The term ‘Spices and Condiments’ applies to such natural plant or vegetable products or mixtures thereof, used in whole or ground form, mainly for imparting flavour, aroma and pungency to food. They are low volume high value crops which play a pivotal role in our national economy and provide a strong footing in the international market. According to the latest report of the International Organization for Standardization (ISO), there are about 109 spices grown in different parts of the world. India grows about 52 of them. The list of those spices with botanical and English names which come under the purview of Spices, Board, Ministry of Commerce, Government of India is given in Table 1.

Tomato (Solanum lycopersicum L.) is one of the most important vegetable crops cultivated in the world. It is used as raw in salads and also used as cooked vegetable in the preparation of curries. Processed items such as tomato puree, ketchup, pickle, chutney, whole peeled tomatoes and tomato powder are also consumed considerably. It is a rich source of Vitamins A & C. Lycopene and other flavonoids in tomato serve as good source of antioxidants. Tomato occupies 5 million hectares with a productivity of 34t/ha. in the world. In India it is cultivated in an area of 0.88 million hectares with productivity of 21 t/ha.

Mango (Mangifera indica L), the king of fruits, is cultivated throughout a wide range of frost-free climates (Litz 1998). It is commercially the most important fruit crop of India, accounting for more than 54% of the total mango production worldwide. The fruit of mango (Mangifera indica L.) is exceptional for its juicy, succulent, thick fruit pulp and nutrient abundance in terms of wide range of amino acids, sugars, organic acids, minerals including Ca, P, Fe, and K and vitamins. Out of several diseases which attack mango crop, mango malformation disease is a serious threat to its cultivation since it causes gross deformation of the vegetative and floral tissues (Ploetz et al., 2002; Kumar et al., 2011). Floral malformation is a major problem in mango, rendering mango cultivation unproductive in northern India and other regions of the world (Pandey et al., 1977; Ram, 1991).

Methylene-cyclo-propyl-glycine (MCPG), is a cyclopropyl derivative, grouped into the amino acids that have been isolated from the higher plants (Fowden, 1960). MCPG was identified to be closely related to two other cyclopropyl derivatives (Fig. 1), 1-aminocyclopropane – 1 – carboxylic acid from Vacciniumvitis-idaea and perry pears (Vahatalo and Viertanen, 1957; Burroughs, 1957) and â- methylenecyclopropyl alanine (MCPA or Hypoglycin A) from Blighia sapida (Hassall and Rayle, 1955; Anderson et al., 1958; Ellington, Hassall and Plimmer, 1958).

The orchids are commercially important group of flowering plants and their flowers are affluent in uniqueness in their shape, size and colour, exquisitely attractive, remain fresh condition for long period of time in comparison to other flowers. Orchidaceae is the second largest family among floriculture; about 25000 to 35000 species of orchids have been reported over the world (Rampal and Nagrare, 2006). India accounts for nearly 7 per cent of world’s orchids genetic diversity contributed 1300 species under 184 genera (Arora, 1983; Rampal and Nagrare, 2006) and 1150 species belonging to 164 genera (Satish Kumar, 1994) of which about 800 species are found in the North Eastern region of the country (Nagaraju et al., 2006) and many more are discovered year after year because of the prevailing congenial climatic conditions, diverse terrain and altitudinal variations, which provide suitable habitat for orchids.

The word Cymbidium has been derived from a Greek word ‘Kumbos’ meaning ‘hole or cavity’ referring to the structure of the base of the lip. The genus consists of 44 known evergreen species in the family Orchidaceae, subfamily Vandoideae, tribe Cymbidieae and sub-tribe Cryptopodiinae. It is distributed from northwestern India to China, Japan, south through the Malay Archipelago to the north and east Australia. (DuPuy and Cribb, 1988). Cymbidiums have been for over hundred years one of the most famous orchids in commerce.

Mango (Mangifera indica L.) is one of the most important tropical fruits of the world and is commonly known as the ‘King of fruits’ for its high quality fruits which are very popular among the Indians (Sharma et al., 2008). It is the oldest and extensively cultivated fruit crop in India having high socio-economic significance. India is the home of more than 1000 mango varieties, which originated in the Indo-Burma region (Mukherjee, 1958). India is the largest producer of mango, grown in about 2.3 million hectares with an annual production of 15.02 million tones. However, its productivity is only 6.5 tones per ha against 30 tones per ha in Israel (Bijay Jumar, 2010). Improvement of productivity in mango continues to be the foremost issue in mango production (Sauco, 1993). Of late, all the mango importing countries are considering the India as a source of quality mangoes due to its varietal wealth and availability. Hence, it is imperative to improve the productivity and quality of Indian mangoes to meet the global need (Balamohan et al., 2014).

Spices play important roles in daily life and India is a rich repository of spices. Various biotechnological approaches like micropropagation, somaclonal variation, in vitro conservation, synseed technology, protoplast fusion, production of flavor and coloring components, and development of novel transgenics have great significance in conservation, utilization and increasing the production and productivity of spices. Protocols for micropropagation and production of disease free planting materials are available for many spices. Efficient plant regeneration protocols are also available for exploiting somaclonal variation ,where the available natural variability is relatively low. Technologies for isolation and culture of protoplasts were reported in a few spices. Development of transgenics for disease resistance is gaining momentum. Synseed and Micro-rhizome technology are also available for many spices for safe propagation, conservation, movement, and exchange of germplasm. In vitro and cryo preservation technologies for conservation of spices germplasm are available for many spices.

