Introduction

The term horticulture first appeared in English literature in 1678 in the treatise “The New World of English” authored by E. Phillips in London. In ancient scriptures, the garden is mentioned in Vatsayan. During the ancient period, gardens were the sole means of recreation, leisure, and pleasure. The planting of trees was undertaken for the purpose of shade, shelter, and fruits. It is quoted the queen of Raja Dashrath made a question that “What is the meaning of planting trees and garden”. Raja Dasharath responds that “the very meaning of planting trees and taking fruit plantation is the shade and fruits to the passersby”

Horticulture accounts for about 30% of India’s GDP from 13.08% of the cropped area. It stands for about 37.1% of the total export of agricultural commodities. The country shares about 13.6% of the fruit production and 14% of vegetable production (Indian Hortic Database, 2014). Horticulture shares for more than 33% of agricultural production. The horticultural production touched the mark of 300.64 million tonne during 2016–2017 which marks the sixth straight year horticultural production outstripping that of food grain production estimated at 276 million tonne in 2016–2017. It stands witness to structural changes in Indian agriculture in which the farmers have increasingly adopted the cultivation of commercial horticultural crops due to increasing market demand and quicker cash flow.

Onion growth, bulb initiation, yield, quality and storage life are strongly influenced by temperature, photoperiod, soil, moisture and crop establishment. Different cultivars require specific day lengths and temperature ranges, making regional variety selection and planting schedules essential. This chapter explains the environmental requirements of onion and the consequences of unsuitable conditions, including premature bolting, double bulbs, poor development and disease susceptibility. It examines soil preparation, planting geometry, direct seeding, transplanting and precision establishment. Modern approaches—including sensor-based environmental monitoring, Internet of Things systems, predictive modelling, precision seeding and machine-learning-supported input management—are presented as tools for improving uniformity, resource efficiency and climate adaptability.

Enzymes are proteins with highly specialized catalytic functions responsible for many essential biochemical reactions in microorganisms, plants, animals and human beings. Enzymes play an important role in many aspects of life since the dawn of civilization that have used enzymes for thousands of years without understanding what they were or how they work. Food processing through the use of biological agents/enzymes is historically a well-established approach. The earliest applications go back to 6000 BC or earlier, with the brewing of beer, bread baking, cheese and wine making. Whereas the first purposeful microbial oxidation dates back 2000 BC, with vinegar production. In the late 19^thcentury, Christian Hansen reported the use of rennet for cheese making and production of bacterial amylases was started at Takamine (latter became part of Genencor). Pectinases have been used for juice clarification in the 1930s and during World War II, invertase was also employed the production of invert sugar syrup in a process that pioneered the use of immobilized enzymes in the sugar industry. Still, the large-scale application of enzymes could only be really established in the 1960s, when the traditional acid hydrolysis of starch was replaced by an approach based in the use of amylases and amyloglucosidases (glucoamylases) and glucose (xylose) isomerase. From then onward, the trend for the design and implementation of processes and production of products by the use of enzymes has steadily increased.

Food and beverages and household care industries represent the largest application areas of enzymes, followed by animal feed, biofuels, textile and other technical industries. Recently, several new developments have taken place in the application of enzymes in fruit and vegetable processing. Fruits and vegetables are consumed as fresh or processed into different type of products. Commercial enzyme preparations are used as processing aids in fruit and vegetable processing to improve the process efficiency and product quality, because enzymes show activity on specific substrates under mild processing conditions. Therefore, there has been a striking growth in the enzyme market for applications in the fruit and vegetable industry.

Enzymes are biocatalysts that change the rate of reaction without being changed themselves. All (Most) enzymes are proteins but all proteins are not enzymes. Ribonuclease is the enzyme which is non- protein in nature.

1. SEED TESTING

The science of evaluating the planting value of seed has been developed to achieve the following objectives for minimizing the risks of planting low quality seeds.

To determine the seed quality and its suitability for planting

To identify seed quality problems and their probable cause.

To determine the need for drying and processing, if any.

To determine if seed meets established quality standards for labeling.

To establish quality and provide a basis for price and consumer discrimination among lots in the market.

An orchard is the place where different kinds of fruit crops are grown in large scale. An orchard is a long-term investment and needs lot of planning and expertise. The orchard crops are generally trees, which ultimately have a large spread, so when they are planted, the distance between plants and rows is kept keeping in mind the final spread of the tree. So, before the trees attain their full growth, some suitable crops which are of short duration, like vegetables, flowers, spices and herbs are grown as intercrops.

Fruit trees are perennial, may be tropical, sub tropical and temperate types and thus require proper environmental conditions and suitable management practices for their successful growth.

