Nursery is one of the important components of horticultural crop production. Nursery is place where young crop plants are raised under intensive care for later transplanting to the field. Nurseries may be classified as follows. On the basis of the irrigation facilities, the nurseries are dry or wet nurseries.

1. Dry Nurseries: Generally such types of nurseries are observed in forestry. It is maintained without any irrigation or artificial watering. The rab nurseries of Western Maharashtra, Karnataka and Gujarat come under this category. The rab or semi-rab nurseries are made in the plantation areas on small well-burnt patches of land usually 0.01 to 0.05 ha mainly for supplying teak stumps. The seeds are sown in lines 45 cm apart just before the onset of monsoon. Normally no elaborate beds are made, no fencing is made and no irrigation is provided as compared to other nurseries.

The term micropropagtion is also known as tissue culture. Micropropagation refers to aseptic culture of various plant parts in artificial growth medium to produce new plant. This means is recently applied in propagation of horticultural crops e.g. Orchid, banana, strawberry, papaya, grape and many other plants.

Requirements for tissue culture: It includes basic facilities including equipment, asepsis, culture medium and culture environment.

• Basic facilities including equipment: Provision of working space, large sinks, washing machine to wash glassware, oven, dryers, dust free storage, space for glass house and chemicals, autoclave for sterilizing media, solutions, water culture and instruments, supply of distilled or deionized water and various essential instruments and appliances.

Many types of containers are used for growing plants in nurseries. These are clay pots, plastic pots, fiber pots, wooden pots, etc. Generally, the type of container to be used for growing a plant depends upon the kind of plant, objective of growing, choice of grower, etc. With advancement of technology, the container-grown plants are widely adopted, practiced by the nurserymen. The advantages of container grown plants are they are not prone to damage during packaging and transport. These are widely used for many fruit and ornamental plants. The different types of container and their characteristic features are as follows.

• Clay pots: Well-baked earthenware pots are used for raising plants. These are available in different shapes and sizes. On the basis of shape and size; these are named by pela, parali, kundi, nand, khobada, etc. Porous nature of the clay pots permits aeration, and water movement. Pot made with clay soil and well-baked will last longer than those made with sand or loamy soils. Before using, these are dipped in water for some period to soak the water in the pot itself sufficiently. However, earthen pots are heavy in weight, possibilities of breakage during potting and repotting and hence are less durable.

Media for plant growth and seed germination has great significance in nursery business. It is the basic need of the propagation industry. The material for rooting and growing media may be used either alone or incorporated with one or more products in combination. The materials used for rooting media may be naturally occurring or may be manufactured artificially.

Characteristics of an ideal rooting medium: These are as follows.

1. The medium must be sufficiently firm and dense to hold the cuttings or seeds in place during rooting or germination.
2. It must retain sufficient water and air, allowing sufficient drainage.
3. It should be highly decomposed and stable.
4. It must be free from weed seeds, insect pests and diseases.
5. Acidity or alkalinity should be the optimum for different species.
6. Its volume must be fairly constant, when either wet or dry.
7. It must be capable of being sterilized.

Plant propagation is one of the important fundamental aspects since the time of Rigveda (1400 B.C.) in the horticulture industry. It refers to the multiplication or perpetuation of individual or group of plants having specific value. Agriculture began, when ancient people started domestication of certain plants by growing around them and now these are cultivated in much improved form due to continuous selection and maintenance of better plant types. During the process of civilization; many plant types were selected for food and other purposes and are classified as food crops, fodder crops, fruit crops, vegetable crops, spices and condiments, aromatic and medicinal plants, etc. Now due modern plant sciences; newer and better plant types came into commercialization for cultivation. However, to maintain their qualities; it needs their propagation to keep their original form. Thus, it indicates that plant propagation has paramount importance in the horticulture industry to supply true-to-type sapling to farmers.

The term weed can be described in many ways. In general, it is said that weed is a plant, which is not sown by the farmers or which is out of place. Weed is defined as the unwanted, undesirable plant, growing out of its proper place, which interferes with the utilization of natural resources, is prolific, persistent, competitive, harmful and even poisonous in nature and can grow in adverse climatic conditions.There are more than 30,000 species of weeds distributed world over, out of which 18,000 are noxious and cause serious losses. Around 250 species are causing serious economic losses. Weeds in orchards reduce crop yields by competing for moisture, nutrients, light and space. They also act as a host for insect pests and diseases. When they become large, they interfere with orchard operations as well as water bodies. There are some weeds, which are parasitic partially or completely on the host tree e.g. striga and loranthus, in mango.

Water is one of the most vital components for the successful growth and development of crops. It influences most of the plant metabolic activities, namely photosynthesis, respiration, absorption, translocation utilization of mineral nutrients, etc. Its stress or in excess affects the growth and development of a plant directly and consequently its yield and quality.

Role of water: Water plays an important role in plant growth and development in many ways.

• It is the chief constituent of protoplasm.
• It provides aqueous medium for various biochemical (metabolic) reactions.
• It serves as a temperature stabilizer and helps in maintaining a stable metabolic rate.
• It is an essential input for photosynthesis.
• It helps to maintain turgidity of cells and plant organs.
• It is an excellent solvent for various organic materials of cells.