Centuries before Greece and Rome were discovered, sailing ships carried Indian spices, perfumes and textiles to Mesopotamia, Arabia and Egypt. It was the lure of these that brought many seafarers to the shores of India. Emperors, kings, senators and the aristocracy transformed spices into the mostly highly prized commodities of ancient trade routes The story of Indian Spices is more than 7000 years old. By the 1400s, when navigational equipment had improved to the point that long-haul sailing became possible, European rulers set out to change the balance of world trade by funding spice-hunting missions of their own. Christopher Columbus who, in searching for a quick route to India, reached the Americas. Vasco de Gama was the first to surround Africa, and with a crew led by Ferdinand Magellan, fully circumnavigated the globe.

Soybean, a source of 40 per cent good quality protein, 20 per cent oil and other nutrients has great potential in meeting nutritional requirements and extending health benefits through soy based food products to Indian population. Soy foods are nutritious, economical and good for health. Regular food use of about 10 per cent processed soybean flour with cereal flours or 25-30 g properly processed soybean per day in a diet entitles the consumer to derive maximum nutritional and health benefits at a relatively low-price. Soy food products like fullfatsoyflour, soy-based bakery products and dairy analogs (soy milk, soy paneer (tofu), curd (dahi), soyshrikhand, soy amrakhand), being the products of acceptable type to Indian population, have good scope. Different organizations have given input in R&D work on soybean processing. SPU Centre at ICAR-CIAE, Bhopal has been involved in development of number of soybased food products, technology and equipment for preparation of those. To make available the properly processed soy food products to our population, the centre is actively engaged in capacity building of upcoming entrepreneurs and entreprise development for soybean processing for food uses. Around 500 cottage scale soy food enterprises have been established in different states of the country.

Pesticides are an undeniable part of modern life, used to protect everything from flower gardens to agricultural crops from specific pests. Pesticides have contributed significantly to improving quality of life and safeguarding the environment. Some 20 to 40 percent of the world’s potential crop production is already lost annually because of the effects of weeds, pests and diseases (according to the FAO reports) (www.CropLifeAmerica.mht). In addition to increasing crop yields, crop protection products used in stored products can also prolong the viable life of products, prevent huge post-harvest losses from pests and diseases and protect food safety for eating.

The vegetables and fruits are largely consumed fresh and day by day, their market demand is increasing due to nutritious quality. However, market supply is not sufficient to meet public demand throughout the year as production is inadequate because crop production has not increased substantially in recent years due to climatic changes. Another important reason for low production is the economic losses incurred due to damages of insect pests and plant diseases.

Since ancient times, reduction in pest and disease incidence is sought by spraying of pesticides including conventional preparations such as tobacco decoction, Bordeaux mixture, neem leaf extract etc. During the green revolution years, the synthetic pesticides were greatly recommended for pest and disease control and thereby increasing crop yields many-fold. Having experienced the spectacular improvement in both yield and quality of marketable produce, farmers were solely dependent on synthetics and ultimately abandoned other control measures.

Labour is one of the biggest input costs for vegetable growers. Vegetable farming is labor intensive and time consuming. Frequently, it is associated with low yield and poor quality production. The constraints are high labor requirements for land clearing, ploughing, bed forming, mulch laying, seeding, transplanting, harvesting and transporting. Mechanization is interjection of improved tools, implements, machines and other equipments between man and materials (soil, water, environment, seed, fertilizer, pesticides, growth regulators, irrigation water, agricultural produce and by-products such as fruits, vegetables, and seeds, etc.)

Every research in agriculture aims at developing a promising new technology or refines an age old technology that can help addressing the improvement in crop yield. This is a worldwide scenario to meet up with the food needs of the growing population and reducing agricultural land resources. Many traditions in the world are associated with vast knowledge of cultivating the food crops, vegetables, fruits etc using selected methods that are modified based on the needs, climatic conditions and the resources available in the place of settlements. Soil based agriculture is the most popular method of growing plants since soil is considered as the main source of nutrients and water required for the healthy growth of crops. Generally it includes 3 major steps, ploughing, sowing and harvesting.

“Standards are to Industry as Culture is to Society” said Shri C. Rajagopalachari, the first Governor General of India. Shri C. Rajagopalachari was inaugurating a conference on Standardization and Quality Control in February 1948. The great statesman has beautifully summed up the importance of standardization.

The basic principles on which procedures and practices are based had their origin in the United Kingdom, where the first national standardization movement started as early as 1901. Thereafter, procedures have been continuously developed, modified and improved till considerable similarity is achieved.

The scientific community working in the field of crop protection is experiencing an increasing academic and industrial interest in the discovery and development of new bio-insecticides as environmentally friendly pest control tools to be integrated, in combination or rotation, with chemicals in pest management programmes. In this context, Entomopathogenic nematodes (EPNs) as a bio-control agent have proven successful and are now commercially mass produced in six of the seven continents to treat pest problem in agriculture, horticulture and forest crops. They actively search for the host, including those in cryptic habitat stages of insect pests in soil environment. They can be considered as good candidates for integrated pest management in ustainable agriculture due to plants and mammals which are not adversely affected and have ease of mass production. We present a general overview on the current state of knowledge of EPN and their mutualistically associated bacteria and their utilization as biological control agent against insect pests in world and India are briefly presented in this chapter.

