The focus is on maintaining the integrity of studies that directly impact animal welfare, public health, and agricultural sustainability (World Organization for Animal Health, 2018; FDA, 2010). In the context of veterinary medicine or treatment aspects, GLP in veterinary refers to a a well organised quality system that governs the organization and conditions under which non-clinical studies related to animal health and safety are planned, performed, monitored, recorded, reported, and archived. This includes:

Revolutionizing skin cancer detection
The diagnostic process for skin cancer is evolving. Physicians have in the past relied upon physical exams to be followed by scanning and biopsies taking anywhere between 15 days to return results. Although most abnormalities turn out to be non-cancerous, this is distressing to patients and contributes to healthcare costs. Additionally, certain growths that turn out to be cancerous remain undiagnosed since they have not been visible.
Breakthrough startup Damae Medical is set to reverse this process. The startup has developed an advanced probe that is able to take 3D images of the skin to unveil the full extent of abnormalities in real time. This enables doctors to diagnose in an instant, enabling improved personalized treatment. When an operation is required only diseased tissue is removed to prevent unnecessary treatments and improved outcomes in patients.
The Origins in the Institut d’Optique
The beginnings of Damae Medical can be traced to Palaiseau-based Institut d’Optique where in 2013 two photonics students envisaged potential in an emerging imaging tech. Together with the inventor himself in 2014, they cofounded Damae Medical by taking an exclusive license to the core family of patents held by three partner institutions. While this contract was beneficial in launching the company to an early growth spurt, in the long run created difficulty in exercising control. This was resolved by taking an equity-forcontrol purchase in 2019 by Damae to acquire the foundational patent

Technology transfer (TT) is entering a transformative phase shaped by globalization, digitization, and the growing role of start-ups in the innovation ecosystem. Traditional linear models of TT where inventions flowed from academic laboratories to industry through licensing are being replaced by dynamic, multi-directional, and collaborative frameworks. This chapter explores emerging trends that will define TT in the coming decades, including open innovation platforms, digital TT ecosystems powered by artificial intelligence (AI) and blockchain, the rise of entrepreneurial start-ups and spin-offs, internationalization of TT through cross-border collaborations, and sector-specific shifts driven by 5G, biotechnology, drones, and green energy. Drawing from global and Indian contexts, the chapter highlights how universities, governments, and industries can leverage these trends to build inclusive, resilient, and sustainable innovation ecosystems.
Three global shifts which will redefine TT
1. Digitization of knowledge: With AI, big data, and blockchain, knowledge and IP can be shared, tracked, and commercialized faster and more transparently.
2. Entrepreneurial ecosystems: Start-ups, incubators, and accelerators are replacing traditional firms as vehicles of commercialization, particularly in deep-tech and frontier technologies.
3. Globalization of innovation: Challenges such as pandemics, climate change, and food security require cross-border TT collaborations, making TT an instrument of both economic and geopolitical significance.

13.1 Challenges in the technology transfer process
Technology transfer (TT) is more complex and involves the complex interrelationships between universities, research institutes, the private sector, the state, and society. Though TT is all about translating research findings into purposeful solutions that can support the economy and society, it is not a linear process. The challenges can be described as legal, institutional, cultural, financial, policy, and human resource. All this is accompanied by bottlenecks that inhibit or decelerate the diffusion of promising technologies.
13.1.1 Legal and intellectual property challenges
The vital component of technology transfer is the proper management of intellectual property (IP), which is often the most challenging aspect.
• Ambiguities in IP ownership: During multi-institutional or shared funder research, ownership is quite controversial. As an example, when a government lab and a university collaborate on the project, there is ambiguity as to who would have the ultimate licensing authority over the technology: the university, the lab, or the funding agency. This kind of fight hinders commercialisation and scares off industry partners.
• Lengthy patent filing and prosecution timelines: In several jurisdictions, the filings, examination, and granting of a patent may take between three and five years or more. Such delay is not compatible with the rapid cycle of invention in other fields such as ICT or biotechnology, where patent claims may become invalid before they are granted.
• High costs of IP protection: International direct patenting, like under the Patent Cooperation Treaty (PCT), is costly and involves legal services, fees, and upkeep costs. These costs are excessively high, which cannot be easily compensated by universities and startups, and where technologies are not secured or limited to local markets.

