component in the fruit industry, encompassing a range of assessments to ensure fruits meet the desired standards for consumer satisfaction, shelf life, regulatory compliance, and market competitiveness. It involves a comprehensive approach that includes physical, chemical, and sensory assessments, supported by advanced technological tools, to maintain and enhance the quality of fruits throughout the supply chain. This book chapter deals with the effective packaging, transportation, and quality evaluation of fruits, ensuring that consumers receive fresh, high-quality produce.

Introduction

India is bestowed with huge production of fruits, vegetables, cereals, millets, sugarcane along with meat production, milk production, fish production and poultry. Despite such a huge production in India, owing to perishable nature of these produce around 25-30 per cent of the produce is being lost as post harvest loss. The one important reason for this may be the production of the crops are season specific and during the peak season the production is more while demand for consumption is less. It may be possible to cut down losses to great extent, if these produces may be transported from the produce states to those who are not producing due to agro-climatic reasons. So for making transportation of the perishable a successful venture in decreasing post harvest loss, there must be proper storage facilities both at producing site as well as marketing place. The aim of the storages must be to keep the produce in saleable condition during entire storage periods. Some products are stored for short period whereas fresh fruits, vegetables require cold storage. Foods before keeping into the storage room need some pre-storage treatments for better results.

Introduction

Agricultural production is necessary to fulfil nutritional requirements for human populations and global food security. The agricultural sector also forms the economic backbone of many low-income countries in which millions of farmers are employed (Anushka et al, 2022). However, managing agricultural production to achieve multiple objectives of providing food, supporting livelihoods and protecting biodiversity and forests is a challenge especially in tropical, low-income countries (Anushka et al, 2022). Usually, the growth in global agricultural production is largely driven by commercial and export oriented commodities. One such agricultural commodity that has high global demand is cashew (Anacardium occidentale L.). Cashew is presently cultivated in 33 countries including India in the world. Global land area for cashew cultivation between 1980 and 2018 has seen an eleven-fold increase from 526,250 ha to 5,972,724 ha (Anushka et al, 2022).

Coconut, arecanut and palmyrah, which hold significant cultural and historical importance in India, have been the primary focus of cultivation efforts. Cocoa, a relatively recent addition to India, serves as a companion crop to coconut and arecanut, contributing to the economic well-being of farmers nationwide. However, the current situation emphasizes the crucial role of value addition and product diversification in stabilizing prices. Despite the initial stages of value addition in India’s palm crops, recent innovations and established value chains have the potential to empower farmers as entrepreneurs, thereby augmenting their income. Moreover, the value-added products from these palms have enormous export potential. This chapter explores the advancements in value-added products and the diversification of coconut, arecanut, palmyrah, and cocoa, providing insights into opportunities for cottage or small-scale industries.

Oil palm is a major source of edible oil globally and plays a crucial role in meeting the dietary needs of millions of people. India has been focusing on expanding oil palm cultivation to reduce its dependence on imported edible oils. Oil palm can yield high oil compared to other vegetable oils. Palm oil production rate depends on post-harvest handling, and milling and extraction processes. After harvesting, some quality changes occur in oil palm fresh fruit bunches which leads to reduce the oil quantity and quality. With proper handling of post-harvest bunches and adapting best extraction methods can increase the oil yield and quality. Palm oil alone has the potential to make India sustainable in edible oil production.

Oil palm (Elaesis guineensis Jacq.) originated in the tropical rain forest of western Africa and is now being cultivated in more than 45 countries around the world especially tropical regions i.e., Malaysia, Indonesia, Thailand, Nigeria, Columbia, and Ghana. This crop was introduced in India during the early 1990s, to meet the demand and to attain sustainable edible oil production in India due to its high oil-yielding capacity compared to other vegetable oil crops. It produces two distinct oils, i.e., palm oil and palm kernel oil. Palm oil is derived from fleshy mesocarp of the fruit and palm kernel oil obtained from the kernel of stony seed.

India has a very wealthy tradition of herbal medicines for the treatment of many health discomforts.The tradional healing practicese are common and popular among all the tribes and communities.It is evident that many communities have so much belief in their ethnobotanical knowledge that they often prefer a traditional medicineal practicener over any certified medical personality. Among all the plant species which have been already reported by many researchers for their ethno medicinal properties are getting very rare in their original habitat.These plants are obviously of great medicinal importance and immediate need of conservation.Some medicinal plants which are exclusively found in forest are getting lost due to habitat fragmentation and enormous deforestation.