Endophytic Microorganisms

Endophytes (‘endo’, inside; ‘phyte’, plant) include microorganisms that thrive inside the plant tissues without any obvious adverse effects on the host, and they include mainly bacteria and fungi (Hallmann et al., 1997; Bacon et al., 2002; Hardoim, 2015). Endophytic microorganisms share an intimate association with the host adding essential and functional capabilities. Therefore, plant may be considered as a superorganism composed of an amalgam of both selected symbiont microbiota and host cells (Hardoim, 2015) with the new concept of holobiome, i.e., plant together with the associated microorganisms collectively governing the plant activities (Hardoim et al., 2015; Vandenkoornhuys et al., 2015).

The shift from vegetative to reproductive phase in plants is the result of multiple gene cascades in response to photoperiodic and temperature dependent pathways, gibberellic acid pathway, vernalization pathway and autonomous pathway. The environmental cues are initially detected in the leaves and the mRNA of the flowering signal integrator FT gene, moving to the shoot apical meristem, acts as a long-distance signal for floral meristem identity. At SAM, FT-FD protein complex, based on signals from above said pathways in association with the signals from age-dependent and miRNA pathways, leads to the activation of master regulator gene of flowering AP1. The activation of genes involved in ABCDE model of floral organ differentiation, based on the directions of various cadastral genes lead to the development of floral organs. Thus, the sequential action of floral meristem identity genes, floral organ developmental genes, floral meristem size and organ number genes, floral organ pattern genes and cadastral genes leads to the flower development. This chapter sums up the gene interactions happening in leaf and SAM, leading to the development of a complete flower.

The global economy has adversely been affected to a considerable extent due to weather related disasters which are not uncommon in the recent past due to global warming and climate change. It is true in the case of the Indian economy too. The year 2010 was the warmest year ever recorded, followed by 2009 in India. The year 2015 was the warmest year globally. Model simulations indicate that a marked increase in rainfall and temperature over India would be seen during the current century. The maximum expected increase in rainfall is likely to be 10–30% over the Central India. Temperatures are likely to increase between 2 and 3^oC by the end of 2100 A.D. Greater number of high surges and increased occurrence of cyclones in post monsoon period along with increased maximum wind speed are also expected along the East Coast of the Country. As a result, the occurrence of floods and droughts, cold and heat waves adversely affected the foodgrains production to a large extent across the Country in one or other region as seen in 2014, 2012, 2009, 2004, 2002 and 1987. It is true in the case of plantation crops also, which are predominantly grown in the Humid Tropics like Kerala (8°15` N and 12°50`N latitudes and between 74°50`E and 77°30`E longitudes). As seen in previous chapters, summer drought and heavy rains including waterlogging during monsoon period is a threat to plantation crops production in the Humid Tropics to a considerable extent. Waterlogging and floods due to excess rains could be minimised by providing surface and subsurface drainage facilities in plantation gardens which will improve the soil health and nutritional status, in turn yields can be increased in plantation crops.

Coffee is grown at higher elevation across the Western Ghats between 750 and 1200 m amsl. It requires a certain degree of shade for its better performance. The annual rainfall over the coffee growing tracts varies between 1400 and 2600mm, having uni/bi-model rainfall with prolonged dryspell from November to May. It is more so over North of the Western Ghats. The mean annual maximum temperature varies between 24 and 30⁰C while the minimum between 15 and 18⁰C. The difference between maximum and minimum temperatures (temperature range) varies between 5 and 16⁰C across the coffee tract. The ‘Monsooned Malabar Coffee’ is a specialty coffee produced from the erstwhile ‘Malabar Region’. It undergoes certain changes in physical and biochemical characters when the coffee beans are processed during the summer monsoon (June to September). It is processed at Mangalore, located in Coastal Karnataka. The processing location experiences heavy rainfall of more than 1000 mm in July, followed by 950 mm in June and 600 mm in August. Out of 3264 mm of annual rainfall, 2852 mm is received during the monsoon period. It accounts more than 80 per cent of annual rainfall. The maximum temperature during the monsooning varies between 28 and 30°C while night temperature revolves between 22 and 24°C. Being located in the tropics along the West Coast, the crop processing environment in terms of surface air temperature is relatively uniform and moderate with a characteristic feature of heavy clouds and continuous rainfall during the monsoon period.

The State of Kerala under the Humid Tropics is one of the wettest places in the Humid Tropics where annual rainfall is of the order of 3000 mm, ranging from less than 1000 mm to greater than 5000 mm. About 68 per cent of the rainfall is obtained during southwest monsoon while 16 per cent in post monsoon and the rest from summer (14 per cent) and winter rainfall (2 per cent). Bi-model rainfall pattern is noticed towards southern districts due to influence of both southwest and northeast monsoons while uni-model rainfall pattern towards northern districts of Kerala. Coconut productivity is better towards south despite dreaded disease of root-wilt when compared to that of northern districts due to less dryspells during summer. Floods during monsoon adversely affect paddy production in the State while prolonged droughts during summer in the absence of post monsoon rainfall adversely affect plantation crops’ production to a considerable extent. The wetlands in Kerala are rich sources of water during summer and act as sink during monsoon season. Such wetlands are fast declining in Kerala and converted as garden lands. Decreasing wetlands might be one of the reasons for frequent floods and droughts in Kerala in recent years. The forest cover of Kerala also declined from 70 per cent to 24 per cent over a period of one- hundred- and - fifty years due to deforestation and forest fires.