Incentives are a powerful stimulus to transfer of technology. They can encourage researchers to get their results to market, a new career path for many of them. They can create a culture that attracts and retains entrepreneurial staff, scientists, students and technology transfer professionals (TTPs) that view the university as a career path and a vehicle for making a contribution to society. Working in a pro-entrepreneurship team of colleagues can also lead to getting people to think in terms of making a connection between their work and its application. Incentives can be short-term or long-term in nature, and can be tailored to individual or collective requirements. As it is likely to be challenging for universities to design incentives that cater to every researcher’s or TTP’s desire, they can design incentive programs to cater to various aspects of human. Nature.
12.1 Why incentives matter in this ecosystem
Incentives can be either financial and non-financial. These are needed to ensure that researchers and TTPs remain motivated, aligned with institutional goals, and committed to the long-term process of technology transfer and commercialization. Incentive programs serve several important purposes:
• Motivation: Incentives energize individuals to pursue innovation and commercialization, often over long- and uncertain-time horizons.
• Retention: By offering recognition, rewards, and career advancement opportunities, institutions can retain high-performing researchers and skilled TTPs.
• Alignment: Well-designed incentives ensure that the personal goals of stakeholders align with institutional and societal objectives.

A TTO fills the important intermediary position of linking research institution with industry so that innovations and new ideas can reach market. To be able to facilitate that effectively, the institutions must have well-defined R&D policies that include Sponsored R&D, Collaborative R&D, and Grant-in-Aid R&D. These ensure that the research remains properly managed, regulatory compliance assured and aligned with institutional priorities. This chapter has discussed about key policies that can help in successful operation of TTO while aligning institution’s mission and interests Various core policies that help in successful technology transfer include:
• Intellectual property policy
• Technology transfer policy
• Revenue sharing policy
• Startup/Spinout/Venture creation policy
• Conflict of interest/Conflict of commitment policy
Each policy has specific objectives. These policies collectively ensure a clear and consistent framework for technology commercialization.
11.1 Intellectual property policy
An IP policy is a formal document that provides guidelines for managing IP by an organisation. A strong IP policy build trust by ensuring efficiency and transparency. Other benefits of IP policy includes creation of environment to encourage innovation and commercialisation of IP. It also lays foundation to set out the rules for public-private partnerships while addressing issues among various stakeholders and ensures compliance. IP Policy is not law, but a proposed course of action.

Performance metrics and indicators
Traditionally, in the past, TTOs’ performance was measured in monetary terms, such as universities’ revenues derived through commercialization. The methodology, however, is prone to shortcomings, in light of the fact that various TTOs do not receive significant amounts of financial proceeds through their technology transfers. In addition, relying on income does not depict a TTO’s true potential, in light of the fact that it does not account for the total range of outputs of research and commercialization opportunities. Recognizing these limitations, academics have found innovative ways to measure TTO efficiency, such as monetary and non-monetary indicators. Financial indicators typically entail measurable outcomes such as number of signed licenses, income from licenses, royalties collected, equity income, and number of spin-offs or startups created. These are actual gauges of the economic returns from commercialization efforts, and in the majority of instances are used in the context of benchmarking the performance of a TTO in a comparative context, perhaps against peer institutions or industry averages. Non-financial indicators consist of royalty distributions to academics, having an integral role in encouraging academics to participate in commercialisation activity. By incorporating monetary and non-financial metrics, universities might have an enhanced, comprehensive evaluation system for their TTOs. Such evaluation is sure to ensure assessment extends beyond short-run monetary metrics and looks to incorporate several organization, institutional, and research-oriented determinants in driving successful technology transfer.

A TTO needs a planned budget of five years to sustain it in the long term. This involves budgeting the infrastructure, manpower, research, and outreach programs. The budgetary needs of a TTO will be based on the size and scope of the TTO and the maturity of the parent institution it caters to. The initial years will be focused on capacity development, the appointment of experts, and the establishment of processes of intellectual property management. The mature TTO will generate income through the returns of the licensing agreements and the collaborative efforts with the industry. Nevertheless, external funding through grants and government schemes plays a vital part, particularly in the initial years. The planned budget ensures long-term stability and development of the TTO.
9.1 Budgetary heads
9.1.1 Operational expenditure
Operational expenditure refers to the ongoing costs incurred by a TTO to maintain its day-to-day operations. This includes the cost of maintaining the office, including rent, power and utility bills, computer and network infrastructure, patent management cost, and administration charges. The filing and legal charges also fall within this category. The overheads will be a heavy burden if not planned with finances properly. A TTO has to be provided with a properly planned operational budget that covers the daily operational expenses. The operational expenses help the office perform effectively, sustain the employees, and effectively manage IP. The operational expenses that the budget normally covers include:

8.1 Key legal statutes and regulatory foundations
Various policy measures were also undertaken by the Government of India in due course of time. The Government of India enacted four science policies after gaining independence, i.e. Scientific Policy Resolution (1958), Technology Policy Statement (1983), Science and Technology Policy (2003) and Science Technology and Innovation Policy (2013). The 1983 Technology Policy Statement possessed a simple goal of creating indigenous technology and boosting efficient absorption and adaptation of imported technologies suited to the nation’s priorities and. The Technology Policy Statement of 1983 was followed up through the establishment of the Technology Information Forecasting and Assessment Council (TIFAC), an autonomous organization entirely owned by the Government of India under the Department of Science and Technology during 1988. TIFAC also offers some funding and supports development and commercialization of technologies through the home-grown technology scheme, among its other operations. The Technology Development Board Act (1995) was also a significant policy move of the government in the same direction. Also in recent times, the Government of India also unveiled its own National IPR Policy 2016 with the motto cum slogan “Creative India, Innovative India”. In addition, the policy is aligned to a number of other schemes of the Indian Government like “Make in India”, “Atal Innovation Mission”, “Start-Up India” and “Stand-Up India”, all aimed at encouraging creativity, innovation and entrepreneurship in the nation.