According to the present state of our knowledge, sixteen-elements are considered to be essential for plant growth and development. These nutrients are chemical elements, which are absorbed by the plants in more or less quantity to transform light energy into chemical energy and to keep up plant metabolism for the synthesis of organic material. These elements are regarded as essential in higher plants.

These are Carbon, Hydrogen, Oxygen, Nitrogen, Phosphorus, Potash, Calcium, Magnesium, Sulphur, Zinc, Manganese, Copper, Iron, Boron, Molybdenum and Chlorine. Carbon, Hydrogen and Oxygen are obtained from air and water. Carbon makes up the great bulk of the plant and is obtained from carbon dioxide in the air. Hydrogen is derived mainly from the breakdown of water. Oxygen is obtained from air as well as water. Other thirteen elements are obtained from mineral and organic components of the soil. These elements are further grouped into major/macro and minor/micro-elements. The nutrients that are required in relatively larger quantities are termed as macro elements. Micronutrients that are required in relatively lesser quantities are termed as micro nutrients.

Fruits and vegetables are the major constituents of daily diet. They provide not only body building elements but also energy yielding food for the wellbeing of humans. Main object of the nutrition garden is to make availability of the requisite quantity of fresh fruits and vegetables to family members. It is generally raised in the backyard of home. It is also called as a home garden or kitchen garden. Most of the day to day cultural operations are performed by family members. Working in the nutrition garden during their spare time is a pleasure, an inspiration, a means of recreation to all the family members. The foremost advantage of nutrition garden is to daily supply fresh fruits and vegetables as per the needs of family members. Nutrition garden has an important role in enhancing national food security and dietary diversity to combat malnutrition.

Points to be considered, while the planning and layout of nutrition garden

Horticultural plants are grown for their diversified produce like fruits, vegetables, flowers, aromatic (essential oils) or medicinal components, spices (oleoresins), etc. if these plants are allowed to grow naturally, they will grow wild with very less potential yield. Therefore, it is essential to train and prune these plants not only to develop the proper framework in manageable shape but also to improve the potential yield in terms of quality and quantity.

Once the sapling is planted, it is essential to maintain the proper framework by cutting certain branches as well as some parts of branches. In the initial period, it is essential to maintain well distribution of flower or fruit bearing parts growing in four directions. Once the plant achieves proper framework after a certain period; then also some of the plant parts, namely branches or certain portions of branches, are removed to achieve potential yield.

India is regarded as a horticulture paradise due to growing of tropical, subtropical and temperate fruit crops in varied soil and climatic conditions. However, increasing pressure on land owing to diversion of orchard lands to various other obvious reasons as well as rising energy and land-costs, together with mounting demand for fruits have made HDP imperative to achieve higher productivity from limited space.

There is a shift in farmers’ perception from production to productivity and profitability, which can be achieved through high density planting. India is the second largest producer of fruits in the world. However, the average productivity of various fruit crops in the country is quite less. Low productivity can be attributed to many reasons such as old and senile orchards, lack of canopy management practices, planting of poor yielding varieties, low or no adoption of recommended package of practices by the farmer leading to poor orchard management, etc.

The system of planting to be adopted is selected after considering the slope of land, planting density, purpose of utilizing the orchard space, convenience, etc. Traditionally, six systems of planting are recommended for fruit trees. However, with the popularity of high density planting, there are some advances inplanting, especially in fruit crops.

1. Square system: This system is considered to be the simplest of all planting systems and adopted widely. In this system, the plot is divided into number of squares as per plant spacing and trees are planted at the four corners of each square, in straight rows running at right angle. Under this system, intercultural operations, spraying, harvesting, etc. can be done conveniently and easily. Cultivation and irrigation can be done in two directions. In this system, plant to plant and row to row distance is the same. e.g. 5x5m, 4x4m, 10x10m, etc.

   While laying out the plot, a base line is first drawn parallel to the road, fence or adjacent orchard at a distance equal to half the spacing to be maintained between the trees. Wooden pegs are fixed on this line at the desired distance. At both the ends of the baseline, right angles are drawn by following the simple carpenter’s 3,4,5 meter system. After the formation of three lines, it is easy to fix all the other pages to mark the tree locations at the required spacing by using ropes connecting the pages of the lines in opposite directions.

   Area occupied per plant = row to row distance X plant to plant distance

The selection of the site has great importance for the establishment of a fruit orchard successfully. Establishment of orchard is a long term activity with huge investment. Hence, any mistake committed during site selection, it is difficult to rectify it later. Successful orchard is not only related with yield but also its economic production and efficient disposal of produce. For economic orchard establishment; some of the points which need to be considered, while selection of site. These are as follows.

1. Climate and soil: These are two important natural factors, which decide the success or failure of orchards. Before selection of site, climate and soil requirement for selected fruit crops needs to be studied thoroughly and accordingly site must be selected. On the other hand if a site has already been selected; then fruit crop selection needs to be done as per the existing climate and soil of that selected site.
2. Topography: Slope of site more than 15% makes the land almost unsuitable for cultivation. Land with 4% slope may be kept clean without much loss. Uneven land involves heavy expenditure in leveling. Southern slopes are generally warmer and affect the plant growth in a manner different from the northern slopes. It is due to the difference in quantum of receiving sunlight. Hence, the site with southern slopes may be selected for sun loving plants.