Tea (Camellia sinensis) is one of the most important beverage crops in the World and the second most commonly drank liquid on earth after water. It has numerous medicinal benefits mainly due to its antibacterial and antioxidant properties. The major tea growing regions of the world are South-East Asia (India and Sri Lanka), Eastern and South Africa consisting of Kenya, Malawi, Tanzania, Uganda and Mozambique. All these countries are producers of black tea. China and Japan are the major producers of green tea.

Black pepper (Piper nigrum L.), famous as “Black Gold” and also known the “King of Spices” is the most important agricultural commodities of commerce and trade in India. It is the most important, most popular and most widely used spice in the World. Of the total spices traded internationally, black pepper accounts for 34 per cent. South West India is the traditional home of this important spice, particularly the Malabar Coast. Black pepper is also grown in tropical zones such as the Asia Pacific Region, mainly India, Indonesia, Malaysia, Sri Lanka, Thailand, China, Vietnam and Cambodia. Outside the Asia Pacific region, the crop is distributed in Brazil, Mexico, Guatemala, etc., totaling about 26 countries. It is grown successfully between 20°N and 20°S latitude and from mean sea level to 1500 meters above sea level. World’s black pepper production varies in the range of 2.7 to 3.35 tonnes annually.

The natural habitat of rubber (Heavea brasiliensis) is rain forests of the Amazon basin, situated within 5° North and South at altitudes below 200m. The climate of this region is equatorial monsoon type characterized by mean monthly temperature by 25 to 28°C, well distributed rainfall and no marked dry weather. Though it is originated in the Amazon basin, it is now predominantly grown in the tropics where an equatorial monsoon type climate prevails. Regions between 8°N and 10°S which includes Indonesian archipelago, Malaysia, southern part of Sri Lanka and some other Islands, are better suited to rubber cultivation. The production of natural rubber in the country was 8.65 lakh MT in 2008–09, registering a 4.74 per cent growth compared to the previous year.

Small cardamom (Elettaria cardamomum Maton), popularly known as the “Queen of spices”, occupies an important position among the foreign exchange earning commodities. Cardamom is cultivated on a commercial scale in Sri Lanka, Guatemala, Tanzania and Papua New Guinea. Guatemala is the largest producer of cardamom in the World. In India, it is confined to the States of Kerala, Karnataka and Tamil Nadu, accounting for an area of 41588 ha, 25021 ha and 4561 ha, respectively (Spices Board, 2009). Among these States, Kerala accounts for the major portion of production (58.4 %), followed by Karnataka (35.2 %) and Tamil Nadu (6.4 %). In Kerala, Cardamom is mainly grown in the erstwhile Travancore area in the present Idukki district and it is known as the Cardamom Hill Reserve (CHR), which was specially reserved, denotified and removed from the control of forest development by the orders of the Travancore Government. By a Royal Proclamation in Medam 997(ME) 334 square miles (86,506 ha) area in Devikulam, Udumbanchola and Peermedu taluks of the present Idukki District was declared as CHR for the promotion of cardamom cultivation (Miniraj and Nybe, 2007). Cardamom is a native of the moist evergreen rain forests of the Western Ghats of South India and is grown extensively in the hilly regions at elevations of 700 to 1300 metres as an under crop in forest lands. Cardamom thrives well within certain thermal regimes. It is believed that diurnal symmetries in temperature trends, if any, have close links with the changes in cloudiness, humidity, atmospheric circulation pattern, winds and soil moisture (Kumar et al., 2002).

The global production of cocoa is around 36.49 lakh tonnes against the demand of 37.37 lakh tonnes. Ivory Coast leads in cocoa production in the world with a contribution of 38 per cent, followed by Ghana and Indonesia. Unlike in other crops, it appears that the production and demand of cocoa at the global level match each other to a large extent. However, the recent trends in the world production of cocoa beans indicated that there was a drop of nine per cent in 2006–07, declining from 3.8 million tonnes in 2005–06 to 3.4 million tonnes in 2006–07 (Table 9.1). It was attributed to unfavourable conditions in many cocoa producing areas. West Africa, the main cocoa producing region, was hit by a severe harmattan (dusty dry wind from November to March) and its inherent dry weather, which lasted from the end of 2006 to February 2007, had a strong negative impact on global cocoa production. In Asia and South America, El Nino- related weather conditions developed in September 2006 and continued until the beginning of 2007. It led to relatively low cocoa production in 2007–07. However, it was rebounced in 2007– 08 to some extent though it was low (36.49 lakh tonnes) when compared to that of 2005–06. The favourable weather which prevailed over most of the cocoa growing regions during 2002–03 and 2003–04 helped to achieve better production during the above years while dip in the global production in 2006–07 due to unfavourable weather. It reveals that the weather abnormalities like floods, droughts, cold and heat waves across the cocoa growing regions of the world adversely affect the Coca production and the cocoa industry is likely to suffer.