The publication of “Flora of British India” by Hooker (1872-1897) was followed by a series of regional floras by Cooke (1901-08) for Bombay presidency; Prawn (1903) for Bengal: Duthie (completed by Parker & Turrill, 1905-29) for upper gangetic plains and adjacent Siwalik and of sub Himalayan tracts; Kanjilal (1966) for the forest flora of Uttar Pradesh; Gamble (completed by Fisher, 1915-1936) for Presidency of Madras; Haines (1921-1925) for Bihar and Orissa: and Kanji et al (1934-1940) for Assam. Duthie’s work was completed by Raizada and associates (Raizada, 1954, Raizada et al. 1961; 1983; Raizada & Jain, 1964, 1966). Later, Raizada (1976) brought together all additions made to Duthie Flora. However, the trends of additions has persisted afterwards and is hoped to continue onwards as well. Revision of old floras has become all the more important because the nomenclature of a large number of species has changed in accordance with International Code of Botanical Nomenclature (1956, 1961, 1966, 1972, 1978 & 1983).

Collection trips were organized in a planned manner so as to cover every locality in all three seasons. Rural and remote areas which were thus far practically unexplored were surveyed more intensively. Frequency of collection trips was twice a week during first year; once a fortnight in third and once a month in the last and forth years. During the field work, observations on the habit and habitat; flower colour; fragrance; fruiting, colour of the bark and blaze in case of trees and shrubs; dominance and sociability of the collected plants were entered into rough field book. In the mean time information regarding medicinal or other uses, if any, were gathered from local inhabitants, vaidyas and haquims. Plants of small size were uprooted carefully and pressed as such. In case of larger plants, care was taken so that specimens should have flowers, fruits, leaves and stems of young and old stages. At least four specimens, for making herbarium sheets, were pressed at spot after tagging; and a tagged bundle of a few plants was taken in a polythene bag for study in laboratory.

Insects are prevalent on this globe due to their varied adaptations and hence constitute the largest component of the animal kingdom. Only around 5 per cent of the total insect species, act as pests, rest either are beneficial like honey bees, lac insect, silk worms etc. or are harmless. Insect pests can be of medical, veterinary, house hold and agricultural importance, as these creatures harm our health, animals’ health, our belongings and also the agricultural health. Though all these components are equally important but, in this book, the last one i.e. agricultural health, have been taken into consideration. Insect pests cause around 20 per cent loss to our crops by directly or indirectly affecting the crops both quantitatively and qualitatively. The insects have different types of mouth parts which are used for sucking, biting and chewing, sponging and lapping, siphoning etc. for food required for their survival and the insects with sucking and biting, and chewing types of mouth parts cause much of the damage. The mites (Phylum Arthropoda) though do not belong to class Insecta but in some instances also are of economic importance as they cause economic damage to agricultural crops and produce.

Various insect and mite pests infest fruit and plantation crops in different stages of crop growth directly or indirectly causing significant losses, hence need their management. The major pests of different fruit and plantation crops, their identification characters, life history, nature of damage and symptoms alongwith its management practices are described crop wise:

Temperate fruits

Pome fruits and stone and nut fruits are mainly cultivated in the temperate regions, which usually requires chilling requirements. Among stone and nut fruits cherry, apricot, peach and plum are the main crops whereas among the nut fruits, walnut, almond are major crops which are a source of handsome income to the orchardists of those areas. The insect and mite pests of pome, stone and nut fruits are described hereunder:

The stone fruit crops namely peach, Prunus persica, plum, Prunus domestica, apricot, Prunus armeniaca, almond, Prunus dulcis and walnut, Juglans regia are grown in wide range of climatic conditions ranging from subtropical to temperate regions. Peach and plum are also cultivated in mid and low hills in addition to temperate regions. Peach is the major stone fruit crop followed by plum, apricot and cherry. Walnut and almond on the other hand are major nut crops. A number of insect pests (~80) infest stone and nut fruits in various stages of the tree growth and development and cause direct and indirect loss out. Only few pests are of economic concern, the details of which are given hereunder

Subtropical and Tropical Fruits

Most of the area of India experience subtropical and tropical climate. Subtropical and tropical fruits contribute maximum to the overall fruit production. Major fruit crops cultivated in subtropical and tropical region are citrus, mango, litchi, guava, sapota, pomegranate, banana, ber, sapota, grapevine, papaya etc. Various pests affect the fruit production by infesting at various stages of the tree growth quantitatively as well as qualitatively. The pests of these crops are described fruit wise.