Growth and development of any horticultural crop is mostly depending upon two chief natural factors i.e. climate and soil, which decides success or failure. Therefore, understanding about climate and soil requirements for different horticultural crops for optimum growth and development is a prerequisite for profitable farming.

There is often confusion between weather and climate. Weather describes the condition of the atmosphere over a short period of time e.g. from day to day or week to week. It is current atmospheric conditions including temperature, rainfall, wind, humidity, sky condition at a given place. Climate on the other hand, is the average condition of weather over a longer period of time. Climate is the sum of all the statistical weather information that helps to describe a place or region.

Growth and development are two important stages in a plant. Plant growth and development are under the control of both intrinsic and extrinsic factors. Growth is one of the fundamental characteristics of all living things. Even in Plants, the growth is visible but not measurable easily. Development in plants is actually a sum of two processes i.e. growth and differentiation.

Principles involved in plant growth and development: The various principles involved in plant growth and development are discussed below.

1. Totiopotency: Living plant cell has the potential to reproduce all the characteristics of the plant since it possesses all the genetic information.
2. Competence: It is the potential of cells or tissue to develop in a particular direction. Development of competency into a particular kind of cell(s), tissue or organ also may require special signals. These may originate internally within the plant or may originate externally as an environment signal, e.g. Internal change in type of growing point such as vegetative to flowering or initiation of adventitious roots on cuttings may be associated with a shift in the activity of specific hormones, external parameters i.e. application of growth regulators, or environment. It is mainly internal potential of meristem that gradually shifts from a vegetative shoot to one that produces flowers.

Anatomy is the study of an internal structure of an organism, while morphology is the study of various external features of an organism Anatomy helps in knowing the structural peculiarities of different groups of plants, which help for adaptation to diverse environments. An angiosperm plant is characterized by the presence of roots, stems, leaves, flowers, and fruits

Plant cells: Plant cells are multicellular eukaryotic cells that make up a plant (a group of eukaryotes belonging to the Plantae kingdom, with the ability to synthesize their own food using water, sunlight and CO₂). Being eukaryotic cells, they have a defined nucleus with specialized structural organelles that enable it to function in an orderly manner.

Grouping plants in different categories on the basis of similarities and dissimilarities is referred to as classification, which helps for study of these crops in various perspectives. India is endowed with a rich diversity of horticultural plant wealth due to varied agro-climatic conditions. Number of fruits, vegetables, ornamental crops, spices, condiments, plantation crops, etc. is under commercial cultivation in different parts of the country under different sets of growing conditions.

The systematic study of all these crops becomes a difficult and more repetitive part. To avoid it; classification of horticultural crops on different aspects has been made to deal with all these plants separately. Classification of horticultural crops has been made in different groups on similarity or dissimilarity of attributes. Plants having similarity in either of the traits are placed under one group. The overall objective of the classification is to categorize the horticultural plants and make the recollections very easy and convenient.

Horticulture includes variety and diversity of crops. Thus, it can be divided into several branches depending upon the crops it deals with. Following are the branches of horticulture.

1. Pomology: The term pomology is a combination of two Latin words pome i.e. fruit and logos i.e. science. Recently it has been designated as ‘Fruit Science’. It deals with the study of fruit crops. It includes all aspects of fruit crops e.g. importance, uses, origin and distribution, area and production, soil and climate requirement, botany, nursery raising, cultivation practices, plant protection measures, stage and methods of harvesting, post-harvest handling, marketing, export, import, etc. e.g. mango, banana, citrus, grape, apple, peach, pomegranate, fig, etc.
2. Olericulture: The term olericulture is also derived from the Latin word. Cultivation of vegetable crops. Recently it has been designated as ‘Vegetable Science’. Vegetables are said to be herbaceous plants of which edible plant parts are used for consumption either cooked or salad. It may be stem, root, leaf, flower, etc. It also includes all aspects of vegetable crops e.g. importance, uses, origin and distribution, area and production, soil and climate requirement, botany, nursery raising, cultivation practices, plant protection measures, stage and method of harvesting, post-harvest handling, marketing, export, import, etc. e.g. tomato, brinjal, chilli, cucumber, red pumpkin, watermelon, cabbage, cauliflower, etc.
3. Ornamental Horticulture: It includes various groups of ornamental plants used to decorate in-door and out-door areas. Ornamental horticulture is the study of growing, arranging and tending decorative plants and flowers. It is further divided into.

India is the seventh largest country in the world with a total geographical area of 328.73 million ha and has second largest population after China. The gross cropped area is 198.36 million hectares of which 70% is under rainfed cultivation. Around 55 to 60 per cent of the total population depends on agriculture and allied activities.

One of the important features of India prevalence is varied agro-climatic conditions; which enables to strengthen the horticulture industry. Many numbers of horticultural crops namely fruits, vegetables, ornamental and flower crops, spices and condiments, plantation crops, aromatic and medicinal plants, etc. are grown in almost all the parts of country. Thus, horticulture sector has become one of the major drivers of growth in agriculture having major share in agriculture GDP.