Cashew (Anacardium occidentale L.) is a very important horticultural crop which fetches considerable foreign exchange to India. The crop is a native of Brazil and was introduced in India by the Portuguese during 16^th Century. It is grown in India, Brazil, Vietnam, Tanzania, Mozambique, Indonesia, Sri Lanka and other tropical Asian and African countries. The crop is grown within the latitudinal belt of 27°N and 28°S of the equator experiencing a tropical temperature for its growth and development (Rao and Gopakumar, 1994). The trend in productivity has a phenomenal bearing to the distance from the equator. The world production of cashew is estimated to be around 20.8 lakh tonnes. The global productivity level of cashew is 690 kg/ha. Since 2000, the world raw cashewnut production registered an increase of 40 per cent. India’s share in the world raw cashewnut production accounts to about 25 per cent. In recent times, India is facing tight competition from Vietnam and Indonesia in international cashew trade. Since its introduction in the Country, cashew has well adapted to the Indian climatic conditions and is grown in the East and West Coasts of India. Now, India is the largest producer, processor, consumer and exporter of cashew in the world (Bhat, 2009 a). In India, cashew is grown mainly in Maharashtra, Goa, Karnataka and Kerala along the West Coast and Tamil Nadu, Andhra Pradesh, Orissa and West Bengal along the East Coast.

The Coconut palm, also known as the Cocos Nucifera L., is one of the most fascinating and beautiful palms in the world. Epigraphical, literary and sculptural evidence provide proof that coconut has served humanity for more than three millennia. The palm is looked upon with reverence and affection and is referred to by such eulogistic epithets as “Kalpavriksha”, tree of heaven, the tree of abundance, nature’s super market, king of palms and the tree of life. The coconut is believed to have originated in Southeast Asia (Indonesia, Malaysia, Philippines) or Micronesia (Harries, 1977; Purseglove, 1968 and 1972). Coconut has been cultivated in India since ages and plays an important role in social, economic and cultural activities of the people. The palm is amenable to both plantation and homestead management and it can be either a major crop or a minor one in a homestead garden of mixed crops. While responding favourably to scientific management, the palm also tolerates negligent farming to a certain extent. Thus, it can adapt to the divergent farming situations and management practices that are prevalent in different agro-climatic regions. The coconut palm is usually found near the sea on sandy beaches where it can tolerate salt spray and brackish soils. It is also grown under different soil types such as loamy, laterite, coastal sandy, alluvial, clayey and reclaimed soils of the marshy low lands. The ideal soil conditions for better growth and performance of the palm are proper drainage, good water-holding capacity, and presence of water table within three metres and absence of rock or any hard substratum within two meters of the surface. The coconut palm can also grow well inland, within altitudinal limit of 600 m to 1752 m in the Tropics. It requires an equatorial climate with high humidity. A year-round warm and humid climate favours the growth of coconut. The ideal mean annual temperature, which can be tolerated by coconut palm, is around 27ºC with 5–7ºC diurnal variation. The palm does not withstand prolonged spells of extreme weather/climate variations under rainfed conditions. A well-distributed rainfall of 1300–2300 mm per annum is preferred. It is known as a coastal tree since it is grown along the Coasts and Islands and does not tolerate high temperature range, that is the difference between the maximum and minimum temperatures.

Of the various weather elements affecting crops, temperature and rainfall are perhaps the most important. It is the reason for the development of special flora and fauna in different climatic zones of the world as seen in the tropical, temperate and frigid zones. The tropical regions get abundant solar heat and the vegetation is high while it is low in the temperate regions. The vegetation is very little in the frigid zones. Similarly, natural vegetation is at its poor growth in the Arid Climates and better in the Humid Tropics. Xerophytes are confined to the Arid Climates where low rainfall is seen, while hydrophytes are confined to the Humid Tropics. Mesophytes are intermediate in their water requirement. Most of the crops are included in this group. If the crops are selected for cultivation on the basis of the optimum climatic requirements, it is likely that crop production can be maximised under rainfed as well as irrigated conditions. For example, coconut is grown in vast areas across the East and West Coasts of the Country in different agroclimatic zones and known as a coastal tree. It gives reasonably better yield in terms of quantity and quality in the Humid Tropics under rainfed conditions. However, the coconut yield scenario is totally different when the crop is cultivated in Semi-arid Tropics under irrigation. Therefore, it is a complex phenomenon to understand the influence of weather and climate on crops under rainfed and irrigated conditions in various climatic zones. The production potential of crops under field conditions could be explained through crop-wise agroclimatic zonation, whether the crop is well-suited with minimum inputs for maximising yields under rainfed conditions, but not under irrigated conditions due to crop manipulation. Many attempts were made to explain the climatic boundaries for various crops based on agroclimatic indices under rainfed conditions.

Rice is one of the major staple food of the world’s population. About 114 countries grow rice and more than 50 have an annual production of 100,000 tonnes or more. Asian farmers produce about 90 per cent of the total, with two countries, China and India, growing more than half of the total crop. For most rice producing countries where annual production exceeds one million tonne, rice is the staple food. In Bangaldesh, Cambodia, Indonesia, Lao PDR, Myanmer, Thailand and Vietnam, rice provides 50–80 per cent of the total calories consumed.