In today’s innovation driven economies, turning a great idea or new technology into something investors want to fund takes careful planning. This process is called investor readiness. which means making sure the idea works, has a market, and is presented in a way that makes investors feel confident. Therefore, Investor readiness means the preparedness of an innovation to attract and secure investment from potential investors. It has all the essential parameters in place that an investor would evaluate before deciding to invest. For inventors, this means showcasing innovation’s business potential, potential for growth, and the capability to provide a return on investment. Understanding investor readiness is important because it directly influences scalability and growth of invention. Even the most innovative ideas can struggle to find the financial benefits without showcasing business potential.
Why it is important to discuss investor readiness
Investor readiness is the state in which a technology, its value proposition, and its founding team are significantly prepared to engage with securing funding from potential investors. Without investor readiness, even high-potential innovations may fail to reach the market due to gaps in business clarity, legal assurance, or team maturity. TTOs play an important role in this process by acting as intermediaries between inventor and investors. Modern day TTOs are more inclined to prepare technologies and associated teams to attract investment. This expanded mandate of TTOs and brought in investor readiness. It requires a wellstructured approach focused on aligning academic innovations with investor expectations. TTOs help in creating this readiness by guiding researchers through commercial pathways, derisking technologies, and translating technical advancements into investment suitable.

Strategic partnerships and productive outreach play a crucial role for new technologies to successfully reach the market, drive growth, and strengthen a country’s global competitiveness, Outreach programs have various benefits, ranging from technology transfer awareness, communication of stakeholders, industry, government, to academy partnership promotions. These efforts help in establishing connections, communicating opportunities, and encouraging active engagement from key stakeholders. Outreach activities can be performed under two broad categories:
1. Written communication includes all communication which can be viewed, shared, or made accessible for a set of people in a passive manner. This includes reports, newsletters, guidance, and online content which provide insights of worth for stakeholders.
2. Human outreach includes all direct communication like c face-to-face or verbal form communication it included conferences, conventions, workshops, seminars and personal communication with industry leaders.
The type of outreach creates stronger, more personal connections. An effective outreach strategy usually combines both human and written outreach efforts. By following this strategy TTOs can expand and strengthen partnerships, and make it easier for research-led innovations to get transition from lab to market more effectively. This chapter explores key outreach models, strategic networking approaches, and proven practices for building impactful partnerships in technology transfer.

5.1 Technology readiness levels- Introduction
Technology readiness levels (TRLs) is measurement of the maturity level of a particular technology. These are based on a scale from 1 to 9, with 9 being the most mature technology. It is a map that shows whether a given technology is in a conceptual state or can be used in real-world applications and ensures innovations are thoroughly tested before being applied on a large scale. The TRL scale uses a set of questions designed to measure progress of a technology toward maturity. They help in reducing risks and improving efficiency. TRLs were initially designed in the 1970s for use by NASA to assess how prepared a technology was for space missions. Technology for space travel is always extremely sophisticated and with a high degree of risk. NASA required a system to assess systematically whether or not a new technology was ready to implement. By breaking down development into different levels, NASA was able to provide informed decisions on which innovations were ready to incorporate (figure 12). In due course, TRL proved to be so effective that other industries began to use it. Other entities like the European Space Agency (ESA), U.S. Department of Defense (DoD), BIRAC, DRDO and many other agencies have taken , to using TRL to guide R&D strategies. TRL helps in simplifying development, decreasing risks, and maximizing resource utilization.

4.1 Phases of technology transfer
To translate laboratory research into market ready product, it is important to understand steps or phases involved in this technology transfer process. The process typically includes six main phases, each with a different role (figure 9).
4.1.1 Research
Technology transfer begins with research, the critical stage of exploring and discovering novel knowledge, technologies, or innovations that may have potential commercial applications. The research phase can occur in academic institutions, research organizations, or private sector companies, often funded by public or private sources. Thorough research ensures that the technologies being transitioned are scientifically and technically robust, thereby increasing their potential for market success. Therefore, the research phase involves creating and evaluating new ideas, confirming their feasibility, and identifying IP prospects, all of which are key components of TT success.
4.1.2 Innovation disclosure
Innovation disclosure is the first formal step where the innovation is reported to the appropriate TTO or IP management team. This process ensures that the institution or organization recognizes the innovation and evaluates its potential for protection and commercialization. It includes following information:

The success of a TTO relies on a systematic approach encircling factors like assessment, valuation, marketing, negotiation, and post-transfer management (fi gure 8). This chapter covers the activities that are essential for the effective functioning of a TTO. 3.1 Technology assessment - A pillar of innovation commercialization
The process of transitioning an innovative technology to commercial reality requires a stringent and formal process known as technology assessment. This early stage is crucial as it determines the viability of an invention by analysing practicability of the invention as well as its uniqueness and the likelihood of it being adopted in the target markets. In the absence of this preliminary examination, the chance of technology’s potential being mismatched to the market can arise.
a) Scientific merit and technical feasibility
A key benchmark in assessing technologies involves the identification of
scientific validity and technical performance. An innovation’s viability depends on the fact that it complies with good scientific practice or the innovative application of a new paradigm that has empirically confirmable validity. It is important to determine whether the invention’s underlying mechanism can be reliably proven through established scientific practice. A working prototype allows for empirical testing in different conditions and serves as proof of practical application. In addition to that, scalability has to be tested critically. It often happens that innovations perform well in a controlled laboratory setting but lose efficiency or cost-effectiveness in the case of mass production. The viability of the implementation on a grand scale becomes a core concern in this phase of the evaluation.

The establishment of a technology transfer office is an important and complex process for an organization. It needs careful planning to ensure its long-term sustainability. Before establishing a TTO, it is essential to evaluate whether institution’s core mission includes research commercialization, and if the volume and quality of its research output justify the need for an inhouse TTO. For institutions that may not meet all criteria, those institutions can collaborate or outsource for TTO services. It is also important to decide about its operational scope, funding, management, and for what kind of issues the office should develop a policy. There is no “right” way to set up a TTO, but successful TTO does require considering some key issues. This chapter outlines key steps and considerations for establishing a TTO. It also explains what physical infrastructures are needed, manpower, outlines the responsibilities and powers of TTOs.
2.1 Evaluating the need for a TTO
Establishing a TTO is an important step for any research focused organization. But before initiating a planning process for a new TTO, the organization must review its relevance by considering a few fundamental points:
Key considerations for institutions
1. Is institution’s mission focused on “research commercialization” If an institute’s primary mission is education, or it does not support research it might not be justified to create a TTO. For such institutions, it usually makes better sense to seek alternative solutions to the occasional technology transfer without the expense of a formal office. But institutions with strong research commercialization focus, a TTO has the ability to contribute meaningfully to the mission. The Association of University Technology Managers (AUTM), USA has identified following key motivations for initiating academic technology transfer:

Introduction
Understanding the concepts of technology transfer, licensing, and commercialization is crucial as it plays an important role in understanding how scientific discoveries leads to generation of new technologies further making them the impactful solutions that benefit industries and society. In the context of Indian HEIs, this especially important because a large volume of impactful research often remains underutilized due to limited commercialization channels. This chapter explains the terminology, essential components of technology transfer, outlines its significance for the innovation ecosystem. It also outlines the evolution of India’s technology transfer ecosystem, and emphasizes while understanding its potential to boost India’s economy, encourage entrepreneurship, and strengthen global competitiveness. From initial idea to a market-ready product is complex and multiphased process. The stepwise process is shown in Figure 1. It highlights a structured pathway consisting of five core phases: Idea/Concept, Technology development, Intellectual Property (IP) rights, Technology transfer, and Technology commercialisation.
Phase 1: Idea/Concept stage
This process of technology transfer starts with the Idea/Concept phase, where an invention is created. Each phase plays an important role in transforming raw scientific knowledge into innovative solutions that benefit society and generate economic value. In this phase breakthrough ideas emerge, within labs. Researchers explore and develop initial proof-of-concept or prototypes to validate their ideas. At this stage, the focus is primarily on knowledge creation rather than commercialization. This pathway of technology transition is summarized in Figure 1.

“Quality Control” constitutes the very backbone of the success in any industry, in any field of activity, may it be agriculture or spices, since quality is never an accident, but, the result of a conscientious effort, as rightly visualized by John Ruskin. The quality of spices is evaluated by the following three types of techniques:
1. Physical or sensory evaluation
2. Proximate physico-chemical composition and determination of chemical constituents
3. Nutritional assessment
In the following table (Table 61) presentation of the five proximate physicochemical compositions of 5 minerals and 5 vitamins in as many as 35 spices is presented. Since most of the spices are used basically in small quantities in both vegetarian and non vegetarian food as “Food Additives”, they contribute directly very little to human nutrition, but, indirectly spices can play a very valuable role in healthy human nutrition by not only helping to increase the appeal and appreciation of the food dishes, but, also in various other ways as agents with nutraceutical and pharmaceutical properties. For instance, Turmeric has been found to have immense pharmaceutical and nutraceutical properties. Most recently, it has been found to be very beneficial during the covid pandemic. Excepting in most restrictive diets, spices are regularly used in most food preparations and they can make a difference which persuades a patient to stay faithful to an otherwise unappealing diet. The analysis confirm that even the highest calorie spice, Poppyseeds, will add no more than 2 or 3 calories per serving in normal usage. This should be good news, in particular, to weight – watchers. Considering the amounts used, the others typically contribute no more than a calorie per serving, and, usually less than that. Having this definitive data at last, nutritionists and all those interested in good nutition may utilize spices to their full potential in making wholesome foods as excitingly delicious as they are good for us.