Citrus

Most of the area of our country is tropical and subtropical, where the citrus, Citrus spp. cultivation is practiced and main citrus growing areas are in Maharashtra, Andhra Pradesh, Punjab, Karnataka, Uttarakhand, Bihar, Orissa, Assam and Gujarat. As for as the ranking in the world

Mango, Mangifera indica is indigenous to India and ranks at number one as for as production and export are concerned. The productivity of mango in India is low (6.6MT/ha) and one of the reasons for the same is pests associated with the crop at varying stages of the tree growth. Around 175 insect pests have been reported to infest mango but only few are the major pests the details of which re provided hereunder:

Mango hopper, Idioscopus clypealis (Lethiery); I. niveosparsus (Lethiery); Amritodus atkinsoni (Lethiery) (Cicadellidae: Hemiptera) Hoppers constitute one of the most destructive pests of mango throughout the country. The eggs are dull white and concealed inside tissue. The colour of the nymphs vary from dust yellow to pale yellow and these nymphs walk in a crab like manner. The adults are small wedge shaped grayish insects measuring3.4-5.1mm in length. Amritodus atkinsoni is comparatively bigger and light brown in colour with two spots on scutellum, while Idioscopus clypealis is smallest and lighter in colour with dark spots

Litchi, Litchi chinensis, is one of the important fruit crops of South East Asia and Australian Continent. The crop thrives well in sub-tropical areas experiencing cool dry winters and warm wet summers. India and China are the major producers of litchi in the world. In India, Bihar, Uttarakhand and West Bengal contribute maximum in litchi production. Few major insect pests and mites are of concern, the details of which are as under:

Red rust, Eriophyid mite, Aceria litchii Keifer (Eriophyidae: Prostigmata) and red rust alga, Cephaleuros virescens Kunze (Trentepholiaceae: Trentepohliales)

Guava, Psidium guajava is one of the important fruits of tropical- sub-tropical regions of the world. It is a native of American tropics and probably originated from Peru north to Mexico and the Caribbean. The major producing countries include India, Brazil and Mexico, of which, Brazil is the largest producer of guava in the world. In India, it is grown over an area of over 2, 05,000 hectares with a production of 2.46 million metric tonnes. The fruit is rich in vitamin C and A. It is used both for processing and for table purpose world over. More than 80 insect pests have been reported to inflict varying degree of damage at different stages of crop growth. The important ones of these are discussed hereunder;

Ber, Ziziphus mauritiana is indigenous to India and was called as poor man’s fruit earlier. But now it has become a good source of income to the orchardists, in the arid and semi-arid regions of the country, mainly with the development of new varieties. A number of insect pests (around 150) infest the ber tree but only few are the major ones, the description of which is provided below:

Fruit fly, Carpomya vesuviana Costa (Tephritidae: Diptera)

It is a major pest of ber in all the ber growing regions and proves as a bottleneck in its production and productivity. It is monophagous and develops only in fruits of Ziziphus spp. Most of the cultivated varieties are susceptible to this direct pest. The eggs are small, elongate, spindle shaped and creamy white. Maggots are creamy white (Plate 9a) and slightly smaller than maggots of other fruit flies. Pupae are barrel shaped and brown. Adults are smaller than housefly, brownish yellow with brown longitudinal stripes on the thorax. This fruit fly can be distinguished easily from other species due to distinctive pattern of black marks on the scutum and scutellum (Plate 9a). Wings are hyaline with four yellow cross bands.

Pomegranate, Punica granatum is a non-climacteric fruit belonging to smallest Botanical family Punicaceae. In India, Maharashtra is a leading producer of pomegranate followed by Gujarat. Around 90 pests are reported to feed on pomegranate plant out of which only few are of economic concern. The major insect pests and mites are discussed herewith:

Anar butterfly, Deudorix epijarbas (Moore); D. isocrates (Fabricius); (Lycaenidae: Lepidoptera)

Pomegranate fruit borer, commonly known as anar butterfly is a polyphagous direct pest found throughout the country. In addition to pomegranate, it also feeds on number of crops viz. litchi, citrus, loquat, guava, sapota, aonla etc. Even the wild pomegranate is heavily infested by the fruit borer. Two species namely Deudorix epijarbas and D. isocrates are reported feeding on pomegranate out of which the former is found in hilly terrain of Northern India whereas, the latter exists in the plains of the country. The eggs are glossy, light green and shiny. The larva is dark brown with short hairs and bears whitish patches all over the body (Plate 9d). The full fed larva measures 17-20mm. The adult of D. epijarbas is a brownish butterfly with an orange patch in the