Kerala, popularly known as the God’s own country, is situated at the southern tip of India between latitude range 8°15‘ N to 12°50’ N and 74°50’ E to 77°30’ E longitude. The State is graced with 44 rivers and numbers of streams and has rich biodiversity and tropical rain forests spread in 13 agro-ecological zones under humid tropics. Kerala is the Gateway of monsoon in India. Though Kerala is identified as Plantation State, the major staple food is rice. The annual rainfall in Kerala is about 2.7 times the national average. More or less assured amount of rainfall is being received in almost every year over the State, though inter-annual variability is felt more in recent decades. Uncertainties in rainfall are also felt much in the recent decades. Droughts during summer and floods during rainy season are frequent. Natural disasters like landslides/mud slips during rainy season are common across the mid and high lands of Kerala as the intensity of rainfall is high. Atmospheric temperature across the State is increasing. 1983 was a disastrous drought year in Kerala. The severe summer affected the State’s plantation crops economy to a considerable extent. Insignificant rainfall led to the severe summer drought during 1982–83.

Food security is one of the most important issues during this century under the projected climate change scenario. The world is facing severe food crisis due to weather vagaries as a part of global warming and climate change. One sixth of world’s population is under starvation. It is estimated that 300 million people in the world do not get food three times a day. About 18,000 children die every day due to malnutrition. Many Asian-African countries are under severe food crisis. It is also estimated that out of the World’s most hungry people, 29 per cent is in India. 47 per cent of children below three years of age are suffering from malnutrition problem. 75 per cent of world’s population is dependant on agricultural activities for their livelihood. Therefore, there is an urgent need to produce more and more foodgrains at the global as well as national levels to meet the food requirement of growing population under the projected climate change scenario. There has been a major decline in world rice production since late 2007 due to various reasons including global warming and climate change in top rice producing countries. Deficit monsoon over India during 2009 resulted to poor foodgrains production including rice as the area under rice cultivation was less. There were also devastating floods in southern States of India viz., Andhra Pradesh and Karnataka. Andhra Pradesh, one of the major rice producing states of India, was affected first by drought and then by floods. Thus rice production decline in India was a real set back in 2009. Similar was the case in 2010 due to excess rain during monsoon and floods during NE monsoon across the rice growing regions. At the same time, Philippines got hit by two major typhoons in September-October, 2009 causing damage to rice crop on ground. Approximately one million tonnes of rice in storage also got damaged. These events resulted to low world rice production over the country in 2009. The immediate impacts of global warming and climate change on rice production systems and food security will be felt in the form of adverse effects of extreme weather events such as floods, droughts, heat and cold waves, hailstorms and cyclones on rice production. Less immediate but significant impacts are anticipated due to changes in mean temperatures, increasing weather extremes and sea level rising.

India is the seventh largest country in the world with 17 per cent of the world’s population and with a total geographical area of 329 Mha, extending from 8°4’ to 37°6’ in the North and 68°7’ to 97°25’ in the East. It is bounded by the World’s highest mountains- the Himalayas in the North and surrounded by the Arabian Sea, the Indian Ocean and the Bay of Bengal in the South. The Indian Coastline along the southern part of the Country is over 7500 km long. The Country includes vast plains like the Indo-Gangetic Plains, and the Central Deccan Plateau, bordered by the Western Ghats on either side in the West and the South. The biodiversity in the terrain leads to a wide variety of climatic conditions, ranging from tropical to temperate climates across the Western Ghats. These range from permanent snowfields to tropical coastlands; areas of virtual desert in the northwest to fertile intensively cultivated rice fields in the northeast. A large proportion of India’s population continues to live in rural areas and depends heavily on climate-sensitive sectors such as agriculture, fisheries, animal agriculture and forestry for its livelihood. Agriculture is the mainstay of Indian economy. The Indian climate is dominated by the great wind system called the Monsoons, on which the Indian agriculture is dependant. The southwest monsoon is critical to the kharif crop (first crop), which accounts for more than 50% of the foodgrains production and 65% of the oilseeds production in the Country. The inter-annual monsoon rainfall variability in India leads to large-scale droughts and floods, resulting in a major effect on Indian foodgrain production (Parthasarathy and Pant, 1985; Parthasarathy et al., 1992; Selvaraju, 2003; Kumar et al., 2004) and on the economy of the Country (Gadgil et al., 1999a; Kumar and Parikh, 2001). Climatic variability and occurrence of extreme events are major concerns for the Indian subcontinent as they are inbuilt features under the projected climate change scenario. All the projections on climate change are based up on the General Circulation Models (GCMs). All the models project increase in temperature over the Country under different GHG emission scenarios. Rainfall variability is felt in different sub-meteorological divisions across the Country. Though the GCMs have been successful in depicting the gross features of the observed large scale climatological features, there is large uncertainty associated with these projections on regional scale, since the GCMs are yet to realistically reproduce the observed features at regional scale, particularly over the monsoon region (Kumar, et al., 2002). Several downscaling approaches are being used to derive the regional features from large scale model simulations. Under the projected climate change scenario, India will be one of the Countries facing the adverse impacts of climate change as agriculture is the mainstay of people of India. Hence, understanding of rainfall and temperature variability across the Country deserves attention in the projected climate change scenario.

Climate Change has emerged as one of the most serious environmental concerns of recent times. The most imminent climate change is increase in atmospheric temperature due to increased levels of greenhouse gases such as carbon dioxide (CO₂), methane (CH₄), nitrous oxide (N₂O) and hydrochlorofluoro carbons (HCFCs). Because of increasing concentrations of the greenhouse gases in atmosphere, there is much concern about future changes in the climate system viz., Atmosphere, Lithosphere, Biosphere, Hydrosphere and Cryosphere. Direct or indirect effects on the society linked sectors like water, forestry, agriculture, animal agriculture, fisheries, land and marine biodiversity and health due to climate change/variability are many-fold and economic impact of climate change is enormous. The recurrent drought and desertification threaten seriously the livelihood of over 1.2 billion people who depend on land for most of their needs.