Healthy body maintains a healthy mind. Fruits and vegetables are said to be protective food as they provide proteins, carbohydrates, fats, vitamins, minerals, roughages, organic acids, enzymes and energy for normal growth and sustenance of physiological activities of human beings. Fruits and vegetables provide palatability, taste and improve appetite. It also provides fiber to prevent constipation. They reduce the ill-effect of acids produced during digestion of proteins and fatty acids. Thus, they protect the human body from various deficiency disorders.

Important fact is that most of the Indians are vegetarians. The incorporation of fruits and vegetables in daily diet is essential as body building elements and calorie yielding foods for good health. Comparatively fruits and vegetables are the cheapest source of natural nutritive foods and are an important component of a balanced diet Balanced diet is a diet which contains body building elements and calorie yielding foods in an appropriate proportion for normal growth and well-being of a person. According to ICMR, New Delhi; 120 g fruits and 280-300 g vegetables should be consumed per day per capita. Vegetables include 80-100 g of leafy vegetables, 100-125 g of tubers as energy source and remaining as other vegetables.

Horticulture is of immense importance for human beings. Among these major ones are nutritional importance, economic importance, medicinal values, environmental balance, aesthetic value and recreation. These are as follows.

1. Nutritional importance: Healthy body maintains a healthy mind. Human body requires vitamins, minerals, proteins, energy, fibers, etc. for its health. Fruits and vegetables are the chief sources of proteins, carbohydrates, fats, vitamins, minerals, organic acids, fibers, etc. Consumption of fruits and vegetables keeps the human body away from several illnessess and hence are recognized as protective foods; necessary for the maintenance of human health. As per the Indian Council of Medical Research; consumption of at least 120 g of fruits and 280-300 g of vegetables per day per capita is essential. Among vegetables, 80-100 g of leafy vegetables, 100-125 g of tubers as energy source and reamaining as other vegetables. However, the consumption of fruits per capita in India is still low. In countries like Italy, France and USA; the daily fruit consumption is 308, 232 and 223 g respectively. 

The word ‘horticulture’ was first conceived by Peter Laurinburg. In an English language, the word horticulture used for the first time in 1678 in a book entitled “New World of Words” by Phillips. The term HORTICULTURE is resultant of two Latin words i.e. HORTUS meaning GARDEN and CULTURA meaning CULTIVATION.

The Latin term ‘Garden’ meaning to enclose. In past, the garden had protection with with walls or other similar structures. Such protected places were used to grow fruits, vegetables, flowers and ornamental plants. When fruits are grown in a definite area, that area is called as an ‘orchard’. Thus, horticulture refers to cultivation of garden plants in protected enclosures. It is an aesthetic science deals with the garden crops. Such as growing of vegetable crops in vegetable gardens; fruit crops in fruit gardens. The most distinguished character between horticulture and agriculture is that horticulture deals with small scale gardening and usually in enclosed gardens although this is not a necessity, while agriculture is done on large scale with extensive crop cultivation.

Mushrooming population, subsiding agricultural resources; land and water, people’s concern towards quality of vegetable s/food and changing climate throws several challenges for vegetable production. Conventional management and crop improvement strategies alone can no longer sustain the nation’s as well as global demand. So there is an urgent need to adopt modern biotechnological methods which are multidisciplinary where a large number of tools and elements of conventional breeding technique, genetic engineering, molecular biology, molecular genetics, bioinformatics and biochemistry are utilized and integrated. Biotechnological tools provide three major aspects of genetic improvement viz, application of tissue culture, molecular breeding or marker assisted breeding and genetic engineering.

Perennial vegetables live/survive in field for several years and go on yielding vegetables without much care and attention. They are usually planted on the side of kitchen garden without much interference with tillage operations of other annual crops. Tender leaves, shoots, fruits or tubers of a number of perennial crops are used for vegetable purpose in different agro-climatic conditions. They may be trees or shrubs as in bread fruit, jack fruit, drumstick, etc. or bushes as in colocasia or trailing plants as in yams, chow-chow and ivy gourd.

Temperate perennial vegetables are asparagus, rhubarb, artichoke and seakale. All the above crops have tuberous roots, rhizomes or corm. Above-ground portion may dry up during winter and again sprout during spring. Tuber crops like cassava, elephant foot yam, Colocasia (taro), Dioscorea (greater yam, lesser yam) etc. grown under tropical conditions are also perennials. But for cultivation purpose, they are replanted every year and are treated as annuals.

Vegetables which are consumed raw without cooking are known as salad crops. In temperate regions, a large number of quick growing cool season crops like lettuce, celery, parsley, endive, chicory, chervil, cress, water cress etc. are consumed as raw. Only lettuce and celery are cultivated on a commercial scale in developed countries. Growing awareness on nutritional values of raw vegetables and also health consciousness of people resulted in increased consumption of salad vegetables in tropics too. Vegetables like onion, cucumber, tomato, carrot, radish, beet root, cabbage, capsicum, melon etc. are used as salads without cooking.

