Ice cream is a beautiful combination of science, technology, craftsmanship, quality discipline and business understanding. My journey with ice cream began with curiosity, grew through learning and experience, and gradually became a lifelong professional passion. This book, Ice Cream: From Science to Business, is an attempt to share that journey, along with the knowledge, practical insights and industry experience gained over several decades in the dairy and ice cream sector. My foundation in dairy tchnology was laid at the College of Dairy Science, Udaipur, where I pursued my graduation in Dairy Technology during 1982–1987. I remain deeply grateful to the respected Dean, Dr. R. S. Rawat, whose guidance and academic leadership created a strong learning environment for students like me. I also express my sincere gratitude to Dr. Saluja, Professor of Dairy Technology, who introduced me to the technical depth of ice cream science and helped develop my early interest in this fascinating subject. A very important phase of my professional development came under the guidance of Mr. Satish Chona, Founder Promoter of Havmor Ice Cream. Working under him sharpened my technical skills, strengthened my practical understanding of ice cream manufacturing, and gave me valuable exposure to the realities of building quality products in a competitive market. His vision, discipline and commitment to excellence played a significant role in shaping my professional approach.