Tea [Camellia sinensis (L.) O. Kuntze], of family Theaceae, is an important cash crop  worldwide. It is an evergreen shrub cultivated in humid and sub-humid tropical, sub-tropical, and temperate regions of the world, and grows mainly on acidic soils. Due to limitation of expansion of tea cultivation in new land, import of low cost high quality tea, increasing vertical productivity is the best option of Indian tea Industry. The primary need of the tea industry today is to develop high yielding clones with better quality and stress tolerance potential. Conventional tea research has contributed appreciably to the genetic improvement of tea over the past several decades, but it is time-consuming and labor intensive.

Tea is the most consumed, rejuvenating and thirst-quenching beverage. It is bestowed with ‘miraculous’ health benefits which includes promotion of cardio-vascular health, skin protection, antioxidant activity, defence against microbial infection, prevention from cancer, obesity, and many more. Among the four types of tea, green tea has attained much attention of tea consumers due to its magical health potentials.Owing to increased knowledge and marketing of its health benefits, there has been astonishing changes in its consumption pattern and increase in its production. The tea industry drives economies of the tea growing regions and contributes greatly to the country’s GDP growth as well as foreign exchange earnings. However, in recent years, tea farming has become subject to environmental deterioration because of exploitation in cultivation practices.

Abstract 

In this chapter the origin of flavour in tea have been explained under the light of chemistry of green leaves and made tea. The dependency of flavor in the final product on several factors involved in every step of its manufacturing process has been explained briefly to draw a back ground picture of the subject. On the other hand in-depth explanations on the chemical basis of diversity and complex nature of tea flavour have been given following a simple manner.

Moreover, traditional and recently developed analytical methods have also been reviewed critically. Analytical strategies and details of instrumentation involved to study or quantify the flavour in tea have been depicted in details with their prose and cones under the light of complicacy of the subject. Potential and loop holes of the new technology viz. E-Nose have been explained critically. Finally a hypothesis with little experimental proofs has been explained to meet a probable solution to the present problems in flavour analysis of tea.

Tea (Camellia sinensis L.) is a plantation crop having a wide distribution extending from low elevation to high exceeding 2000 m. The demands and consumption of organically grown residue free Darjeeling tea is increasing day by day due to health consciousness and environmental awareness. The average productivity of Darjeeling tea is far below than the average national tea productivity. Reasons for low productivity of Darjeeling tea may be due to high altitude/elevation; temperature/climate and geographical location in addition to the old age of tea bushes and low plant density. In the past indiscriminate use of synthetic fertilizers has led to the pollution and contamination of the soil, water basins, destroyed micro-organisms and friendly insects, making the crop more prone to diseases and reduced soil fertility. Following Good Agriculture Practices (GAP), sustainable and quality production of Darjeeling tea may be increased through eco-forming without any deterioration of surroundings of plants.

Abstract

Tea, Camellia sinensis (L.) O. Kuntze, is a perennial crop and grown as a monoculture on large contiguous areas in India. Being a plantation crop, tea provides a relatively stable microclimate and food supply for several notorious pests such as insects, mites, nematodes which cause substantial loss of foliage. However, region-wide variation in faunal diversity exists as a result of autochthonous and heterochthonous recruitment and the influence of climate, altitude and age of the plantation. This publication provides the details on pest information (identification, crop damage, alternate hosts, pest life cycle) and their possible management strategies. On account of complex pest situations, total avoidance of pesticides in tea is not possible; although due to the sensitive nature of the crop pesticide use must be minimal. A tentative IPM strategy for tea cultivation in India has been proposed in this paper which may ensure low – cost, eco-compatible, pest management package with minimal residue problems.

Abstract

Tea (Camellia sinensis L. O. Kuntze), a foliage crop of Sub-Himalayan Terai-Dooars has Tea mosquito bug (Helopeltis theivora)(TMB), looper caterpillars [Hyposidra talaca, Hyposidra infixaria, Biston (=Buzura) suppresseria] and Red spider mite (Oligonychus coffeae)(RSM) as major pests. In conventionally managed tea plantations, synthetic pesticides and acaricides are routinely applied. The pesticide-exposed pest populations show higher tolerance level as evident in their increased LC50 values. Augmented activities of detoxifying enzymes viz. general esterases (GE), glutathione S–transferases (GST) and cytochrome P450 mediated monooxygenases (CYP) were recorded in the pesticide-exposed pest populations. Sub–lethal exposure to monocrotophos (36% SL) enhanced the tolerance level in adult TMB by 105 fold through three generations. Increased activity of GE was evident in the pesticide-exposed populations of the tea loopers. Activities of GE and GST  in RSM were significantly higher in acaricide-exposed population. Present studies can help developing enzyme-based assay kit for determining level of pesticide-resistance. Integrated resistance management has become an integral part of modern day IPM practices. Adoption of newer chemicals, and cultural practices can minimise synthetic pesticide applications, thereby help reducing resistance development in pests.