Lettuce is the most popular salad crop of the world and the most important vegetable crop in temperate regions. The crop is grown mainly under protected structures in temperate countries. Tender leaves and heads are chopped and used as salad along with salt and vinegar.

Leaf vegetables are rich sources of provitamin-A, vitamin-C and minerals like calcium, iron etc. They also provide roughage required in human diet. The Indian Council of Medical Research (1984) recommended a daily intake of 100 g and 40 g of leaf vegetables in the diet of woman and man, respectively. Amaranth, beet leaf, spinach, fenugreek, cabbage etc. are the major leaf vegetables grown in the country. In addition, a number of under-utilized annual crops are also grown as leaf vegetables in specific regions. Tender stems and leaves of a number of perennial crops are rich sources of vitamins and minerals and are used for cooking. The major annual leaf vegetables have a few features in common:

1. Most of leaf vegetables are of short duration and the entire harvest is over within 80-90 days
2. Leaf vegetables are cultivated by direct sowing and by transplanting. In direct sowing, seeds are sown as in nursery and harvested 30 days after. In transplanted method, 25-30 days old seedlings are transplanted at a closer spacing and harvesting is done by frequent clippings or cuttings.

Tropical tuber crops are an important group of subsistence crops in tropical and subtropical zones. Carbohydrates synthesised and stored in the form of starch in underground tubers are used as food by millions in under-developed countries. It is also used as raw material by many industries. Cassava, sweet potato, Chinese potato, edible aroids like elephant foot yam, taro, tannia and yams like greater yam, lesser yam and white yam are major tuber crops grown in India.

Tuber crops are mainly grown as rainfed with minimum cost of production. All are propagated through vegetative means and require fertile and well drained loose soil for proper root development. All roots crops require high dose of potassium for high productivity.Cassava is the most important starchy root crop grown in the tropics and is mainly cultivated in southern peninsular India. Introduced during seventeenth century by Portuguese, the crop played a significant role to overcome food shortage among the low income group of people in Kerala. Underground tuber is rich in starch and mainly consumed after cooking. Processed products like chips, sago and vermicelli made of tapioca are also popular in the country. Being easily digestible, it forms an important ingredient in poultry and cattle- feeds. It is also widely used for production of industrial alcohol, starch and glucose.

Potato is fourth major food crop after rice, wheat and maize in the world. It produces the highest dry matter, well balanced protein and more calories/ unit area and time. Unlike other food crops, potato tubers contain vitamin-C (17 mg/100 g). It provides carbohydrates, minerals, fibre and a number of vitamin-B groups. Potato protein is comparable to that of milk and egg. Unlike European countries, in tropics and sub-tropics, the crop is of short duration and fits well in intensive cropping system. It can be grown in a wide range of climatic and soil conditions and tubers are available throughout the year. Tubers can be left un-harvested in the soil for some time and are also suitable for long distance transport and storage. Several products like chips, flakes, French-fries, finger chips, granule, disc, cubes and flour are made out of potato tubers

Origin and distribution

Potato is a native of tropical South America. Traditionally, it was adapted as a commercial food crop in temperate climate under long day conditions, mainly in Europe. It was introduced to India in 16^th or 17^th Century by Portuguese or the British. 

Radish, turnip, carrot and beet root are the major root crops grown in the country. In addition, root crops like rutabaga, parsnip, salsify, chervil and celeriac are grown in a limited scale in different areas. Though the crops belong to different families, their cultural requirements are uniform. The common features of root crops like radish, turnip, carrot and beet root are:

• In all root crops, the tap root and a portion of hypocotyl develop into fleshy root.
• All root crops are cool season crops and are the best grown during winter in plains and spring-summer in hills of North India
• All crops, except beet root, exhibit two distinct groups, viz., tropical or Asiatic or annual types and temperate or European or biennial types. In beet root, tropical annual types are not available.
• Seeds of annual types are produced in plains. Biennial types require a chilling temperature, after attaining or completion of vegetative phase, for transforming to reproductive phase. Since this chilling temperature is available during winter at high altitudes, seed production of biennial types are practiced only in hills of North India.
• All root crops require well drained loose and friable soil without any clods for raising a good crop. Seeds are sown on ridges or on raised beds for proper development of roots.

Bulb crops include onion, garlic, leek, shallot, welsh onion and chive- all belonging to the genus Allium. This genus was earlier included in the family Liliaceae due to its superior ovary. It was later shifted to Amaryllidaceae as flowers are bom in a bracted umbel on top of a scape. Being the typical genus in the family Amaryllidaceae, a new separate family status was given to all the specious under Allium as Alliaceae.

The common features of bulb crops are:

1. The stem is under ground and rudimentary. The edible portion, bulb is formed by fleshy leaf bases in onion, fleshy axillary buds within thin foliage in garlic, blanched stem and leaves in leek etc.
2. All the bulb crops have a characteristic order due to presence of allyl - propyl - disulphide.
3. All are cool season vegetables and are grown during winter months in plains.