Layout of an orchard

Layout means the way by which something is arranged or laid out. The purpose of designing a layout for an rchard is to assign the actual position for trees/ plantations, roads, water channels, buildings etc. The layout should be planned very carefully and implemented properly to facilitate proper care and maintenance of an orchard. The plan should provide optimum number of trees per unit area as well as sufficient space to each of the tree for proper development and ease in various cultural operations of the orchard.

ABSTRACT

Haploids are of great importance in breeding programmes for the production of homozygous diploid lines. This technique reduces the time span in developing new varieties and fixes the traits including recessive ones in the homozygous condition. The haploid embryos or doubled haploid plants could be used in mutation breeding, genetic engineering, biochemical and physiological studies. Isolated microspore culture for the production of haploids has not yet been reported in Hevea brasiliensis. Hence the present work was initiated with the view of producing haploid plants by the culture of isolated pollen grains. The flower bud of the clone RRII 105 at the late uninucleate to early binucleate stage was used for culture initiation. Different pretreatment solutions were tried at different temperatures (4°C, 27°C and 33°C) with the macronutrients of N6 media. Three kinds of callus induction media were used viz. N6, WPM and Hunters medium supplemented with myoinositol (200 mg^-1), glutamate (150 mg^-1), phenyl acetic acid (7.0 mg^-1), sucrose (70 g^-1) and growth regulators. Induction medium include moving liquid, static liquid and semi- solid medium. The ovary co-culture was also tried in the induction medium to increase the frequency of callus formation. Pretreatment of the anther with 0.3 M mannitol at 33°C promoted the division of microspores. Static liquid cultures improved the formation of multicellular microspores compared to semi-solid or moving liquid cultures. N₆ basal medium supplemented with 2.0 mg/l 2.4-D and 1.0 mg/l KIN induced microcalli formation. When the ovary co-culture was included in the callus induction medium, the rate of cell proliferation was increased considerably and the duration of callus formation was reduced from 3 months to 14 days. The results of the present study throws light towards the possibility of regenerating doubled haploids in future.

1. INTRODUCTION

Field run seeds obtained from the seed production field posses high moisture and physical contaminants like trash and other inert materials (sand, stones, soil etc.,), diseased and pest damaged seeds, other crop seeds, weed seeds, deteriorated and damaged seeds, off-size and ill filled seeds, plant remnants etc. Seed processing is must to dry the seeds to safe moisture level, remove unwanted and inert materials as detailed above.

Seed qualities such as vigour and viability are improved by certain physical characteristics of the seed i.e., shape, size, large, denser and sound seed, etc. So, if grading is done to obtain a particular range of size, shape, length and density of the seeds, the quality of the lot is upgraded.

Seed processing refers to all the steps necessary for preparation of harvested seed for marketing namely handling, drying, shelling, preconditioning, cleaning, size grading, treating and packaging.

29.1. Aim

To estimate ascorbic acid in fresh and processed fruit and vegetable products.

29.2. Theory and Principle

Fruit, vegetables and their products are important sources of ascorbic acid. The ascorbic acid is present in sufficient quantity in aonla, guava, grapefruit, lemon, pineapple, strawberry fruits etc. Barbados cherry is the chief source of vitamin C. The products manufactured from these fruits are also considered as rich in ascorbic acid and the contents available in the commodities can be detected by using 2, 6 dichloro-phenol - indophenol visual titration method.

Fruit firmness is an important feature of maturity. During ripening, fruits may soften and become too soft at the overripe stage. The changes are detected by touching or by using devices like texture analyzers and pressure testers to measure texture of fruits and vegetable.

To determine the moisture content in fresh and processed products

24.2 Theory

Estimation of moisture in fresh and processed fruit and vegetable products is important for evaluating their nutritive composition as well as to optimize method for their processing like drying, preparation of different products viz; jams, preserve, candies etc. Moisture is determined by drying the weighed sample to a constant weight in hot air oven and measuring the loss in weight to express the moisture content in percent. This method is used for estimation of moisture in all food products which do not decompose at 100ºC. Moisture content of some commodities (Table 4.1) is as under:

The estimation of moisture in foods is one of the most important and most widely used measurements in the processing and testing of food products. It is used to determine the nutritive value of food, to express results of analytical determinations on a uniform basis, and to meet compositional standards or food laws. The level of moisture in different fruits and vegetables varies widely. Most fresh fruits contain more than 85-90% moisture in edible portions. Broad range of moisture content in common fruit, vegetables and their products as general guideline are given in Table 3.1.