Galangal is the dried rhizome or root of a plant, Alpinia galanga Linn. Willd. which grows mainly in the Eastern Himalayas and South-Western India. The plant is 1.8-2.1 meters high, and bears perennial rhizomes which are deep, orange-brown in color, aromatic, pungent and bitter. The fruits are about 13 mm long, constricted in the middle, and contains 3-6 seeds. The seeds are slightly pungent, with an aroma similar to that of the rhizome. Cut pieces of the rhizomes of this species are known as “Greater Galangal”. The rhizome of “Lesser Galangal” is smaller and reddish brown in color, and, has a stronger odor ansd taste. According to Guenther (1973) Galangal root is also known under the names of “Smaller Galangal” and “Radix galangal minoris”. The earliest reference to this spice is that of an Arabian geographer Ibn Khurdabah (869-895 AD), who included Galangal in a list of products from a country he refers to as Sila (which was undoubtedly China). Sometimes later, Plutarch made reference to the use of Galangal as a fumigating spice by the early Egyptians. In 1153, it was mentioned by Edrisi as an incoming spice into Ade, which was then the port used by the Egyptians for all Asiatic products. In his travels, Marco Polo mentions that it was produced fairly extensively in Kachanfu and Kinsai (Tonkin). Galangal is one of the spices which reached European markets relatively early, for it is mentioned along with Black pepper in the literature of the Middle Ages, where it received praise in various writings dealing with drugs, medicines etc. The source of the spice which was reaching the European market remained almost unknown until the last century, when in 1867, a plant of unknown botanical origin was discovered in the extreme south of China. The following year, Hance examined both dried and living specimens of the plant and was able to conclude that it was the same as the “Lesser Galangal” known to the pharmacists.

Long Pepper or Pipli is the dried fruit of Piper longum, which is a slender, aromatic climber with perennial woody roots, occurring in the hotter parts of India, from the Central Himalayas to Assam, Khasi, and Mikir hills and Lower Hills of Bengal, and evergreen forests of the Western Ghats from Konkan to Travancore in Kerala State, India; it has also been recorded from Nicobar Islands. The plant has creeping jointed stems; young shoots are downy; leaves are 5-9 cm long, 3.5 mm wide, ovate, cordate, with broad rounded lobes at the base; female spikes are cylindrical, pedunculate, male spikes are larger and slender; female spikes are 1.3-2.5 cm long and 4.5 mm in diameter; fruits are ovoid; yellowish orange, minute, droop and are sunk in fleshy spike. The female spikes are sharper, sessile and blunt at the tips and erect, are red when ripe; flowers are numerous and packed. Indian Long Pepper is mostly derived from the wild plants, the main sources of supply being Assam State in India, followed by West Bengal, Nepal and Uttar Pradesh. Small quantities are also available from evergreen forests of Kerala State, West Bengal and certain parts of Andhra Pradesh. It is reported to be cultivated at lower elevations in the Annamalai hills in Tamil Nadu, India, and in parts of Assam, in particular, the heaviest (in India) rainfall region, Cherrapunji. It is cultivated in Meghalaya also; India produced about 200 tonnes in 1990-91. The Long pepper, as sold in India, appears to be derived from 2 or 3 species, including one which is Indonesian. Indian Long Pepper is a product of either Piper longum or Piper peepuloides, while the Indonesian or Java Long Pepper imported from Malayasia is from Piper retrofractum. The fruits of these species are used for the same purpose, though they do vary in their comparative effectiveness.

Description and Distribution
A near relative of Turnip, Cabbage and Mustard. It is one of the oldest condiments, and is a well-known, large-leaved, hardy perennial in many long-established gardens. It is the thick, white, fleshy, tasty root of the Horse- Radish, which is highly prized as an appetizing condiment which goes well with many food items. A native of the marshy districts of Eastern Europe, it is grown in the USA, and to some extent in the gardens, both in the northern India and in the hill stations of the southern India. In the USA, about 7 million kilograms of Horse-Radish are processed annually for consumption as food. Cultivated over 1500 acres in the USA, its varieties are classified into two types, namely, Common and Bohemian. The Common type has, broad, crinkled leaves and produces a root of high quality. The Bohemian type has, narrow, smooth leaves, is diseaseresistant, but, yields poorer quality roots. Horse-Radish plant is highly sterile and hence is propagated asexually by the root. The tap root is tuberous and cylindrical, 30 cm long and about 18mm in diameter, possesses an acrid, pungent taste, and, when scraped or bruised, emits a characteristic pungent odor (Guenther, 1973). The root contains a pungent, acrid and vesicating volatile oil. The pungency is due to the presence of “Sinigrin”(potassium myronate), a sulfur-containing glucoside, which, in the presence of water and under the influence of an enzyme myrosinase, yields allyl mustard oil or allyl isothiocyanate, as by mustard seeds (Willstater and Stoll, 1918, Stoll and Seeback, 1948).
Area, Production and Export
Horse-Radish, being a garden crop, so far, there is no recoded data on any of the aspects of area, production and export from India.