Vegetables belonging to the family Brassicaceae (Syn: Cruciferae) are known as Cole crops. These are the most widely grown vegetables in temperate and sub-tropical zones. The word ‘Cole’ comes from abbreviation of word ‘caulis’ meaning stem. Cole crops are a group of highly differentiated plants originated from a wild plant Brassica oleracea var. oleracea (=B. sylvestris L.) commonly known as “Wild cliff cabbage” or “colewort”, through mutation, human selection or adaptation. Cole crops include cabbage, cauliflower, knol khol, Brussels sprouts, Chinese cabbage, sprouting broccoli, kale etc. of which cabbage and cauliflower are the most popular and widely grown.

Mediterranean region is the centre of origin of Cole crops. From there, it spread to Europe and other temperate and sub-tropical regions. Cabbage, knol khol and curly kale were the first known cultivated types. Cauliflower became widely known in the 18^th century and Brussels sprouts in 19^th century. In the thirties of 20^th century, sprouting broccoli started cultivation particularly in the USA.

Linnaeus in 1753 included all forms of Cole crops in one species, Brassica oleracea. Later the works of many, including Neuwhof (1969) resulted in putting them into different forms as given below:

B. oleracea var. capitata L. - Cabbage

Peas and beans belonging to the family Fabaceae (Syn. Leguminosae) are delicious and preferred vegetables grown throughout the world. These include cool season vegetables like pea, French bean, lima bean, broad bean and tropical vegetables like cowpea, hyacinth bean, winged bean, jack bean, sword bean etc. These are integral components of sustainable agriculture due to their ability to fix atmospheric nitrogen and to improve soil properties. Legume vegetables are rich in protein and essential amino acids and have significant role in combating malnutrition among poor people and vegetarians.

Common features of legume vegetables are summarized below:

1. All legume vegetables are self-pollinated due to cleistogamous nature. Flowers are zygomorphic with papilionaceous corolla, mono-adelphous or di-adelphous stamens.
2. All are direct sown crops and do not respond to transplanting. Since seed size is comparatively bigger and they are closely planted, a high seed rate is required for most of crops.

Okra is predominantly a crop of tropics and subtropics. It occupies fifth position, next to tomato, in area under vegetables in the country with a production of 33.24 lakh metric tonnes from an area of 3.47 lakh hectares (2001-02). The crop is cultivated for its young tender fruits, used in curry and soups after cooking. It is a good source of vitamins A and B, proteins and minerals. It is also an excellent source of iodine and is useful for the treatment of goitre. Fruit is useful against genito-urinary disorders, spermetorrhoea and chronic dysentery. Fruits are also dried or frozen for use during off-season. Dried fruit contain 13-22% edible oil and 20-24% protein and is used as refined edible oil. Dry fruit skin and fibres are used in manufacture of paper, card board and fibres. Root and stem are used for clearing cane juice for preparation of jaggary.

Crops belonging to family Cucurbitaceae are generally known as ‘Cucurbits’. It consists of a wide range of vegetables either used for salad purpose (cucumber) or for cooking (all gourds), pickling (West Indian gherkin) or as dessert fruit (muskmelon, water melon) or candied or preserved (ash gourd). As a group, cucurbits occupy the largest area in India and in other tropical countries. Its use is not primarily because of calories, minerals or vitamins since they are generally low to moderate in nutrients with a few exceptions like bitter gourd (rich in vitamin C- 96mg/100g), pumpkin (vitamin A 1600 IU/100g), Kakrol (high protein 3.1g/100g,), parwal and chow chow (calcium- 531 mg and 140 mg / 100 g respectively). From the nutritional point of view, cucurbit seeds are valued for their high oil and protein contents. Seed proteins of cucurbits are comparable to that of legumes and are richer in methionine.

The family Cucurbitaceae comprises about 117 genera and 825 species in warmer parts. Chakravarthy (1982) estimated 36 genera and 100 species in India.

The family Solanaceae consists of 85 genera, which include both tuberiferous and non-tuberiferous ones. Brinjal (Solanum sp.), chilli (Capsicum sp.) and tomato (Lycopersicon sp.) are the major fruit vegetables under the family. In all genera, fruit is an indehiscent berry.

A key for the identification of the above three genera are furnished below:

A. Anthers connivant in a cone, longer than filaments

B. Anthers dehisce by apical pores or short slits, leaves entire, lobed or pinnatifid - Solanum

BB. Anthers dehisce introsely by longitudinal slits, the tips empty, leaves pinnatiset - Lycopersicon

AA. Anthers not connivant in a cone, not larger than the filaments, dehisce by lateral slits - Capsicum

Vegetables are grown on a limited scale in homesteads for family use and cultivated in an extensive scale for marketing. Depending on the purpose for which they are developed, vegetables gardens are classified into different types, viz., kitchen garden or nutrition garden, market garden, truck garden, garden for processing, garden for seed production and vegetable forcing or protected cultivation.

1. Kitchen garden or nutrition garden

Kitchen garden or home garden or nutrition garden is primarily intended for continuous supply of fresh vegetables for family use. A number of vegetables are grown in available land for getting a variety of vegetables. Most of works are done by family members. Area of garden, lay out, crops selected etc. depend on availability and nature of land. In rural area, land will not be a limiting factor and scientifically laid out garden can be established. In urban areas, land is a limiting factor and very often crops are raised in limited available area or in terraces of buildings. Cultivation of crops in pots or in cement bags is also feasible in cities.