The physical properties of seeds are a basic activity for designing processing equipments and precision planters. Since these characters vary with crop or variety, one needs to have the data handy to be used on shop floor. This data also helps to quantify processing efficiency, presence of dormancy and suitability for seed treatments for all existing and new crops or varieties.

There are stages in seed supply chain where seed losses happen at harvesting and post harvest stage. These losses may occur due to higher moisture at harvest, due to harvesting methods, processing methods, at seed storage, during transport etc. Estimation of these losses is an important function of seed inventory management. Estimating seed losses help to improve processing and seed distribution efficiency. These simple statistical tools will help to measure quantitative post harvest seed losses. Seed testing can be used for measuring qualitative post harvest seed losses.

Vegetables form an important component of our daily diet as they provide necessary nutrients to the diet and they add colour, texture and flavour to it. Vegetables contain very high content of water (about 78 to 98%) and are reasonably good source of starch, sugar, cellulose, hemicellulose, pentosans and pectic substances. They also contribute minerals, vitamins and indigestible fibers to our diet. The yellow, orange and dark green leafy vegetables are rich source of carotenes- the precursors of vitamin A. Non-volatile acids, such as citric, malic, oxalic and succinic acids, contribute to their flavour. The very strong flavour characteristics of some vegetables like onion, garlic, cabbage, cauliflower, etc. are due to certain sulfur containing volatile compounds. However, vegetables, in general, are poor source of protein and amino acids.

India has made significant progress in the production of vegetables since independence because its diverse agro-climatic zones ranging from tropical to temperate allow the production of a wide spectrum of vegetables.At present, the country is producing about 108 million tonnes of vegetables and considered the second largest producer in the world (Venkatesan et al., 2006). Currently, the plant breeders are focusing their efforts to produce high yielding varieties having resistance against diseases and herbicides and tolerance against drought and salinity. Therefore, the physical aspects of quality, i.e., shape, size, texture, colour, tenderness, etc. are given due priority in the breeding programme with no emphasis to the biochemical and nutritional quality parameters, which include dry matter, proteins, vitamins, sugars, flavouring compounds, alkaloids, flavonoids, etc. However, under present set up of World Trade Organization (WTO), the country will have to compete with quality conscious European and developed countries, and with inferior quality product, it would not be possible to penetrate the foreign market. Therefore, breeding programme in a country like India with future-plans of globalization of agriculture produce must be aimed at achieving good nutritional quality. In different types of vegetable, a varied set of biochemical parameters determines the quality. In this chapter, the methods for qualitative and quantitative determination of these parameters in vegetables have been described.

30.1. Aim

To estimate the salt contents in given samples by using Mohr method.

30.2. Theory and principle

Common salt is used during preparation of pickles, sauces, ketchup, fruit chutney and appetizers. Besides, imparting taste, the salt in appropriate concentration also acts as a preservative. In different products, it is estimated by using Mohr method. The sample is titrated with standard solution of silver nitrate for estimation of salt by using potassium chromate as an indicator. From the titre the concentration of salt is estimated by using a standard expression.

31.1. Aim

To estimate the sodium benzoate contents in fruit and vegetable products.

31.2. Theory and Principle

Sodium benzoate is used as a class II preservative in preservation of pickles, sauces, squashes etc. Its estimation is important as the quantity of class II preservative shall not exceed maximum limit prescribed under FSSAI. In a sample containing NaCl, the benzoic acid is converted into water soluble sodium benzoate by addition of NaOH. When the Sodium benzoate solution is acidified with excess of HCl, water insoluble benzoic acid is formed which is extracted with chloroform. The chloroform is removed by evaporation and the residue containing benzoic acid is dissolved in alcohol and then titrated with standard sodium hydroxide.

28.1. Aim

Estimation of reducing sugars in fresh fruits and processed products using Lane and Eynon method.

28.2. Theory

Sugars are inherently present in different fruits and vegetables or added during preparation of different products. They are added to the fruit products to improve the taste and also to act as a preservative. Glucose and fructose in the fruits represent reducing sugars while sucrose or cane sugar added represents the non-reducing sugar. They are estimated by using Lane and Eynon method which measures sugar as reducing sugar and total sugar as invert sugar.

32.1. Aim

To estimate the level of sulphur dioxide contents in fruit and vegetable products

32.2. Theory and principle

Sulphur dioxide in food product is added as class II preservative and may exists as undissociated sulphurous acid, as free bisulphate or sulphite ions or as combined SO2 in the form of hydroxy sulphonates. Sulphur dioxide is measured as free or total SO2. Estimation of SO2 in squashes, jam, RTS drinks is important as its presence beyond the prescribed FSSAI limits make the product not confirming to Indian Food Laws. Generally 2 parts of KMS (Potassium metabisulphite) releases one part of SO2 explained as under:

27.1. Aim

To estimate the titratable acidity of fresh and processed fruit and vegetable products.