Description and Distribution
Sweet Flag or Calamus is reported to be common in Kashmir and Kumaon ranges of the Himalayan forests. The rhizomes are collected from the Himalaya forests and brought to Kathgodan, from where they are despatched to Mumbai, Kolkota and Kanuaj. It is a semi-aquatic perennial herb with a creeping and much branched aromatic rhizome. The rhizome is cylindrical or slightly compressed, about 19-25 mm in diameter and about 10 cm long. Externally, it is light brown or pinkish in color, and, white and spongy within. It is thoroughly washed in water, freed from dirt, and rootlets are removed and then carefully dried at a low temperature. It deteriorates with age and is subject to attack by worms. It is this dried rhizome, which constitutes Calamus or Sweet Flag, which is used as a condiment and as a pharmaceutical product . It has a reputation as a healing herb for its use in medicine. It is found wild as a water weed in shallow margins of creeks, lakes, pools and some rivers, throughout India and Sri Lanka, ascending to 1830 meter above mean sea level in the Himalayas. The plant thrives in marshy places and in most situations, like the edges of lakes and banks of streams. It is cultivated in one district , Kotagere, in Karnataka State, India. Curiously enough, the cultivation of Sweet Flag has not been extended to any other part of the State. It is also cultivated in Europe and USA, more for medicinal purposes.

Thyme is one of the best known European culinary herbs. The dried leaves and flowering to ps of Thymus vulgaris Linn. are called Thyme and those of Thymus serpyllum wild Thyme, which is found in the Western temperate Himalayas, from Kashmir to Kumaon hills, India, at an altitude of 1,525 meter above mean sea level. Thyme is grown in Europe, Austria and North Asia. It is now cultivated in France, Germany, Spain, Italy and other parts of Europe and, also, in England, North Africa, Canada and the USA. It is a common garden plant which survives for many years under good culture. The dried leaves are curled, are of brownish-green color, usually no longer than 6-7 mm and 2-3mm broad and marketed in whole or in ground form. The flavor is aromatic, warm and pungent. Wild Thyme is a low, hardy perennial, undershrub, 20-40cm high, successfully introduced into the Nilgiris district of Tamil Nadu, in Southern India, or at higher elevations. It is used both for seasoning and for its volatile oil, ranging from 1.08-2.0% (average 1.0%), and in India, its cultivation on a commercial scale can be tried in the western temperate Himalaya from Kashmir to Kumaon hills between 1500 and 4000 meters above mean sea level. The plant can be grown for ornamental edging along the paths in gardens, and is also suitable for rockeries. Leaves are oblong-lanceolate, 10 mm x 3 mm, with orange-brown glandular dots; flowers are coriaceous, small, lavender, purplish to almost white in color, attractive to honeybees, in pubescent verticillaters (Plants that have their flowers intermixed with small leaves growing in a kind of whirl are called verticillate plants); nutlets are brown in color.

Description and Distribution
The dried leaves and flowering tops of Artemisia dracunculus Linn. constitute what is known as “Tarragon”, or, “Estragon”, so well - known to connoissuers, the world over, for its extraordinary flavor. Sometimes, it is also called French Tarragon. Its aroma is warm, aromatic, and reminiscent of Anise. It is a perennial herb found in Western Tibet (4265-4880 meter above mean sea level) and in Lahaul. It is distributed in Afghanistan, Western Asia and South and Middle Russia. It is cultivated in Southern Europe, (France, Spain), temperate zones in the USA, as well as, throughout the colder New England area. It grows to a height of about 2 feet (Pruthi, 1997).

For planting, a cluster of Estragon roots is divided into several segments, these segments are planted in the field in the months of February/March.