The unique advantages of a kitchen garden or home garden are:

(i) Supply fresh fruits and vegetables high in nutritive value

Diverse soil and climatic conditions prevailing in different parts of the country offer scope for cultivation of a variety of crops in India. Around 250 crops either cultivated or grown under natural habitat are used for vegetable purpose. The crops and varieties vary in their soil and climatic requirements, cultivation practices, resistance to pests and diseases, quality etc.

Considering the climatic conditions for growing vegetable crops and for evolving zone wise technologies and recommendations, the entire country is divided into eight agro- climatic zones under the All India Co-ordinated Research Project (Vegetable Crops) as given below:

Quite a large number of vegetable crops are grown in the country either on a commercial scale or limited to backyards of homesteads. A few crops have similarity while others have dissimilarity in their climatic and soil requirements, parts used, method of cultivation etc. While describing individual vegetables, there is possibility of repetition in many aspects. In order to avoid repetition, it is essential to classify or group them into different classes/groups. Different methods of classification followed in vegetables are described below:

I. Botanical classification

Botanical classification is based on taxonomical relationship among different vegetables. Plant kingdom is divided into four viz. Thallophyta, Bryophyta, Pteridophyta and Spermatophyta. All vegetables belong to Division Angiospermae of Spermatophyta. It is further divided and two classes viz., Monocotylydoneae and Dicotylydoneae.

Vegetables are defined as edible herbaceous plants or parts of plants consumed as raw or after cooking and are rich in vitamins and minerals, low in calorific value and neutralize the acid substances produced during digestion of high energy foods. Olericulture is a branch of horticulture that deals with production, storage, processing and marketing of vegetables and has its origin when man started growing vegetables for human consumption. The term Olericulture comes from Latin words holus-holeris = any kind of culinary vegetable, pot herb, and cultura = to cultivate.

Vegetable crops include a large number of plants, mostly annuals and a few perennials, grown for their edible leaves, stem, flower buds, flowers, fruits and roots. Vegetables are integral part of a balanced diet and are considered as “Protective foods” as their consumption prevent several diseases. They have a prominent role in combating malnutrition of animals and human beings.

Equatorial Asia is home to winged beans (Geneva). On atrip to Thailand, Baker Creek’s founder, Jere Gettle, first observed flying beans. Because the winged bean is a tropical crop from the tropics, it takes a long time to flower, setting pods right before frost in our Missouri environment. The winged bean (Psophocarpus tetragonolobus) is a tropical herbaceous legume plant also known as cigarillas, goa bean, four-angled bean, four-cornered bean, manila bean, princess bean, asparagus bean, and dragon bean. From the Philippines and Indonesia to India, Burma, Thailand, Vietnam, and Sri Lanka, winged bean thrives in hot, humid equatorial climates. It’s well-known, yet it’s only farmed in limited quantities in Southeast Asia and Papua New Guinea.

Pigeon pea seeds discovered in historical tombs suggest it was farmed in Egypt circa 2000 BC. Vavilov (1939) concluded that India is the primary origin of the cultivated pigeon pea due to the wide diversity of germplasm available. It’s a crucial location in rain-fed agriculture. It is grown on 4.92 million hectares worldwide, including 3.58 million hectares (72.7 percent) in India alone. Although the crop is planted in 22 nations, it is only cultivated in considerable areas in a handful of them. Its seeds have become a widespread food in Asia, Africa, and Latin America since its domestication in the Indian subcontinent at least 3,500 years ago. It is an important source of protein for the Indian subcontinent’s people and is consumed on a big scale in South Asia. India is a major producer of pigeon peas. Kenya, Malawi, Uganda, Mozambique, and Tanzania are major producers of pigeon pea on the African continent.

These beans are mostly found in China, Korea, Japan, India, Sri Lanka, Madagascar, and Indonesia, and are not frequently cultivated for commercial purposes. Sword bean pods can reach a length of over a foot and a width of one to two inches. It is grown as a minor vegetable for local use throughout South and Southeast Asia, particularly in India, Sri Lanka, and Myanmar. Sword bean is typically planted as an annual vegetable crop because it is a perennial climbing legume. Sword bean is grown for its soft pods, which can be eaten raw or cooked.

In India, Indonesia, Malaysia, China, and tropical Africa, it is widely grown. In India, there are four species of bitter gourd that belong to the genus Momordica.

Botany and taxonomy: It is an annual climber vine with woody, thick stems that can grow up to 20 metres long, large, heart-shaped leaves, large, creamy to pale yellow flowers that are single, ovoid, large, dark green fruits that can grow up to 20 cm long and weigh up to 1.5 kilogrammes, periphery with smooth thorns, yellow turned orange when ripe, and black seeds. The leaves, petals, and seeds of this plant are edible and can be eaten as a vegetable.

• Useful plant parts: Fruits, leaves, flowers, tuberous root and seeds.
• Medicinal uses: To treat Ulcers, lumbago, fractures, bronchial asthma and bleeding piles.