27.2. Theory

Most of the fruit, vegetables and their products contain acid or mixture of acids. The acids may occur naturally in the fruit and vegetables or may be added during manufacture of different products or by lactic acid or acetic acid fermentation. Generally citric acid is added in most fruit products while in pickles, sauces and ketchup acetic acid is used. The acids are mainly responsible for the tartness or sour taste, thus estimation of acidity is used as the measure of tartness. They also help in preservation by lowering the pH of the finished products.

ABSTRACT

Soft rot of ginger caused by the fungus Pythium aphanidermatum is a major disease affecting ginger cultivation. To combat invading pathogen in the event of infection plants are known to produce antimicrobial pathogenesis related proteins (PR proteins) prominent among which are antifungal hydrolases like glucanases and chitinases. Since Pythium lacks chitin in its cell wall, increase in level of glucanase in the plant may enhance the resistance of ginger to soft rot disease. Signal molecule like ethylene plays a prominent role in the defense response of plants. The present study was undertaken to investigate the role of ethylene in enhancing the level of glucanase in the ginger system. Detached leaves of Rio de Janeiro variety of ginger were used in different experiments. Leaves were treated with ethephon at different concentrations and different time intervals. Increase in the glucanase activity by ethephon treatment was quantified by enzyme assay using crude protein extract. Glucanase levels showed an initial increase with increasing concentration of ethephon but decreased at higher concentration (5 mg/ml). A longer exposure of detached leaves to ethephon (48 h) resulted in 3.7 fold increase in glucanase activity compared to control. The level of enhancement of the glucanase transcript also followed a similar trend as revealed by RT PCR analysis. Two acidic isoforms of glucanase were detected using native PAGE and their levels were found to be enhanced by treatment with ethephon. An increase in the levels of glucanase may contribute to the plant’s ability to resist infection by Pythium.

Ethylene (C₂H₄ also known as ethene) is a gaseous organic compound that is the simplest of the alkenes chemical structures (alkenes contain a carbon-carbon double bond). The hormone effects of ethylene on general plant growth were first noted in 1864 when leakage from gas street lighting systems caused stunting and deformation of nearby plants. In 1901 Neljubow identified the active component of the gas to be ethylene but it was not until 1934 that Gane identified that plants could synthesize ethylene and in 1935 Crocker proposed ethylene to be the hormone responsible for fruit ripening and senescence of vegetative tissues.

Ethylene play important role in many plant during development processes, including seed germination, vegetative growth, leaf abscission, flowering, senescence and fruit ripening. Ethylene also plays a role in response to water stress, chilling and mechanical injury.

Medicinal plants are a basis of huge economic value all over the world. The use of plants and plant products as remedies could be sketched as far back as the beginning of human civilization. The most primitive medicinal use of plants in Hindu culture is mentioned in “Rigveda”, which is believed to have been written between 4500 - 1600 B.C. and is theoretical to be the oldest arsenal of human knowledge (Dhale and Mogle, 2011). Keratinophilic fungi are the natural colonizers of keratinic substances like hair, nail, fur, feathers, hooves, claws, beaks, scales etc. Cattle sheds, garbage, animal burrows, sewage, birds nest, feather and hair dumping sites, poultry farms, public places like parks, schools, market place etc., are the common habitats of these fungi (Ali-Shtayeh and Rana, 2000). They utilize keratin as the sole source of carbon and nitrogen and produce an extracellular enzyme keratinase.

Keratinophilic fungi have been receiving considerable attention in recent days as these include dermatophytes which are potential pathogens causing various diseases in skin and scalp (Weitzman and Summerbell, 1995). Human exposure to these fungi is a matter of health risk. Several non-pathogenic fungi are now being reported as opportunistic pathogen and their occurrence in various environments, where they are naturally occurring is not directly investigated. Although several antifungal drugs are available in the market, its use is being limited due to a number of reasons such as low potency, poor solubility, development of resistant strains and drug toxicity. Reactive oxygen species (ROS) is a collective term used for oxygen containing free radicals, depending on their reactivity and oxidizing ability. They participate in a variety of chemical reactions with biomolecule (Kunwar et al.,2011).These free radicals include superoxide anions (O2-), hydroxyl (OH-), peroxyl (ROO), peroxynitrite (ONOO) and nitric oxide (NO) radicals; produced through oxidative process within the body. An antioxidant is a molecule capable of inhibiting or preventing the oxidation of molecules. Antioxidants are substances that may protect cells from the damaging effects of oxygen radicals, highly reactive chemicals that play a part in atherosclerosis, some forms of cancer and reperfusion injuries. Medicinal plants are an important source of antioxidants. The secondary metabolites like phenolics and flavonoids from plants have been reported to be potent free radical scavengers. They are found in all parts of plants such as leaves, fruits, seeds, roots and bark (Chanda and Dave, 2009).