Both possess a pronounced thyme-like odor and flavor. And, both are employed in culinary preparations. The oil of the two plants is closely related in chemical composition. The oil can be obtained by steam distillation of the herb. The dried leaves and flowering tops derived from S.hortensis constitute winter Savory of commerce. The best quality of savory comprises of dried leaves only. S.hortensis constitutes summer Savory. Savory is an erect pubescent annual herb, 20-30 cm in height with pinkish branches, fund in Kashmir State of India. Leaves are oblong – linear or lanceolate with deep-pitted glands on both sides. Flowers are small auxiliary cymes. It grows in Southern France, Germany, Spain, and other parts of Europe, also in England, Canada and the USA. The dried leaves are brownish-green in color, up to 10 mm in length. The odor is strong, warm and highly aromatic; the taste is somewhat sharp and camphoraceous. It is marketed both in whole and ground form. Satureia hortensis Linn., the summer Savory or Garden type, is largely cultivated, although it also grows wild, to some extent. An annual, it is less developed than Satureia montana. Its stalks are herbaceous, covered with soft and linear leaves. The branches frequently are reddish in color. Flowers of the Garden Sage are whitish, dotted with red, growing in a bouquet from the summit of the branches. Satureia montana Linn., the winter Savory, as the French call it “Poivre Diane” grows wild on sunny and calcareous and hill-side of Southern France, especially in the Alpes-Maritimes. Sage is the dried leaf of the of the plant Salvia officinalis Linn. which is a member of the mint family. It grows and is also cultivated in Yugoslavia, Italy, Albania, Turkey, Portugal, Spain, Cyprus, England, Canada, and, the USA. It is also grown in several other European countries. It is native of the Mediterranean region. It is a hardy and a variable sub-shrub, and is often cultivated as a spice and for medicinal purposes. Stems are shrubby, white and woolly, 30-cm tall; the leaves are greyish green, aromatic, entire, petiolate, oblong, 7-8 cm long, base narrowed or spear shaped or round. On drying, the leaves turn silvery grey, and they have soft velvety texture. The flowers are blue, purple or white in simple racemes. The cultivation of Sage or “Garden Sage” has been tried for its essential oil in Jammu (Jammu and Kashmir State of India), which is currently being imported for use in perfumery and soap industries. The plants are reported to have done quite well. It should be propagated in India to save foreign exchange. The cultivation of Sage in the Dalmatian region of Yugoslavia, is considered by the trade to be the best in quality, and the product derived from the cultivated plants in this region is rated the next in preference. The odor is strong, fragrant and aromatic, and the taste is aromatic, warm, somewhat astringent and a little bitter. Other product such as Spanish Sage and Greek sage derived from the other species of Salvia are used either as a substitute or adulterant of the genuine product.

Star Anise is the dried, star-shaped fruit derived from Illicium verum which is an evergreen tree attaining a height of 8-15 meter and a diameter of 25 cm. Leaves are entire, 10 -15 cm long, and 2.5-5.0 cm broad, elliptic to oblanceolate; flowers are solitary, white to red colored, fruits are star-shaped, reddish brown in color, consisting of 6-8 capsules (follicles), arranged in a whorl, radiating from the top of a slender short central stem; each follicle is 12-17 mm long, boat-shaped, hard and wrinkled, containing a seed; seeds are brown, compressed-ovoid, smooth, shiny and brittle. The carpels have a pleasant anise-like odor and an aromatic, refreshing, sweet, anise-like taste; the seeds have the same taste, but, to much lesser extent. It is available, whole, and is not usually ground. The plant is indigenous to tropical and sub tropical East Asia. It is extensively cultivated in a limited area with particular ecological factor, in Kwangsi in south-east China, mainland Tonkin in Indo-China, and is mostly imported from China and Indo-China. No import statistics are, however, available for Star Anise. It is now produced to some extent in Arunachal Pradesh in North- East India.