Abstract

Pruning is the most important cultural operations in tea cultivation. Time of pruning affects health of bush, incidence of pests and disease, yield and distribution of crop. Root starch reserve at the time of pruning affects the recovery of bush and hence considered as the most crucial factor for deciding time of pruning. Downward movement of photosynthates was found maximum in December and January, thereby maximizing the starch reserve in roots. Maximum recovery of tea bush and minimum loss in annual crop was found when pruned during December – January. Pruning in remaining months (February – November ) may result in crop loss to the tune of 5 per cent – 37 per cent in plain areas. Clonal varieties differ in root starch accumulation during winter months hence pruning time of individual clone needs to be decided accordingly to enhance recovery of plants.

Abstract

Ensuring the provision of safe and healthy working conditions to all workers and promoting the availability to them of certain minimum welfare amenities are the constitutional obligations of all employers as well as the Indian state. Enlightened employers tend to provide for these facilities on their own, as part of their performance and retention strategies. Others, however, largely consider these obligations as burden. Some recent researches reveal that the pursuit of numerical flexibility policies is becoming rampant amongst employers in the advanced world; they are doing so to cut costs and become more competitive. This means more use of labour-cost-saving devices and neglect of some basic rights of workers. Of course, intense competition amongst companies puts pressure on them to attempt cost-cutting and ignore these legal provisions. It should be noted however, that the law relating to working conditions is perhaps the most basic of labour laws in any country; therefore, its sanctity has to be maintained with an added responsibility by all concerned and as a societal value.

Abstract

“Darjeeling Tea” as a global brand brings attention to the Darjeeling District and creates a global imaginary which obliterates the dark colonial history, existing exploitation of the workers and the natural resources of the region. The global brand name is protected under the certification trademarks which has a geographical indication. Thus only tea from the 87 tea plantations can be called Darjeeling Tea. There is an increasing trend towards Darjeeling Tea going organic and fairtrade. This trend is critiqued with questions of how green and fair can a monoculture plantation get. Within this imaginary, small farmers’ tea offers an alternative paradigm based on equity and diversity. This paper explores the alternative by highlighting the (United Development Organization) journey of a small farmers collective Mineral Spring SanjuktaVikashSanstha.

Abstract

The history of the development of the tea plantation industry in the Darjeeling district dates back to the early fifties of the nineteenth century when the English entrepreneurs took lease of extensive land on the mountain slopes of the Darjeeling Himalaya and started tea plantations. During the formative years of the introduction of the plantation industry the region was sparsely populated so, laborers from various parts of India and her neighboring countries were encouraged to settle in the fringe areas of the Tea gardens. Over the last 160 years many changes have taken place in their lifestyle. The main purpose of this paper is to reconstruct the history of Darjeeling tea and to explore the life of people in the Darjeeling region and also to learn how the local populace adjusted themselves with the given environment with the changing scenario of the area.

Reducing insecticide application to the lowest level is the motto of IPM in vegetables. Monitoring for the initial build up and timely mechanical removal of the first population is a must in vegetables. Always remove the first affected plants, by diseases like mosaic, and destroy them by burying or burning. Remove insect eggs, insect affected plant parts and adults and immature stages of insects, and destroy them every day. Do not throw them in the field. They will either come back, or pupate and attack later. During nursery stage, use wood ash, cow dung solution, and plant extracts to deter all pests. Use only low residual insecticides like Dichlorvos 1ml/l, Malathion 2ml/l, Endosulfan 2ml/l or Quinalphos 2ml/l, in spots, at the beginning of attack itself.

Fruit borer: Helicoverpa armigera: Noctuidae

This is a medium sized moth yellowish brown in colour with a wing

span of about 3 cm and a body length up to 1.4 cm. There is a dark speck and a dark area on the outer margin of each forewing. The forewings also have greyish wavy lines and black spots of different sizes on the upper side.

Sciarid(mushroom flies): Bradysia paupera, Lycoriella auripila: Sciaridae

The larvae feed on the mycelial attachments and restrict the growth of the spawn. The maggots also feed on the developing mushrooms or pinheads and thus cause loss in yield. They also bore the developing mushrooms and render them hollow.

Fruit flies: Bactrocera cucurbitae:Tephritidae

This pest is more serious in bitter gourd, snake gourd and to a certain extent on ridge gourd. Other cucurbits are attacked to a lesser level. Damage by this pest causes losing the fruit quality, rotting and fruit drop. The adults lay many eggs inside the fruit sing their big ovipositor that hatch out into worm like apodous maggots. Feeding by the maggots on the pulp of fruits result in rotting, yellowing and fruit drop. The dropped fruits allow pupation by the maggots in the soil from where they emerge out as adults and start egg laying on fresh frits.

Symptoms of damage
 
Both nymphs and adults cause the damage by sucking the plant sap from shoot tips, pods and leaves.  Infested pods become malformed and withered.  Severe infestation may result in complete drying of affected pods.  They also act as vector of virus diseases in pea. 

Chilli thrips: Scirtothrips dorsalis, Thrips palmi: Thripidae

The adults of this insect are small brownish black with fringed wings. The nymphs are slender and yellowish straw coloured, later acquiring more brownish hue. They lacerate the tissues and feed on the exuding sap. Leaves become crinkled, curled upward and shed. The attack can be confused with chilli mosaic symptom.  In capsicum and chilli, they also feed beneath calyx of flowers and fruits causing flower/fruit drop and reduction in yield and market value of capsicum. Buds become brittle and drop down. Plants get stunted and bronzed. The fruits if at all formed are crinkled and small.