Abstract

In order to solve the problems of irregular bearing, lower yields and less colour development in apple, plants of different improved spur types and standard cultivars of delicious and other cultivars on EMLA 111 rootstock were imported from USA. Plants of different cultivars namely, Real Mecoy Red Delicious, Red Chief, Oregon Spur II, Criterion and Mutsu on EMLA 111 rootstock were planted at a distance of 15’x12’ with a density of 598 plants per hectare, in RBD design with 6 replications during 1989-90 at progeny cum demonstration orchard (PCDO) Anu (Jubbal). The observations were recorded during 1999-2002.

Food is constantly being rated for its quality either consciously or subconsciously by all people. Consumers choose food on the basis of its quality and their individual likes or dislikes. The attractiveness of food is clearly a quality which is important both to the manufacturer and to the consumer. When consumers make a selection they basically look for food that is attractive in terms of colour, flavour and texture apart from other psychological and social factors, which they may associate with food. The nutritional quality, shelf-life/keeping quality and cost factor are other criteria which may affect their selection.

The distinctive and attractive colour of food is not only pleasing but is also an indicator of good quality and freshness. The senses of taste and odour help us in detecting and appreciating different flavours and deciding on whether we like the food. The feel and texture of food entering the mouth should be firm, juicy, crisp and are extremely important characteristics that dictate the acceptance of a food. Today’s consumers are discerning, demanding, and more knowledgeable about food. They expect safe products having good value and high sensory quality. Therefore, knowing consumer’s preferences and perceptions of the sensory characteristics of food and beverage products is vital to food manufacturers. Without appropriate evaluation, there is a high risk of market failure.

1. INTRODUCTION

During fermentation, the fruit wines have to be monitored for different parameters to know the progress of fermentation and to control the quality of the finished products. It is essential to maintain the quality of the products, for which it is necessary to keep a complete record of wine fermentation. One such form is the fermentation control record or fermentation logbook, which is kept to monitor and record fermentation progress. It includes the name of fruit, variety, original characteristics of juice/pulp, amelioration, tank number, inoculum type and quantities, sampling time, date of start of fermentation and completion. It should also have daily record of temperature of fermentation, total soluble solid or ^oBrix reading, titrable acidity and volatile acidity, racking time/date and other comments on the fermentation. Fermentation control records should be completed and all new wines be entered in the bulk wine book inventory, the annual supplemental records can be kept in a file entitled, for example ‘Vintage season 2018’.

ABSTRACT

An In vitro study was conducted to evaluate the fungicidal efficiency of four selected fungal antagonists against leaf spot pathogens of ivy gourd by dual culture method. The antagonists evaluated were Trichoderma viride, Trichoderma harzianum, Aspergillus niger and Chaetomium globosum. The major leaf spot pathogens of ivy gourd used for the study were Cercospora cocciniae, Colletotrichum gloeosporioides and Alternaria alternata, causing severe infection on the foliage. Among the four antagonists tested, T. viride and T. harzianum were found to be the most effective recording the highest AI value of 1500 against all the three pathogens followed by A. niger. C. globosum was least inhibitory on C. gloeosporioides and A. alternata, but was effective against C. cocciniae. A complete overgrowth of the antagonists on all these pathogens were observed in the case of T. viride, T. harzianum and A.niger. C. globosum showed aversion to the hyphal growth of C. gloeosporioides and A. alternata, whereas in C. cocciniae, a homogenous growth was observed.

Abstract

Open pollinated seedlings of chrysanthemum offer opportunity of large variations for different attributes, such as seed setting, growth and flowering parameters. The desirable seedlings selected from the germplasm collection of Department revealed that only few cultivars set seeds under Solan, Nauni condition  of Himachal Pradesh. Out of 1368 seedlings raised of different seed setting cultivars, 111 were found promising for various attributes concerning to uses of chrysanthemum.

Twenty seven genotypes including two wild relatives of strawberry were evaluated for resistance against leaf spot caused by various fungal species viz.,Phyllosticta, Pestalotia, Hainesia lythri and Phyllosticta fragaricola under natural conditions. None of the genotypes was found to be resistant against leaf spot. However, the cultivar ‘Fern’ showed moderately susceptible reaction whereas the remaining genotypes were either susceptible or highly susceptible, suggesting the need for diversifying the germplasm either through open pollinated seedling selection or through hybridizing genotypes of divergent origin for resistance against leaf spot.