Poppy seed (Papaver somniferum Linn.) is just what one might think – the mature seed of a beautiful flower, known and used for at least 5000 years. Native of the Mediterranean region, as are so many of spice seeds and herbs, Poppies were taken to India and the East by Islamic missionaries, more than a thousand years ago. Poppy seed is so tiny that one pod may contain up to 30000 seeds and it takes some 9,000,000 seeds to weigh one pound! Each seed has a tiny droplet of nut-sweet oil which explains its flavor appeal. Although poppy seed comes from the same plant which produces opium, the seed cannot form until after the plant has matured to the point where it has lost all of its opium potential. Therefore, there is absolutely no narcotic content in poppy seed. Poppy seed is grown in the Netherlands, Poland, Denmark, Sweden, the Balkan countries, Turkey, Argentina, and, to some extent, India. Poppy is cultivated either for the manufacture of opium or for its seeds. In India,variety album (Papaver somniferum Linn. var. album) of Poppy with white seeds has been cultivated for many years for the production of seeds under license in Dehra Doon and Tehri Garhwal districts of former Uttar Prdesh (now Uttarakhand), in India. It is also grown in Jalandhar, Patiala, Kapurthala, and, Hoshiarpur of Punjab State, in India, and, also in some districts of Madhya Pradesh, in India. The continuation of cultivation of Poppy for Poppy heads and Poppy seeds was reviewed by the All India Narcotics Conference in 1956, and, on its recommendation, the State Government of Punjab banned the cultivation of Poppy for Poppy heads for the manufacture of opium for a maximum period of 4 years, by which time, it was expected that necessary developmental measures would be taken to enable the cultivation of alternative crops in lieu of opium Poppy. Caraway
About 2000 years ago, Roman soldiers dispersed Caraway seed from it’s home in Asia Minor to most of known countries of the world. North Europeans and central Europeans, especially the British and Germans, respectively, have been using it since centuries. In India, also, it is being used since long. Caraway or Caraway seed of commerce is the fruit of a biennial herb. It is a native of North and Central Europe, and is extensively cultivated in Holland, Poland, Russia, Bulgaria, Denmark, Syria, Morocco and to a small extent in England. It has been introduced into the USA, where it is grown as a garden crop. It (Black Caraway or Kala zira) grows wild in India in the north Himalayan regions. It is also cultivated in the Indian plains. It is also cultivated as a cold season crop in the hills of Kashmir and Kumaon at an altitude of 2740 – 3660 meter above mean sea level, as a summer crop. The Caraway plant usually has a fleshy root and a slender branched stem, that attains a height of 0.5-0.6 meter. The compound pinnate leaves are divided into very narrow segments, the small white flowers are borne in fleet, compound umbels; the fruit, when ripe, splits into narrow, elongated carpels. Description and Distribution
Shallot belongs to the onion and garlic family and is similar in properties to those of garlic. It is a native of Palestine and is cultivated in the USA, some European countries and in Indian gardens for its bulbs and green leaves. Clusters of greenish-white or red cloves occur at the base of its hollow cylindrical leaves. A variety of Shallot, smaller and with larger number of cloves, is exported to Sri Lanka and Malaysia from Chennai, in Tamil Nadu, India.
Economic Importance
Shallot is gradually gaining importance, as is seen from the export of the same from India during 1994-95. There is much scope for its export development provided its cultivation is stepped up gradually. The encouraging export performance during 1994-95 can be seen from the following table (Table 19).

How many of us really know the value of Tulasi? All that we think is that it is a sacred plant and used only for worship in the Hindu temples and at home. Almost all devout Indians cannot think beyond this. But, Tulasi is an exceptionally valuable plant inasmuch as human nutrition is concerned, when it comes to its seeds. Let us examine the details below. It is a cost-effective substitute for eggs in cake baking, breads and biscuits, just a spoonful of Tulasi seeds is enough for a fluffy cake batter. Tulasi seeds are called Sabja in northern India and are used in , put in tea, to treat sore throat and running nose. Tulasi herb comes under the genus Ocimum. Its botanical name is Ocimum sanctum belongs to the family Labiatae. The word “sanctum” means sacred. The genus Ocimum has over 150 species spread across the world. In Tulasi we have both Rama Tulasi and Krishna Tulasi, which are sacred for use in temples and homes. Ocimum basilicum (also from the genus Ocimum like Tulasi) as it isa prolific seed producer. the seeds have become very popular among health conscious people. The small black seeds (see picture enclosed) become mucilaginous (gain a gelatinous consistency) when soaked in water and consumed, are said to help reduce body weight, help patients suffering from constipation and acidity, and also manage diabetes. Rich in in dietary fiber such as the polysaccharides glucomannan and xylan which make one feel satiated after a long time. An investigation published in the science journal Bioactive Carbohydrates and Dietary Fibre of May 2021 issue establishes that the fiber accounts for 98.50% of this mucilage. The hydrated seeds do not have a strong flavor or taste, they can be easily added to smoothies (sweet milk/fruit based drinks), fruit juices and milkshakes. They have been used as a replacement for fats in sponge cakes by researchers of the department of Food and Nutrition, Korea University in Seol. In a 2017 investigation reported in the Italian Journal of Food Science, the researchers report that 1 gram of seeds can replace 15 grams of butter.

Saffron, the legendary crop of Kashmir, India, is an important food adjunct, that is, food flavorant and food colorant, and, is also reputed to possess several medicinal properties. The recorded accounts of saffron cultivation in Kashmir dates back to AD 550, nearly four centuries earlier than its recorded cultivation in Spain by the Arabs around AD 961. The saffron fields, from mid-October to early November, when saffron plants are in full bloom, on a moonlit night, present a wonderful sight and a good source of fascination to many tourists. But, surprisingly, it’s cultivation in Jammu and Kashmir in India does not seem to be based on scientific research and the growers have some superstitions, notions and methods of their own. Therefore, saffron-growing areas are those very localities where they have been since ancient times (550 AD), and is also their out-dated methods of curing, drying and packing, which can be improved considerably. Over 100 species of saffron genus Crocus are distributed worldwide, but, only Crocus sativus has received some attention and is cultivated in several countries. Saffron consists of dried tri-lobed stigmas of Crocus sativus, which is a bulbous perennial with globular corms. The plant is only 15-25cm tall, native of Southern Europe and cultivated in the Mediterranean countries, in particular, Spain, Austria, France, Greece, besides England, Turkey, India (in Jammu and Kashmir State, an Indian Union territory), and The People’s Republic of Iran.