Momordica dioica, also known as bristly balsam pear, prickly carolaho, teasle gourd, and kantola, is a flowering plant of the Cucurbitaceae/gourd family that is commonly known as spiny gourd or spine gourd. It is consumed as a vegetable throughout India and parts of South Asia. It is valuable commercially and is exported and utilised locally. The fruits are sometimes served with meat or fish and are prepared with spices or fried. Underground tubers are used to proliferate it. Small leaves, small yellow flowers, and small, dark green, spherical or oval fruits characterise this plant. It is dioecious, which means there are separate male and female organisms.

Spinach is estimated to have originated in ancient Persia some 2,000 years ago, and was transported to India and ancient China as the “Persian vegetable” via Nepal in 647 AD. The Saracens introduced spinach to Sicily around 827. Spinach (Spinacia oleracea), also known as vilayati palak in Hindi, is a leafy vegetable that grows well in cool or temperate climates. Vilayati spinach is dioecious, unlike beet leaf spinach, which is hermaphrodite. Its production is restricted to household gardens in mountainous regions of India, and it is consumed as a cooked vegetable.

“Every year, 26,688,150 tonnes of spinach are produced over the world.” With a production output of24,484,507 tonnes per year, China is the world’s greatest spinach grower. The United States of America is in second place, producing 323,620 tonnes each year. “Spinach isn’t grown in India.”

As early as the 16th century, rhubarb was farmed and marketed for therapeutic purposes. According to History of Fruit, by the 19th century, rhubarb had acquired prominence as a food and vegetable source, with a redder stem and sweeter flavour. Rhubarb is a native of Central Asia, and knowledge of its therapeutic properties dates back five thousand years in China. It was also widely used by Arabs, Greeks, and Romans in antiquity. It came as no surprise to Marco Polo when he discovered it in China in 1271.

Botany and taxonomy: Rhubarb refers to the fleshy, edible stalks (petioles) of Rheum species and hybrids (culinary rhubarb) of the Polygonaceae family, which are cooked and eaten. Rhubarb refers to the entire plant, which is an herbaceous perennial with short, thick rhizomes. The big, triangular leaves are inedible due to high quantities of oxalic acid and throne glycosides. 

The pointed gourd (Trichosanthes dioica Roxb, Cucurbitaceae) is an Indian tropical vegetable crop. It’s called as parwal, palwal, or parmal in different parts of India and Bangladesh, and it’s one of the region’s most significant vegetables. Eastern Uttar Pradesh, Bihar, West Bengal, Assam, Odisha, Madhya Pradesh, Maharashtra, Gujarat, and some hilly portions of Telangana, Andhra Pradesh, and Tamil Nadu are among the states where the crop is commonly farmed. The entire cultivated area is 56 million hectares, while the total production is 798 million hectares (2018-19). Due to its well-established dioecism, perennial nature, and vegetative modes of multiplication, the pointed gourd is physically unique from other cucurbitaceous species.

In the 14th century, the term “parsnip” was borrowed into Middle English as a modification of the Old French word “pasnaie,” which was derived from the Latin noun “pastinaca,” which meant “parsnip” or “carrot.” This history is still reflected in the scientific name for the parsnip, “Pastinaca sativa.” The parsnip is a native of Eurasia; it has been farmed by the Romans and has been used as a vegetable since antiquity, but there is some misunderstanding between parsnips and carrots in historical texts. Prior to the arrival of cane sugar in Europe, it was employed as a sweetener. Parsnips are carrot-shaped root vegetables that are cream-colored and belong to the parsley family. Although they can be eaten fresh, they are more commonly roasted, boiled, fried, or steamed. The thin, tan peel of parsnips is usually peeled before use, revealing white flesh beneath.

Parsley is a popular culinary herb that is grown commercially as an annual plant for its attractive and aromatic leaves in many parts of the world. In Europe, parsley is the most generally farmed herb, and in the United States, it is the most commonly utilised herb. Rather than being a part of the diet, it is utilised as a garnish. The leaves’ oil can also be used to make sauces and spices.

Botany and taxonomy: Parsley is a biennial that is cultivated and managed as if it were an annual. It’s the most popular herb for garnishing and flavouring. Parsley comes in two varieties: moss-curled and flat-leaf. Moss-curled produces a rosette of finely cut and tightly curled leaves. It develops as a biennial, with a rosette of tripinnate leaves 10-25 cm (4-10 in) tall, numerous 1-3 cm (0.4-1.2 in) leaflets, and a taproot that serves as a winter food store. It develops a blooming stem with sparser leaves and umbels of yellow to yellowish-green flowers in the second year. 

Cucumis melo var. conomon or Oriental pickled melon is a veining annual vegetable native to China and India. In the summer, it produces yellow blooms, and in the fall, it harvests the fruit. The petals are crumpled because it belongs to the Cucumis genus.

Botany and taxonomy: The fruit’s outer surface is glossy and can be white or green, but it’s known as shiro-uri because when fully ripe, it turns white and is whiter than a cucumber. It’s a melon variety, but it’s used in cooking since it has a lighter sweetness and flavour, as well as a crisp texture when chewed. It contains vitamin C, vitamin B1, and carotene, however the majority of its constituents are water and low in calories.