Probably since the beginning of human life on the planet, they have used local fruits and vegetables. For a long time, they have enjoyed the fruit of the wild trees without knowing how to successfully produce them. Such native fruit trees have many advantages. These trees have an extraordinary genetic diversity that can be exploited in breeding programs and genetic advancement of domestic varieties (Khadivi et al., 2020). Many indigenous fruits are still highly valuable, and the harvesting and selling of these forest fruits contribute significantly to the local economy of families in the area. The product collected from forest trees is completely healthy and in terms of quality, they may even be equal to “organic fruits”. In a most recently published book chapter entitled organic pomegranate production in Iran, compiled by Alizadeh and Varasteh (2024), wild pomegranates were considered as noble source of healthy food. Given the multifunctional, ubiquitous nature of wild edible fruits the present chapter was compiled to introduce wild fruit trees of northern Iran with a focus on providing more detailed information about wild pomegranates.
Geographical Aspects of Northern Iran Northern Iran
is a geographical region encompassing a relatively large and fertile area, located along the southern border of the Caspian Sea and the Alborz Mountains. Upon closer examination of the map of Iran (Fig. 1), one can identify three northern provinces: Golestan, Mazandaran, and Gilan. These provinces all share borders with the Caspian Sea and the Alborz Mountains. The Alborz mountain range extends from the western border with the Republic of Azerbaijan to the eastern border with Turkmenistan (Fig.1).

1. INTRODUCTION

Exotic means anything of foreign origin and something not of native growth. Exotic vegetables are those species introduced to a country or location. Broccoli, Brussels sprout, Knol- Khol, Red Cabbage, Lettuce, Asparagus, Baby Sweet Corn, Chive, Garden beet, Kale, Swiss chard, Parsley, Parsnip, Chinese cabbage and Leek are important exotic vegetables. These generally require cool temperature.

Due to increasing foreign culture and increasing living standards, the demand of exotic vegetables is continuously increasing in cosmopolitan cities and five star hotels. These are good in taste and have high nutritive value. Most of the exotic vegetables can be used in salad and soups. These crops are very remunerative.

In urban areas only few part time grower devote time to the production of exotic vegetable. Exotic vegetable farming is profitable venture that require little capital and become source of livelihood to the farmer. The increase in their output level and profit will contributing to food security in the country. About 50% world population living in the cities. The rapid urbanization poses new challenges for food security. It is hard for most of the cities in the developing countries to provide sufficient employment for rapid increasing population. Some district of Maharashtra like Pune, Nasik & Satara now growing exotic vegetables like asparagus and broccoli. Cherry tomato, leek, lettuce, red cabbage & baby corn are also important as exotic vegetables.

In HP cultivation of Exotic Vegetable like asparagus, broccoli, lettuce, leek, chinese cabbage, snow pea, and parsley start picking up in Theog, Matyana, Saproon Valley, Sirmour, Katrain, Manali, Narkanda & Sanj Valley. These vegetables are beneficial for health as they are rich in phyto-chemicals and neutraceuticals. India is endowed with a wide range of tropical, sub-tropical and temperate agroclimatic conditions, therefore almost all kinds of vegetable crops grown around the world can be cultivated in one or the other corner. There is a lot of potential for exotic vegetables for domestic and export market. Important one are:

Exotic vegetables are those vegetables that are introduced or not common in India. Its area under cultivation is comparatively less and most of the growing area surrounds the targeted markets especially five star hotels and restaurants. Now a days, there is an increasing trend in cultivation of these high value vegetables because of increased demand and good profit. Farmers could sell these vegetables at a at a higher price when compared to traditional vegetables. They are mostly cultivated in net houses or poly houses. Some of the exotic vegetables popular in India are asparagus, celery, broccoli, lettuce, parsley etc.

Asparagus (Asparagus officinalis)

Asparagus is a dioecious monocot which produces tender succulent above ground stems known as spears from fleshy underground crown. These tender spears are used as vegetable, for cooking purpose and for the preparation of soups. The white crystalline substance, asparagine present in the juice of young shoots have diuretic properties and is used in cardiac dropsy and chronic gut. Asparagus is mainly cultivating in countries like USA, Germany, Spain, France etc. while in India, it is cultivating only in a negligible area. Asparagus is grouped under cool season vegetables. But newly emerging spears are susceptible to frost though a wide range of environmental conditions can be tolerated by mature asparagus. Asparagus is native to temperate Europe and Asia and has been cultivating for 200 years.

Morphology

Asparagus is perennial in nature and produce erect branched stem and grows upto a height of 1 to 3 m. The crop yield continuously for 10-15 years from the initial year of spear production. Asparagus roots are tuberous and the leaves are narrow and needle like. Male and female flowers are produced in different plants.

10.1 INTRODUCTION

Agriculture is a very important sector for the sustained growth of the Indian economy. About 70 per cent of the rural households and 8 per cent of urban households are still dependent on agriculture for their livelihood. Though, industrialization of the Indian economy has adversely affected the share of agriculture in the GDP, the fact can not be ignored that India has undergone a series of successful agricultural revolutions-starting with the ‘green’ revolution in wheat and rice in the 1960’s and 1970’s, the ‘white’ revolution in milk to the ‘yellow’ revolution in oilseeds in 1980’s. As a result, India has achieved self-sufficiency in agriculture. Applications of agricultural inputs at uniform rates across the field without due regard to in-field variations in soil fertility and crop conditions does not yield desirable results in terms of crop yield. The management of in-field variability in soil fertility and crop conditions for improving the crop production and minimizing the environmental impact is the crux of precision farming. Geographically, India is widely distributed into several agro-climatic zones, and the information needs for the farming systems in these areas are entirely different. Integrating the application of available technologies to realize farmers’ goals requires a systems approach to farming.

Vegetables are rich sources of many essential micronutrients, including vitamin C, vitamin K, folate, thiamine, carotenes, minerals, and dietary fibre. In addition, vegetables are rich in health related phytochemicals, such as antioxidants. Such phytochemicals play an important role in reducing the risk of many chronic diseases. Therefore, it is essential to produce more vegetables to feed our ever growing population. In this context, use of genetically improved, disease resistant and high yielding varieties in precision farming may play a significant role in increasing vegetable productivity and production.

15.2 EXPLOITATION OF GENETIC RESOURCES

The genetic resources of a crop may be defined as the sum total of hereditary material, i.e., all the alleles of various genes present in a crop species and its wild relatives. Genetic resources are broadly grouped into two major types (i) cultivated germplasm, and (ii) wild germplasm. Alternatively, they may be termed as (i) indigenous (from the country in question), or (ii) exotic (from another country) based on their place of origin. Genetic resources consist the following five types of materials: (1) land races, (2) obsolete varieties, (3) modern varieties or varieties in cultivation, (4) breeding lines, and (5) wild forms and wild relatives.

Introduction

Okra, Abelmoschus esculentus (L.) Moench, is annual herb grown in tropical and subtropical parts of world for green tender immature fruits and consumed as cooked mostly fresh but sometimes sun dried or frozen also used as vegetable. Some parts of plant and roots are used for medicinal as well as purification of sugarcane juice. Green fruit contains vitamins, calcium whereas seeds possess 13-22 per cent edible oil and 20-24 per cent edible protein. India is leading producer of okra and exporting fresh as well as processed fruits to other countries and also ranked first in area (0.48 million ha.), production (3.5m tones) and productivity (9.8 t/ha) during 2005 against the world area (0.78 million ha.), production (4.99 m tones) and productivity (6.4t/ha).

ABSTRACT

Tinospora cordifolia, a versatile medicinal species with antipyretic and immunomodulatory properties is one of the indigenous sources of the therapeutically valuable alkaloid, berberine. However, the plant contains only meagre amounts of this alkaloid. Hence upgradation of the content of berberine in Tinospora, through biotechnological interventions assumes importance. Four week old leaf, petiole and stem derived calli of two ecotypes of Tinospora viz., Vellanikkara ecotype and Madurai ecotype, subcultured on to Murashige and Skoog (MS) medium, supplemented with various growth regulators, were incubated in light and screened for the presence of berberine employing thin layer chromatography. MS medium with NAA @ 2 mg l^-1 supplemented with BA or kinetin, each at 2 mg l^-1, was identified as the basal production medium for in vitro production of berberine, yielding 7.55 μg and 7.36 μg berberine respectively, per gram of calli. Calli produced from stem segments registered maximum amount of berberine compared to leaf and petiole derived callus cultures. Increasing levels of sucrose in basal medium did not have a favourable influence on the expression of berberine in the test calli. Reducing nitrate and phosphate content of the basal medium to half their strength resulted in enhanced berberine production in in vitro cultures of both the experimental ecotypes. Favourable influence of precursor feeding on upgrading the content of berberine in leaf and stem derived calli of both the ecotypes of the experimental species was also confirmed in the study.

Introduction

Chilli is one of the most important spice and condiment of daily use in all most all the Indian houses. The fresh and dry fruits are the rich source of Vitamin A (292 IU) and Vitamin C (111 mg/100g). Its pungency not only improves the taste of the different preparations but also improve their storability. The colour of the fruits is due to the presence of the pigment capsanthin and pungency and acridity is due to the presence of alkaloid oleoresins knows as capsaicin (C₁₈ H₂₇ O₃ N). The capsaicin has a very good medicinal importance and also having importance for the pharmaceuticals industries for preparation of the different types of the drugs, because of the presence of the antioxidants like Vitamin A, C and P (Rutin). The green and red sweet pepper, bell pepper, Pimiento (heart shape) and cherry pepper are used in the fresh market processing industries for stuffing pickling and dehydrated processed meat. It is used as green as well as dry powder, pickles, salad and for industry to prepare the medicines for external and internal uses.

ABSTRACT

The Plant Growth Promoting Rhizobacteria (PGPR) is a group of rhizosphere-colonizing bacteria producing substances which increase the growth of plants and/or protect plants against pathogens. The use of PGPR has become rather common practice and is on the rise in many regions of the world. Inoculation with PGPR also aims at reducing the application of potent ially pollut ing chemical fertilisers and pesticides. Biocont rol microorganisms have unquestionable potential for managing plant diseases, insect pests and nematodes besides increasing crop productivity. Interest in biological control has recently been intensified because of imminent bans on effective pesticides, widespread development of pesticide resistance in insect pests and plant pathogens and a general need for more sustainable pest control strategies. Active and long-term colonization of the root surface of the plant and effective expression of disease-suppressive traits are generally considered prerequisites for successful suppression of horticultural crop diseases by rhizobacteria. The important mechanism of biocontrol by PGPR involve competition and production of antibiotics such as 2,4-diacetylphloroglucinol (DAPG), pyoluteorin (PLT), pyrrolnitrin, phenazine-1-carboxylic acid (PCA), 2^-hydroxy phenazines and phenazine-1-carboxamide (PCN). Siderophores, including pyochelin and pyoverdine which chelate iron and other metals also contribute to disease suppression by conferring a competitive advantage to biocontrol agents for the limited supply of essential trace minerals in natural habitats. Induced systemic resistance (ISR) is a state of increased defensive capacity developed by the plant when appropriately stimulated, through activation of latent resistance mechanisms induced by diverse agents including rhizobacteria. Microplants are first grown in vitro under aseptic conditions devoid of microorganisms. They are then transferred to a post vitrum substrate for acclimatization. By creating a beneficial rhizosphere in microplants at an early stage, the plants could be better protected against biotic and abiotic stress that occurs in the greenhouse or in the field. The beneficial rhizosphere can be created by biotization of microplants with PGPR. The search for PGPR to control postharvest decay of fruit crops has been actively pursued and promising strategies have been practiced nowadays. Biological control of postharvest diseases of perishable horticultural crops with PGPR is complex and involves a number of mechanisms to suppress the development of the disease. PGPR, being a potential candidate in disease management through multiple mode of action, it becomes highly imperative to know its different role in the management of plant pathogens.

ABSTRACT

In Kerala, the commercial cultivation of tomato is limited due to the bacterial wilt disease caused by the soil borne pathogen Ralstonia solanacearum. The release of bacterial wilt resistant varieties like Sakthi, Mukthi and Anagha has increased the area under tomato. But, these varieties are susceptible to tomato leaf curl virus diseases caused by Germini group virus and transmitted by white fly (Bemisia tabaci). The disease incidence varies from 10.77% to 90.5% and the yield loss is tremendous. Unless the tomato variety resistant to ToLCV disease is resistant to bacterial wilt also, it cannot be recommended for cultivation in the State.

The somaclonal variations have been well exploited in developing disease resistant varieties in many crops. Therefore an experiment was formulated to study the somaclonal variations and to screen the somaclones for resistance to tomato leaf curl virus disease in L. esculentum var. Sakthi and L. pimpinellifolium.

The somaclones of Sakthi and L. pimpinellifolium along with the parental lines were planted in earthen pots containing potting mixture with bacterial wilt sick soil. These were screened for resistance to ToLCV disease by artificial inoculation of the vector Bemisia tabaci inside the cages. The observations were recorded on ex vitro survival, biometric characters and reaction to ToLCV and other major diseases.

The ex vitro survival was 46.2% in Sakthi and 36.6% in L. pimpinellifolium. The somaclones of Sakthi showed wide variation for plant height and spread compared to that of L. pimpinellifolium. Some of the somaclones exhibited ‘gigantism’ with potato leaved plants. The yield of the somaclones of Sakthi were higher than that of parental line.
